What causes foodborne illness?

• Foodborne illness can be caused by contaminated food.

• Food can become contaminated by an ill employee handling the food.

• 48 million people sick• 125,000 people hospitalized• 3,000 people die

What can you do to prevent your customers from getting foodborne illness?

1) Wash your hands often!

2) Know what foodborne illness is.

3) Know the symptoms of foodborne illness.

4) Report to your manager if you have symptoms of, diagnosis of, or exposure to foodborne illness.

VomitingSore throat with fever

Diarrhea

Jaundice - Yellowing of the eyes or skin

Skin infection with open sores

Diagnosis

If a doctor says that you are sick with one of the Big Five:

1) E. coli2) Salmonella3) Shigella4) Hepatitis A5) Norovirus

ExposureYou are not sick but…

1) You have been somewhere where a Big Five illness has been confirmed – wedding reception, for example;

2) Someone in your house is diagnosed with one of the Big Five illnesses;

3) Someone in your house has been somewhere where a Big Five illness has been confirmed – workplace, for example.
