TOMATO TERMS
Determinate– Bush varieties that reach a certain plant height and then stop growing. The majority of their fruit matures within a month or two. Great for gardeners who like to make sauce and can tomatoes. Indeterminate– Varieties continue to grow and produce new blossoms even after fruit set. These plants need extra tall supports of at least five feet. Harvest may last for several months. Heirloom– An heirloom is generally considered to be a variety that has been passed down through several generations of a family because of its valued charac-teristics. Hybrid– A tomato bred by crossing varieties. Hybrids offer better disease re-sistance and higher yields. Open-pollinated– Seeds from open-pollinated varieties produce plants and fruit that are identical to their parent. All heirloom varieties are open-pollinated but not all open-pollinated varieties are heirloom varieties.

ANAHEIM ‘T.M.R.’
Also known as the “New Mexican Chile” this moderately pungent fruit (7-8 inches) is deep green but turns red at full maturity. Excellent for canning, freezing or drying.
ANCHO ‘SAN LUIS’ (POBLANO)
High quality, uniform heart-shaped peppers (6 inches) are dark green, maturing to red then mahogany in color. Mildly pungent variety that’s most often used in chile rellenos and mole.
CAYENNE ‘LARGE THICK RED’
This hot, hot pepper (5-6 inches) is a heavy producer that turns from green to red when mature. Very pungent fruit even when small. Mostly used for sauces and drying.
CALABRESE
This is a classic Italian hot pepper used fresh or for pickling. Bright red and 1-2 inches long when ripe, this small, round variety is also known as the “Devil’s Kiss.” Moderate heat.
FRESNO
Thumb-sized hot pepper that can be harvested when green (mild heat) or red (hot). The mature red version (2-3 inches long) can be hotter than a Jalapeno.
BHUT JOLOKIA (GHOST)
One of the hottest peppers around, this variety got its nickname because it seems as if the in-tense heat just sneaks up on you. At 400 times hotter than Tabasco sauce, this Indian hybrid is not to be taken lightly.
DIABLO
Chili pepper that packs plenty of heat. Hotter than jalapeno and serrano peppers. Bushy, knee-high plants with thin, oval, dark green leaves. Peppers are crescent-shaped with thick crisp flesh. Fruit may be harvested green or allowed to mature to full color.
CHILTEPIN
This chile pepper is round or slightly oval and about 3/8” in width. Tepins can be extremely hot. The heat of the Chiltepine is called arrebatado (violet or rapid), which implies that alt-hough the heat is intense, it diminishes quickly.
PASILLA ‘BAJIO’
When fresh this thin-walled pepper (8-10 inches) is called “chilaca” and is used mainly for its rich, smoky flavoring in sauces. Ready to harvest when fruit turns a dark brown.
JALORO
Plant produces high yields of Jalapeno peppers that turn from yellow, to orange and to red when mature. This variety can be harvested at any color and is resistant to six types of pepper viruses.
JALAPENO ‘TAM’
This mild, longer variety of Jalapeno was developed at Texas A&M University. This pepper contains all the wonderful flavor of Jalapeno without the fire and can be harvested green or red.
Hot Peppers
LEMON DROP
Seasoning pepper 2-3 inches long from Peru that ripens to a clear lemon yellow color. The flavor is very clean with a slight citrusy heat to it.
HABANERO
A blistering hot pepper 40 times hotter than a Jalapeno. Wrinkled fruit is 1-inch long with a tapered end. Peppers begin as light green then turn to golden-orange.
JALAPENO ‘EARLY’
Everyone’s favorite hot pepper (3-4 inches) that sustains heavy yields over a long season. Ready to pick when dark green and will deliver a wallop of pure heat.
HABANERO CHOCOLATE
The chocolate-brown, lantern shaped fruit are about 2 inches long and have a unique, rich flavor. The fruit ripens from emerald green to chocolate brown. These rank among the top of the heat scale registering up to a massive 450,000 scoville units of heat. Use in moderation.
PEPPERONCINI ‘GOLDEN GREEK’
These delicious Greek peppers (2-3 inches) are sweet and have a very mild heat to them. Very popular for pickling. This high-yielding variety adds zing to salads and sweet, mild salsas.
Hot Peppers
SERRANO ‘DEL SOL’
An impressive first hybrid version of Serrano that produces fruit twice the size and earlier than the original. Versatile variety that’s not excessively hot and excellent for pickling.
TABASCO
This famous heirloom, that made Tabasco sauce famous, is very hot but has a delicious flavor. Plants grow to 4 feet tall and are covered with small, thin peppers.
SERRANO ‘TAMPEQUINO’
This little pepper with a big kick is very popular in salsas, sauces and soups. Variety can be harvested green or red but be prepared for some heat either way.
PEQUIN
The pequin has a smokiness quality with mixed levels of heat and fruitiness. In terms of overall heat, they hover near the middle of the pepper scale, slightly hotter than cayenne. Their shape is an elongated oval.
SCOTCH BONNET
Scotch bonnet may sound timid, but it is nothing of the sort. Its one of the spicier peppers with a sweet flavor. Peppers change from green to colors ranging from yellow to red. Used regularly in Jamaican and Caribbean cooking.

CAVAILLON ESPAGNOL
Large, oblong fruit that is filled with delicious green flesh. A very rare, old melon that was first listed in a German seed catalog in 1893.
CHARENTAIS
A famous, superb French heirloom (2-3 pounds) with light grey-green skin and brilliant orange flesh that’s super sweet and very fragrant. Perfect for making sorbet.
CRANE
The light orange flesh of this local heirloom melon (4-7 pounds) is exceptionally sweet, juicy and highly aromatic. This vine-ripened variety was created in Sonoma County in the early 1900s.
GALIA
This Israeli variety has a lightly netted golden-yellow rind with a pale, glacial-green succulent flesh that has a signature spicy, sweet flavor with tropical and perfumed fragrance.

CHERVIL

An old English heirloom, this lettuce is considered one of the very best tasting. This very small, green romaine type is an excellent salad lettuce with a distinctive nutty flavor.
MARVEL OF FOUR SEASONS
This tasty, attractive-looking French heirloom has beautiful reddish leaves with cranberry-red tips. The crinkly rosette in the middle of the head looks like a flow-er.
LOLLA ROSSA
Deep magenta-colored leaves with tiny frills are the trademark of this very mild tasting Italian heirloom. The slow growing open heads remain compact until har-vesting.
MAY QUEEN
Famous European heirloom butterhead. This early maturing lettuce is ideal for the early spring plantings. The leaves are pale green heads tinged with red and the sweet, pale yellow hearts have a pink blush to them.

OUTREDGEOUS
One of the reddest romaines, this is a standard for salad growers because of its mild taste and splashy color. It can be harvested as a baby or fully mature when a loose head forms.
PARRIS ISLAND
This multi-purpose romaine is commonly used for baby leaf lettuce because of its quick growth rate. If grown to maturity it makes for an excellent headed variety.
RED OAKLEAF
This variety has a mild flavor without the bitterness. This lettuce is also durable in extreme heat or cold and grows very quick.
RED SAILS
This bitter-free lettuce features deep bronze-red crinkly leaves and is a perfect partner for green-leaf varieties. Slow bolting for a red variety, it can also be plant-ed year round.
UBRIACONA
This Italian heirloom is a loose-leaf variety with red outer leaves and green leaves inside. It is ready to harvest when leaves are crisp and the head is loose.

BLOOMSDALE
This popular heirloom variety was first introduced into the culinary community in 1826. Bloomsdale has a more substantial winter greens taste and texture than standard spinach.
Arugula

Pungent nutty and peppery flavors. Performs best in full sun and in light, sandy, well-drained soils from spring to mid-summer.
RUSTIC
Rustic leaf arugula has similar taste qualities to the cultivated variety. Its beauti-ful jagged leaves are perfect to mix with regular arugula.

KAI LAN
Native to China and related to broccoli. Green flower heads at the top. Thick, flat, glossy green leaves. Stems are thick and small. Leaves, stem and head can be eaten. A bit sweeter than broccoli.

RUBY STREAKS MUSTARD
Deeply serrated, attractive mustard. Delicate texture and mild. Flavor is sweet and slightly pungent. Color ranges from dark green with red veins to dark maroon.
PURPLE MIZUNA
Deep purple leaves and stems. Hardy with mild and sweet flavors.
GREEN MIZUNA
Mild flavored mustard with a pleasant bitter taste. Grows quickly in partial shade.
TOKYO BEKANA
Loose-head Chinese cabbage from Japan. The spring-green leaves curl at the edges and mature with slim white stems that widen at the base.

FORDHOOK GIANT
Succulent celery-like stalks support large, dark green, very savoyed fleshy leaves. This delicate stalk is wonderfully tender and juicy. A cold-hardy variety that is just as tolerant of the heat.
ORIOLE ORANGE
Brilliant orange ribs set this chard apart from other varieties. These hardy plants can withstand the cold and are consistent producers throughout the season.
RAINBOW
This tender variety has multi-colored stalks of yellow, white, orange, pink and red. Rainbow chard has an assertive texture and its flavor is mildly salty and sweet.

Kale
TUSCAN
This Italian heirloom variety is considered to be the tastiest of the true kales, and due to its dark green leaves, the most nutritious as well.
RED RUSSIAN
Very tender compared to other kales with leaves that are flat, jagged and dark green highlighted by purple veins.
SCARLETT
Dark green kale with red veines, frilly, tightly curled leaves. Vigorous performer with good cold tolerance. Begin harvesting when young, and allow to grow well into the early winter.
DWARF BLUE CURLY
Low, compact plants with finely curled, bluish-green leaves. Grows best in cool weather but will also withstand some heat. Can be grown as a spring or fall crop. Leaves are rich in vitamins, low in calories.

TROPEANA LUNGA (RED TORPEDO)
An Italian heirloom, its skin is reddish-purple in color. Its flesh is sweet, mild and ten-der with light rose-colored rings.
TROPEA ROSSA TONDA
Most famous of all Italian red onions. Red rounded bulb, very sweet and ideal for stuffing. Changes from white when young to red in maturity.
YELLOW OF PARMA
This hard-to-find Italian heirloom is large and golden with an oblong-globe shape. Aver-aging a pound each, this late maturing variety is absolutely delicious and great for storing.
WALLA WALLA
Famous for its size and super sweetness, it’s best to harvest the 4-inch golden-skinned bulbs early for mildest flavor. A must have for onion ring lovers.

GIGANTE D’IVERNO
The “Giant Winter Leek” features large blue/green tops with thick white bottoms and is very resistant to cold weather.
KING RICHARD
Beautiful full-sized leeks. White stems are over a foot long to the first leaf. Upright, medium green leaves.
Kohlrabi
WHITE VIENNA
Round, above-ground “bulbs” with light green, smooth skin. It has a creamy white, tender flesh. Flavor is mild & sweet. This kohlrabi is superb raw or steamed.
PURPLE VIENNA
Green leaves and bulbs with red skin. Tender sweet white flesh. Grows in Spring and Fall. Pick small (2-3”) for best taste and texture.
Fennel
DI PARMA
Alpine fennel with a small white bulb, this variety has excellent flavor and texture. Usually sliced thin and added to salads.
ROMANESCO
Classic fennel from Rome that has a large head with tightly-wrapped stalks. Tastes best when roasted with olive oil.
Beets
CHIOGGIA
Chioggia has striking deep pink and white spirals and an especially sweet flavor. It can be planted at two-week intervals for continuous harvests.
DETROIT DARK RED
The most popular, all-purpose red beet. It is uniform and smooth. Has a striking deep blood red flesh that is incredibly sweet and tasty.
GOLD
Smooth golden roots with bright yellow flesh retain their color when cooked. Excellent, sweet flavor. Leaves and petioles are green.
Artichokes
VIOLETTO
This violet-bracted ‘choke has small, oval, slightly elongated flower heads that measure 3 inches wide by 5 inches long. A bit later maturing that Green Globd, Violetto will pro-duce abundant crops of mouthwatering artichokes for at least 4 years.
GREEN GLOBE
3”-5” heads with wonderfully thick, flavorful hearts. Expect 3-4 heads throughout sum-mer. Will remain productive at least 5 years.
DI CICCO
Excellent choice for extended harvests for home gardens. Vigorous plants yield 3-4”, blue-green heads. After cutting the main head, more side shoots develop, producing many more small to medium-sized heads through summer.

Grown for its thick, fleshy stalks, it has a mild flavor reminiscent of artichoke hearts. Large, prickly arching leaves, topped with round, purple flowers in the midsummer. Car-doon can reach up to 5ft tall and 4ft wide. Enjoys well drained soil.

Small spherical shaped berry in the tomato family. Originated in Mexico and cultivated by the Aztecs. Exquisite tart and sweet qualities. Small annual shrub grows 30-60cm in height, Berry develops inside thin husk.
