Leading is establishing direction and influencing others to follow that direction willingly
An individual’s motivations stem from energizing forces : within the individual(needs, attitudes,
interests, and perceptions) and within the organization(rewards, tasks,
coworkers, supervisors, communication, and feedback).
Leadership-Motivation History of motivational theories Abraham Maslow pada tahun 1954
Menurut teori hierarki kebutuhan Maslow, seseorang termotivasi oleh keinginannya memenuhi kebutuhan khususnya. Maslow mengatakan bahwa hanya suatu
ketidakpuasan yang menimbulkan tingkah laku yang termotivasi. Ketika sebuah kebutuhan sudah terpuaskan, tidak lagi menjadi motivator utama. Kebutuhan yang lebih tinggi tidak dapat menjadi tekanan untuk memotivasi sampai kebutuhan yang lebih dasar sudah terpenuhi. Pada akhirnya seseorang akan menaiki tingkatan hierarki kepuasan tersebut.
Kebutuhan manusia disusun dalam tingkatan hierarki :
kebutuhan psikologis dan biologis (makanan, tempat berlindung, sex, istirahat, udara, air, dan pakaian)
kebutuhan akan rasa aman (perlindungan dari kejahatan, keamanan, kebebasan dari rasa takut, dan hukum)
kebutuhan sosial (rasa cinta dan pertemanan), kebutuhan akan penghargaan (status, penghargaan, dan pengakuan)
kebutuhan akan aktualisasi diri (perkembangan diri dan realisasi potensi).
Teori motivasi kedua yang didasarkan pada kebutuhan diprakarsai oleh McClelland pada tahun 1961.
Teori penghargaan motivasi menganggap sebuah organisasi menawarkan kesempatan pada individu untuk memuaskan tiga kebutuhan, yaitu : kebutuhan akan kekuatan, kebutuhan akan penghargaan, dan kebutuhan akan hubungan.
Bergantung pada kebutuhan khusus masing – masing individu, mereka akan termotivasi oleh tugas yang menyediakan kesempatan untuk mencapai kebutuhannya.
Maslow dan Mc Clelland mendasarkan teori mereka pada perbedaan antar manusia. Sebagai perbandingan, teori organisasi untuk motivasi menekankan unsur tugas dengan sedikit perhatian pada perbedaan tiap individu.
Teori dual-factor atau teori motivation-hygiene milik Herzberg pada tahun 1959
Faktor – faktor seperti penghargaan, pengakuan, tanggung jawab, kesempatan untuk kenaikan pangkat, dan pekerjaan itu sendiri adalah motivator
Faktor – faktor seperti kebijakan perusahaan, pengawasan, gaji, kondisi pekerjaan, dan hubungan interpersonal sebagai faktor hygiene.
Faktor hygiene tidak memotivasi tetapi dengan mudah mencegah ketidakpuasan dan bertindak sebagai sebuah persyaratan untuk memotivasi oleh motivator.

Second theory of motivation based on organizational factors
people will perform in order to receive rewards and avoid punishment
Expectancy theory combines interaction of the two :
individual factors and organizational factors
people make decisions about their behavior on the expectation that the choice they make is more likely to lead to a needed or desired outcome.
The relationship between behavior and outcome is affected in complex ways by individual and organizational factors.

Myths of motivation1.Memungkinkan bagi seorang manager untuk memotivasi
pekerja. Tidak selalu. Motivasi harus datang dari dalam. Seorang manager hanya
dapat menciptakan lingkungan sehingga para pekerja memotivasi diri mereka sendiri.
2. Uang adalah motivator yang baik. Tidak selalu. Tingkat kepuasan terendah contohnya adalah uang, jaminan
pekerjaan, dan fasilitas yang memuaskan dapat membantu para pekerja yang kuramg termotivasi, tetapi tidak membuat mereka menjadi lebih termotivasi.
3. Ketakutan adalah motivator yang baik. Ketakutan adalah motivator jangka pendek yang baik tetapi apabila terlalu
sering akan menjadi de-motivator untuk jangka panjang.4. Apa yang memotivasi saya sebagai manager akan
memotivasi staf saya juga. Orang yang berbeda akan termotivasi oleh hal yang berbeda dan hal
tersebut dapat berubah seiring dengan berjalannya waktu. Manager harus mengetahui apa yang memotivasi tiap pekerjanya.
Basic principles to remember when attempting to create an environment conducive to self-motivation:
1.Work to align the goals of the organization with the goals of employees.
Allow employees to identify their own goals.2.Work to understand what really
motivates each employee. This can be done by asking them, listening
to them, and observing them.
3. Recognize that supporting employee motivation is an ongoing process to sustain
a motivational environment in ever-changing organizations.
4. Support employee motivation with organizational systems such as policies and procedures to help ensure clear understanding and equitable treatment
Leadership vs Management
Leadership is the activity of influencing other people’s behavior toward the achievement of desired objectives.
Management is the function of running an organization by effectively and efficiently integrating and coordinating resources in order to achieve desired objectives.
Effective Leadership
(1)The capacity to engage people and draw them to a compelling vision of what is possible;
(2)The ability to communicate their vision in a way that allows people to make it their own and give it personal meaning;
(3)Trust, total reliability, and integrity, as well as the performance of actions that are congruent with their vision;
(4)The possession of high regard for self and others
Effective Leadership Empowers People by1. Making them feel significant, 2. Focusing on their developing
competence rather than their failures,
3. Creating a shared sense of community,
4. Making work exciting and worthy of dedicated commitment.
As a leader, the foodservice manager must empower employees by clearly communicating the organization’s mission, accepting the responsibility for leading the group, and earning employees’ trust.
The Traditional Leadership Role Early theories of leadership :
scientific management, in which a leader’s role was to motivate employees with rewards of money, and
human relations theory, in which a leader improved productivity by showing an interest in the employee as an individual.

Newer Approaches to Leadership Situational management theory
holds that effectiveness as a leader depends on the characteristics of the leader and the subordinates as well as the situational variables involved.

The contingency theory of leadership holds that there is no one “best” style of leadership but that style must be adjusted to fit the situation.
Leaders acquire power from their ability to reward and punish, position in the organization, expertise, and personal characteristics.
Types of power1. Kekuatan paksaan-Coercive power: Bawahan percaya bahwa pemimpin memiliki kekuasaan untuk
menghukum mereka dan hukuman tersebut tidak menyenangkan, seperti pengurangan upah, penurunan jabatan atau diberhentikan, atau persetujuan untuk melakukan tugas yang tidak menyenangkan.
2. Kekuatan hadiah- Reward power : Bawahan percaya bahwa pemimpin memiliki kekuasaan untuk
memberi mereka hadiah dan hadiah tersebut menyenangkan, seperti kenaikan upah, kenaikan jabatan, atau persetujuan untuk melakukan tugas penting.
3. Kekuatan yang sah- Legitimate power : Bawahan percaya bahwa pemimpin memiliki kekuasaan untuk
memberi perintah karena posisinya di dalam organisasi.4. Kekuatan ahli- Expert power : Bawahan percaya bahwa pemimpin memiliki keahlian atau
pengetahuan yang dapat membantu mereka5. Kekuatan karisma- Referent or charismatic power : Bawahan percaya bahwa pemimpin memiliki karisma atau karakter
personal yang menimbulkan kekaguman dan respek yang membuat mereka mengikuti pimpinan tersebut.
Communication
Communication, or the constant development of understanding among people, is central to leadership effectiveness.
Effective communicationKomunikasi yang efektif artinya terjadi kesuksesan mentransfer informasi, pengertian, dan pemahaman dari pengirim kepada penerima. Tidak diperlukan terjadinya persetujuan, namun harus timbul rasa saling pengertian yang satu sama lain untuk mempertimbangkan kesuksesan.
Types of communication include oral, written, visual aids, body language, facial expressions, gestures, and actions.
The effectiveness of communication can be improved by using multiple forms of communication.
Barriers to effective communication can be overcome by being aware of their existence and employing some of the suggested techniques and improving communication.
In this era of constant change, an understanding of change management is critical to leadership effectiveness. A good leader systematically faces the challenges presented by the ever-changing conditions in the foodservice industry.
Persons in foodservice management positions should accept as a personal philosophy that their human resources are their greatest assets and that to improve their value is not only a material advantage but a moral obligation as well.
