    BCSSI Hosts 2009 Annual Meeting

    BCSSI hosted its 2009 annualmeeting in January. Boardmembers, staff and specialguests enjoyed the opportunity tohear about the agencyssuccesses as well as theagencys goals for 2010.

    Calcium and Vitamin D It isrecommended that women overthe age of 65 get at least1500mg of calcium each day.

    Those over the age of 65 shouldalso be getting between 600 and1000IU of Vitamin D every dayto help get the most out of thecalcium you take. Ask yourdoctor or pharmacist forrecommendations.

    Prescription TreatmentsSeveral prescription medications

    are available to help treatosteoporosis. If you are alreadytaking one, its important toremember to take it with a fullglass of water and not to liedown for 30 minutes. Somecommon names of thesemedications include Fosamax,Boniva, and Actonel.

    FallsBe extra careful,especially in the wintertimesince osteoporosis makes you

    more likely to break a bone ifyou fall down. If you can, try toavoid medications that canmake you lightheaded or that

    make you lose your balance.Be sure to ask your doctor orpharmacist before starting anynew over-the-countermedications.

    Bone Density ScansIf youare over the age of 65 youshould get your bone densitychecked every 3-5 years. Be

    sure not to miss your annualphysical!

    Many people enjoy containergardening for the simple easeand convenience of plantingflower gardens in containers orpots. While temperatures remaincool and theweather stays

    iffy, choosecold-tolerantflowers suchas Pansies,Violas, AnnualDianthus,Stocks, Tulips,Daffodils andHyacinths.

    To create your own specialspring container garden,assemble the followingsupplies:

    Large decorative containerorpot. Make sure the bottomhas drainage holes.

    Soil

    Selected flowersTrowel

    Watering can

    Steps to Create a SpringContainer Garden:

    Follow these steps to create yourown unique spring containergarden:

    1.

    Fill the container approximately2/3 full with soil.2. Choose your spring flowers.3. Place the largest ones in the

    center of the pot and theshorter ones around the rim.You can also group the tallerones towards the back of thepot, placing smaller onesdecreasing in size as they

    move towards the front.4. When you're satisfied with the

    arrangement, remove theplants from their pots andplace the plant with the soiland roots facing down in thepot.

    5. Place all your plants, thenusing the trowel place more

    soil around the roots6. Once your pot is completed,water thoroughly.

    BCSSI SpotlightCarl Corson

    Carol Corson has been avolunteer for BCSSI since itopened in 1978. His name andface might be familiar to someBoone County residents becausehis wife, the late Margot Corson,was the founder and firstExecutive Director of BCSSI.When Margot opened BCSSI,Carl was the chief handyman.He installed carpet, built furnitureand did whatever it took to makethe newly formed agency (thelittle blue house on LebanonStreet) a success. He alsoserved as the computer

    programmer. When asked whathe remembers most about theearly years of BCSSI he

    commented that every eveninghe and Margot would discussthe challenges and successes ofthe day over a glass of wine.Carl also commented on theincredible growth of BCSSI over

    the past 31 years.

    Carl and Margot moved fromIndianapolis to Boone County inthe early 70s because hewanted to live in the country.They had two daughters,Jocelyn and Jennifer. Carlretired in 1994 after working forRobinson & Associates formany years where he designedand sold computer equipment.

    Today, Carl enjoys visiting hisdaughters and threegrandchildren. He also enjoysgardening and woodworking.Carl is still assisting the agencywith its computer database

    needs.

    Mixed Italian SaladSubmitted by Lori Cravens, Zionsville

    1 red pepper, dicedFresh French style green beans,

    snapped in half1/2 cup feta cheese crumbles1/3 cup pecans, roasted in oven1 bag mixed salad greens

    1/2 head iceberg lettuce, torn2 baby cucumbers, thin sliced1 envelope Good Seasons garlic

    and herb dressing mix(use red wine vinegar inplace of cider vinegar)

    Mix first seven ingredients. Make dressing and apply to salad about30 minutes before serving. This allows dressing to marinate thesalad ingredients. Also good with chopped green onions and/ordried berries. Makes 8 servings.

    Easter Egg Salad

    1 tsp. salt1/2 Tbsp. powdered mustard2 Tbsp. Melted shortening3/4 cup light cream1 Tbsp. Worcestershire Sauce1/2 cup green pepper, chopped

    pepper, salt, chicory,

    mayonnaise

    2 cups shell-shaped macaronimeasured before cooking

    1 Tbsp. sugar2 Tbsp. flour1 egg1/4 cup vinegar2 cups celery, diced

    Liquid from 1 can pimientosSift together salt, sugar, mustard and flour; add shortening. Mix to asmooth paste. Add beaten egg and cream. Stir and cook untilthickened. Remove and add cooked/drained macaroni. Add vinegar,Worcestershire sauce, celery, green peppers, pimiento liquid, and dashof pepper and salt. Mix well and press into a melon mold. Chill;unmold, garnish. Decorate with mayonnaise (colored yellow).

    Marshas Bloody Mary MixSubmitted by Marsha Truitt, Lebanon

    2 large cans tomato juice1 cup lemon juice1/2 cup simple syrup or Karo

    syrup

    1/4 cup Worchester sauce4-5 dashes of hot sauceCelery salt and black pepper to

    taste

    Instant Millionaire Pie for Diabetics

    1 (9 inch) prepared grahamcracker crust

    1 (1 ounce) package sugar-freeinstant vanilla pudding mix

    1 cup cold milk

    1 (8 ounce) can crushedpineapple, drained

    1 (8 ounce) container frozenwhipped topping, thawed

    1 cup chopped pecans

    In medium bowl, mix together pudding mix and milk.

    Fold in pineapple, whipped topping and pecans.Pour mixture into prepared crust. Chill at least 2hours before serving. Makes 8 servings.

    Mama Stambergs Cranberry RelishSubmitted by Rick Whiteman, Zionsville

    2 cups Cranberries, raw1 small onion1/2 cup sugar

    3/4 cup sour cream2 Tbsp. white horseradish

    (prepared)

    Grind onion and Cranberries together. Add all the other ingredientsand mix well. Put in a plastic container and freeze. One hour beforeserving, move to the refrigerator to soften. Color of relish will be a

    shocking pink color. Makes 6 servings.
