Correct application
This drawer is designed for domestic use and for use in similarenvironments by guests in hotel or motel rooms, bed & breakfastsand other typical living quarters. This does not include common/shared facilities or commercial facilities within hotels, motels or bed& breakfasts.
This drawer is not suitable for outdoor use.
The warming drawer must only be used as described in theseinstructions. Any other usage is not supported by the manufacturerand could be dangerous.
This appliance is not intended for use by persons (includingchildren) with reduced physical, sensory or mental capabilities, orlack of experience and knowledge, unless they have been givensupervision or instruction concerning its use by a person responsiblefor their safety, and are able to recognise the dangers of misuse.

Safety with children
Young children must not be allowed to use this appliance.
Older children may only use the drawer when its operation hasbeen clearly explained to them and they are able to use it safely,recognising the dangers of misuse.
Cleaning may only be carried out by older children under thesupervision of an adult.
Please supervise children in the vicinity of the drawer, and do notlet them play with it.
The warming drawer gets hot when in use and remains hot for awhile after being switched off. Keep children well away from thewarming drawer until it has cooled down and there is no danger ofburning.
Danger of suffocation! Children may be able to wrap themselves inpacking material or pull it over their head with the risk of suffocation.Keep children away from any packing material.

Technical safety
Repairs and other work by unqualified persons could bedangerous. Installation, maintenance work and repairs to electricalappliances must only be carried out by a Miele approved servicetechnician.
A damaged drawer can be dangerous. Always check for visiblesigns of damage. Never use a damaged appliance.
Reliable and safe operation of the drawer can only be assured if ithas been connected to the mains electrical supply.
The electrical safety of this appliance can only be guaranteedwhen continuity is complete between it and an effective earthingsystem. It is most important that this basic safety requirement ispresent and tested regularly and, where there is any doubt, thehousehold wiring system should be inspected by a qualifiedelectrician.
Before connecting the warming drawer to the mains supply,ensure that the connection data on the data plate (voltage andfrequency) match the mains electricity supply.This data must correspond in order to avoid the risk of damage tothe warming drawer. Consult a qualified electrician if in any doubt.
Do not connect the drawer to the mains electrical supply by amulti-socket adapter or extension lead. These are a fire hazard anddo not guarantee the required safety of the appliance.
For safety reasons, this drawer may only be used when it hasbeen built in.
This appliance must not be installed and operated in mobileinstallations (e.g. on a ship).
Never open the casing of the drawer.Touching or tampering with electrical connections or componentsand mechanical parts is highly dangerous to the user and can causeoperational faults.

The manufacturer's warranty will be invalidated if the appliance isnot repaired by a Miele approved service technician.
Faulty components must only be replaced by genuine Miele spareparts. The manufacturer can only guarantee the safety of theappliance when Miele replacement parts are used.
If the plug has been removed or the connection cable is notsupplied with a plug, the drawer must be connected to the mainssupply by a suitably qualified electrician.
If the connection cable is damaged, it must be replaced with aspecial connection cable of type H 05 RR F (rubber insulated),available from Miele, in order to avoid a hazard.
During installation, maintenance and repair work, the drawer mustbe disconnected from the mains electricity supply. It is onlycompletely isolated from the electricity supply when:
– the mains circuit breaker is switched off, or
– it is switched off at the wall socket and the plug is withdrawn fromthe socket. Do not pull the mains connection cable but the mainsplug to disconnect your appliance from the mains electricitysupply.
If the drawer is installed behind a furniture panel (e.g. a door),ensure that the door is never closed whilst the drawer is in use. Heatand moisture can build up behind a closed furniture panel and causesubsequent damage to the drawer, the housing unit and the floor. Donot close the door until the drawer has cooled down completely.

Correct use
You could burn yourself on a hot drawer or on hot crockery.Protect your hands with heat-resistant pot holders or gloves whenworking with the hot appliance. Do not let them get wet or damp, asthis causes heat to transfer through the material more quickly withthe risk of scalding or burning yourself.
Do not store any plastic containers or inflammable objects in thedrawer. They could melt or catch fire when the appliance is switchedon, causing a fire hazard.
Due to the high temperatures radiated by the drawer, nearbycombustible objects can catch fire while the appliance is in use. Donot use the warming drawer to heat the room.
Never replace the anti-slip mat supplied with the appliance withpaper kitchen towels or similar.
The telescopic runners can support a maximum load of 25 kg.Overloading or leaning or sitting on the drawer will damage thetelescopic runners.
The underside of the drawer gets hot when switched on. Becareful not to touch it when the drawer is open.
The anti-slip mat is heat-resistant up to 200 °C. It is possible for the bottom of cookware to exceed this temperature,especially after it has been used to sear food. Allow the cookware tocool down for a minute or two before placing it in the drawer.
Items made of plastic or aluminium foil will melt at hightemperatures. When keeping food warm, use only heat-resistantcontainers made of porcelain, glass, etc.
If liquids get into the appliance through the vents, it can cause ashort circuit. Take care when opening and closing the loaded drawerso that liquids do not spill over.

The "Keep food warm" function is designed to keep hot foodwarm and not to warm up cold food. Ensure food is sufficiently hotwhen placed inside the drawer.
Bacteria can develop in certain foods if the temperature is too low.Make sure that you set a high enough temperature to keep foodwarm.
Cleaning and care
Do not use a steam cleaning appliance to clean the drawer. The steam could reach electrical components and cause a shortcircuit.

Disposal of the packingmaterialThe transport and protective packaginghas been selected from materials whichare environmentally friendly fordisposal, and can normally be recycled.
Recycling the packaging reduces theuse of raw materials in themanufacturing process and alsoreduces the amount of waste in landfillsites. Ensure that any plasticwrappings, bags etc. are disposed ofsafely and kept out of the reach ofbabies and young children. Danger ofsuffocation.
Disposing of your oldapplianceElectrical and electronic appliancesoften contain valuable materials. Theyalso contain specific materials,compounds and components, whichwere essential for their correct functionand safety. These could be hazardousto human health and to the environmentif disposed of with your domestic wasteor if handled incorrectly. Please do not,therefore, dispose of your old appliancewith your household waste.
Please dispose of it at your localcommunity waste collection / recyclingcentre for electrical and electronicappliances. You are also responsible fordeleting any personal data that may bestored on the appliance prior todisposal. Please ensure that your oldappliance poses no risk to childrenwhile being stored prior to disposal.

Please stick the extra data plate forthe appliance supplied with thisdocumentation in the space providedin the "After sales service, data plate,warranty" section of this booklet.Alternatively, the additional label canbe stuck near the appliance if theappliance markings are not visibleafter installation.
Remove any protective wrapping andstickers (but not the data plate).
Cleaning the drawer for thefirst time Remove the anti-slip mat and the
rack, if present, from the drawer andclean them with warm water and alittle washing-up liquid applied with aclean sponge or clean, dampmicrofibre cloth.
Dry the mat and the rack with a softcloth.
Wipe the drawer inside and out with adamp cloth to remove any dust orleft-over packaging.
Dry all surfaces with a soft cloth.
Refit the anti-slip mat and the rack (ifapplicable) in the drawer.
Heating up the drawer for thefirst time
Heat the empty drawer for at least twohours.
Switch the drawer on by touching theOn/Off sensor.
Touch the sensor repeatedly untilthe symbol lights up.
Touch the sensor repeatedly untilthe segment on the far right-handside of the temperature display lightsup.
Touch the sensor repeatedly until2h lights up.
Close the drawer.
The drawer will switch itself offautomatically after two hours.
The drawer is fitted with a contactswitch, which ensures that the heatingelement and fan in the appliance onlywork when the drawer is closed.
The metal components have aprotective coating which may give off aslight smell when the drawer is heatedup for the first time. The smell and anyvapours will dissipate after a short time,and do not indicate a faulty connectionor appliance. Ensure that the kitchen iswell ventilated.

Operating principles
The On/Off sensor must be keptclean. Soiling or liquid on the sensorcould cause it to fail to react or toswitch the appliance on or offunintentionally.
Liquids that get inside the drawercan cause a short circuit.Open and close a loaded drawercarefully to prevent liquids fromspilling.When using the rack, ensure that it islevel and sitting on the lip at the frontand rear of the drawer. It must not beinstalled at an angle.
Open the drawer.
Touch the sensor to switch thedrawer on.
Touch the sensor repeatedly untilthe required function lights up.
Touch the sensor repeatedly untilthe segment for the requiredtemperature lights up in thetemperature display.
Touch the sensor repeatedly untilthe required duration (in hours) lightsup.
Close the drawer.

Oven functionsThe following functions are available:
– For warming cups and glasses
– For warming plates and dishes
– For keeping food warm
– For low temperature cooking
The last function selected isautomatically activated the next timethe drawer is switched on, and this isshown in the display.
The appliance has a fan whichdistributes the warm air evenlythroughout the drawer. The fan runs
– constantly when the "Warmcups/glasses" and "Warmplates/dishes" functions are in use.
– at intervals with the "Keepfood warm" and "Lowtemperature cooking" functions.
The drawer can be used to keep foodwarm at the same time as warmingplates and dishes. Use the "Keepfood warm" function for this.
Caution!The plates and dishes will takelonger to warm up with this functionthan in the "Warm plates/dishes"function, but can get very hot.
Duration
Do not leave the drawer unattendedfor too long in continuous operationmode. Keeping food warm for a longtime can result in it drying out oreven self-igniting.Your drawer is fitted with a safetyswitch-off mechanism whichswitches it off after a maximum of12 hours' continuous operation.
The drawer is set for continuousoperation mode (Exception: Lowtemperature cooking).
A limited duration can be selected bytouching the sensor. One touch for 1hour (1h), two touches for 2 hours (2h)etc., up to a maximum of 4 hours.
Continuous operation is restored bytouching the sensor a fifth time.
Temperature settingsEach function has its own temperaturerange. The factory defaultrecommended temperatures are printedin bold. The temperature can be alteredin 5° steps by touching the sensor.
The last temperature selected isautomatically activated the next timethe drawer is switched on, and this isshown in the display (Exception: Lowtemperature cooking).

Keeping food warm

In order to ensure that thetemperature does not drop below theminimum required for keeping foodwarm (65 °C), select the functiononly.
This function is for keeping food warmthat has just been cooked, i.e. foodthat is still hot. It is not for reheatingfood that has gone cold.
Select the "Keep food warm"function.
Select the desired time setting.
Pre-heat the drawer for 15 minutes toensure that it has reached the requiredtemperature for keeping food warm.
Whilst the appliance is heating up,place the empty dishes in the drawer.
Remove the pre-heated dishes fromthe drawer after 15 minutes and fillthem with the hot food. Use ovengloves to remove the dishes from thedrawer.
Then place the dishes in the drawerand close it carefully to prevent anyliquid food from spilling.
Useful tipsTo maintain your food's optimum qualityplease note the following:
– Whilst the appliance is heating up,place the empty dishes in it to warmthem up. Then place the hot food intothe pre-heated dishes.
– Do not cover roasted or fried foodswhich you want to keep crisp. Thesetypes of food need to be kept warmat a higher temperature.
– Cover liquids and food with a highmoisture content with a suitable lid orheat-resistant foil to prevent moistureescaping and condensing outside thedish.
– To avoid spillages, do not overfilldishes.
– Freshly cooked food is hotter thanfood which is being kept warm. Servefood which is being kept warm onpre-heated plates.
– Nutrients are lost when food iscooked, and continue to diminishwhen food is kept warm. The longerfood is kept warm for, the greater theloss of nutrients. Try to ensure thatfood is kept warm for as short a timeas possible.
– We do not recommend food beingkept warm for too long, as it willcontinue to cook.
– Food may cool down if the drawer isopened and closed too often.
– Do not slam the drawer open or shut.Liquids could spill over and get intothe vents or into the inner parts of thedrawer.

Useful tips– Distribute the crockery over the whole
area of the drawer. Stacks of platesheat up more slowly than individualpieces of crockery. If large stacks ofplates are unavoidable, place them atthe front of the drawer.Use the rack (depending on model).
– Do not place large serving dishesright up against the vents. They willcover the warm air outlets, and thecrockery will not heat up evenly.
– For cups and glasses, only select the function to ensure that themaximum temperature (60 °C) is notexceeded.
– Heated crockery cools down veryquickly. Do not remove it from thedrawer until just before you need it.
Heating-up timesVarious factors will affect the heating-up times:
– The material and thickness of thecrockery
– Load size
– How the crockery is arranged
– The temperature setting
It is therefore not possible to stateprecise times. However, the followinginformation can be used as a guide.
With the "Warm plates/dishes"function, it takes approx.
– 30–35 minutes for 6 place settings toheat up evenly.
– 40–45 minutes for 12 place settingsto heat up evenly.
As you use the plate warmer, you willget to know which setting suits yourown needs best.
Capacity
The telescopic runners can support25 kg.Overloading the drawer will damagethe runners.
The quantity that can be loaded willdepend to a great extent on the sizeand weight of your crockery.
ESW 6129 / ESW 6229 / ESW 6229 X:You can increase the load area by usingthe rack supplied with the appliance.Position the rack to suit. With two racksyou can increase the load area evenmore by placing one rack on the leftand the other on the right. Another rackcan be obtained from Miele (see"Optional accessories").

Low temperature cooking

Do not use the food probe froma Miele steam combination oven or aMiele oven in the food warmingdrawer.
With low temperature cooking meat iscooked at a low temperature over along period of time. Using this method,meat loses less liquid as it is cookedgently and so remains succulent andtender.
This cooking method is particularlysuitable for large and tender pieces ofmeat. The quality of the meat is of vitalimportance for a good result.
For precision we recommend using aproprietary food thermometer tomonitor the core temperature.
Core temperatureFood can be cooked in the warmingdrawer up to a core temperature of70 °C. Meat which needs to be cookedto a core temperature higher than 70 °Ccannot be cooked in the warmingdrawer.
The core temperature indicates thedegree of doneness in the middle of apiece of meat. The lower the coretemperature, the less well-done themeat is in the middle:
– 45–50 °C = rare
– 55–60 °C = medium
– 65 °C = well-done
Cooking durationThe cooking duration depends on thesize of the individual pieces of meat,and can be between 1 and 6 hours.
Pre-heat the drawer for 15 minutes toensure that the interior reaches therequired temperature.
Example: selected duration 1h
Actual operating time 1 hour 15minutes.
Notes– Use meat that has been properly
hung.
– The quality of the meat is of vitalimportance for a good result.
– The meat must be at roomtemperature. Remove it from therefrigerator approx. 1 hour beforecooking.
– Sear the meat on all sides over a highheat on the cooktop.
Low temperature cooking

Using the Low temperaturecooking function. Select the "Low Temperature"
function.
The drawer will pre-heat automaticallyfor 15 minutes and then operate at thepreset temperature and duration, e.g.85 °C for 4 hours (Setting for mediumsirloin joint, 1 kg, approx. 3 cm thick).
While the drawer is heating up, searthe meat on all sides over a high heaton the cooktop.
Put the meat in a heat-resistant dish.
Place the dish on the floor of thedrawer.
Do not use the food probe froma Miele steam combination oven or aMiele oven in the food warmingdrawer.
If you wish to use a proprietary foodthermometer:Push the food thermometer into themeat so that the tip is in the centre.Make sure that it does not come intocontact with bones or layers of fat asthese can cause a false reading.
If you wish to cook on a differentsetting, please see the table on thefollowing pages.
Select the "Low Temperature" function.
Select the desired temperature.
Select the desired duration.
Tips– Meat can be carved straight from the
oven. It does not need to rest.
– Due to the low cooking and coretemperatures, meat can be keptwarm quite safely in the applianceuntil it is served. This will not affectresults in any way.
– Serve the meat on warm plates tostop it cooling too quickly.

Note: The warming drawer can only beconnected to the CVA 680x. It is notpermitted to be connected to othercoffee machines.
The warming drawer can be set tocome on automatically before yourMiele coffee machine to ensure yourcups are the perfect temperature foryour first cup of the day. A specialconnection cable (available from Mieleas an optional accessory) is required forthis.
Please note that in coffee mode:
– The function cannot be altered.
– The duration cannot be altered.
– The safety switch-off mechanism isdeactivated.
Activating coffee modeCoffee mode can only be activatedwhen the drawer is switched off.
Connect the drawer to the coffeemachine.
Touch the sensor.
Then touch the sensor.
Continue to touch both sensors untilboth the 1h and 4h symbols in thetime display and the symbol lightup simultaneously.

Cleaning and care

Danger of injury!The steam from a steam cleaningappliance could reach electricalcomponents and cause a shortcircuit.Never use a steam cleaningappliance to clean the warmingdrawer.
Unsuitable cleaning agents candiscolour and damage the surfacesof the appliance. Only use a solutionof domestic washing-up liquid andwarm water applied with a softsponge or cloth.All surfaces are susceptible toscratching. Scratches on glasssurfaces may cause a breakage.Remove any cleaning agent residuesimmediately.
Allow the drawer to cool down to asafe temperature before cleaning.
The drawer and accessories shouldbe cleaned and dried thoroughly aftereach use.
Unsuitable cleaning agentsTo avoid damaging the surfaces of yourappliance, do not use:
– cleaning agents containing soda,ammonia, acids or chlorides,
– cleaning agents containing descalingagents,
– abrasive cleaning agents, e.g.powder cleaners and cream cleaners,
– solvent-based cleaning agents,
– stainless steel cleaning agents,
– dishwasher cleaner,
– oven sprays,
– glass cleaning agents,
– hard, abrasive sponges and brushes,e.g. pot scourers,
– sharp metal tools.

Cleaning the drawer front andinterior
The On/Off sensor must be keptclean. Soiling and liquid on the sensorcould cause it to fail to react or toswitch the appliance on or offunintentionally.
Remove all soiling using a solution ofhot water and washing-up liquidapplied with a sponge or use a clean,damp microfibre cloth.
Wipe with clean water afterwards.
After cleaning, wipe the surfaces dryusing a soft cloth.
Cleaning the anti-slip mat
Do not wash the anti-slip mat in adishwasher or washing machine.Never place the anti-slip mat in theoven to dry.
Remove the anti-slip mat forcleaning.
Clean the anti-slip mat by hand only,using warm water and a littlewashing-up liquid, and then dry witha cloth.
Do not put the anti-slip mat back intothe drawer until it is completely dry.

With the aid of the following guide, minor problems can be easily correctedwithout contacting Miele. If, after reading this guide, you can't remedy the problemyourself, please call Miele (see back cover for details).Please note, however, that a call-out charge will be applied to unnecessary servicevisits where the problem could have been rectified as described in these operatinginstructions.
Danger of injury! Installation, maintenance and repairs may only be carriedout by a suitably qualified and competent person.Repairs and other work by unqualified persons could be dangerous. Mielecannot be held liable for unauthorised work.Do not attempt to open the casing of the appliance yourself.
Problem Possible cause and remedy
The drawer does notheat up.
The appliance is not correctly plugged in andswitched on at the mains socket. Insert the plug and switch on at the socket.
The circuit breaker is defective or has tripped. Reset the circuit breaker in the mains fuse box
(minimum fuse rating - see data plate). If, afterresetting the circuit breaker in the mains fuse boxand switching the appliance back on, theappliance will still not heat up, contact a qualifiedelectrician or Miele.
The food is not hotenough.
The function for keeping food warm is notselected. Select the correct function.
The temperature setting is too low. Check that the doors have been closed properly.
The vents have been covered up. Ensure that the air can circulate freely.
The food is too hot. The function for keeping food warm is notselected. Select the correct function.
The temperature setting is too high. Select a lower temperature.

The crockery has not been allowed to heat up for asufficiently long time. Various factors will affect how long the crockery
will take to heat up (see "Warming crockery").
The crockery is too hot. The "Warm plates/dishes" or "Warm cups/glasses" function is not selected. Select the correct function.
The temperature setting is too high. Select a lower temperature.
A noise can be heardwhen the drawer is inuse.
The noise is caused by the fan which distributes theheat evenly throughout the drawer. The fan operatesat intervals when the "Keep food warm" and "Low temperature cooking" functions are beingused. This is not a fault.

Incorrect installation can result in personal injury and damageto property.
Before connecting the warming drawer to the mains supply,ensure that the connection data on the data plate (voltage andfrequency) match the mains electricity supply.This data must correspond in order to avoid the risk of damage tothe warming drawer. Consult a qualified electrician if in any doubt.
The socket and on-off switch should be easily accessible after thedrawer has been installed.
The drawer may only be installed in combination with thoseappliances quoted by Miele as being suitable. If the drawer is used incombination with other appliances, the warranty will be invalidatedas trouble-free operation cannot be guaranteed.
The base on which the drawer and the combination appliance arefitted must be fixed in place and must support the weight of bothappliances.
When building in the combination appliance, it is essential tofollow the instructions given in the operating and installationinstructions supplied with the combination appliance.
The drawer must be installed in such a way that
– the contents of crockery can be seen when opened. This is toavoid scalding from hot food spilling over.
– there is enough space for the drawer to be pulled out fully.

The drawer is available in two modelswhich differ in height. The niche sizerequired is determined by the aggregatedimensions of the warming drawer andthe combination appliance.

Check that the base on which thedrawer will sit is clean and level (usea spirit level). This is important forthe appliance to function correctly.
Push the drawer into the housing unitas far as the vapour strip and makesure it is correctly aligned in the unit.
Open the drawer and use the2 screws supplied to secure it to theside walls of the housing unit.
Build in the combination appliance inaccordance with its own specificoperating and installationinstructions.

All electrical work must be carried outby a suitably qualified and competentperson in strict accordance with currentlocal and national safety regulations.Connection should be made via aswitched socket. This will make it easierfor service technicians should theappliance need to be repaired. Theelectrical socket must be easilyaccessible after installation.
Danger of injury!Miele cannot be held liable forunauthorised installation,maintenance and repair work as thiscan be dangerous to users. Miele cannot be held liable fordamage or injury caused by incorrectinstallation, maintenance or repairwork, or by an inadequate or faultyearthing system (e.g. electric shock).If the plug has been removed or theconnection cable is not supplied witha plug, the drawer must beconnected to the mains supply by asuitably qualified electrician.If the appliance is to be hard-wired,an additional means ofdisconnection must be provided forall poles. When switched off, theremust be an all-pole contact gap of atleast 3 mm in the switch (includingswitch, fuses and relays). Connectiondata is shown on the data plate. Itmust match the mains electricalsupply.After installation, ensure that allelectrical components are shieldedand cannot be accessed by users.
