person for the job will give an open ear to everyone. “The most important thing is that I want to make a home for myself here,” he said. “A lot of local kids do, so we have to make sure it remains a great place to live, with lots of opportunity.”

That sentiment is echoed by Preston, who with his wife Gillian Flies operates the organic New Farm. His passion is sustainability, something he learned about while studying international development at McGill University, got his hands dirty trying to implement during a decade of democracy building in Africa, and has become intimate with running a successful business as an organic farmer.

“The farming business is all about sustainability – both environmental and financial,” he said. “And I believe local politics is no different. We need to work hard to build a sustainable community that’s based on the amazing assets we have here. Agriculture, tourism, recreation, the information economy… all of that we need to focus on, so that people choose to live here,

so we continue to have kids in our schools and our sports leagues.”

Another contender in the race is Dave Huskinson. A financial planner and independent businessman in the area for over 25 years, Huskinson has acted as a watchdog at Council, first as the Ward 4 Representative for The Clearview Township Ratepayers Association, then as its president (he

multiple candidates make for good government left that position earlier this year). His observations have left him with many ideas for the municipality’s future growth, communications and fiscal responsibility. He says the time has come for him to affect the Township from the inside.

“We need new blood and to get other people’s ideas,” said Huskinson. He would, however, like to see some of the current Council members remain. For that reason, Huskinson has chosen to run outside of his own ward because he would like to work alongside Ward 4’s only candidate to date, the incumbent Thom Paterson. He says he is happy to be part of a vigorous race. “A competitive election makes for good government.”

Marc Royal agrees with Huskinson that the number of candidates is healthy. The last of the incumbents to file, Royal said he was a little behind the rest of Council in stating his intentions to run because he had to really make certain that he could balance the needs of his constituents, the Township as a whole and his position as a coordinator at Pilkington

by Sara HershoffWhen Carol and Steve Sperandeo

decided to return to the restaurant business just over a year ago they had a long list of requirements to meet. First among them was the type of community they would settle in with their sons Marcello (19) and Charlie (9).

When, in the fall of 2009, they heard about the long-established Old Mill House restaurant being for sale they decided to check out the village of Creemore.

The first thing that struck them about the area was the natural beauty of the place. The rolling hills and views made them feel like they were enjoying a Tuscan vacation. They continued with subsequent visits and each one made the them feel more and more like this was the place to be. “The gates of this village just opened up for us,” said Carol and by April they had relocated and were ready to get going on their newly acquired endeavour.

Since taking over the Old Mill House – or the pub – as it is best known on May third of this year the Sperandeos say the community and the business has exceeded their expectations. They are elated with the way Creemore has received their family and want to reflect that warmth

of community to all their customers – both local and visitors to the area. “We want this place to be comfortable and welcoming – like home,” says Carol.

Knowing that the pub has been a “home” to many for years Carol says they are planning to keep all of the best things about the place while adding their own flare and applying the experience she and Steve have from running Ciao, a collection of three Toronto restaurants, in the 80s and 90s.

Current changes include a tweaking of the décor, using family recipes for soups and pasta sauces and the most recent is the addition of Karaoke Mondays. As a trained actress Carol loved the idea of live entertainment, so with two sons keenly interested in music production and a talented lot of regulars, this home-spun fun seemed like the easiest way to get started. This event, along with a special food features will be ongoing weekly and more may be added.

Carol says they will continue to listen to their customers, after all they are who matters most, and in so doing the Sperandeos hope to cement the Old Mill’s position as a gathering place, with a “real pub atmosphere”, in a community they plan to call home for a long time to come.

Glass in Collingwood. He has come to the conclusion that he can and is ready to serve another term.

“I want to represent my neighbours, no matter who they are,” said Royal, explaining that building bridges within his ward and all of Clearview will be his goal. “I believe that there are many voices to be heard.”

Though not as hotly contested, races are also shaping up in Ward 5 (Sunnidale Corners), with Robert Walker seeking re-election against David Witzke, and Ward 6 (New Lowell), where Deborah Bronée is running for the seat held by incumbent Roger McGillvray. Christopher Vanderkruys o f Brentwood will be running against Mayor Ken Ferguson and Deputy Mayor Alicia Savage is being challenged by Stayner’s Eric Jelinski. Four incumbents remain uncontested at this point – Doug Measures in Ward 1 (Nottawa), Orville Brown in Ward 2 (Duntroon), Thom Paterson in Ward 4 (Creemore) and Shawn Davidson in Ward 7 (Stayner).

The deadline for filing nominations is 2 pm on September 10.

The Way We Were

2010 WINNER

Sometimes a tractor is more than a tractor This week Muriel Day dropped by the Creemore

Echo office with a special tea set. The china was awarded to her mother, Mildred Wilson, sometime in the 1930s by The Creemore Star as a thank you for her work generating new subscriptions to the paper. Muriel says the tea service sat in a place of honour in the china cabinet and does not recall the set ever being used. Muriel, whose mother was the award winner in the Banda area thinks that other ladies, perhaps from Creemore, Lavender or Dunedin were given similar china, marked with only a “Made in Japan” stamp, for their boosting of the local paper. If you have a set, she would like to know.

As a totally self serving aside, the Creemore Echo is always accepting subscriptions but sorry – there is no fine china here.

The Dunedin Tractor Rally is one of our favourite events of the year. Not only is it the most photogenic, with the bright coloured machinery all shined up and ready to hit the trails, it is also a reminder.

It is a reminder of the hard working people and equipment that built this community and deserve our deepest respect. It is a reminder of how we should all care for the tools we rely on to get our jobs done each day. And as those old metal workhorses climb up the hills of Creemore it is a reminder that sometimes the slow road can take you where you really want to be.

The jovial nature of Jamie Adam, who puts the whole event together, is also a reminder that with a laugh and a smile the best is brought out in our community. Thank you Jamie.

The Collingwood G&M Hospital has recently been awarded Accreditation status with Accreditation Canada following an intensive and rigorous on-site evaluation of patient care delivery. The review is a voluntary process which the G&M Hospital undergoes every three years as part of its commitment to patient safety, continuous improvement, accountability and transparency. The G&M scored 96% after a three day survey looking at 31 required organizational practices such as patient identification, medication reconciliation, falls prevention and infection control.

All 455 staff members, as well as G&M volunteers and physicians were involved in gearing up for Accreditation Canada’s thorough review and assessment of every aspect of the care and services they deliver. The goal is to measure in detail how the G&M stacks up against national standards for the delivery of health care to five municipalities and a very high volume of visitors to the Hospital. Accreditation is granted by Accreditation Canada, a national non-profit, independent organization.

Shelley Wells, new Chair of the G&M Hospital’s

Board of Trustees, says, “Accreditation plays a vital role in fostering quality health care at the G&M. Hospital accreditation is a recognized component to achieve a high standard of patient safety for residents and visitors to the G&M.”

Accreditation is very much a team based process and the G&M’s tireless team leader, Anita Chevalier says, “The process for an organization to be accredited is extremely rigorous. Our patient care teams continuously evaluate and change initiatives to ensure our care meets high quality standards. The assessment report that followed accreditation congratulated the hospital on our excellent care and practices and highlighted the dedication of our staff, physicians and volunteers. The G&M is pleased to be recognized with our Accreditation award and will continue to ensure we meet these high standards in our provision of care to our communities.”

Residents and visitors to Clearview Township, can be confident their community hospital is working very hard to provide the best possible care and service when they need it most.

This was our 12 noon pot luck lunch, so after Bob Veale gave the blessing, we all filled our plates and dug in to a delicious meal. We had a couple of welcome guests – Mr and Mrs Ron Johnston, from Golden, B.C. joined us for lunch. Ron is May Johnston’s son, and he stayed and played cards for the afternoon. We also had June and Doug Murray return after a long hiatus – but just for cards in the afternoon.

It was very warm in the Legion today, but once they got the temperature adjusted, it was much more livable. So thanks to Norm Nordstrom and Chris Jones for their expertise. Ted underhill swears that it is all that hot air from people talking that raises the temperature. This could have a grain of truth to it except, if this were true, it would be too hot in there every Thursday afternoon!

After a couple of cute jokes by irma Flack, the 50/50 draws went to Barb Cudmore, Audrey Tidd, Jim Rigney, Charlie Fines, Charlie Donaghey, Marg Ferguson, Barb Pilon and irene Dolson.

Moon shots were played by Charlie Donaghey, Karl Seifert, Jim Rigney, Mercedes Veinot, Earl Bentley, Roy Veinot, Lillian Hiltz, Laura Connor (2) and Bob Veale. Bob took the travelling prize, and Jim took the Sidewinder’s loot.

High scorers were Marg Ferguson 289, irma Flack 266, Sheila Fenton 259 and May Johnston 258. Low was Alinda Bishop with 78. The hidden score was 113, and as it was not won, next week it will be worth a whopping $ 20.

Condolences goes out to our son-in-law Bryce Rowe and his family on

the passing of his sister, Lynn Bottenheimer of Manitoba, who suffered a fatal stroke. She was only 60 years of age. Also sympathy goes out to Lynn’s mother, isobell Rowe, and to Lynn’s husband Bill and their daughters Kim and

Tara, and also their two grandchildren. I also apologize for being remiss in not sending our condolences to the family of Audrey Joslin of Creemore who passed away on July 5th. The Joslins were a military family, and when they were posted to Camp Borden they took up residence in Creemore in the early 1960s or a bit earlier, and raised their family here. The younger kids all went to school here, and they have had businesses in the area, and have married into local families and settled in this area. So to this well known family, my apologies for being so tardy in tendering our condolences.

I have heard a nice few comments on the superb photo of the July 1st fireworks that was printed on the front page of the July 9th Echo. Warren’s sister, Mary Dolomont, even phoned here from Cape Breton to say she had never seen a better shot of fireworks. It sure was spectacular, and in checking the credits, I discovered (I should have known!) that Bryan Davies of Creemore was the photographer. I said I “should have known” because Bryan was the photographer that took passport photos of Bob and Edith Veale a couple of years ago, and they were so well done that the passport inspectors commented on the quality. So – another area in Creemore where we are fortunate enough to have the best.

We would like to thank Helena

Hayward from New Lowell, who writes the Angus news that is published in the Alliston Herald for her well worded mention of Creemore Senior’s Rama bus trips. This has been a great help for us, and we sure appreciate your tucking this info in your column. It is obviously very well read as several of my calls have started out with the caller saying “I read about your upcoming Rama trip in the Alliston paper.” So thanks again, Helena, for an excellent job of getting the information out. Another gal that deserves a pat on the back and a “Thank you” is our own Janice Stephens. Janice goes out and picks berries, peas, etc, for seniors or for folks that cannot manage to pick

them themselves. I don’t know what Janice charges, but it obviously ends up with the food costing less this way than by buying it already picked.

Karl and Alma Seifert, a man and wife, come to Seniors regularly. They are good card players with a great sense of humour – and they are a lot of fun to be around. I can see where Alma would have to have a really good sense of humour, or else she and Karl would have been divorced years ago. You see, to hear Karl tell it, he once invited his wife out for a seven course meal on their anniversary. The kicker was when she discovered that the “seven course meal” was really a hot dog and a six pack!

Please drop by to join us at the Creemore B r a n c h a s we play and learn in the TD Summer R e a d i n g Programs that Amy and Jen have organized for Fridays during the summer holidays. There are three different age-specific sessions throughout the day and it seems like everybody is thoroughly enjoying themselves at these Story Hours.

We will also have a presence at the Gathering of the Classics at the Edenvale Aerodrome on Saturday, August 7th. Over 200 aircraft, 250 classic cars and thousands of people attended this heritage aviation event last year and this year. We will be featuring the book – First In and Last Out, The RCAF Women’s Division and

Notice of Study Completion Creemore East Drainage Study

Class Environmental Assessment Study

The Study Clearview Township has undertaken a Class Environmental Assessment (EA) in order to improve drainage and reduce flooding in the eastern portion of the community of Creemore. The study area location is shown on the map below. Four alternative solutions to address the problem were considered including: the “Do nothing” alternative; Manage Community Growth; Local Drainage System Maintenance; and Rehabilitation and Expansion of the Existing Drainage System. The four alternatives were evaluated based on the potential impacts to the natural and socio-economic / cultural environments as well as financial and technical factors. The preferred alternative is to rehabilitate the existing drainage network, establish a storm water system in Mary Street, extend a Southern Conveyance pipe and ditch to the Mad River via Concession 3, and improve the Eastern Conveyance capacity to better utilize the existing Airport Road crossing.

The Process This notice signals the completion of the Class EA. The study is being carried out in accordance with the planning and design process for Schedule ‘B’ projects as outlined in the Municipal Class Environmental Assessment (October 2000, as amended in 2007) document. A Notice of Commencement was issued on September 8, 2006 inviting comments and notifying the public of the Public Information Centre, which was held on September 28, 2006.

Cleaning

There are probably many readers out there who are extremely familiar with the food preparation method called blanching. Vegetables (and some fruits) are blanched before freezing to help preserve their colour and texture. Blanching also helps loosen the skins for peeling. With fresh summer veggies popping up everywhere from our own backyards to the Creemore Farmers’ Market, blanching is a recognized way to preserve and save all that garden goodness for great eating later on.

For those of you not so familiar with blanching, here’s a quick cooking lesson. Bring a large saucepan of water to a boil. While waiting for the water to boil, fill a large bowl or second saucepan with cold water and add some ice cubes to it. Carefully place items to be blanched into the boiling water. Blanching times will vary from 1 minute (smaller, thinner vegetables) to about 5 minutes (rounder, larger items like peaches, etc.). Carefully remove items with a slotted spoon and place them in the ice water for 5 minutes. Remove from ice water,

pat dry and then freeze. For further details, there are lots of internet sites which will guide you more thoroughly through the process. Just type in “blanching foods” and you’ll find lots of help.

This week’s recipe gives you the opportunity to try

your hand at blanching. Gazpacho is perfect for a hot summer day. It’s basically a cold vegetable soup of Spanish origin, using fresh tomatoes as a base. It can be puréed completely or left chunky. I’ve seen it referred to as “liquid salad” so it’s a great way to get your daily veggies in. My recipe is a twist on the regular tomato gazpacho, using fresh peaches for sweetness, and jalapeno, hot sauce and cilantro for some added zing. And even better, it gets served in a large martini glass rimmed with spicy flavour. What’s not to like about that? So make up a batch this week, and then chill out on your deck with a Gazpacho Martini while waiting for the barbeque to heat up.

Peach Gazpacho Martinis Serves 63 ripe peaches, blanched and peeled1 jalapeno pepper, diced (seeds removed)1/4 teaspoon hot sauce2/3 cup peach nectar2 tablespoons fresh lime juice1/4 teaspoon fresh ground black pepper 3 medium size tomatoes, cut into large chunks1/2 cup chopped fresh cilantro2 tablespoons ground cuminFresh cracked black pepper (rough grind)1 lime cut into 8 wedges (2 for rimmer, 6 for garnish)To blanch peaches: bring a large saucepan of water to a boil. While waiting

for the water to boil, fill a large bowl or second saucepan with cold water and add some ice cubes to it. With a sharp knife, make an X on the end of each peach, just cutting through the skin. Carefully place peaches into the boiling water and blanch for 5 minutes. Carefully remove peaches with a slotted spoon and place them in the ice water for 5 minutes. Remove carefully and peel away the skins by starting at the X, then cut the peaches into quarters and trim away from the pits. Place peaches, diced jalapeno and hot sauce into a food processor or blender. Process until mixture is puréed. Add peach nectar, lime juice and fresh ground black pepper; process again until smooth. Add tomato chunks and chopped cilantro. Pulse until either: a) the mixture is processed but still chunky, or b) the mixture is totally puréed. Cover and refrigerate until cold.

To serve: Use large martini glasses as your soup bowls. Pour 2 tablespoons cumin and 1 tablespoon cracked black pepper on a sandwich plate. Rub one

martini glass rim with a wedge of lime and then invert onto the plate to coat the edges of the glass with the spice mixture. Repeat for all glasses.

Pour gazpacho in large martini glasses. Garnish with lime wedge and serve. There are two ways of enjoying this dish. You can eat it with a spoon (like a regular soup) or drink it like a martini.

Happy belated birthday to Carm, we are rooting for you to make a hundred and at the rate you are going I am sure you will. The gentleman born on April 23, 1920, has lived a busy life. Born and raised on a farm near Creemore, he attended County Rd 2 school until grade eight. From there it was the Creemore Continuation School, as it was known in 1939 when he acquired grade thirteen.

Embarking on a home study course in Electronics, it was completed at Toronto College. During 1941 Carm enlisted in the RCAF as an Aero Engine Mechanic, at the Technical Training school outside of St. Thomas Ontario. This modernized facility equipped with leaded windows and marble floors was the brain child of Premier Mitch Hepburn. It was originally designed as a facility for the mentally challenged however but due to World War II and the capacity to interact with several thousand people it was made available to the Air Force as a training centre. After posting to Edmonton, Alberta Carm worked on water bombers. Having always desired to be a pilot and after qualifying, Carm was struck with an illness that precluded his plans for flying a plane, so he chose Air Navigator instead. At the conclusion of the 120 hours of flying time and five years of serving his country Carm accepted his discharge with the rank of Sergeant.

Returning home he lived on the homestead farm until it was sold, and in 1946 he became a valued member of the Legion, eventually occupying the office of President followed by District Governor in 1959 for a two year commitment. It is always Carm who at the Remembrance Day Service at the Legion, calls the roll of those

who have served their country and never returned.

An active member of the Masonic Lodge, A.F. and A.M. since 1970 he is also a Shriner. There are probably those in Creemore who will remember having their income tax returns prepared by Carm. 1960 was an important year inasmuch that he met a lady by the name of Margaret Elliott while

playing bingo, which turn out to be the win for the night as he married her. May, as she was known by her friends, was originally from Saskatoon and had lost her husband to cancer. Within the atmosphere of matrimonial bliss Carm adopted her four children.

Those children went on to provide Carm with three grandchildren. Regrettably May passed away two years ago. Since that time Leisureworld Caregiving Centre is where Carm has made his home. An avid supporter of the Anglican Church, he fondly remembers Reverend Gill, who on occasion invited him to participate as a lay reader. In addition to being a member of the choir when at special events his fine tenor voice was a delight to the congregation.

Highly respected by his community, Carm was a member of the Creemore Town Council for thirteen years during which time he was employed by the LCBO, his employer of twenty-five years. He still speaks with pride of his 1986 Lincoln Town Car that has seem many miles by traversing the country.

Congratulations, Carm, you have made us proud with the distinction of a productive life including many accomplishments. We wish you success with your first self-published book, Generally Speaking which should be

that when he won a sweepstakes a few years ago amounting to to one hundred thousand dollars, contributed in considerable measure to the perks of his normal lifestyle.

Good stuff Carm, keep on trucking and if I were in your shoes I’d be looking for a red Mustang the would surely attract some of Creemore’s ladies while cruising the main drag of our famous town. You never know, an attractive blonde may be waiting for a man of your status.
