The world-class Black Bamboo restaurant situated at the
Menlyn Boutique Hotel in Pretoria, Gauteng, is excited to
introduce their new delicious menu. The Black Bamboo is
the hotels’ signature restaurant which offers a fine-dining
experience to hotel guests as well as the public. The new
menu was designed by renowned head chef Pellie Grobler.
“We decided to change the menu to expand our reach to a
broader market, as changing our menus regularly allows us
to introduce new dishes and gives us the chance to keep
our most popular dishes on the menu for slightly longer,”
explains Chef Pellie. “The new menu took a month to
complete as it is a constant work in progress as we tweak
our dishes all the time to achieve the perfect end result.”
“We added an additional two dishes per course as well as
selected a wine per meal.” Pairing wine with each meal is
something Chef Pellie is passionate about “I taste all the
meals together with the wines to decide what works best, I
do a lot of research and all the new wines that we would
like to offer to make sure that each vintage compliments the
dish effortlessly” says Pellie. The Black Bamboo also
boasts a rare selection of wines that are exclusive to the
restaurant.
The magnificent hotel restaurant is in its class of its own,
driven by Chef Pellie’s endless strive for excellence through
his exploration and innovation of new styles and flavor
combinations. Each dish is made with the finest seasonal
and local produce, the restaurant places a large focus on
supporting local business and responsible sourcing of
goods.
With a choice of outstanding taste sensations, The Black
Bamboo has options for every palate. Highly
recommended is the Steak Tartare starter “the infusion of
flavors makes this a delectable dish,” advises Pellie. “The
Duck and Fish is a mouth-watering choice for mains and
the Baked Cheese Cake is a delicious way to end off a
meal,” Pellie concludes.

lively with thier regular breaching than the Southern Right
whales.

These whales pass along the KZN coast annually on a
migration route between their summer polar feeding
grounds in the Antarctic to the tropical and sub-tropical
coastal waters of Northern Mozambique and Madagascar
where they breed in the winter. The coastal waters off
South America, Australia, New Zealand and the islands of
the south-western Pacific Ocean are other breeding
grounds for these marine mammals.

Eggnog Coffee Punch
Ingredients
1 1/2 cups coffee ice cream
1 1/2 cups eggnog
1 cup hot strongly brewed coffee
4 tablespoons frozen whipped topping, thawed
4 pinches ground nutmeg
Directions
Scoop the ice cream into a pan over low heat. Stir in the eggnog and coffee; and heat
until warm, about 3 minutes. Pour into four glass or ceramic mugs. Top each with 1
tablespoon whipped topping and sprinkle with nutmeg. Serve immediately.
Ingredients
15 pounds charcoal briquets
2 pounds hickory wood chips
1 cup bourbon whiskey
1 (4 pound) standing rib roast, bone in
1/2 cup steak seasoning
Directions
Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the
secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon
with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all
surfaces.
When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory
chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal
as needed to keep the fire hot. Every time you check the fire, add more wood chips. Cook for 8 to
10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat
tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.
Honey-Glazed Ham
Ingredients
1 (12 pound) whole ham
8 ounces butter
2 cups honey
1/2 cup brown sugar
1/4 cup red wine
3 tablespoons ground black pepper
Directions
Preheat oven to 350 degrees F (175 degrees C).
Cut long, shallow lines around the surface of the ham in a crossing patter, scoring the ham to
create a diamond pattern all over the outside of the ham. Place ham into a roasting pan.
Melt butter in a small saucepan over medium. Stir honey, brown sugar, red wine, and black pepper
with the melted butter; cook and stir until ingredients blend into a glaze, about 10 minutes. Spread
glaze in an even layer over the ham, reserving some of the glaze to apply while the ham roasts.
Cook ham in the preheated oven until an instant-read thermometer inserted into the center reads at
least 145 degrees F (63 degrees C), glazing every 10 minutes, 30 to 45 minutes.
Mini Orange Mince Pies
Ingredients
1 3/4 cups all-purpose flour
1/4 cup confectioners' sugar
2 teaspoons ground cinnamon
2/3 cup butter, softened
2 tablespoons grated orange zest
1/4 cup ice water
3/4 cup prepared mincemeat pie filling
1 egg, beaten
1/4 cup confectioners' sugar for dusting
Directions
Preheat oven to 400 degrees F (200 degrees C).
Sift together the flour, 1/4 cup confectioners' sugar, and cinnamon. Use a pastry cutter or two forks
to mix in the butter until mixture resembles fine bread crumbs. Stir in the orange zest. Sprinkle with
ice water, and gather dough into a ball. Roll out on a lightly floured surface to 1/4 inch thick. Cut out
approximately 18 (3 inch) diameter circles, and 18 (2 inch) circles, rerolling dough as needed.
Line muffin cups or tart tins using the 3 inch pastry circles. Fill each pastry cup with about 1
tablespoon of mincemeat filling. Top with 2 inch pastry circles, pinching circles together to seal the
edges. Brush the top of each pie with egg.
Bake pies in preheated oven until tops are golden brown, 15 to 20 minutes. Cool slightly on wire
racks. Dust with 1/4 cup confectioners' sugar just before serving.

Maldives has deep blue seas, turquoise reefs, white sandy beaches and palm trees. It
is also a place full of character, where its people have long spent their days
languishing in the very essence of idyll living. While it is the perfect place to sit on a
beach and watch a sunset with a cocktail balanced on your hand, it is also a
geographical marvel, knowing that there are thousands of fish swimming around the
vivid corals just a few feet away from where you sit
Welcome to the Maldives, where sands are white as the smiles of the locals, where
fish swim happily in the warm waters of the Indian Ocean, where the weather is a
dream, and the deep rays of the sun wait to engulf you their arms.
In ancient times, the shores of the Maldives welcomed lost travellers. Still welcoming,
these shores remain, providing a tranquil haven for visitors.
In horizon of the vast Indian Ocean grow green palms
This is my homeland, this is the Maldives
From the clear blue seas, we grow like pearls, This is my homeland, this is the Maldives

The islands of Maldives appear in-between the trading route of the Indian Ocean. Thus settlers, and visitors
from neighbouring regions and around the world have come in contact with the islands for as long as history
has been recorded. Such is the to-and-fro flow of people and their cultures, that a marked effect has been
left in the Maldivian people, the language, beliefs, arts, and attitudes.
The looks of the Maldivian people may differ from one atoll to the other, attributing to the genes passed on by
South and Southeast Asians, Africans, and Arabians. The language, Dhivehi, differs in dialect in some
regions in the south of Maldives, possibly due to the secluded nature and subsistent ways of island life.
Maldivian beliefs have been very much based around religion and superstition, often used together in
matters of significance but given separate positions in society. In matters of faith, Islam dominates, but
influence of the supernatural still continues to play a major role in most island communities, possibly giving
credit to the folklores and Buddhist traditions of the islands’ first settlers before conversion to Islam in 1153
AD.
The mixing of cultures is very much seen in Maldivian arts. The music played with the local bodu-beru (big-
drum) resemble that of African drumming. The dhoni (a unique Maldivian sailboat) is an art form itself built
with skilled craftsmanship, with significant similarities to the Arabian dows. The fine artistry of Maldivians,
seen in the intricate details on wooden beams in antique mosques, represents what we have gained from
Southeast Asian architecture. Then there is the undefined: the distinct geometric designs used in mats
woven from local materials, the embroidered neckline of women’s traditional dresses and their ornaments
too, expose another story brought in from an unknown culture that has seeped in to Maldivian society.
Maldivians are quite open to adaptation and are generally welcoming to outside inspiration. The culture has
always continued to evolve with the times. Locals still eat fish and fishermen still spend days out at sea, but
tourism now takes a standing prominence. Most Maldivians still want to believe in upholding unity and
oneness in faith, but recent waves of reform in the country have created a whole new culture of new ideas
and attitudes. The effects of the modern world are now embraced, while still striving to uphold the people’s
identity, traditions and beliefs.
Diving Maldives
The warm seas of Maldives have high visibility throughout the year, with water clear enough to see the
passing fish as far as fifty meters away at times. Over a thousand species of fish and other underwater
creatures inhabit the Maldivian waters.
Water sports
In a place that is more sea than land, there is no end to the fun things you do in the water. Maldivians swim for
recreation, they play water polo with their friends at weekend picnics, they surf addictively.
Excursions
The best way to experience the life of an ordinary Maldivian is to travel to an inhabited island. Some of these
islands are slightly more modern: with brightly painted house walls and harbour areas.
The Maldives Honeymoon
If a honeymoon is meant to be a celebration of love in an intimate, secluded, and most importantly, beautiful
setting, then the Maldives is the world’s best backdrop for all these things.
Spa and wellness
Just lying on a deserted beach of a Maldivian island, taking in nothing but the continuous rhythm of the waves,
the sea salt in the air and feeling the soft white sand on your bare feet is enough to sooth your senses.
Relax and unwind
The Maldives is considered by many to be the premier tropical beach destination in the world and the best
place to relax and unwind from the hectic and chaotic lifestyle of the modern world.
Seaplane Photo Flights
Seaplane photo flight offers you the sightseeing sensation that gives you the opportunity of a life time. Enjoy

However, summers are very hot and humid. Winters in inland areas are
clear and cool, and cold in areas of high altitude such as the
Drakensberg. These mountains frequently have snowfalls during the
winter months also.

Since 1989 Al Pescatore, Italian and Seafood Restaurant in
Ballito, North Coast, have enjoyed the pleasant seafood-
ballito-staff-alpescatoreexperience of our patrons and wish to
do so for many years to come. Al Pescatore, Italian and
Seafood Restaurant in Ballito, North Coast, offer a unique
culinary experience with the owner designing original specials

breathtaking view of the ever-changing Indian ocean, the
finest food and a delightful team that is at your service. Al
Pescatore, Italian and Seafood Restaurant in Ballito, North
Coast, boasts many awards for these reasons.
Oldest Italian and Seafood Restaurant
Al Pescatore, Italian and Seafood Restaurant in Ballito, is one
of the oldest and still one of the most popular restaurants on
the North Coast. The secret to their success, Al Pescatore
owner Trevor Wolf believes, is the fact that they have been
willing to change with the times. Having been in the area for
23 years, Trevor and his wife Jenny have delighted the taste-
buds of roughly three generations of locals and
holidaymakers. Al Pescatore, Italian and Seafood Restaurant
in Ballito, North Coast, started out in the Boulevard Centre in
1989 as an Italian Trattoria. But because of the change in the
market, the restaurant has evolved into more of a
Mediterranean / seafood restaurant.
And, as the market has demanded it, Al Pescatore has kept
on changing.
About 11 years ago Trevor moved the restaurant to the beach
– overlooking Clark Bay. Then he erected a wooden deck
outside the restaurant where patrons may enjoy a relaxed
meal while watching the surfers and dolphins play in the
beautiful Indian Ocean. “We have still retained the romantic,
stylish feel inside the restaurant, but now we can also cater
for a more casual crowd who want to come in for a light
afternoon lunch in their shorts and slops", says Trevor. Visit

Coast, for an unforgettable experience!

The first inhabitants of Zanzibar were Bantus coming
from mainland Tanganyika; they were mostly fishers.
Their diet thus consisted of primarily seafood, such
as tuna, mackerel, lobster, squid, octopus and oysters.
Other ingredients and recipes brought by Bantus that
are found in today's Zanzibari cuisine (some of which
became widespread during European colonialism)
are common beans, sweet
potatoes,manioc chips, yam and plaintain.
In the 9th
century, Omanis, Yemenis and Persians began
colonizing the Swahili Coast, including the Zanzibar
Archipelago. They brought along with them a new
dishes and ingredients, most
notably spices, coconut, mango, citrus and rice. One of
the most common Zanzibar recipes,
the pilau (pilaf) rice (i.e., rice, coconuts, nuts and
spices), clearly reflects its Arab origin.
Between the 15th century and the 16th century,
the Portuguese quickly conquered most of the African
Great Lakes, including Zanzibar. The main Portuguese
influences on Zanzibari cuisine was the introduction of
those that would become major types of staple food in
Zanzibar, namely manioc, maize and pineapple.
In 1651, the Portuguese lost control of Zanzibar to
the Omani sultanate. The Omanis brought new spices
and intensified the commercial relationships between
Zanzibar and India; as a consequence, Indian recipes
such as chutney, masala, biryani, curry, fish cakes and
samoosa (samosa) made it to Zanzibar. Most recipes
of foreign origin were adapted to the ingredients that
were available on the island, thus giving birth to a
largely original "fusion" cuisine.
Around the beginning of the 20th century most of the
African Great Lakes region was colonized by
the Germans and the British. Those did not mix with
the local population as much as the Arabs, Persians
and Indians had done, and their influence on Zanzibari
cuisine is less evident; yet, some very common
Zanzibari recipes, such as pepper steak, can be
generically defined as having an European origin.
After independence, Tanzania established a strong
relationship with China;
Chinese physicians, engineers, and military
consultants came to Zanzibar. Although only a small
fraction of today's Zanzibari population has Chinese
origins, some recipes and ingredients, such as soy
sauce, have began commonplace on the island.

continents – in line with the birthplaces of its
inhabitants. By visiting the island, guests have the
opportunity to sample a variety of foods, including
Indian, Chinese, Creole and European.
Mauritian cooking is in a class of its own: a
combination of flavours that have evolved through its

Mauritians are creative with food, mixing various
styles in a single menu. They are just as happy to
experiment with recipes from Chinese, Indian or
Muslim cuisines as they are to create tempting
Creole or European dishes.
Mauritian cuisine is proud of its heritage, but has also
gained a fine reputation in the contemporary culinary
world. Leading chefs such as Paul Bocuse, Alain
Ducasse and the Troisgros brothers have visited the
island and introduced menus to boost the top-quality
cuisine already available. Local chefs meanwhile are
known for their creativity and ‘savoir-faire’, using
traditional and local ingredients to create modern

Local company Tourist Villages Co. Ltd recently
launched its first tourist village in the town of
Mahébourg. Situated in the gardens of the town’s
naval museum, the retail space accommodates
about 20 permanent exhibitors, all from Mahébourg
region. All the items offered for sale are local
handicraft creations.
In view of offering stand space to the maximum of
operators, 11 individual craftsmen and two
associations were selected. Preference was given to
craftsmen from the south of the island who showed
interest and responded to the invitation of Tourist
Villages Co. Ltd.
This was a great opportunity for the 60 artisans
represented by the Arts and Crafts Manufacturers
Association of Mauritius (ACMAM) to promote their
handicraft.
A second stand was also provided to Le movement
Pour l’Autosuffisance Alimentaire – an association
consisting of 12 member craftsmen from Vieux
Grand Port who make handicraft from the pandanus
(Vacoas) region.
Investment and future plans
The Mahébourg tourist village required an
investment of 6 million MRU prior to launch. It will be
the first in a series. Tourist Villages Co Ltd is now
planning to launch a much more ambitious second
village in Belle Mare – something that will require an
overall investment of around 200 million MRU.
The new tourist village of Belle Mare will
accommodate 35 shops, a food court, a recreation
centre and, of course, exhibition space for artists.
Subsequently, another tourist village is expected to
be launched in Flic en Flac.
