Ingredient functions

• Tougheners: structure: flour, eggs

• Tenderizers: shorten protein fibers: sugar, fats, leaveners

• Moisteners: activate leaveners & gluten: water, milk, syrups, eggs

• Driers: absorb moisture: flours, starches, cocoa, milk solids.
