How To Make Sure You Are Buying Raw, Unprocessed Honey 186
Easy tips to ensure your honey are raw and unprocessed. 187
1) Ask Questions!: Ask these questions below! If you can’t get an answer then move on. 188
2) Know the Source: Know the raw honey source. The more local the better. 189
3) Room Temperature: raw honey is solid at room temperature, it is never naturally. 190
4) Light Filtering: Raw honey has only been lightly filtered FILTERED OPTIONAL: 191
Filtered is optional, as long as it is ONLY HIVE Temperature filtered. 192
5) Never Golden Brown: Raw honey is NEVER a perfect golden brown. It is milky, cloudy 193
brown because of the many healthy enzymes, pollen, royal jelly and propolis. It usually 194
has a white layer on the top of it. 195
6) NEVER HEATED ABOVE HIVE TEMPERATURE: Raw honey has NEVER been heated 196
or pasteurized. 197
7) READ THE LABEL: Raw, unpasteurized, unheated MUST be on the label. Honey is 198
naturally highly anti-bacterial, so this is never needed. 199
Healing Honey in Ancient Legends 200
A snake is pictured coiled around the stick of Aesculapius, eager to feast from a cup 201
of honey, shows that ancient healers were very interested in this honey. 202
Aesculapius, the god of Medicine, who not only healed the sick but restored the dead 203
to life, held the snake sacred. The snake was the emblem of health and recovery. The 204
snakes were fed on honey and honey cakes. 205
Honey was also the favorite food of the fabled serpent, the guardian of the Acropolis 206
(Herodot. VIII.41). 207
The snake of Aesculapius in Cos was given honey and honey cake (Herondas IV. 90; 208
Virgil Aeneid IV. 484). 209
Whoever entered the cave of Trophonius had to throw honey cakes to the snakes 210
(Pausanias IX. 39:5). 211
Honey Comb: The closest your honey is to this the better! 212
Is the most unprocessed form of honey 213
Bees fill hexagon shaped wax cells of the comb with honey and cap with beeswax. 214
Eat comb honey like a chewy candy, spit out the wax!. 215
Honey in the comb is untouched, is the purest. 216
Rraw pure honey sections straight from a hive – honey bees’ wax comb with no 217
handling at all. 218
Honey Filtering, Crystallization 219
Lightens the color of honey, never affects the taste and nutritional content. 220
Filtering removes fine particles, pollen grains, and air bubbles. 221
Honey Flavor and Color 222
Color is used as a measure of honey flavor and aroma. 223
Flavor and Color is determined by the nectar floral source 224
Reverend Michael Zarchian Amjoy, www.iamlifechanged.com26:

26 26
Lighter honeys: Milder flavor 225
Darker honeys: Robust flavor. 226
Heat and storage time sometimes affect honey’s Flavor, quality and color. 227
o Honey darkens more rapidly when honey is stored at high temperatures. 228
o Honey appears lighter in color after it has granulated. 229
Don’t Assume "Pure Honey" Means "Raw Unpasteurized Honey"? 230
―Pure Honey‖ can mean 100% honey with nothing added (water, sucrose, anything 231
else) 232
Don’t Assume "Natural Honey" Means "Raw Unpasteurized 233
Honey"? 234
Most commercial honey, even labeled as "natural" is filtered, pasteurized, heat treated t to 235
slow down crystallization to remain smooth and shelf presentable. 236
"Natural Honey" Does Not Mean any of the below of what you want: 237
"Raw Unpasteurized Honey" 238
"Unpasteurized Honey" 239
"Raw Honey" 240
"Raw Unfiltered Unpasteurized Honey" 241
" Unfiltered Unpasteurized Honey" 242
"Raw Unfiltered Honey" 243
Honey Storage 244
Store in glass, out of direct sunlight, dry as possible, tightly sealed 245
Honey storage doesn’t spoil at room temperature even with no preservatives and 246
additives 247
Liquid honey is sometimes has physical, chemical changes 248
o Darkens, aroma and flavor changes 249
o Naturally crystallizes and gets lumps. Crystallization is easily reversible 250
with gentle heating (never boil!).. 251
252
Honey: Sweet Health 253
Multiple beneficial properties. A sweet food of many varieties made by many types of 254
bees and flower nectar. Raw, unprocessed honey has the most medicinal and 255
nutritional value. 256
Fructose naturally in raw unprocessed honey does not, in any way, have the same 257
negative effecst as fructose manufactured from corn syrup.) 258
17 to 20 percent water and is comprised of the monosaccharides glucose and fructose 259
and vitamins A, B-complex, C, D, E, K and beta-carotene, as well as plenty of 260
minerals and enzymes. 261

Abstract and Introduction 612
Abstract 613
Diabetes mellitus is the sixth leading cause of death in the United States, and most 614
patients with the disease have type 2 diabetes. The effectiveness of cinnamon 615
supplementation in patients with type 2 diabetes has received a great deal of media 616
attention after a study was published in 2003. Although the efficacy of cinnamon in 617
patients with diabetes has not been established, many patients seek other therapies and 618
supplement their prescribed pharmacologic therapy with cinnamon. We conducted a 619
literature search, limited to English-language human studies, using MEDLINE (1966-620
August 2006), EMBASE (1980-August 2006), International Pharmaceutical Abstracts 621
(1970-August 2006), and Iowa Drug Information Service (1966-August 2006). References 622
from articles and clinical trials were reviewed for additional sources; no abstracts were 623
reviewed. We found two prospective, randomized, double-blind, placebo-controlled, peer-624
reviewed clinical trials and one prospective, placebo-controlled, peer-reviewed clinical 625
trial that evaluated the efficacy of cinnamon supplementation in patients with type 2 626
diabetes; a total of 164 patients were involved in these trials. Two of the studies reported 627
modest improvements in lowering blood glucose levels with cinnamon supplementation 628
in small patient samples. One trial showed no significant difference between cinnamon 629
and placebo in lowering blood glucose levels. Overall, cinnamon was well tolerated. These 630
data suggest that cinnamon has a possible modest effect in lowering plasma glucose 631
levels in patients with poorly controlled type 2 diabetes. However, clinicians are strongly 632
urged to refrain from recommending cinnamon supplementation in place of the proven 633
standard of care, which includes lifestyle modifications, oral antidiabetic agents, and 634
insulin therapy. 635
Introduction 636
Type 2 diabetes mellitus is a metabolic disorder characterized by hyperglycemia and 637
abnormalities in fat, carbohydrate, and protein metabolism. This progressive disorder 638
can lead to micro-vascular and macrovascular complications.[1, 2] Diabetes is the sixth 639
leading cause of death in the United States and a major health concern, with 640
approximately 8% of the population affected.[1] Its worldwide prevalence in 2000 was an 641
estimated 2.8%, and its projected prevalence for 2030 is 4.4%.[3] According to the 642

56 56
American Diabetes Association (ADA), type 2 diabetes accounts for 90-95% of patients 643
with diabetes.[1] 644
Nonpharmacologic management of type 2 diabetes involves lifestyle modifications, with 645
the promotion of a reduced-calorie diet and aerobic exercise. The ADA recommends that 646
pharmacologic interventions be directed at achieving a glycosylated hemoglobin (A1C) 647
less than 7%, preprandial plasma glucose level 90-130 mg/dl, and postprandial plasma 648
glucose level below 180 mg/dl.[1] Due to these specific guideline recommendations, 649
patients may become discouraged when they cannot achieve the goals and may seek 650
alternative therapies. 651
The effectiveness of cinnamon supplemen-tation in patients with type 2 diabetes received 652
a great deal of media attention after the publication of a study in 2003.[4] Consequently, 653
many patients began supplementing their prescribed pharmacologic therapy with 654
cinnamon.[5] Although the complete mechanism of action of cinnamon is still being 655
investigated, several in vitro studies have found that it displays insulin-like effects.[5-8] 656
Cinnamon contains a biologically active substance initially classified as methylhydroxy-657
chalcone polymer (MHCP).[9, 10] The MHCP stimulates the insulin receptor kinase, 658
leading to autophosphorylation of the insulin receptor substrate 1. This action results in 659
increased glucose uptake in adipocytes. Glycogen synthesis also increases with MHCP 660
activity. Combining MHCP and insulin provided synergistic effects on both glucose 661
uptake and glycogen production in vitro. 662
However, other findings suggested that the previously identified MHCP in cinnamon 663
may have actually been water-soluble polyphenolic type-A polymers.[6, 9] Thus, the 664
biologically active insulin-like substance in cinnamon remains unidentified. In vivo, oral 665
administration of cinnamon extract has enhanced glucose utilization in rats by 666
increasing the glucose infusion rate into skeletal muscle. 667

Lemon Water Benefit Article 670
The value of eating lemons is reported by Jethro Kloss in his book Back to Eden: 671
―The medicinal value of the lemon is as follows: It is an antiseptic, or is an agent that 672
prevents sepsis [the presence of pathogenic bacteria] or putrefaction [decomposition of 673
tissue]. It is also anti-scorbutic, a term meaning a remedy which will prevent disease and 674
assist in cleansing the system of impurities.‖ 675
Due to the digestive qualities of lemon juice, symptoms of indigestion such as heartburn, 676
bloating and belching are relieved. By drinking lemon juice regularly, the bowels are aided in 677
eliminating waste more efficiently thus controlling constipation and diarrhea. 678
On page 659 of Back to Eden, Mr. Kloss points out that, ―The lemon is a wonderful stimulant 679
to the liver and is a dissolvent of uric acid and other poisons, liquefies the bile, and is very 680
good in cases of malaria. Sufferers of chronic rheumatism and gout will benefit by taking 681
lemon juice, also those who have a tendency to bleed, uterine hemorrhages, etc.; rickets and 682
tuberculosis. In pregnancy, it will help to build bone in the child. We find that the lemon 683
contains certain elements which will go to build up a healthy system and keep that system 684
healthy and well. As a food, we find, owing to its potassium content, it will nourish the brain 685
and nerve cells. Its calcium builds up the bony structure and makes healthy teeth. 686
―Its magnesium, in conjunction with calcium, has an important part to play in the formation 687
of albumen in the blood. The lemon contains potassium 48.3, calcium 29.9, phosphorus 11.1, 688
magnesium 4.4. Lemons are useful in treating asthma, biliousness, colds, coughs, sore 689
throat, diphtheria, la grippe [flu or influenza], heartburn, liver complaint[s], scurvy, fevers 690
and rheumatism.‖ 691
Since many people today suffer from what they used to call biliousness, it is important to 692
edify our readers to the definition. 693
Biliousness -- 1. A symptom of a disorder of the liver causing constipation, headache, loss of 694
appetite and vomiting of bile. 2. excess of bile; a bilious fever. 695
Why the lemon works so well 696
On page 19 of A.F. Beddoe's book ―Biological Ionization in Human Nutrition,‖ he states that: 697
―Man does not live off the food he eats but off of the energy that is produced from the food he 698
eats.‖ 699
The energy you get from your food comes from the atoms and molecules of energy in your 700
food. A reaction takes place as cationic food enters the digestive tract and encounters anionic 701
digestive enzymes. 702
To explain further, an ion is part of a molecule con-atom or a group of atoms that carry an 703
electrical charge. Ions which carry positive charges are ―cations.‖ Lemons are considered to 704
be anionic, having more electrons (negatively charged ions) of energy as compared to cations 705
(positively charged ions) in their atomic structure. Saliva, hydrochloric acid, bile and the 706
stomach's other digestive juices are also anionic. 707

Lemon is one of the only foods on the planet that has more anions than cations in its atomic 708
structure. 709
When considering the electromagnetic properties of food Dr. Beddoe points out that all foods 710
are considered cationic with the exception of fresh, raw lemon juice. Some have suggested 711
that the reason fresh lemon juice is similar to digestive enzymes is due to the low amount of 712
sulfur in lemons. It should be noted that pasteurized and packaged lemon juice is cationic 713
and, therefore, ineffective as a health remedy. 714
Who Can Benefit From Lemon Water 715
Dr. Beddoe continues on page 194: ―Lemon water is used in every person that can tolerate it. 716
That is, if there is no allergy to lemon (a very few have a true allergy to lemon) and no active 717
ulcers, then all adults and most children should use the lemon water. The purpose of the 718
lemon is to: 719
1) Provide a natural strengthening agent to the liver enzymes when they are too dilute. 720
2) The liver can make more enzymes out of fresh lemon juice than any other food element. 721
3) The lemon helps fix oxygen and calciums in the liver because it regulates blood 722
carbohydrate levels which affect the blood oxygen levels.‖ 723
Dr. Beddoe also cites an article by Dr. Michael Lesser on the medical promise of citric acid in 724
―Anabolism, Journal of Preventive Medicine.‖ He uses this article to validate the value of 725
using fresh lemon juice daily: ―It appears that citric acid, the major carrier of biochemicals in 726
the body's energy system, shows important promise, primarily because of its excellent 727
properties as a chelator. Its ability to form soluble complexes with calcium offers major 728
promise in the successful treatment of pancreatic stones and has also been employed to 729
dissolve kidney stones. Since calcium deposits are of major significance in the much greater 730
problem of hardening of the arteries, citric acid may possibly contribute to a safe and 731
effective reversal of this widespread degenerative disease.‖ 732
Even though medical doctors are not currently employing lemon juice in the treatment of the 733
above conditions, this article substantiates the fact that one of the benefits of fresh lemon 734
water is the way the citric acid is able to act upon the body's systems differently than any 735
other food. 736
Lemon Remedies Published by Jethro Kloss in Back to Eden 737
For sore throat, dilute lemon juice with water and gargle frequently. Dilute one-half lemon 738
juice with one-half water. It is even better to use straight lemon juice. 739
A slice of lemon bound over a corn overnight will greatly relieve the pain. 740
A slice of lemon bound over a felon [pus formation on a finger joint] will not fail to bring the 741
pus to the surface where it can be easily removed. 742
To relieve asthma, take a tablespoon of lemon juice one hour before each meal. 743

For liver complaints, the juice of the lemon should be taken in a glass of hot water one hour 744
before breakfast every morning. 745
To break up la grippe [flu or influenza], drink a large glass of hot water with the juice of a 746
lemon added, while at the same time have the feet in a deep bucket or other vessel of water 747
with mustard added to it. The water should be deep enough to where it comes nearly up to 748
the knees. Keep adding hot water to the patient's tolerance and until the patient begins to 749
perspire freely (about 20-30 minutes). Be sure there is no draft on the person while this is 750
done. The patient should be near a bed so he can get in it easily and avoid any danger of 751
getting chilled. If convenient, a full hot bathtub would be good in place of the foot-bath. The 752
lemon water should be taken every hour until the patient feels that all the symptoms of the 753
cold are gone. 754
A teaspoon of lemon juice in half a glass of water relieves heartburn. 755
For rheumatism, one or two ounces of lemon juice diluted in water should be taken three 756
times a day: one hour before meals and at bedtime. 757
In cases of hemorrhage, lemon juice diluted in water and taken as cold as possible will stop 758
it. 759
Scurvy is treated by giving one to two ounces of lemon juice diluted with water every two to 760
four hours. 761
In excessive menstruation the juice of three to four lemons a day will help check it. Best to 762
take the juice of one lemon at a time in a glass of cold water. 763
Mr. Kloss explains how lemon juice can even help someone with stomach ulcers: 764
―How can one with an inflamed or ulcerated stomach partake in the juice? Would not a 765
strong acid like that of the lemon act as an irritant? That would depend on how it was taken. 766
If in quantity, yes. But to take it very weak at first [diluted sufficiently in water], it will 767
cease to burn. The sufferer afflicted with ulcerated stomach has to use great perseverance to 768
affect a cure, and it can be cured if care and patience is used. The gastric juice in the stomach 769
is four times as strong as lemon juice.‖ 770
In these cases, I recommend one to two tablespoons of Aloe Vera Gel before the lemon water. 771
Taking 500 mg. of Bromelin has also proven to be helpful. 772
How much lemon to use 773
If you are in good health and weigh less than 150 pounds, squeeze the juice of one half a 774
lemon (one ounce) into a glass of purified water and drink this mixture twice a day (one 775
whole lemon a day.) If you weigh over 150 pounds, squeeze the juice out of an entire lemon 776
(two ounces) into a glass of purified water and drink this mixture twice a day (two whole 777
lemons a day.) The lemon juice can be diluted more according to taste. 778

To help your body get the energy from the food you are eating, drink lemon water regularly. 779
Next to drinking plain purified water, drinking lemon water daily is the most important 780
thing you can do for your health. 781

APPENDIX E: HOW TO BUY A GOOD LEMON 788
By comparing equal-sized fruit, the one with the greatest weight will have the most 789
mineral content and sugar. 790
A thick skinned lemon will not be as heavy as a thin skinned lemon and will not have the 791
desired sweetness or mineral content. 792
Look at the stem end of the lemon. 793
o There are two ends on the lemon. 794
o One end has a point where the blossom started to grow; the other end has a stem 795
or a dimple where the stem used to be located. 796
o On the stem end of a highly mineralized, sweet lemon, you will see little lines 797
radiating out of the stem like sunbeams. These little lines can look like a star 798
shaped structure and is called a calyx. The calyx may have three, four, five or 799
more points to the star. The greater the number of points on the calyx, the higher 800
the mineral content of the lemon. 801
