Low Sugar Desserts
INGREDIENTS¼ cup powdered sugar1½ cups heavy cream6 semisweet chocolate squares, finely chopped6 strawberries6 frozen puff pastry shells
COOKING DIRECTIONSBake and cool pastry shells according to package directions. Combine chocolate with ¼ cup cream in a double boiler over barely simmering water, stirring occasionally until chocolate is melted. (Or melt chocolate in microwave.)
Remove double boiler pan and set aside to cool to room temperature, stirring occasionally. Combine remaining cream with powdered sugar in a chilled bowl. Beat with electric mixer until soft peaks form. Thoroughly fold half the whipped cream into chocolate mixture.
Fold in remaining whipped cream just until blended. Spoon into pastry shells. Garnish with strawberries. Refrigerate up to 1 hour before serving.

INGREDIENTS9 wooden sticks9 paper cups, about 3 oz volume1½ lb chunky applesauce¾ cup frozen grape juice concentrate, thawed
COOKING DIRECTIONSCombine juice and apple sauce in a bowl and blend well. Fill each cup with about ⅓ cup juice mixture.
Put cups in freezer. After about 1 hour of freezing, insert sticks. Freeze about 2 hours, until firm. Remove from cups to serve.

INGREDIENTS½ cup shredded coconut1 tbsp water1 cup raisins⅓ cup brown sugar⅓ cup vegetable oil4 cups dry quick cooking oats
COOKING DIRECTIONSIn a skillet or saucepan, mix together the oil, brown sugar, and water. Stir in the uncooked oats, mixing until coated. Heat over medium heat, stirring constantly, until oatmeal is slightly brown. Stir in raisins and coconut.
Remove from heat, let cool, and store in a jar with a tight-fitting lid.

INGREDIENTS4 slices lime¾ cup lime juice1 cup white rum 1 cup watermelon, puréed12 fresh mint sprigs, chopped4 cups chilled sparkling water1⅓ tbsp cherry syrup
COOKING DIRECTIONSPress the mint with the back of a fork to coat the inside of the glass. Leave the mint in the glass.
Add the watermelon purée, cherry syrup, lime juice, and rum. Stir well. Top with ice.
Top off the glass with sparkling water or club soda. Add lime wedge to the glass and serve.

INGREDIENTS1½ cups all-purpose flour⅛ tsp cayenne½ tsp salt¼ cup water1 tsp baking powder2 cups cheddar cheese, shredded, extra sharp½ cup unsalted butter
COOKING DIRECTIONSCombine flour, cayenne, salt, and baking powder in a food processor or bowl. Cut in butter until it resembles cornmeal. Stir in cheese and water until thoroughly mixed. Shape into 2 inch rolls.
Chill 30-40 minutes. Preheat oven to 400°F. Cut each roll into ¼ inch slices and arrange on ungreased cookie sheet. Bake about 10 minutes. Remove from cookie sheet and let cool.

INGREDIENTS½ tsp baking powder2 tbsp maple sugar or date sugar2 cups spelt flour1 tsp garlic powder1 tsp salt¼ cup unsalted butter, chilled and cut into pieces1 tbsp sesame seeds½ cup rice milk1 egg, beaten
COOKING DIRECTIONSPreheat oven to 400°F. Combine baking powder, sugar, spelt flour, garlic powder, and salt in a mixing bowl. Stir to mix. Drop butter pieces into the flour mixture. Using your fingertips or the tines of a fork, work butter into flour until it is very finely blended.
Combine rice milk and egg in a separate bowl and beat well. Mix into the dry ingredients and knead about 5 minutes. Roll dough out as thin as possible on a lightly floured surface. Prick dough with a fork 1at about 2 inch intervals. Sprinkle sesame seeds ce of dough. Cut into squares. Arrange squares on a lightly buttered or parchment lined baking sheet.
Bake about 10 minutes or until lightly browned. Cool

INGREDIENTS¼ lb blue cheese, crumbled, at room temperature¼ cup unsalted butter, softened1 cup all-purpose flour1 cup walnut pieces, finely chopped
COOKING DIRECTIONSCombine cheese and butter in a mixing bowl and cream until fluffy. Mix in flour and walnuts and blend thoroughly. Form into a log about 2 inch in diameter and 12 inches long.
Wrap tightly in wax paper and chill about 1 hour, until firm. Preheat oven to 375°F. Cut log into slices ¼ inch thick. Place ½ inches apart on baking sheets.
Bake 12-14 minutes, just until bottoms are lightly browned. Transfer to racks to cool.
