Whole lime and chilli fish Score8 prepared and gutted whole sea bass (fromthe fish counter) down to the bone several timeswith a sharp knife. Fill the slits with the slices from3 limes and a pack of fresh coriander. Rub the
outside of each fish with a spoonful ofRed ThaiCurry Paste. Drizzle 3 tbsp sesame oil over bothsides of all the fish. Cook on the hot barbecuerack (or under a hot grill) for 5-6 minutes on eachside, or until opaque and the flesh flakes easilywith a fork. Serve the fish on a platter topped withplenty of fresh coriander and basil sprigs, finelyshredded salad onions and strips of deseeded redchilli, with soy sauce and extra lime wedges onthe side. Serves 8.

Sizzling Jamaican beef skewers
3 With slightly damp hands,shape a tablespoon of themixture into a mini burger.Repeat with the rest of the
mixture to make 24 falafels.Put onto a plate, cover andchill for at least 20 minutesor for up to 24 hours.4 When chilled and readyto cook, place a piece offoil (about 30 x 40cm) onto a medium-temperaturepart of the barbecue rackand spray with a generousamount of olive oil. Leavethe foil to warm up for acouple of minutes.5 Cook the falafel in asingle layer for about 3-4minutes on each side, untilgolden. Meanwhile, swirlthe harissa into the yogurt.Warm the pittas or tortillason the barbecue for aminute on each side, thenfill with the watercress,falafel, remaining feta andharissa yogurt to serve.

Summer berry fruity jelly
1 Put 200g (7oz) strawberries,125g (4oz) raspberries and80g (3oz) blueberries in amedium pan with the sugar,lemon juice and 700ml (1pts)
cold water. Warm gently untilthe sugar dissolves and theliquid starts to simmer.2 Cover and simmer until thefruit is very soft (5 minutes).3 Meanwhile, put the gelatineleaves in a bowl and cover withcold water. Leave to stand for5-10 minutes until soft.4 Strain the hot juice through asieve into a bowl dont press
the fruit through the sieve, asthis will turn the jelly cloudy.5 Squeeze any excess waterfrom the gelatine and addthe leaves to the hot juice.
Stir until completely dissolvedthen mix in the cordial. Leaveto cool to room temperature.6 Pour a third of the jellymixture into a 2-litre jellymould. Scatter with a thirdof the remaining fruit. Coverand place in the fridge for30 minutes or until lightly set.7 Pour over half of the rest ofthe jelly mix; scatter with half

mixed fruit (try pineapple, argemango,strawberries, bananasandkiwis) into 2-3cm chunks (keep thestrawberries whole, removing thetops), peeling and removing stoneswhere necessary. DC: Oh thats easy! It was when Igave my daughter Nancy a karaoke
machine one that links to the internet. SoI was singing a Beatles song and realisingit was going very, very badly. I discovered

DC:Oh gosh, have a holiday! Whatwould I do? Well, I helped my neighbour
with his lambing this weekend and I must saythat gave me more pleasure than anything Ivedone for a long time. He lost one of his ewes andso we were bottle-feeding some lambs. Then asheep got stuck in a swamp. Shed gone in torescue her lambs. We all jumped in up to ourwaists and helped get the ewe out and shes
been named Swampy. Im not sayingIm going to be a farmer, but I do
love the countryside.
Whatlegacywould you like to
leave behind for your children?DC: I thinka country that is fairer,
thats kinder, where people give more. I wouldhope that...we can build a bigger society, where
people feel they can play a larger part. Its not justwhat you get out, its what you put back in. I see in allsorts of ways the Olympics were a classic example that even in difficult times, this is an amazing countrywhere people are incredibly generous, compassionate,tolerant and decent. We just need more of thatbecause [it represents] the sort of society we should
be trying to build. And its what all of you [theMum of the Year 2013 winners] in your
different ways have been doing.

I thought anyone whocan be that passionate about someone who died 100years ago He made it exciting and interesting and I
can still remember what his lessons were like. He hada great sense of humour and would do things that
teachers arent allowed to now. If you werentconcentrating this wooden block would fly

DC:Weve made somepromises about maintainingfunding at the elite level,which I think is importantbecause those elite
Paralympic athletes sendsuch a signal to everybodyelse. At the school-sportlevel and communityfunding weve got somemore work to do to get
that right.We will shortly be making
an announcement but Ithink its about taking theimmense achievement andsaying lets keep going anddo that all over again andmake sure were even moreinclusive in sport than wehave been up to now. I thinkwe proved that Paralympicevents can be the match
of mainstream sportingevents and so we shouldsay to other sportingorganisations, have youthought about that?

DC: One of the reasonspeople dont volunteer as
much as they would like,I feel, is taking that firststep. People think, Id liketo, but who do I ring? Whatdo I do? Will I be goodenough? There are also
issues about liability andbureaucracy, which we aredealing with. Its now easierto set up a street party andhold a fundraiser. Weve gotrid of a lot of red tape. I thinkone thing we need to doisget youngsters right at thestart while theyre in school.

DC: I dont think that itshould be either directpayments or goodinstitutional care for thosewho need it. You need tohave, particularly for themost severely disabled,high-quality institutional
care for those familieswho cant copeany moreat home.Sometimes itjust becomesimpossible.And Ive hadconstituencycases like this.Loving mumswho gave upeverything fortheir children,but [forwhom], in theend, the condition was justso extreme the whole familywas breaking down,and some element ofinstitutional care wasimportant.
So you need to have
that institutional care. But
I would argue that thesystem of whats calledindividual budgets and directpayments is a good system.Because the individual
budget means you try tobring together everythingthat your child needs, andthe direct payment meansthat you should get as muchof that as you want in a cashpayment to you, so you canthen arrange the things thatyou need whether its gettingsome respite care here orgetting a nurse over there.

crowds. I went to watchmy team, Villa, being beateneight-nil by Chelsea theother day and when youlook around the idea ofreplacing seats with standingwould have all sorts ofdangers so there are noplans to do that.

And then we want to putmore power in the hands ofparents, whether its throughindividual budgets anddirect payments, so yourein command. We are alsochanging the statementingprocess to make it moreinclusive of additionalthings, other than education.
I just think theidea of morevolunteering andmore communities
coming together tofix problems themore the better.

It may sound odd, but its something
you can make the night beore to savetime in the morning, advises registered

Try egg and low-at mayo, chutney
with a little low-at grated cheese, or

can lead to aches and pains, says Sammy. And being sedentary is bad news for
health. So keep moving little and often during your day (small breaks and simple
stretching recommended!) and youll reverse that C-shape posture. Make it
more fun by having a competition with your colleagues to see who can say
stretch time first. Why not do it at 12pm and 430pm, too? Heres just one easy
stretch to try: standing or sitting, interlink your fingers behind your back and

815amFitness firstWhether on the school run or your way to
work, get out first thing, urges Sammy.
The light exposure helps set your body
clock so youll feel awake and sleepy at the
right times. Youll also be fitting in some
exercise early on. You dont need to do a30-minute session or get to a gym research
shows small bouts of exercise can be just
as effective. Try three 10-minute daily bouts
of exercise where youre breathing harder
than usual (like brisk walking) and youll
be getting the recommended amount of
moderate-intensity activity for adults for

pressure and reduce your risk of heart
disease is to eat less salt, says Carina.
Check labels more than 15g salt per
100g is high*. Plus fruit can help
protect your whole cardiovascular
system (heart, lungs and blood
vessels), thanks to the antioxidants
they contain. So if hunger strikes
mid-morning, choose fruit over salty
snacks. Making tweaks like this to your
diet is easier and more effective than
setting yourself a vague goal such as
I will eat healthily. Together, theyll
help reduce your risk of developing
health issues such as Type 2 diabetes
and a stroke.
3.30pm Stand up!Whether youre waiting for thephotocopier or the bus,
standing presents a great body-shaping opportunity, says
Dean Hodgkin, fitness expert at Energie Fitness Clubs and
spa Ragdale Hall. Clench your buttocks to tone without
anyone realising, he suggests. Also, lift one leg very slightly
off the floor, and fix your balance this strengthens your
core muscles and pulls in your tummy (so you look slimmer
over time). If youre waiting for the kettle to boil, try some
squats. All these movements add up to big gains.
1pmGet out!We all mean to do it, but a break fromwork at lunch is so important. Its an
ideal time to get some exercise and also
your fill of vitamin D. Around 10 to 15
minutes of daily sunshine on your bare
arms, which youll get walking around
outside, should be all you need, says
Dr Modgil. Just be aware that the time in
the sun youll personally require depends
on factors such as skin type, and dont
allow your skin to redden or burn.
Finally, it gives you a chance to get
away from your morning mentally, says
Dr Modgil. Find a quiet place even if
its for five to 10 minutes and take in
your surroundings rather than overly
thinking. Such breaks (preferably mid-
morning and afternoon too) can have a
massive impact on mental health and
your ability to handle stressful events.
1 .30pmCast-iron lunchTry to incorporate some iron-rich foods
in your lunch, says Carina. The latest
National Diet and Nutrition Survey**
revealed that the intakes of 22 per cent
of women in the UK are seriously
deficient in this mineral, which could
lead to the weakness and breathlessness
associated with anaemia. Good sources
include lean red meat, beans and
lentils. You could eat a lean beef and
salad sandwich on wholegrain bread,
or a bean salad or wrap. Drink pure
orange juice at the same time its
vitamin C boosts your absorption of
vegetarian iron sources. And bear in
mind, Your lunch should ideally always
contain some lean protein, slow-release
carbs such as brown pasta and two
portions of fruit or veg.
4pm TacklehungerTopping up your
energy levels with a healthy snack
mid-afternoon helps you keep awayfrom cakes and biscuits, says Carina.A combination of slow-release carbswith some protein works best. Try acouple of oatcakes with low-fat cottagecheese, or a thin spreading of peanutbutter. Though whenever you feel theneed to snack, its always helpful toask yourself whether you really arehungry or perhapsbored or stressed.

is a bedtime routine to help you
wind down from your hectic day,

To help you relax your mind
before you sleep, take yourself
somewhere you cant see to-do
tasks, even if its the bathroom,
says Dr Modgil. Then just sit for five
minutes. Close your eyes and simply
be aware of where you are. Noticing
how long it feels will help you realise
how much of the day you spend

But research from the University of Illinois suggeststhat kids who share family meals at least three times a week are morelikely to eat healthy foods and have good eating habits. Try to ensure everyone gets a say you could even turn it into a gamewith a conversation jar of topics or questions. And for an easy way toeat a healthy dinner that wont increase your waistline, Fill up withvegetables, says Carina. Have a protein portion the size of your palm,cover most of your plate with veggies, and put starchy carbohydrates such as potatoes or rice on the remaining third of the plate.

Take time to see your friends and family.
Try to make an arrangement once or
twice a week and set them up so you
have a months worth planned in
advance, says Dr Modgil. Connecting
with your loved ones provides the right
balance with your work life, makes you
feel good, builds self-esteem and can
also help lower depression.

positionPosture is
key for a good
nights sleep,
says Sammy. Its about making sure your
body is supported correctly so it doesnt
twist and therefore strain your back, hips or
neck. Try this trick to ensure you start off in
the right position: if you sleep on your side,
place a normal-sized pillow between your
knees; on your back, place it under your
knees; on your front, put a pillow under your
tummy. Lastly, try to go to bed and get up
at the same time each day without makingit too early or too late, so you have a
consistent routine, and ensure you get the
optimal amount of sleep for you. Though it
can vary, on average, most adults seem to
need between six to eight hours.
