A 45 year old Tequila barrel still fresh with the essence of its original occupant, was home to our Scottish Stovepipe and our house strain of Lactobacillus for a year. The result is a heavy dose of vanilla rich oak and a unique sweetness from the agave which complements the caramel maltiness and subtle smoke of the Scottish while showcasing a pronounced tartness.
