Savoury Oatmeal Rissoles (a substitute for potatoes)

Take a cold, stiff porridge left over, mix with dry boiled rice or breadcrumbs made from baked and pounded crusts. Season with pepper and salt and add a few drops of any favourite sauce or Tomato Ketchup, or flavour with chopped herbs and onion.

Shape into balls or flat cakes, roll in medium oatmeal and fry in boiling fat or margarine.

A slice of cooked bacon or ham minced and mixed in is a nice addition.
