Pot Bread 900g flour15ml salt10g instant yeast625ml warm water30ml melted butter1 egg

You need a 30cm cast-iron pot with a lid and a charcoal or wood fire for this recipe. Mix the flour, salt and yeast in a bowl. Add the water and butter and mix to form a stiff dough. Turn it out onto a lightly floured kitchen surface and knead for 10 to 15 minutes until the dough is smooth and elastic.

Return the dough to a bowl and cover it with clingfilm. Find a warm spot in the kitchen and leave it there to rise until it doubles in size. Once it has doubled, knead again for 3 minutes, then cut into 8 equal pieces, rolling each into a ball. Place 7 balls around the edge of your greased cast-iron pot, placing the 8th in the middle.

Beat the egg in a cup, using a fork, and brush this egg wash over the rolls. Cover with the lid and allow to rise for 20 minutes. When you are ready to bake, remove the pot lid, place a single sheet of newspaper over the pot and replace the lid. This will help create a good seal. If you want, you can trim the paper, but it will burn off anyway.

Set the pot on a bed of hot coals and place a spadeful of coals on the lid. Bake for 45 to 60 minutes. Allow to cool completely before turning the bread out of the pot and breaking it into rolls.
