hey everyone!
Of all the seasons of the year, fall is my favorite. there is just something
about this time of year that makes me incredibly happy. the colors are gor-
geous with the leaves turning wonderful shades of red, orange, and yellow
and we celebrate our holidays that are wrapped in sweetness. My children
go back to school and the quiet hum of predictability and order returns to
my home.
this issue, i have tried to bring in a few projects, recipes, and ideas to help
inspire you this autumn season. we start off with back 2 school creative
crafts and recipes for teachers and moms. students will love coloring in
their own special name plates for their desks, teachers will drool over our
back 2 school Diy Party - so adorable for back 2 school night, and moms
will definitely appreciate our menu of 30 days of lunches!
then we move onto rosh hashanah and sukkot inspiration with apple
crafts and flower tutorials. learn to paint a stained glass apple and honey
plate, or choose to sew an apple trivet! we have a chicken recipe with
mashed ooey gooey apples and cinnamon and stuffed gourds with scrump-
tious meat. Papaya events in conjunction with cup of cake nj puts togeth-
er a gorgeous tablescape perfect for either holiday. we end this issue with
decorating ideas for your sukkah as well as Diy projects to beautify your
outdoor sukkah experience.

1 1/4 cups powdered sugar1 cup finely ground almonds3 egg whites, aged 48 hoursa pinch of salt1/4 cup granulated sugar1 tbsp finely ground freeze dried applesred gel food coloring
line a couple baking sheets with parchment paper. tape two sheets of printer paper together to form a large sheet about the size of your parchment. trace 1-1.5” diameter hearts (i traced a heart cookie cutter) onto the now large sheet of paper and alter the heart outlines as shown above to form the basic apple shape. set aside for now.
Mix the powdered sugar, ground almonds, and ground freeze dried apples together. in a clean bowl, add your aged egg whites and salt. with an electric mixer, beat on low until frothy. turn up the mixer to high and slowly add in the granu-lated sugar as you continue to mix till the whites are stiff peaks (when you lift up the mixer, there should literally be stiff, shiny peaks). add in the red food coloring and mix a few more sec-onds.
with a spatula, gently fold in the powdered sugar/nut/apple mixture until incorporated. Place a plain piping tip in a piping bag and fill the bag with your macaron batter. now take that large stenciled paper and place it under a piece of parchment, using it to guide you as you pipe out your macarons. when done, slide out that paper and place it under your other parch-ment and repeat.
let your macarons dry for a few hours, until the tops are com-pletely dry. Preheat the oven to 325°F. bake your trays one at a time for 8-10 minutes or until the macarons are set on top. let them cool on the parchment on a cooling rack. when
relatively cool, carefully peel the shells off the parchment.
Decorating the Macarons
Pair all the macarons up by matching size. Place 1/2 of each pair of macaron shells on a sheet of parchment paper, remem-bering which shell goes with which.
Fill a piping bag with the cinnamon apple filling (recipe below), pipe the filling onto one half of a pair, and sandwich the filling with the matching macaron shell. Once done, refrigerate the macarons overnight to let the flavors meld.

bAck toschOOLwhen my kids were little, my mornings were a mess. by the
time i had dropped my 3 year old at preschool and lugged my
baby back and forth to the car it was 9:15am and i was ready for
a nap.
throughout the years the mornings did get better, although i
could still always use a siesta. it took a lot of energy, which i
don’t have a lot of, and lots of organizational skills, which i need
to work hard for, but mornings are not as dreaded as they used
to be.
so what did i do that worked? here are 3 simple strategies that
helped me get a handle on my mornings:
1. Be prepared:this came as a piece of bad news for me, but i think all parents
need to hear it: Our mornings start at night. More specifically,
we need to start preparing for our mornings the night before.

this seems to be a no-brainer, but i am tired at night. i want to
relax. i have to really force myself to spend a half hour getting
organized.
so now in the evenings, i try to tidy up my house, prepare
lunches, backpacks, and sign homework and permission slips. i
touch base with my kids to make sure that they have clean cloth-
ing ready to go.
Oh! Do not forget the shoes! we used to spend a lot of time
looking for shoes. i remind my kids to put their shoes in the
mudroom so there won’t be a mad dash in the mornings.
2. Feel Your Child’s Pain:i used to get so frustrated when i would watch my kids slowly
climb out of bed, one limb at a time. it was like they were made
of jelly. i would think, “why can’t they just jump out of bed?
what is the big deal?” Once i started learning about the con-
cept of empathy and how it applies to parenting, i changed my
tune. i realized that i needed to put myself in their shoes. i don’t
like getting out from under my warm blanket in the morning. i
am certainly not one of those people who hears their alarm and
jumps right up ready to start the day (Does anyone do that?). if
i don’t like getting out of bed in the morning, it would stand to
reason that my kids wouldn’t like it either. so, instead of accus-
ing:
“what is taking you so long? how long are you going to lie
there?”
i would empathize with them:
“it can be a challenge getting out from under those warm
blankets! you look like you can use a hug!”
“getting out of bed in the morning can be tough!
especially in the winter when its still dark out! is there
anything i can do to help?”
3. Problem Solve:when we do have a rough morning, i try not to spend a
lot of time blaming myself or my kids:
“what is with me, if i would have just remembered that i had
carpool, it would have been less hectic!”
“if you would have only gotten out of bed on time, it would not
have been so crazy this morning!”
instead, i try to be objective about where i slipped up and how i
can fix it in the future. around dinner time, i also try to get my
kids input:
“guys, we had a rough morning this morning. there was a lot of
yelling. what can we do to make sure it does not happen again?”
“i don’t feel like this morning went smoothly. there seemed to
have been a lot of whining. what do you think we all need to do
so that tomorrow morning will be calmer?”
Mornings with kids can be a challenge. It helps to work with your
kids by being prepared, compassionate and open to problem
solving.

Begin by wrapping tape around pencil; try a candy-cane design, or wrap in individual circles for parallel lines.
Paint over whole pencil generously with acrylic paint. When paint is dry, remove tape.

The secret to overcoming writer’s block is a pencil so marvelous that you can’t help but pick it up and start scribbling.
To create one, a kid winds extra-thin tape around a plain pencil, paints it, and then unwraps the tape. Each design has a personality all its own: A pencil with parallel stripes, for instance, makes math homework fun, while dreamy blue spirals are lovely for writing secrets in a journal.
Tip: Natural-color cedar pencils work well. Kids can make different styles by varying tape size, wrapping tape in different ways, and painting alternating colors between bands.

here is a simple glass painting tutorial using the illustration designed by ann Koffsky. i recently had the plea-sure of meeting Ann at the Creative Conference last May. When I asked her for some coloring pages to include in jCreate Magazine I was blown away by her talent. When I saw this image of the honey bees and apples I knew right away that it would make a beautiful hand painted plate. My friends and family will think me crazy for sharing my painting secrets, but what can i say??? i love this craft!!

Back to School Party
we are huge supporters of early edu-cation and jumped at the chance to be part of a charity event hosted by the Jayneoni Moore Children’s Fund and Marissa J. Winokur to help raise reading scores around the country. tag reading systems and school sup-plies were packaged and shipped to low income classrooms throughout the U.s. we had a chance to meet the lovely ladies of leapfrog and let me just tell you, so sweet! the generosity, enthusiasm and knowledge that came from them was inspiring. there are so many fun, educational products!
we designed the “cupcake brunch” portion of the event complete with a school themed dessert station and snack station for the kiddies. we want-ed to incorporate the “inspire, believe, educate” moto and the importance of reading into the decor. the flavor tags were created to look like the library cards of different children’s books. hand crafted book cake stands and a cupcake cubby held the carefully decorated mini desserts. each guest received a re-usable lunch bag full of gourmet popcorn, taffy, chocolates, and other treats. this table and the
backdrop were so fun to create!
For the snack station, we went tissue pom crazy and used oversized crayola banks to make a colorful arch decor. the kids decorated re-usable, organic snack bags and filled them with gummy alphabets, goldfish crackers, veggie sticks and decorated cookies. the fruit cups and crayon lolli’s were a huge hit.

the highlight of every rosh hashana is dipping the apple in the honey. here is an easy, fun and decorative way to enjoy the dipping.
Supplies:
an apple for each person, preferably on the smaller side
a cookie dough baller
Knife
lemon
honey
What to do:
cut the top off the apple and set aside, with the cookie dough baller, delicately scoop out the inside of
the apple without breaking the skin. Place the apple on a plate-if the apple is wobbly, carefully slice a thin piece off the bottom of the apple to make it stand up straight on the plate. Fill the apple with honey and gently rub a lemon over the rim of the apple to prevent browning. replace the top on the apple, and everyone now has his or her very own personal honey bowl.

for the apple cider
ingreDients
1 whole chicken
1 large sweet potato, peeled and chopped
½ butternut squash, peeled and chopped
1 onion, peeled and chopped
1 head of garlic, top sliced off
2 tbsp olive oil
1 cup mulled apple cider (recipe below)
salt and pepper to taste
Homemade Mulled Apple Cider:
10 sweet apples, gala or braeburn
1 orange, sliced
4 cinnamon sticks
1 tbsp whole cloves
¼ tsp ground nutmeg
instructions
start with the deliciously sweet mulled apple cider. slice up the sweet red apples, place
them in your food processor and chop until the consistency of applesauce.
line a bowl with cheese cloth then pour the pureed apples in the bowl. you should
see some juice coming right through the cheese cloth right away. squeeze the cheese
cloth until all of the juice dripped in to the bowl. 10 apples should produce around 2
cups of juice.
Pour the raw apple juice, now called apple cider, in to a pot and add the sliced orange,
cinnamon sticks, whole cloves and ground nutmeg. bring the mixture to a simmer
over medium heat and take it right off the stove. set the rest of the mulled apple cider
aside for the chicken.
Place the sweet potatoes, squash, onion and garlic in a large casserole dish and drizzle
with 1 tablespoon of olive oil, salt and pepper. Pour 1
cup of the mulled apple cider over the vegetables, cover
the dish with foil and braise in the oven at 400 degrees F
for 30 minutes.

Place the whole chicken on a clean cutting board, breast side down. starting at
the thigh end, cut along one side of the backbone with kitchen shears. turn the
chicken around and cut along the other side of the backbone.
spread open the chicken and find the keel bone, also known as the breast bone,
right down the center. it looks like plastic so you can’t really miss it. Using a sharp
knife, make a small cut in the white cartilage that covers the top of the breastbone
and bend both halves of the chicken backward at the cut to expose the breastbone.
run your thumbs down both sides of the breastbone to separate it from the meat
then pull the bone out.
Flip over the chicken and sprinkle it with the remaining tablespoon of olive oil,
salt and pepper. at this point the vegetables are ready to come out of the oven so
you should uncover the casserole dish. Place the spatchcock chicken over the gar-
lic and vegetables and place back in the 400 degree F oven for 1 hour.
at the 45 minute mark, open the oven to check on the chicken, which should be
just starting to brown. spoon the cider juice from the bottom of the casserole pan
right over the chicken then let it cook for another 15 minutes. Done!

Ingredients:
4 cups frozen strawberries
3/4 cup orange juice
1/2 cup sugar
Directions:
Place all ingredients in your food processor. Using the S blade, blend until all the strawberries are blended.
Pour mixture into a parchment lined 9×13 pan.
Freeze till solid.
Using an apple cookie cutter, cut ices out.
Place in freezer till you are ready to serve.
Decorate plate with dessert sauce.
Place 1, 2 or 3 “apples” on each plate.
Garnish with any small leaves.
Yields: 12 apples

rosh hashana and apples go hand in hand. you dip the apple in the honey and make apple kugel. your kids bring home apple shaped cards, apple dishes and they even go apple picking, so what better way to brighten up your table than with... you guessed it, an apple place card. with this easy, step by step tutorial you’ll learn how to create your own personalized place card. and don’t stop with apples - for the latest Jcreate Magazine photo shoot we made eggplant, pumpkin and other fun shaped place cards. if you want to keep it simple skip to the end of the photo tutorial and we’ll show you how to make a simple elegant square shaped place card cookie.
what you’ll need:
apple cookie cutterFondant (red and green)royal icing or alphabet moldswater and a paintbrush
Directions:
steP 1
roll out your cookie dough to desired thickness (1/4 inch is aver-age) and cut out your apple cookie shapes. Place them on your cookie sheet and bake for aprox 8-10 min. making sure not to burn. Once your cookies are done let them sit for a few minutes to firm up.
steP 2while your cookies are cooling roll out your red fondant to 1/8” and using your apple cookie cutter cut out your shape. cut off the stem part with your knife and brush your cookie with some water so the fondant can stick to it. attach your red fondant to the apple lining up the edges.
cut out the stem part of your cookie using your green fondant and cut out 1 leaf using your leaf cutter. if you don’t have a leaf cutter cut out a leaf shape and make 1 long indentation down the center of your leaf shape and than make diagonal indentations along the sides until it resembles a leaf (see photo). attach the stem and leaf to your cookie. Using a dry paintbrush clean off your fondant if needed.
steP 3Using your letter molds, spell out the letters of the name you need. if you don’t have a mold you can use royal icing to pipe the name directly onto the cookie or you can use cookie cutters or chocolate molds. I chose to use Martha Stewart’s alphabet mold for this because the design resembles leaves and i thought that fit nicely. My daughter’s favorite color is purple so I used that for the molds but you can use green or white if you’d prefer.

stuffed foods are traditional for sukkot and no
one knows exactly why, though some rabbis
say it’s because we’ve come through the high
holidays, all is forgiven and we are stuffed with
blessings. Maybe so, but in pure food terms I’d
say that by the time we have feasted through rosh
hashanah and the yom Kippur break-the-fast,
we are stuffed from so much wonderful food.
besides, sukkot is a harvest festival. Our cup-
boards and refrigerators are stuffed with a bounty
of produce!
so, let’s celebrate! sukkot begins at sundown on
september 18th this year. this stuffed acorn
squash dish is perfect for the holiday. it’s “stuffed”
with autumn vegetables. it’s easy to transport, so
you can bring it to your sukkah. it’s good hot,
warm or cool. that means you can make it in
advance.
here’s another bonus: there’s not much meat in the
recipe and it’s loaded with vegetables, so it’s healthy.
i sometimes leave out the meat and substitute a cup
of grated cheese instead. such a versatile, colorful
and appropriate choice for the holiday.

StuFFed Acorn SquASh2 large acorn squash
2 tablespoons olive oil
1 small onion, chopped
1 carrot, diced
1/2 cup diced butternut squash
1 cup ground turkey
1 cup diced yellow squash or zucchini
1/2 cup chopped fresh spinach or chard
1/4 cup chopped raisins
1/4 cup chopped almonds
1/4 cup plain fresh breadcrumbs
2 teaspoons chopped fresh thyme
or rosemary
1/4 teaspoon cayenne pepper
2 large eggs
salt and freshly ground black pepper to
taste
Preheat the oven to 400 degrees. cut the
squash in half crosswise and remove the
seeds. wrap the halves in aluminum foil
and bake for 40 minutes. remove from
the oven and set aside. reduce the oven
heat to 350 degrees. while the squash is
cooking, heat the olive oil in a sauté pan
over medium heat. add the onion, car-
rot and butternut squash and cook for 2-3
minutes, to soften them slightly. add the
turkey and cook for another 2-3 minutes.
remove the pan from the heat. add the
yellow squash, spinach, raisins, almonds
and breadcrumbs and toss ingredients
to distribute them evenly. sprinkle with
thyme and cayenne pepper and toss ingre-
dients again. add the eggs and salt and
pepper to taste, mix well and stuff equal
amounts of the mixture into the baked
squash cavities.
Bake for 25 minutes. Makes 4 servings

i’m proud to say i absolutely love all the jewish
holidays, however i must admit sukkot comes in
second after my most favorite holiday of Purim.
even hough i work tirelessly on both my actual
sukkah decor and the tablescapes the ends does justify
the means once my family and friends are sitting around
the table oohing and ahhing at the final results. sukkot
is the holiday where
we are commanded to
leave our comfortable
homes and eat and
sleep in four walled
huts covered with bam-
boo overhead. here is
some inspiration to get
you in the outdoorsy,
fall feeling in a funky
yet budget friendly way. Firstly i covered the table with a
lime green full size flat sheet purchased at Wal-Mart for
under ten dollars. next i added a burlap looking tablet
which is actually an inexpensive curtain panel. to get
that tropical effect i placed a few large banana leaves
across the center of the table as a runner/placemats.
those are about six dollars a piece at your local florist.
the lime green vases i purchased online at a dollar store
site. i wrapped burlap ribbon purchased at a trimming/
craft store and some pineapple top leaves to continue
with the tropical outdoorsy mood. i found funky printed
paper napkins for less than $3 at TJMaxx and lit some
burlap wrapped tea lights also bought online for ambi-
ance and effect. the china, silverware and glassware are
about 15 years old but look modern when surrounded
by all the updated, trendy extras. Don’t be afraid to use
what you already own
and only add a few
key pieces on your
own sukkah table.
the most important
thing is to use your
creativity stress free
and enjoy all aspects
of the holiday from
beginning to end. the
memories you create for your family will be etched in
their minds forever.

Materials:chandelier (try craigslist, ebay, thrift stores, yard
sales)
terra cotta pots and saucers (the same number as
the “arms” of your chandelier. Ours all had 5.)
Outdoor-rated spray paint
waterproof glue
Plumber’s epoxy putty
Flowers, plants
Moisture Control Potting Mix
“s” hook for hanging (and the chain that comes with
the chandelier if needed)
Tools:wire cutters
garden trowel
1. slide off the plastic ‘candle’ holders and remove
all electrical/wiring from the chandelier using the
wire cutters
2. attach terra cotta saucers using epoxy putty and
glue. the epoxy putty helped to keep the things in
place since clamping isn’t possible.
repeat for attaching the pots. i let the glue dry 1-2
hours before spray painting and allowed it to cure
several days before planting.
3. spray paint the entire thing (even your chain if
you’ll be using it). i found that hanging the chande-
lier from a low tree branch to be the easiest process
(especially if the chandelier’s shape doesn’t sit level)
but you could also do a 2 step process (position
upside down on drop cloth/cardboard, spray paint,
dry, flip and the spray from top and let dry). some

parts of the chandelier’s design may also be removable (simply unscrew)
and can be taken apart for spray painting if needed. wear a mask if you’re
working under poorly ventilated conditions or breezy weather.
4. Dry. since i worked in advance, the chandeliers had several days to dry/
cure. the glue did expand and become visible. and a little scratching of
the paint happened in places as well. but as we say around here, “imperfec-
tion adds character” and those things are not something you pick out and
focus on when the project is complete (any imperfections stand out in the
completed project below?… nope!) you could lightly sand and spray a base
primer on your chandelier as well.
5. Plant! we had several color coordinated flower options on hand as well
as some ivy. – we used perfect for container gardens.
even the little ones had fun planting flowers for mommy in little watering
cans from the dollar store…

VERMONTi have always wanted to travel to vermont during chol hamoed sukkot. the timing of the holiday coin-cides with peak fall foliage in the area. last year, my hus-band and i made the last minute decision to head up north with our pop up sukkah
and our five children in tow. there were only 2 days of chol hamoed and we were determined to jam in all of the area’s attractions in 48 hours. we were very surprised to learn how many kosher attractions there were in the area. not only is the ben and jerry’s
Factory there, but so is cold hollow Cider Mill - a kosher certified apple cider mill as well as green Mountain Coffee and the green Mountain Sugar refining co. offer-ing kosher organic all natural maple syrup.

we decided to stay in a cabin as it was our cheapest option for sleeping and the most exciting arrangement for our children. we grilled hot dogs for dinner and snuggled under blankets at night. we grabbed some fall foliage road maps that we got in the area and took scenic drives through the rolling hills of vermont. gorgeous doesn’t even begin to describe the colors and hues of the leaves. the trees were on fire and simply stunning in shades of
yellow, red, and orange.
the vermont teddy bear Factory was quite simply adorable. the kids had wonderful time learning all about how they make teddy bears during the tour. every teddy bear is created right there in front of you by a handful of work-ers. each one is perfectly created spe-
cifically for the recipi-ent and
made out of the love of the vermont teddy bear workers. they even have a hospital where they fix all the broken and chewed up teddy bears. the com-pany offers Free tours for children under 12 while the adults are charged a nominal fee of $4. they had a large picnic area where my kids were able to sit down and eat lunch and my husband was able to pop open his sukkah to
chow down.
My personal favorite place was Cold Hollow Cider Mill. I love hot apple cider and theirs was delicious! a few of their products have a hashgachah like their apple jelly/jam and butter, but you have to be careful to ask for the list of kosher products because not every-thing is kosher. My husband and kids, however, disagree. ben and jerry’s was their favorite. the factory tour is just $4 per adult and children under 12 are Free. they offer a tour through their
facility as well as a free scoop of ice cream at the end. you also get to watch a video of how ben and jerry (2 jewish guys i might add) grew a $5 correspon-dence course on ice cream making into
a thriving business.
Finding a daily minyan was important to my husband and if it’s a concern for your family as well, i encourage you to call the local chabad for minyan times. the website offers places to sleep near by, area attractions, as well as kosher
food establishments in the area.
