On a breezy midday morning, Karen Beach, is bakingcoconut crème pies from an old family recipe in akitchen ringed in windows.
Nine people are coming for dinner, which is the RoundTop way, she says, especially on the long, lovely summerevenings.
The house sits on five acres of woodland – some landscaped,some wild – with dozens of oaks, rosemary, and bushes ofknockout roses in the front.
From the kitchen windows, you can see the fishpond wheredeer nibble at the feeder and rabbits pause for a morningdrink.

Karen Beach’s backyard is park-like. A flagstone path leads to the pond.
There’s the earthy smell of fresh cut grass and the heavenlyaroma of pies in the oven.
It’s no wonder that when friends from Houston come for aweekend visit, they don’t want to leave.
“The minute you walk in the door, it's like everythingcalms down and slows down and gets more relaxed. Eventhough I do a lot when I’m here, it's what I enjoy doing so itisn’t stressful,” she says.
Beach was raised in Port Neches and lived most of heradult life in Los Angeles and Houston. She began coming to
Round Top and Marburger years ago for the antique showsand eventually rented a place through friends she met in thesmall community.
She enjoyed the ease of country living and it wasn’t longbefore she bought her own place off Highway 237 about aquarter mile from Marburger. It’s a Round Top address aboutan hour-and-a-half drive from her Houston home.
The soft green two-story house with a classic metal roof --often overflowing with company -- has five bed-, rooms, fourbaths, and a total of 2,800 square feet of living space. The

original part of the housewas built in the late 1800sbut additions were madeover time to make it a liv-able size.
“When my contractor,David Levy, drove up fromHouston to look at thehouse, he told me: “You’regoing to need more storagein the kitchen.”
The structural changesthat followed made thehouse more functional. Levyadded kitchen shelving,reconfigured the laundryroom, added a screened out-door dining area, and anoth-er bathroom to the secondfloor.
The design and furnish-ings of the 13-room retreatare by Beach’s own dictate –

The living and dining areas are a continuous space, visually separated by an old rustic beam.
The kitchen with its extra wall of storage features a backdrop of multi-colored bead board. It was discovered by builder Jacqueline Ditsler at a dealer tent in the “fields” during a Round Top antiques fair.

all represent what especially appeals to her and what is com-fortable. Interior walls are painted in white or pale greens, andshe displays a few of her favorite French antiques from JoyceHorn in Houston and other local dealers.
One of her favorite paintings, a longhorn she calls Studly,hangs in the living room. It’s by local artist Dorothy Littlewho sometimes comes to dinner. Beach also has two land-scapes by the late artist Doris Steider.
“My favorite room is my bedroom because it’s so peace-ful,” she says.
Beach has linen curtains next to her queenside bed and acurvy dove gray chest by Aiden Gray. By the bed is an area rugfrom Ballard Designs with French phrases in italics.
The walls are a restful green called Grassland from SherwinWilliams.
Most popular with her guests is the light-bathed kitchenwhere friends can sit at the wide wood island and visit whileBeach makes her tasty fare. The tops of wine barrels add aFrench country flavor and the multicolored bead board, pur-chased in the fields at the antique fair, was stripped just

Homemade CoconutCream Pie To Die ForHere’s what you need:2 cups of milk, 1 cup of sugar, 3 egg yolks, 2 tablespoons (heaping)cornstarch, 4 tablespoons of butter, 1/4 teaspoon salt, 1 teaspoongood vanilla, 1 cup of coconut, whipping cream, and a nine-inch pieshell
Here’s how you make it:Mix sugar and cornstarch. Add milk and egg yolks. Cook over low heatstirring constantly with a whisk. When the mixture thickens, switch to awooden spoon. Cook until it is very thick to prevent lumping. Removefrom heat and add butter, salt, vanilla and coconut.
Let it cool and then pour into the baked pie shell.
To make the pie shell:Two cups of flour, 1 teaspoon salt, 3/4 cups Crisco; five tablespoonsof ice cold water.
Mix flour and salt in a bowl, cut in Crisco using a pastry cutter.Sprinkle water one tablespoon at a time. Mixing lightly until a ballforms. Roll out with a rolling pin. Put in a pie pan. Bake it at 425 untilgolden (about 15 minutes.) Bon appétit.

Outdoors in the park-like setting, Beach opted for whitegravel and bright green St. Augustine nearest the house. Aflagstone path leads to the fishpond.
This is the preferred haunt of her French bulldogs, Bogieand Cooper, who are chastised for occasionally chasing therabbits that nibble the lawn.
Stephen Grochett, of Bluebonnet Landscaping inHouston, keeps the foliage tidy and tame in contrast to thewilder areas.
“Round Top is an unusual place with an interesting mix ofpeople. I am never bored when I’m here. There are wonderfulconcerts in the summer, and many friendly gatherings. It is avery social place,” she says.
Her T-shirt says it all: “London, Paris, Rome, RoundTop.”
The sheet of mirrors expands the dining room. It was a find at JoyceHorn Antiques in Houston.
