WINEMAKING:The grapes are harvested by hand, sorted at the vineyard to eliminate rotten or
green grapes, destemmed, pressed, fermentation between 28 and 34°C.
Pump-overs twice a day (or more if necessary) with or without aeration accord-
ing to tasting. Macerations of the juice during 4-5 weeks.
TASTING NOTES:A deep red colour with highlights of mahogany. An intense nose of blackcur-
rant, black cherry, vanilla and prune. This wine is full. Its tannins are powerful
and round with a long, fruity and spicy finish.
HOW TO ENJOY:16 - 18 °C. With grilled meat and spicy meal.

AOP SAINT-EMILION
WINEMAKING:Fermentation at 30°C with 2 daily pumpovers for one week to intensify the color
and aromas.
TASTING NOTES:A garnet colour with ruby highlights. Subtle almond and rose aromas and
touches of red berries. On the palate, this wine is elegant and fruity notes on the
finish.
HOW TO ENJOY:16 - 18 °C. Accompanies perfectly poultry, white meat, venison and all types of
cheese.

AOP MÉDOC
WINEMAKING:Traditional vinification: harvesting at an optimal maturity determined by
tasting. Fermentation at a high temperature (28-32°C) with pumping over with
or without aeration (the number is determined every day according to tasting),
followed by a malolactic fermentation in the vat. These pump-overs increase
the colour, the tannins, and fruit extraction.
TASTING NOTES:A brilliant ruby colour. A very fine and delicate nose of red fruits (black cherry,
prune) and spices (cinnamon, clove). A robust and well-balanced wine, fleshy,
with covered and powerful. Can be drunk relatively young (about 2 or 3 years)
but grows old very well.
HOW TO ENJOY:16 - 18 °C. With poultry, roasted meats and cheese.

MERLOT-CABERNET RESERVE
WINEMAKING:The harvesting takes place at optimal maturity of plots selected at our partners’
wine growers, under Calvet winemakers’ control. Destemming, long and gentle
macerations at a moderated temperature (26-28°C) in order to preserve the
roundness and the fruit. Then pump-overs actions are carried out to extract the
tannins necessary to the ageing.
TASTING NOTES:A lovely ruby colour. A complex nose of red berry fruits (raspberry, black cherry
and blackcurrant), spicy aromas (cinnamon, liquorice, clove) and smoked notes
(cocoa, caramel). The wine is round, full-bodied with silky tannins and well
balanced. Its finish is long and fruity with notes of gingerbread, caramel and
black pepper.
HOW TO ENJOY:16 - 18 °C. With meats, whether grilled or with its sauce, as well as with game
and soft cheeses. This wine develops its wonderful aromas even further with 2
hours of decanting before drinking.

RHÔNE VALLEY
CHÂTEAUNEUF DU PAPE
WINEMAKING:Alcoholic fermentation realised in oak barrels, long macerations (5 to 7 weeks).
«Ecoulage» (running off ) according to tasting of each «foudres» (oak barrels).
«Drop wine» and «press wine» are worked separately. Aging in «foudres» (local
oak barrels).
TASTING NOTES:A deep ruby colour with purple highlights. A generous and complex nose
revealing aromas of black cherry, «garrigue» and cinnamon. On the palate, it is
full-bodied, well-balanced, full with a persistent finish dominated by round
tanins and aromas of crystallised cherry and cinnamon. Elegant wine with a
rich spicy finish.
HOW TO ENJOY:Always serve at room temperature 16-18°C.

CHARDONNAY Pays d’Oc
WINEMAKING:A light settling and racking which produces extra fattiness and complexity.
Fermentation at 16-18°C.
TASTING NOTES:A yellow colour with golden highlights. A very expressive bouquet revealing
floral, creamy an exotic aromas. A plump, full and lively wine, prettily balanced.
HOW TO ENJOY:10 - 12°C. With Dim Sum or Créole cuisine, Thaï chicken, a bouillabaisse or
scallops.

WINEMAKING:A fermentation at 28-30°C with highly monitored maceration periods guaran-
ties the fruitiness and roundness of our Merlot.
TASTING NOTES:An ruby red colour. An expressive bouquet unveiling notes of red berry. In the
mouth, it is fruity, rich, round and plump. It is a soft wine.
HOW TO ENJOY:15 - 17 °C. With a pizza or Tandoori chicken, sweet and sour pork, Cordon Bleu,
mild cheeses.

MERLOT PAYS D’OC
WINEMAKING:Grapes harvested at perfect maturity, scraped, crushed and fermented for 6
to 12 days. The fermentation temperature is regulated to not exceed 32 °. The
wine is then quickly racked, filtered and bottled.
TASTING NOTES:This wine has a very fruity nose (red fruit, blackcurrant ..) with aromas of red
fruit jam. A beautiful red dress, with bright purple
HOW TO ENJOY:15 - 17 °C. With a pizza or Tandoori chicken, sweet and sour pork, Cordon
Bleu, mild cheeses or vegetables.
-Long shelf life of the wine and its aromas after opening (up to 6 weeks).
-No taste of cork.

“VIN DE FRANCE” or “WINE OF FRANCE”, means category of wines without Geographical Indication.
This denomination leaves more freedom to the winegrowers by not constraining them in a demanding specifications. This allows many winemakers to discover wines of forgotten grape varieties and give free rein to the ingenuity of these real artisans of wine.
