Learn about how affinage is used to create some of the amazing cheeses available from Peterson, and specifically how the affineurs from the Cellars at Jasper Hill are pioneering the use of these methods in the US to age spectacular American Artisan cheeses in Vermont!
2:00 PM Smart Guidelines for Incorporating Gluten-Free Foods into Your MenuMeet Kay Conley, Seattle-based gluten-free chef consultant and sales representative for Antonina’s Bakery, as she shares best practices and guidelines for foodservice operators looking to safely incorporate gluten-free dishes into their menus. Kay works with restaurants to identify potential points for cross-contact, set up procedures to eliminate them, and successfully offer gluten-free foods that are safe for consumption by those with gluten sensitivity. Included in the seminar you will receive a fact sheet identifying what gluten is and where it is found, and tips for incorporating gluten-free menu items and products into your operation.
