Heat oil in a stock pot over medium-high heat. Sauté onion, celery, Italian seasoning, salt and pepper until onion and celery are tender, about 5 minutes. Stir in tomatoes with their juice, stock, sweet potatoes, carrots, cannellini beans, green beans and garlic. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until vegetables are tender, about 30 minutes. Serve with a nice, crusty bread.

ON AMERICA’S WEST COAST
Starfish are dying by the millions up and down the West Coast, leading scientists to warn of the possibility of localized extinction of some species. After months of research, scientists have identified the pathogen at the heart of the starfish wasting disease. It’s a virus that’s different from all other viruses infecting marine organisms. KCTS 9/EarthFix multimedia journalist Katie Campbell has been covering this unfolding story for more than a year.

In her original report last January, Campbell followed scientists on their initial investigations into the mysterious epidemic. She captured shocking video of sick starfish literally tearing themselves apart. The resulting KCTS 9/EarthFix story was featured nationally on PBS NewsHour. It’s been viewed online more than 1 million times, becoming the fifth most viewed video of all time on the NewHour’s YouTube channel.

In the middle of the 19th century, a young Catalan man from Blanes is sent to Galicia to manage a small anchovy salting factory that is owned by one of the many Catalans who have settled there.
As a result of a romantic disappointment and political circumstances, he stays in Galicia and ends up setting up his own anchovy factory, too. His eldest son will have to struggle as his father did,
but this time his objective will be to transform the artisanal salting business into the canning of anchovies at the beginning of the industrial revolution in 20th century Galicia.
