Micronutrients are different from macronutrients (like carbohydrates, protein and fat) because they are necessary only in very tiny amounts. Nevertheless, micronutrients are essential for good health, and micronutrient deficiencies can cause serious health problems. Micronutrients include such dietary minerals as zinc and iodine, and they are necessary for the healthy functioning of all your body's systems, from bone growth to brain function. Processed foods often lack the micronutrients that are needed to keep good body function causing micronutrient malnutrition. The processing of the foods often destroys or removes the vital micronutrients. Important nutrients such as vitamin c are only found in certain foods such as oranges and grapes. Often diets in developed countries contain high levels of fats and sugars but little micronutrients.

Eat Seasonal Vegetables

•  Instead of grabbing a bag of chips, cut up fresh veggies: red bell pepper, zucchini, and other crunchy vegetables

•  Don’t forget the dip! Avoid fat-filled dips

•  Eat fresh fruit (even in the classroom)

•  Snack as much as you want if it’s all plants (no calorie counting needed)

How do we start? •  Plan ahead to avoid desperation eating •  Do most of your shopping in produce •  Do the hardest work when you get home from the store

•  Batch cook one day a week to make sure you are set for success

•  Get back in the kitchen! !
