EQUIPMENT & APPLIANCES STORAGE & LABELLING COLOUR CODE GLUTEN FREE PASTA KITCHEN SECTIONS KEEP THINGS SEPARATE

Ensure appliances, utensils and equipment are cleaned and free from traces of gluten – in particular, chopping boards, toasters, salamanders, grills, spoons, tongs, mixers and mixing bowls.

Once removed from packaging, store gluten free and gluten containing products in clearly labelled, separate sealed containers. Store gluten free products on shelves above gluten containing products.

Use colour coded gloves for preparation of gluten free menu items.

Use fresh water in a clean pot for cooking or re-heating gluten free pasta. Use a clean strainer for gluten free pasta or strain it before gluten containing products.

Where possible keep a section of the kitchen for gluten free food preparation only.

Use separate butter and condiment containers to prevent gluten containing crumb contamination.

AVOID DUSTING FLOUR DISPLAYING & SERVING DEEP FRYER STAFF TRAINING MENU

Don’t dust meats or fish with wheat flour prior to cooking.

Display gluten free and glutenproducts separately, always with gluten free items placed above. Use separate utensils for serving gluten containing and gluten free items.

Consider a separate deep fryer to prevent crumb contamination.

Train all staff on the importance of gluten and specifically on the content of the entire menu, including daily specials.

Use symbols or notes on the menu to clearly identify items without gluten or highlight potential gluten cross contamination.

Sausage and Mash with Gravy

Case Size: 2 x 1.7kgYield per pack: 26 Litres

Serves 10 primary school aged pupils

Ingredients10 pork and leek gluten free sausages500g green beans

For the Gravy65g Maggi® Gluten Free Vegetarian Gravy1L water

For the Mash200g Maggi® Mashed Potato Flakes1L boiling water

Method:1. Oven roast the gluten free sausages

at 180˚C for 30 minutes until cooked through.

2. Place the green beans in boiling water and simmer for 10 minutes until tender.

3. For the gravy, bring 1L of water to a boil, remove from heat and whisk in 65g gravy mix, and simmer for 2 minutes.

4. To make the mash, whisk the Maggi® Mashed Potato Flakes into the hot water until combined. Leave to stand 1 minute and re-stir before serving.

Plate one pork and leek gluten free sausage per person with a portion of mash and green beans. Finish with Maggi® Gluten Free Vegetarian Gravy.

Maggi® Gluten Free Mashed Potato FlakesA premium dehydrated mix packed with quality potatoes and pre-seasoned to deliver delicious buttery mash every time.

Cottage Pie

Case Size: 2 x 4kgYield per pack: 200 x 120g servings

Method:1. Preheat the oven to 200°C, 400°F, Gas Mark 6.

2. Whisk the mashed potato flakes into the boiling water until combined. Set aside and re-stir before use.

3. Heat the oil in a large pan and fry the onions, celery and carrot for 5 minutes, then add the minced beef and cook for 10 minutes until browned.

4. Stir in the corn flour, then the remaining ingredients, season with black pepper and continue to gently cook for 15 minutes.

5. Divide the mixture evenly between 10 20cm pie dishes and top with the mash mixture. Bake for 20-30 minutes until golden brown.

Place roasted cherry tomatoes on top of each pie for eye-catching presentation. Brush a vine of tomatoes with olive oil and roast in a hot oven for 30-40 minutes.

Coconut Milk Powder Tips

l Use in soups, sauces, curries, as well as cakes, desserts and drinks.

l Can be made into coconut milk or cream for Asian and Caribbean dishes.

l Mix with Maggi® Asian Liquid Concentrate and pour over gluten free rice noodles and vegetables for a quick and easy pho pot.

Indian Chicken and Chickpea Curry

Case Size: 6 x 1kgYield per pack: 5 litres of coconut milk or 3 litres coconut cream

Serves 10 primary school aged pupils

Ingredients1tbsp. vegetable oil

2 (300g) onions, diced

3 cloves garlic, crushed

150g mild curry paste

15ml Maggi® Chicken Liquid Concentrate600g chicken breast, diced

500g Maggi® Rich & Rustic Tomato Sauce

400g tin chickpeas, drained and rinsed

60g Maggi® Coconut Milk Powder140ml water

150ml natural yoghurt

40g coriander, chopped

450g brown rice

Method:1. Heat the oil and onions in a large saucepan over a

medium heat. Cook gently until the onions are softened and beginning to brown. Add the garlic and cook for a further 2-3 minutes.

2. Stir in the curry paste and chicken liquid concentrated and cook for 5 minutes, then add the chicken breast and cook for a further 10 minutes.

3. Pour in the Maggi® Rich and Rustic, chickpeas, coconut milk powder, water and three quarters of the natural yoghurt. Simmer for a further 15 minutes to infuse the flavours.

4. Cook the rice according to instructions on pack.

5. Just before serving stir the fresh coriander into the curry.

6. To finish, drizzle the remaining natural yoghurt over the curry and serve with the rice.

Braised Sausage & Butterbean Casserole

Method:1. Prick the sausages all over with a fork. This helps the

fry the sausages until golden, turning often. Remove the sausages and set aside.

3. Add the chopped onion to the casserole dish and cook over a low heat for 5 minutes until the onions are slightly soft. Add the garlic and paprika and cook for another minute.

4. Add the chopped potatoes, carrots, Maggi Rich and Rustic, water, chicken liquid concentrate, butterbeans and bay leaves. Bring to a simmer then return the sausages to the dish.

5. Cook in an oven preheated to 180°C/Fan 160°C/Gas Mark 4 for 45 minutes or until the potatoes and carrots are fully cooked. Serve with chopped parsley.
