INTRODUCTIONIn your hands you have 20 fantastic rum cocktail recipes made by some of the best bartenders. You don't have to be an expert behind a bar to be successful with these recipes – a big part of making a great cocktail begins with good ingredients!

Skotlander White Rum has won ”Best in Class” at the Miami Rum Festival, which basically means it's a world champion white rum. So that's a good start. For the darker cocktails we use Skotlander Cask Rum. It is called ”Cask” because it is aged in oak barrels - and that's how it got its darker color. Feel free to replace the Skotlander Rum with a different brand, but be critical in your choice. Quality goes a long way – not only for the rum, but also for your fruits, syrups, berries and herbs. You'll need a few bar tools: A shaker (or a big jar), a small strainer, a muddler and different types of glasses. And then you will need all the ice you can get. For each cocktail you make, you easily use 10 – 15 ice cubes and you don't want to run out of ice. Or lime juice. Or simple syrup. You'll be surprised how much you need once you get the party started!

Rum Sour6 cl Skotlander White Rum3 cl freshly squeezed lime juice1.5 cl simple syrup (page 36)1 cl egg whitesLots of ice cubesLime zest for garnish

Pour all of the ingredients (no ice) into the shaker and give it a good shake for about 10 seconds. Add ice cubes and shake for another 15 seconds. Strain into a cocktail glass and garnish with a peel of lime zest.

Mojito5 cl Skotlander White Rum1 lime (cut into quarters)8 mint leaves (plus extra for garnish)4 teaspoons of cane sugar3 cl club sodaLots of crushed ice

Muddle lime and cane sugar in a highball glass. Add Skotlander White Rum, mint leaves and fill up ¹/³ of the glass with crushed ice. Slowly stir with a teaspoon to spread the aromas. Add a bit of club soda and top it off with extra crushed ice. Garnish with mint leaves.

Strawberry Daiquiri 6 cl Skotlander White Rum6 fresh strawberries (plus extra for garnish)2 cl freshly squeezed lime juice3 cl simple syrup (page 36)Lots of ice cubes

Muddle the strawberries, then add the rest of the ingredients to the shaker and shake well for 30 seconds. Strain into a cocktail glass and garnish with a fresh strawberry.

Raspberry Daiquiri 6 cl Skotlander White Rum10 fresh raspberries (plus extra for garnish)2 cl freshly squeezed lime juice3 cl simple syrup (page 36)Lots of ice cubes

Muddle the raspberries, then add the rest of the ingredients to the shaker and shake well for 30 seconds. Strain into a cocktail glass and garnish with a fresh raspberry.

Fill up a highball glass with cherry ice cubes (frozen cherry juice) and pour into the Skotlander White Rum and the chocolate milk. Stir slowly and garnish with a cherry.

Fill a highball glass with ice cubes and mix all the ingredients. Garnish with a slice of apple or fresh ginger.

Pour all of the ingredients into the shaker, add ice and shake for 30 seconds. Strain everything into a highball glass, add some more ice and garnish with a small leaf of the pineapple stem.

Fill up a highball glass with ice cubes, mix the ingredients and slowly stir. Garnish with a piece of lime.

Muddle the sugar snaps. Mix all of the ingredients (except for the ginger ale) with ice and shake for 30 seconds. Strain into a cocktail glass and add a bit of ginger ale. Garnish with freshly ground black pepper.

Fill a lowball glass with ice cubes. Mix all the ingredients and stir gently. Garnish with an elderflower.

Muddle the fresh ginger. Mix all the ingredients with ice and shake for 30 seconds. Strain into a lowball glass filled with ice cubes. Garnish with a peel of lemon zest.

Fill a lowball glass with ice cubes. Add the two ingredients and stir slowly. Garnish with a couple of fresh sea buckthorn (optional).

Københavnerstang3 cl Skotlander White Rum1.5 cl Galliano 4.5 cl freshly squeezed pineapple juice1 teaspoon cane sugar with fresh vanilla seeds Whipped creamLots of ice cubes

Stir the cane sugar and the vanilla seeds into the rum until it dissolves. Add Galliano, pineapple juice and ice cubes and shake. Strain into a lowball glass with ice cubes and top it off with a dollop of whipped cream. Recipe by: Sjoenne.com/barskab

Grilled Orange Cocktail 6 cl Skotlander White Rum1 orangeGrill or cooking torch2 cl Aperol 1 cl simple syrup (page 36)3-4 large dashes of Angostura Orange 4-5 leaves of pineapple sageLots of ice cubes

Grill half an orange until it caramelizes and muddle it with the rest of the ingredients. Strain into a lowball glass half filled with ice cubes. Garnish with a bit of pineapple sage and a peel of orange zest.

Skotlander Cooler3 cl Skotlander White Rum1.5 cl simple syrup (page 36)1.5 cl dry white wine1.5 cl freshly squeezed lime juice3 cl club sodaLots of ice cubes

Mix all the ingredients (except from club soda) with ice cubes and shake for 30 seconds. Strain into a white wine glass with ice cubes and top it off with club soda. Twist a big peel of lemon zest over the glass and then add as garnish.

Fill a lowball glass with ice cubes. Add the ingredients and slowly stir. Garnish with a small leaf of rose hip.

Treacle6 cl Skotlander Cask Rum2 teaspoons maple syrup1 dash Angostura Bitter3 cl cold pressed apple juiceLemon zestLots of ice cubes

Mix the maple syrup with Angostura Bitter in a lowball glass filled with ice cubes. Add half of the rum and stir gently to mix the aromas. Add the rest of the rum, more ice and stir again. Add the apple juice and stir a final time. Top off with extra ice cubes and then twist a big peel of lemon zest over the glass before you add it as garnish.

Mix all of the ingredients with ice and shake for 30 seconds. Strain into a cocktail glass and garnish with cinnamon.

Mix the ingredients with ice and stir well for 30 seconds. Strain into a cocktail glass and twist a big peel of orange zest over the glass before you add as garnish.

Vanilla SyrupMix equal parts of sugar and boiling water in a bottle. Add a vanilla pod. Leave it to cool.

Elderflower CordialApprox 0.5 liter

1 liter of water 350 g caster sugar0.5 liter elderflower (flowers without the green stems)2 lemons (juice and zest)

Dissolve the sugar into boiling water. Pour it over the flowers and the sliced lemons and lemon juice. Leave it in the refrigerator to steep for three days (stir 1-3 times a day). Strain the liquid and you're ready!

Hip Rose CordialApprox 1.5 liters

100 g hip rose leaves 2 liters of water 200 g caster sugar1 vanilla podJuice of 1 lemonJuice of 1 lime

Let hip rose leaves and water boil for 5 minutes. Strain it through a clean dishcloth. Add sugar and vanilla and boil for another 10 minutes. Keep boiling if you want a thicker syrup. Adjust the flavor with lemon and lime juice until you're happy with it. Leave it to cool.

Sea Buckthorn Cordial500 g sea buckthorn5 dl of water 700 g caster sugar

Boil the cleaned sea buckthorn until they burst. Mix it to a pulp using a blender and add the sugar. Boil again until the sugar has melted and then strain through a dishcloth. Pour the liquid into clean bottles.

Cold Brewed Coffee250 g coffee beans (ground for french press)1 liter of mineral water

Slowly pour the mineral water over the ground coffee. Cover it and leave for 24 hours. First strain it through an ordinary strainer. Then strain it again through a dishcloth or a paper towel. It might take some time, but it'll be worth the while. This fantastic cold brewed coffee can be stored in a jar in the refrigerator for up to two weeks.
