What is aged rice?
Rice grain with long term storage that had undergoes changes in its physical and chemical properties causing impact on rice cooking and eating quality. It is an expontaneous and natural phenomenom.

- Ecuador, Costa Rica, Colombia = Procesado, envejecido- Perú = Añejado, homogenizado- Bolivia = Reposado

Improve digestion: due to starch transformation
