Welcome to our latest offering from menu matters. Given that the Christmas season is upon us, this month we’re focusing on all things festive. Included in our offers this issue is a whole ham, cooked on the bone, which is stunning and makes a fantastic centrepiece for any menu or buffet. An alternative to this ham is a roast porchetta, a cooked pork loin, wrapped in it’s own belly that is full of flavour.We are proud to launch our Prestige Collection in this issue, this is a specific offering, selected from Pallas Foods extensive range to suit our fine dining customers and offer a gustative experience.Our Salamander coffee is also included, hand blended in Ireland, this is a new departure for Pallas Foods, which has us all very excited. To complement this, we have our annual range of Christmas sweet treats to round off our seasonal dining experience. COLIN GREENSMITHExperience...“My uncle used to be a lecturer in GMIT and he still chefs from time to time, so the profession has always been in our family and it was something that appealed to me. At the age of 15, I went into local hotels and then completed the two-year Professional Cookery course in CIT. I took control of my own placements and made sure I always worked in five-star hotels and fine dining restaurants. I worked in Doyle’s in Dingle, a seafood restaurant, and then The Mustard Seed in Limerick.”
Working with Pallas Foods...“I joined Pallas Foods in 2006. My role now is very broad, but includes everything from product assessment, quality assurance and staff training. The main part of it however is our business review service.”
Helping customers... “We invite Pallas Foods’ customers to our kitchens in either Newcastle West, Limerick or our Foodservice Centre in Dublin. We go through every aspect of what they do on a day-to-day basis from menu planning, costings, staff advice,
menu design and layout and staff training. Ultimately we are trying to grow our clients’ margins. We will cost everything for our customers down to cost per plate, so there is no confusion. For example, instead of selling a piece of beef that is €14.99 a kilo, we will work it out for clients so that we know that a portion of that beef, plus garnish, sides and sauce is going to cost them €3.95 a plate. Therefore customers can work out their margin easier. It’s a very real practical exercise.”
Your favourite Pallas product...“I think our beef is second to none. Our partnership with APB is fantastic. I pick beef very narrowly over our lamb however, which is just as good. I have been to the factories and sites they are produced at and the story behind them is excellent. The quality is superb. We’ve had chefs from Michelin restaurant kitchens, who would be household names, and they’ve tasted our lamb and they are blown away by it!”
SIMON HUDSONExperience...“I started in Pallas Food in December last year, but I’ve been working as a chef for about 30 years. Previously in Ireland, I worked in the Radisson St Helens in Stillorgan for seven years, before that I was in Jury’s in Ballsbridge. In the UK, I was the head chef in Selfridfge’s department store in London, which had 17 food and beverage outlets in it and about 90 chefs that I managed.”
Working with Pallas...“My job includes helping people develop their menus, ideas, costings, to deliver products to them of high quality and to help them in desgining their menus, showing them new products and innovations in food in our kitchens with cookery demonstrations. Our sales managers invite customers into Pallas Foods after getting feedback that they want to develop their menus. I get the brief from the managers as to what they’d like to do and put together a demonstration based around that. It can be anyone from a coffee shop making sandwiches to a hotel looking to develop their wedding and banqueting services.”
Helping customers...“It is completely different from working as a chef, but it is a fantastic job. I get a lot of freedom to do and create things that I want to. It is also a really rewarding job because customers get the benefits of what you are showing them and take something away from it and implement it. We have had great feedback from customers whose menus we’ve designed and worked with them on. It’s great.

According to Bord Bia market research, turkey and ham is still the number one choice with 84% of Irish people eating it on Christmas Day.

Patrick Clement is a chef de cuisine from Brittany, France. He has spent over 30 years working as a chef in Brittany, Paris, Germany and Ireland. Patrick joined the Pallas Foods team 15 years ago and is now their Business Development and Events Manager.
“I actually started in Pallas as the telesales manager! It is funny now to think about it, but so much time has gone by. Now my job is split into two sides; on the development side, we work very closely with our customers and help them with their business, bringing them to our kitchens and working on their menus, etc. We also look to develop our product offering to customers and develop new areas and suppliers.
On the event side, I manage our exhibitions at events like CATEX and Pallas Foods Inspiration Show, where we showcase our products.”
Prestige is a new collection of fine foods available from Pallas Foods. It is the brainchild of Patrick to target fine dining customers exclusively.
