It's spring time; air is fresh, sun's out early and so are the birds. Get your short shorts out andthose colourful t-shirts, let's head out to the beach honey, even it's just for a real quick dip!Well, we all want to taste that freshness, don't we? 1. Campari Basil Mojito
INGREDIENTS:
60 ml Campari
1 tbsp Brown Sugar
45 ml Lime Juice
8 to 10 Basil leaves
Crushed Ice
DIRECTIONS:
Add brown sugar, lime juice and basil leaves (5 to 7) in a cocktail shaker.
Muddle together with a muddler until the sugar is dissolved into the lime juice and there is a nice basil scent released from the leaves.
Add Campari and stir well to combine.
Fill a Collins or other glass with crushed ice.
Pour the Campari-basil mixture over the ice and top with a splash of sparkling water. Garnish with basil leaves to serve.

2. Sparkling Ginger Mint Julep
INGREDIENTS:
1 pint Ginger Beer
60 ml Bourbon
6 to 8 Mint Leaves
Ice Cubes
DIRECTIONS:
Muddle 3-4 mint sprigs, ginger beer and bourbon together
in a glass until the mint has released its flavor (oil).
Fill the glass with ice cubes, then garnish with remaining
mint leaves.

3. Kiwi & Mint Tom Collins
INGREDIENTS:
60 ml Dry Gin
30 ml Simple Syrup
1 Kiwi Fruit - Peeled & Diced
2 Mint Leaves
Club Soda to top it off
Juice of 1 Lime
Crushed Ice
DIRECTIONS:
Muddle kiwi and mint leaves together in a Cocktail shaker.
Add this mixer in a glass filled with ice
Shake gin, simple syrup and lime juice together in Shaker
Pour over ice. Top off with club soda and give a small stir

4. Great Gatsby
INGREDIENTS:
30 ml Vodka
30 ml Lillet Blanc
45 ml freshly squeezed Grapefruit Juice
Cranberries to garnish
Ice Cubes
DIRECTIONS:
Fill half of a mixing glass with ice; add vodka, Lillet and
grapefruit juice and stir until chilled. Strain into an ice-
filled rocks glass
Garnish with a few cranberries.

5. Mint Julep
INGREDIENTS:
60 ml or 2 oz Four Roses Kentucky Straight Bourbon
6 Fresh Mint Leaves
1 tbsp Powdered Sugar or 2-3 dashes of Sugar syrup
2 tbsp Water
Crushed Ice
Mint Leaves
DIRECTIONS:
Lightly muddle mint leaves, powdered sugar and water in
a Silver Goblet.
Fill the glass with crushed ice and add bourbon.
Top with more ice and garnish with a mint sprig.
Serve the drink with a Straw

6. Cointreau Rickey
INGREDIENTS:
2 oz Cointreau
1/2 oz Freshly Squeezed Lime Juice
4 oz Club Soda
Ice Cubes
DIRECTIONS:
Pour Cointreau and lime juice into a rocks glass
Add ice. Top with club soda and stir
Garnish with a lime and orange zest.

7. Lemon-Lime Punch
INGREDIENTS:
15 ml Captain Morgan White Rum
15 ml Captain Morgan Pineapple Rum
15 ml oz Captain Morgan Coconut Rum
3/4 Cup Lemonade
1 tspFresh Lime Juice
Lime wedge for Garnish & Ice
DIRECTIONS:
Combine all ingredients in a blender.
Blend until smooth and pour into a tall glass.
Garnish with lime wedge

8. Blackberry Thyme Champagne
INGREDIENTS:
FOR THE BLACKBERRY SYRUP
1/3 cup Blackberries, 1/3 cup Water, 1/3 cup Sugar
FOR THE COCKTAIL
1 bottle of Prosecco or Champagne
FOR THE GARNISH
4 sprigs of Thyme & Blackberries
DIRECTIONS:
In a small saucepan, bring the blackberries, water and
sugar to a boil. Turn to low and let simmer for 10 minutes.
Strain blackberries and let syrup cool.
Add 2 tbsp. of syrup to the bottom of each glass. Top with
champagne and add in a sprig of thyme and 2

9. Spring Gin-Tonic
INGREDIENTS:
Lemon twist
60 ml Plymouth Gin
120 ml Tonic Water
Sprig of Rosemary
Pinch of Sea Salt
1 Caper Berry
2 Arbequina or other small, mild, aromatic olives
DIRECTIONS:
Fill a rocks glass with ice. Rub lemon twist and rosemary
sprig around rim and drop into glass.
Add a pinch of sea salt, caper berry and olives.
Add gin and stir to combine. Top with tonic.

10. Blackberry Rum Fizz
INGREDIENTS:
60 ml (2 oz) Rum | Liquor: I prefer, Bacardi Superior Rum
120 ml (4 oz) Soda Water or Sparkling Water
2 tbsp Blackberry Syrup
1 dash of Lemon Juice
Ice Cubes and Blackberries
DIRECTIONS:
Add Rum with Blackberry syrup in a shaker filled with ice.
Shake well, Strain into a glass bottom filled with ice cubes.
Fill up the glass with soda water, stir the mix.
Garnish with Blackberries and herbs (basil or tarragon).

11. White Lion
INGREDIENTS:
60 ml Bacardi Razz Rum
5 ml Orange Curacao
1 Freshly Squeezed Lime Juice
2 tbs Caster Sugar
5 ml Raspberry Syrup
Seasonal Berries and Ice Cubes
DIRECTIONS:
Add all the ingredients to cocktail shaker.
Shake well and strain into a chilled highball glass.
Garnish with seasonal berries, served with spoon to eat
berries with.

12. Spring Skinny Sipper
INGREDIENTS:
60 ml Iced Green Tea
45 ml Hendricks Gin
Splash of Ginger Ale
1 Lime Wedge
5 Mint Leaves
5 Cucumber Slices
DIRECTIONS:
Muddle the lime wedge, cucumber slices, and mint leaves
in a mixing glass.
Add gin and green tea; cover and shake.
Fill pilsner glass with ice and transfer ingredients.
Top glass with a splash of diet ginger ale or regular ginger
ale and soda water.
Garnish with lime wedge.

13. Limoncello Spritzer
INGREDIENTS:
90 ml dry White Wine
30 Limoncello
Soda water
Lemon Peel
DIRECTIONS:
Fill a Collins glass with ice.
Add white wine, limoncello, then top with soda water.
Garnish with a lemon peel.

14. Cucumber-Mint Gin-
Tonic
INGREDIENTS:
60 ml of Gin
3 Springs of Mint
Slices of Seedless English Cucumber
120 ml Tonic Water
1/4 or 1/2 Lime, Sliced (as per your taste)
Ice Cubes and 1 Cube Sugar
DIRECTIONS:
Add mint springs, sugar, lime wedges and few cucumber
slices to shaker
Muddle with a muddler of wooden spoon
Fill the glass with ice
Add gin and top of with tonic water and stir
Garnish with cucumber wedge or slice

15. Classic Mojito
INGREDIENTS:
60 ml Rum
1½ Limes, cut into wedges
10 Fresh Mint Leaves
2 tsp of Caster Sugar
1 part Soda Water/Club Soda
Ice Cubes
DIRECTIONS:
Put 4 lime wedges, palm sugar & mint into glass, muddle
to release the flavor
Use spoon to gently push the mint down into the lime
juice
Fill glass with crushed ice, then add rum
