Yield: 8 Servings Cajun Scallops cornmeal 1 cup Cajun Seasoning 2/3 cup Sea scallops 1 lb., 8 oz. cooking oil 2 tbsp.
Combine cornmeal and Cajun Seasoning. Dredge scallops in cornmeal. Heat oil in sauté pan. Add scallops and cook 5 minutes, until browned and cooked through.
Lemon Herb Sauce Yogurt, plain 1 cup Sour cream 1 cup Italian Seasoning 2 tsp. Lemon juice 2 tbsp. Granulated Garlic 1/2 tsp. cucumber, cut into 2” sticks 8 oz.
Combine yogurt, sour cream, Italian Seasoning, lemon juice and Granulated Garlic. Serve scallops with Lemon Herb Sauce and cucumber sticks. For full Cajun impact, serve with succotash.
GriLLED StEAkS witH BLuE cHEESE wALNut ButtEr
Yield: 8 Servings Blue cheese, crumbled 8 oz. Butter, softened 4 oz. Steak Seasoning 2 tsp. & 2 tbsp. walnuts, chopped and toasted 2 oz. Steaks, New York strip 8 each
Combine blue cheese, butter, 2 teaspoons Steak Seasoning and walnuts in a small bowl; mix well.
Sprinkle steaks with 2 tablespoons Steak Seasoning.
Grill or broil steaks 8-10 minutes or until desired doneness. Top each steak with a dollop of blue cheese butter shortly before removing from the grill.

1. Water
2. Steak Seasoning
3. 1/4 tsp. measuring spoon
4. Paper towel or tea ball
5. Microwave-safe glass measuring cup
6. Unsalted crackers or apple slices
preparation instructions
1. Microwave 1 cup water on HIGH for 2 minutes.
2. Add 1/4 tsp. Steak Seasoning to tea ball and submerge, or add to water and stir.
3. Let steep in hot water for 15 minutes for flavors to develop. Remove tea ball or strain Steak Seasoning with paper towel to remove spice particles.
4. Evaluate Steak Seasoning by tasting the water.
5. Cleanse palate with unsalted crackers or apple slices.

preparation instructions 1. Heat oil in fry pan over MEDIUM HIGH heat.
2. Add chicken tenders. Cook over MEDIUM HIGH heat until center of chicken is no longer pink and juices run clear. Turn off burner.
3. Sprinkle 1 tsp. Cajun Seasoning over chicken. Stir with spatula to evenly coat. Cover and let sit for 5 minutes on LOW HEAT for flavor to develop.
4. Evaluate Cajun Seasoning by sampling chicken tenders.
5. Cleanse palate with unsalted crackers or apple slices.
