Every one of us at Southern Wilderness is an unashamed foodie. We also believe: presentation
matters; and wholesome tasty fare should be presented with air. We like to eat well, even when
were out in the wilderness. So with that in mind, our fresh foods menu features tempting meals
such as Thai chicken curry, lamb back-straps, and real tomato and basil pasta sauce. Supremely-
fresh salmon llets became part of our dining experience, too!
With strong shoulders and young legs and the fortuitous discovery of vacuum-packing we
discovered we could do these wonderful hikes and still sit down to delicious, fresh and healthy
food meals we would be proud to serve to our friends at home.
We also devised alternative menus for guests who have vegetarian, gluten-free or celiacrequirements. We understand food allergies are more common nowadays so as long as we know
in advance, well cater for almost all dietary needs and still keep the food tasty!
Once we changed the rules about hiking and food, we gured the term gourmet could be applied
to the way we dealt with everything else.
The Gourmet Factor at Southern Wilderness simply means we are dedicated to not only ensuring
we have a positive impact on our guests and their experiences, but also on ourselves (the crew),
the environment and the community we work within. To us, the Gourmet Factor means not
wasting time with mediocrity.

Our 4.5 and 5.5 day gourmet guided walks on the Heaphy Track are all-inclusive packages. Each night, we stay in Department of Conservation
huts where your guides prepare a fantastic gourmet meal. Our nal night
is spent in The Alpine Lodge at St Arnaud for a taste of well-deserved
luxury, including an ensuite and the option of sinking into a spa before
dining in the lodge restaurant. The following day we return to Nelson,
arriving around 11am - just in time for connecting ights or to an
opportunity to explore Nelson further.
4.5 Day OptionThe 4.5 day Heaphy Track option is for those who are a little pressed for
time, but still want to enjoy all that the Heaphy has to offer.

TRAVERSSABINE CIRCUIT
5.5 Day Option
Our 5.5 day gourmet guided hike through the Travers Sabine Circuit
is an all- inclusive package. This is a challenging ve-day hike, so its
important you have a good degree of physical tness. You will be
expected to carry a small amount of group equipment. We stay each
night in Department of Conservation Huts where your guides will prepare
fantastic gourmet meals for you. Water taxis will ferry us the length of
each of the lakes. On the return trip to Nelson we spend a night in The
Alpine Lodge for a taste of well-deserved luxury which includes anensuite and an optional soak in a spa before dining in the restaurant. The
following day we arrive in Nelson at around 11am in time for connecting
ights or an opportunity to further explore.

An amazing back country experience, this challenging
ve- day hike through the heart of the Nelson Lakes
is a journey into an untouched alpine world. Stunning
panoramic views from the Travers Saddle, ancient
beech forest and cascading waterfalls are all part of
this unique experience. There is even a chance to visit
the picturesque Blue Lake. This is a magical hike into
two majestic glacial valleys.

The Outback Safari is great for those who want an experience of a
lifetime. Each night you will be cooking over an open re and camping
under clear skies a ceiling of bright stars. Approximately half the
camps have showers and good facilities in general. Each day will involve
a drive, walk and swim. Youll be taken to unforgettable locations; see
historic Aboriginal art sites, picturesque waterfalls and meandering
creeks and canoe up the Katherine Gorge to see ancient rock formations.

pass our rigorous selection process. There is a strong focus on safety and risk management, and
only a select few make it to the interview stage. We believe all our guides are wonderful people and

First Aid training, rst aid kits, and emergency locator beacons are just a few of the comprehensive
precautions we take when heading into the wilderness. At Southern Wilderness we pride ourselves

matter what is happening around them. Safety, Fun and Education are our key principles to helping
you unwind during your time with us. The guides and other staff are always on hand to deliver
anything you may need. We pride ourselves on our Gourmet focus not just for our food, but in

WeatherThe weather in New Zealand can be very unpredictable, and change on any given day. It is
essential to be well prepared when walking anywhere in the New Zealand outdoors. You should be
prepared for cold, wind and rain at any time of the year. The guides will always carry an up-to-date
weather forecast to give an indication of likely conditions. We provide a recommended gear list
that should be followed so youre well- prepared for anything Mother Nature might throw at you!
FitnessAlmost all of our walks are graded as moderate hikes. However depending on the track youre
walking on, you will nd the surfaces vary from well-formed paths to rough terrain broken
by tree roots, rocks and mud. You will need a reasonable level of tness, agility and sense of
adventure! We encourage each of our guests to train for their walk prior to arriving in Nelson, and
were happy to offer any advice on this leading up to your departure. The tter you are, the moreyou will enjoy your walk. We encourage you to walk at your own pace during your hike. The daily
distances and times allow ample time for a relaxed pace, with plenty of rest stops.

The Gourmet FoodAll of the trips with Southern wilderness are
complete packages; from the time we depart
Nelson to the time you return, and all your
food is provided. Our menus are designed to
give you plenty of healthy wholesome food
to fuel your body throughout the hike. We puta gourmet slant on hiking in the outdoors
because we believe you should enjoy every
aspect of your holiday (not just the great
scenery and sense of accomplishment).
Local salmon, lamb and local wines can all
be part of your experience in the outdoors with
Southern Wilderness. Any special dietary
requirements are catered to. Please let us know
your needs at the time of booking.
AccommodationWhile adventuring in the wilderness we stay
in Department of Conservation Huts. These
are authentic New Zealand bush huts, and
are usually found in some amazing locations!
These huts are basic but comfortable bunk
beds, toilets, running water, a coal range and a
warm sense of comradeship are found in these
secluded getaways. There are no computers,
cell phones, faxes or electricity in these huts
and almost every guest nds the time out from
the stresses of everyday life a welcome relief!
PricesAll prices are quoted in New Zealand dollars and include the
Governments Goods and Services Tax (GST).
DeparturesTrips depart weekly over the summer, from early October through May.
Please check our website or contact us for scheduled departure dates.Alternative departure dates can be arranged on request, including winter
trips. We have fantastic custom-made tour options designed specically
to suit groups or individuals looking for something different! See our

Booking ProcessWe require a $300 per-person non-refundable deposit to secure a
booking. Payment in full is required 30 days before your trips departure
date.
CancellationsNo refunds if cancelled within 7 days of departure. 50% refund of
payments (less deposit) if cancelled within 30 days of departure. All
prices quoted are in New Zealand dollars unless otherwise stated.
Southern Wilderness reserves the right to cancel, alter or amend any
trip should the weather or any other circumstances necessitate this.
We do not accept any responsibility for any loss, damage, injury or delay.
We strongly encourage you take out comprehensive travel insurance.
