“FOR THE RESIDENTS, BY THE RESIDENTS” Happy New Year January 2011
A new year 2011, a time to look back over your shoulder and
see all the things we have done, things we have experienced
and those moments that we did things that made a difference.
Now we have an opportunity to look forward to a new year, a
new beginning.
Instead of setting goals or resolutions that we seem to break
soon after we made them, maybe we could look at the good
things that we can do and make them even better.
In year 2011, think that good things will happen. Express
gratitude to those around you. Put your gripes away in a box
and forget them. Be patient and forgiving with everyone
around you. Do something special for yourself. Reach out to
someone who needs comfort. Focus deeply one moment each
day. Work at not being critical of others but more
understanding.
There is a song that says, “We are all in the same boat brother.
You rock it too far to the right you fall in the waddah, rock it
too far to the left you fall in the same waddah, and it’s just as
wet on both sides.”

residents to help voice issues and concerns to be
brought to management.
Do you have a plan to make Southfork a better place to
socialize in? Do you want “change?” Do you have any
community events that you wish you had more
influence over? Do you have any ideas you’d like to
see implemented? Are you on a committee or a board
member and would like to have more prominence?
Here’s an opportunity to become more active in our
community. So, don’t sit back and complain after the
fact, come and join the forces!!!!
As a board member, your voice will be heard and
counted on for important issues and also being on a
committee will help anything that affects our community
association.
Please come forward as a member before the January
24th annual membership meeting, because your votes
count. Please help to make this a better community.
Let your voice be heard. Use your expertise and talents
to help our community. Volunteer for a committee today
if you don’t want to be on the board!
REMEMBER – you must have your dues of $20.00
paid by January 15th, 2011 in order to vote or be on any

A Last Word on Communication
A Minnesota couple decided to go to Florida to thaw out during a particularly icy winter. They planned to
stay at the same hotel where they spent their honeymoon 20 years earlier.
Because of hectic schedules, it was difficult to coordinate their travel schedules. So, the husband left
Minnesota and flew to Florida on Thursday, with his wife flying down the following day.
The husband checked into the hotel. There was a computer in his room, so he decided to send an email to
his wife. However, he accidentally left out one letter in her email address, and without realizing his error,
sent the email.
Meanwhile, somewhere in Houston, a widow had just returned home from her husband’s funeral. He was a
minister who was called home to glory following a heart attack. The widow decided to check her email
expecting messages from relatives and friends. After reading the first message, she gasped and fainted…..
The widow’s son rushed into the room, found his mother on the floor, and saw the computer screen which
read:

Subject: I’ve arrived
Date: October 16, 2010
I know you’re surprised to hear from me. They have computers here now and you are allowed to send
emails to your loved ones. I’ve just arrived and have been checked in.
I’ve seen that everything has been prepared for your arrival tomorrow.
Looking forward to seeing you then!!!!!! Hope your journey is as uneventful as mine was.
P.S. Be prepared, IT’S VERY HOT DOWN HERE!

Take Heed in your driving here in Southfork
On Friday, December 10,2010 a resident was coming from her home on Ewing and turned onto Wilds Road coming
to the clubhouse and did one of those short stops and then made her right turn. Lo and Behold there was a cop car
and stopped her and just gave her a warning. He did ask to see her drivers license which she did not have on her and
told her to carry it on her at all times in case of an accident. They would at least know who she was and where she
lived. So be careful because it is a county road!!!!!

Well, time flies when you are having fun. Another year has about come and gone.
We have accomplished a lot this year and I sincerely hope that we can accomplish as
much next year. I have had a lot of very nice compliments and I really appreciate them.
Sandie and I have not taken a vacation for three (3) years, so I think we will take a couple
of weeks over the holidays and visit our kids up in Georgia. Both daughters have new
homes that we haven’t seen yet, so we will kill 2 birds with one stone. We want to wish
all a very Merry Christmas and a Happy and Prosperous New Year.
We will be putting a large dumpster in for a month again this winter, but please, DO NOT
and I repeat, DO NOT throw away any of the following in it…..Batteries, Paint, TV”S
and Appliances. However, broken furniture, bedding etc. are allowed. Any items not
allowed may be taken to East Pasco Transfer Station, located @ 9626 Handcart Rd, from
7am to 5pm Monday thru Saturday.
I have posted Pasco County’s Rules on the bulletin board for your information.

2011 Association Dues Increase
At our recent Association meeting on Monday, December 13th, the membership voted to have the
Annual Dues which have been $15.00 since 1994, raised to an annual fee of $20.00. A chart
was shown on the cost increase of many items and the annual dues pay for many things such as
Kitchen Supplies, Insurance fee, State Fee, Various events with entertainment at no cost to the
residents, Office supplies, Purchase of equipment and much more that is not designated here.
A lot of residents don’t understand that to run a successful Association there are costs involved
and this extra $5.00 could help in many ways. Thanks for your understanding!

Dear Southfork Family,
Happy 2011!!!! Our Association Board met with Scott Heiler, Paul Johnston and Norm Spence on December 9th,
2010 for our Annual Management/Board/Association meeting. Our meeting was one of the very best annual
meetings.
Scott Heiler called me the following day to thank the Board and so that I could announce the GOOD NEWS at our
December 13th, membership meeting.
The most important item is that Scott has agreed to meet with the Board in August to negotiate the rent increase for
2012.
There will be new carpeting installed, ceiling tiles replaced and improved electrical outlets in the Club House.
A large dumpster will be placed in the RV section for one month in the near future. There will be restrictions of
items to be placed in the dumpster. Please cooperate.
Pictures and information of Homes For Sale By Owner may be posted in the library. A sign will be posted in the hall
way indicating where the information is available.
The additional $51.24 County Water Shed tax was explained. You may remember that the county eliminated the
personal property tax on garage, utility buildings and carports a few years ago. The water shed tax replaces that tax,
so that EVERY home in Pasco County is taxed. In their wisdom, they passed the responsibility of collecting that tax
to the Mobile Home Management to collect. We will attempt to have a County Commissioner at our next meeting.
Thanks to the members, who attended our membership meeting and unanimously voting for the much needed
increase of the annual dues.

Committee’s Here In Southfork
Its that time of year again and we will be looking for people to chair some of our committee’s and the rest
as volunteers willing to help these chair people.
We have numerous committee’s for you to choose from so become active and interact with your fellow
neighbor’s. This is a good way for any new residents who would like to become active and meet your
neighbors to join forces and make new friends!
If interested in any, please contact Dot Cady and find out what they are.
Women’s Club
The December meeting was opened at 9:30am and we had 47 ladies attending our Christmas party. All the
reports were read and approved.
I want to acknowledge all the efforts that Mary Bolin has put in organizing our annual bazaar and thank her
because our bazaar was a huge success. Thanks also to everyone who participated in it. I cannot name
them all because it was a team effort. Thanks also to all the residents who gave us their support.
We will have a second fundraiser on February 13th. A Chili Supper , all you can eat, this will be served
with a Salad, Crusty Bread and a piece of Cake. So many ladies already volunteered to cook the Chili and it
is fantastic to see so many people volunteering because half of what we make goes to Charity.
We will also have a Mystery Auction with Cash Prizes. The Men’s Club accepted to go and see different
merchants and ask for their support. Please bring money to bid on these items because you will be happily
surprised.
After the Auction we will have a show called the “Oldies Newlywed Game.” If you want to participate,
please call Phyllis Grossi. At this time we have our three couples but feel free to apply, we can always take
more. These three couples will also get nice gifts and this should be a fun evening with a lot of laughs and
all of this for $7.00 a ticket. If you don’t have a ticket now please contact me. We are limited in how
many we can sell and by now we have sold more than half. Last year we were sold out, so please call me
for tickets @ 567-9634. “NO TICKETS WILL BE SOLD AT THE DOOR.”
We also had a gift exchange at this meeting and we all received beautiful gifts. It was a lot of fun and this
put us in the Christmas Spirit.
After the meeting was closed we then went to continue our Christmas Party at the Golden Corral. This
meal was paid for by the Women’s Club in appreciation for all their efforts during the year.
Next month we will have a PJ party. I forgot to mention at this meeting that we would like for the ladies to
bring Breakfast food. There will be a sign-up sheet in the Clubhouse. We will have nice prizes and
surprises.

Library Bulletin Board
Posting of Ads for Homes that are For Sale in Southfork Park
As per a meeting with the park owner, Scott Heiler and the Southfork Mobile Homeowners Association
Board, residents of Southfork will be allowed to post their homes for sale in the library inside the clubhouse
on the bulletin board.
Due to size restraints of the “Items for Sale” board in the library, the For Sale Signs will be limited to 4” x
6” card size. They should include if possible, a picture of the home, street address, contact name, current
phone number and asking price of the home.

Southfork Annual Association Meeting
What: Our annual homeowner’s meeting is a chance to meet new neighbors, catch up
with old friends and discuss local issues. This January meeting has been designated by
our by-laws to be the first meeting of the fiscal year with the election of new officer’s and
directors. Please plan to attend and learn what’s happening in Southfork!
Where: Southfork Clubhouse, January 24th, 2011 at 9A.M. sharp!
Why: It’s your neighborhood, too! With our combined efforts, we can continue to
make our community a better social environment with better communication to
everyone. We need everyone’s support to help and vote on issues that everyone is happy
with! It is next to impossible to please everyone but there are ways to try and appease
most of the people. If there is anyone who is interested in being an officer or run as a
director your name must be handwritten in on the already printed ballot because
nominations were closed at the November membership meeting!
Who: You, the homeowners, must have your yearly dues paid by January 15th in order to
vote for any new officer/director’s. The annual yearly dues is $20.00 per household and
only one (1) member of each household is eligible to vote. Submit payment to treasurer

Article V
Section 5.2 Meetings. Annual and Special meetings shall be held as described in Sections 5.3
and 5.4. Regular meetings will be held on the fourth Monday, unless otherwise specified by
the Board, in the months of November (Bylaws and Nominations), January (Elections),
February (Transition), and March(last membership meeting until November.) Any other
business can be discussed at any meetings.
Article 7.6 Duties. Duties of the officers are as follows:

shall cause a bi-annual audit of the Association Books to be made by a committee appointed by
the Board at the completion of each fiscal year; and shall prepare a statement of income and
expenditures to be presented to the membership at its annual and regular meetings. Copies
will be made available on request. After annual audit is completed in January preparation
must be made to file yearly Short Form 990 tax form to be sent to the IRS. The treasurer shall
maintain a petty cash fund in an amount sufficient to insure the smooth conduct of Association
business and activities.

Under Section 10.6 Bylaws Committee:
The very last paragraph Starting with the - words Appointed by the board and shall consist of
a chairperson etc. does not belong with this bylaw and is a duplicate of Section 10.7
Membership Committee and should be removed.
Section 10.8 Audit Committee:
The audit committee chairperson shall be appointed by the Board at the organizational meeting
and shall serve for one (1) year. The committee shall consist of a chairperson and at least three
(3) other members of the Association. The purpose of the committee is to provide oversight of
all financial dealings of the Association and to perform an audit of the Association finances BI-
ANNUALLY.

We will, of course, car pool again and drive around, more or less lost, for about forty (40) miles.
This trip will incorporate a few new wrinkles, as there will be more than one leader. This means, Map readers have
to be very good as others are following you!
GPS’s, Cell Phones, CB Radios and Compasses, are all allowed…..

Our destination is a fine American Fare (Sport Pub) type restaurant. Much on the order of ”Clermont”, but larger,
nicer, newer, with a far greater offering:
Menu includes a 12oz Prime Rib platter, Beef, Pork, Chicken, Seafood, Salads, Soups and of course desserts,
Something for all appetites.

REHABILATATION AIDS
Our closets, sheds, or garages are storing, Crutches, Walkers, Canes, Chairs, Seats etc.
Having a recent short term need of a walker, I wondered how many of these items are being stored in our homes.
I have no doubt that a short term loan of them to our residents could be possible.
I suggest an owners listing be prepared and posted in the First-Aid cupboard in the kitchen or the bulletin board at
the clubhouse. Anyone may itemize an item they would loan out with any pertinent info.
An article can be placed in the newsletter if anyone is interested.

BAKED ZITI
½ pound ziti
1 (15oz) container ricotta cheese
3 cups (12oz) shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
3 cups spaghetti sauce, divided (or more as needed)
Directions:
1. Preheat oven to 350 degrees.
2 In a large pot of boiling water, cook ziti until just barely tender, drain and place in a bowl
3. Mix ricotta cheese and half the mozzarella cheese with the ziti.
4. Coat 9’ x 13’ baking pan with nonstick cooking spray.
5. Cover bottom of pan with half of the spaghetti sauce.
6. Spoon ziti mixture into pan, cover with remaining spaghetti sauce.
7. Sprinkle with Parmesan cheese and top with remaining mozzarella cheese.
8. Bake 20 to 30 minutes or until cheese melts and is light golden.

ANNUAL Mixed Men’s &Women’s HAND AND FOOT
TOURNAMENT
SATURDAY, JANUARY 22TH, 2011 AT 11AM. There will be
cash prizes and the sign up sheet is on the bulletin board. Deadline
for signing up is January 14th, 2011. Entry fee is $5.00 per person.
Please check bulletin board at the Clubhouse for the sign up sheet.
All entrants, please bring a finger food.

and hopefully it can be held each year.
Yarn Hookers
The Yarn Hookers meet every Thursday evening at 6:30pm. Over the past year the attendance has dwindled down
quite a bit so we have sent out a flyer to Ramblewood Village, Blue Jay and Harmony Heights and others to join us
on Thursday evenings.
The group will be knitting and crocheting for themselves. We will be working on a project starting the first
Thursday in January and the first project will be for a Lap Quilt and you need 4 skeins of yarn and a size 13 knitting
needle. Any who do not know how to knit, don’t worry, (crocheter’s bring a pattern) we will teach you.
When this project is completed we will have another and then another and that is the object and purpose of this
group to help those who want to learn how to crochet and to knit and for it to be just a relaxing evening.

Yarn Hooker’s Bazaar Update
At the annual Women’s Club Bazaar, the Yarn Hookers did very well but also had many left over items
that did not sell. So a decision was made to donate all the items left to the Royal Oak Nursing home in
Dade City and Mary Bolin took the Women’s and Children’s items to donate and sell for us. The
reception to these donated items was astounding and greatly accepted with open arms and a big Thank
You was given to the group.
The Nursing home explained that so many people are in need and they also explained they do have an
Arts and Crafts room and many items are badly needed. They do a lot with beads etc. and they depend
a lot on donations from the many communities etc. So if any of you have anything that these nursing
home residents can use, it sure would be appreciated and can be dropped off there at any time.
It was also a decision not to be participating in any future Bazaars because of lack of participation and
also there was no storage room for any of these items kept in my home or any where else. So from this
point on we will not be accepting any donations from any resident, any longer.
The group will still be meeting weekly on Thursday evenings at 6:30pm and making items for
themselves.

This months restaurant review is more of an update, more then a review of a new restaurant. The main
attraction to this “little gem” was and still is, the “Beef on Weck” sandwich, which is “slow roasted and
thinly sliced roast beef, piled high on a Kimmelweck roll (think of Kaiser Roll with salt on the top) and
served with a side of Au Jus and fresh horseradish.
For all of you Western New Yorkers you will know what this is all about. Once you follow the “sirens
call” for this signature item, you become susceptible to many of their other tasty wonders.
On the menu is many of Weck’s specialty sandwiches, most of which are named for streets and attractions
in the Buffalo, NY area and many new ones have been added to the menu since they moved from their old
location in Land O‘lakes. There are 8 different burgers (also stuffed burgers) to choose from and many
types of soups and salads with homemade dressings. Fridays are special with Weck’s delicious hand
dipped, beer battered Haddock, served with fries and slaw. Tuesdays they have a jazzed up New Orleans
dinner, Wednesday is Prime Rib night, Thursday -all day Shepherd’s Pie , Saturday nights is the Surf &
Turf special with the choice of Coconut or Seafood stuffed Shrimp or a large Maryland Crab cake.
After 4pm each day, a complete dinner entrée’ menu becomes available. Crowd pleasers & Appetizers,
such as Bangkok Shrimp, Onion Loaf, Jumbolicious Wings, Hummus & Greek Artichoke to name a few.
There is so much more that is not listed here and if you want comfort food or something more unusual, the
menu is extensive and the exploration is enjoyable.
They have a Full Bar with flat Screen TV’s, Happy Hour daily 4 to 7pm, Saturdays 11 to 7 featuring 2-4-1
Cocktails.

What a lesson we all can learn from this one...
A young couple moves into a new neighborhood.
The next morning while they are eating breakfast,
The young woman sees her neighbor hanging the wash outside.
"That laundry is not very clean", she said.
"She doesn't know how to wash correctly.
Perhaps she needs better laundry soap."
Her husband looked on, but remained silent.
Every time her neighbor would hang her wash to dry,
The young woman would make the same comments.
About one month later, the woman was surprised to see a
Nice clean wash on the line and said to her husband:
"Look, she has learned how to wash correctly.
I wonder who taught her this.."
The husband said, "I got up early this morning and
Cleaned our windows."
And so it is with life. What we see when watching others
Depends on the purity of our minds and the window through which we look.
Southfork Etiquette
Have you gone to the kitchen in the clubhouse lately to find it with dirty counters and clutter in the sink?
Have you gone to the pool only to find the chairs all disarranged and with swimming gear scattered all
around?
Maybe it is time to think about some rules of SOUTHFORK ETIQUETTE, we can all abide by to help our
neighbors to enjoy our park more each day.
When you use the kitchen in the clubhouse for any function or just by yourself, put leftovers away and
please wipe down the counters and clean out the sinks so that the next user will find them clean and
sanitary.
When you use the tables and chairs take just a moment before leaving the clubhouse to straighten the
chairs and wipe down the table so that the next user will find it clean and orderly.
When you use the pool, return your lounge or table and chair to some kind of order. Please take
swimming items with you rather than leaving them in the cabana.
If you use the doggy walk or pet areas, be sure to pick up after your pet so that others do not have to
pick up after you.
If you are walking or traveling around the park and notice litter on the ground or street, pick it up and
dispose of it properly. If everyone takes the time to do this there will be no unsightly litter on our
grounds.
Southfork recycles and it benefits “YOU.” Instead of giving your aluminum cans to the Saturday morning
recycle company or sending them with your trash to the landfill, why not bring your aluminum cans to
the receptacles in the clubhouse, pool area, or down in the RV storage area. There is also a newspaper
dumpster in the RV storage area for your old newspapers. A couple of men here at SF bag up the cans
and take them to the recycle center in Zephyrhills and that nets a check for close to $40 every couple of
months. The newspapers are picked up by a company that also pays us cash. The funds from the paper
and aluminum recycle effort go into the treasury of the Association that provides activities etc. and
enjoyment for all the association members.
Southfork is a great place to be whether you live here year round or just seasonally. Greet your

Suggestions For A Happy Life For 2011
Believe in miracles but don’t depend on them. Say something positive as early as possible everyday.
Regardless of the situation, remember that nothing is ever lost by courtesy.
Never open the refrigerator when you are bored. Enjoy the satisfaction that comes from doing little
things well. Never refuse holiday dessert. Never allow anyone to intimidate you and stand your ground.
Always compliment, flower gardens and new grandchildren etc. Never hesitate to do what you know is
right. Share your knowledge and experiences. Forgive quickly!!!! Kiss slowly. Don’t be so open minded
that your brains fall out.
Compliment the parents when you observe a well behaved child. Never pass up a chance to be in a
parade. Seek respect, rather than popularity. Seek quality rather than luxury. Seek refinement,
rather than fashion.
Never forget that it takes only one person or one idea to change your life forever. Play catch with a
grandchild, shoot a few hoops and show them you really care. Respect your elders even though you are
one…………..Hold yourself to the same high standards that you require of others.
Let your children/grandchildren observe your being generous to those in need. Return shopping carts
to the designated areas. Stay humble. Stay on your toes. Remember that you can miss a lot of good
things in life by having the wrong attitude. When in doubt, SMILE! Teach your children/grandchildren
the pride, satisfaction and dignity of doing any job well. Remember that cruel words deeply hurt.
Remember that loving words quickly heal.
Hold a child or an elderly’s hand when crossing the street. Never deny anyone the opportunity to do
something nice for you. Watch your back! Watch your weight! Watch your language!

HAVE A HAPPY AND PROSPEROUS 2011
AND THEN IT IS WINTER:
You know, time has a way of moving quickly and catching you unaware of the passing years. It seems
just yesterday that I was young, just married and embarking on my new life with my mate. And yet in a
way, it seems like eons ago, and I wonder where all the years went.
I know that I lived them all……
And I have glimpses of how it was back then and of all my hopes and dreams…But, here it is, the winter
of my life and it catches me by surprise…How did I get here so fast? Where did the years go and where
did my youth go?
I remember well…seeing older people through the years and thinking that those older people were
years away from me and that winter was so far off that I could not fathom it or imagine fully what it
would be like…But, here it is…my friends are retired and getting gray…they move slower and I see an
older person now. Many are in better shape than me..but , I see the great change…Not like the ones that
I remember who were young and vibrant..but, like me, their age is beginning to show and we are now
older folks that we used to see and never thought we’d be.
Each day now, I find that just getting a shower is a real target for the day! And taking a nap is not a treat
anymore…it’s mandatory! Cause if I don’t on my own free will..I just fall asleep where I sit!
And so, now I enter into this new season of my life unprepared for all the aches and pains and the loss of
strength and ability to go and do things that I wish I had done but never did!!!
But, at least I know, that though the winter has come, and I’m not sure how long it will last..this I know,
that when it’s over..its over…Yes, I have regrets. There are things I wish I hadn’t done…things I should
have done, but indeed, there are many things I’m happy to have done. It’s all in a lifetime…
So, if you’re not in your winter yet, let me remind you, that it will be here faster than you think. So,
whatever you would like to accomplish in your life please do it quickly! Don’t put things off too long!
Life goes by quickly. So, do what you can today, as you can never be sure whether this is your winter or
not!
You have no promise that you will see all the seasons of your life…so, live for good today and “:Life is a
gift to you.” The way you live your life is your gift to those who come after. Make it a fantastic one.
LIVE IT WELL!!...ENJOY TODAY!!!...DO SOMETHING FUN!!!...BE HAPPY!!!...BE THANKFUL!!!
