In addition, Combe House was awarded Devon Hotel

of the year 2010. The recent restoration of the large

Victorian Kitchen Gardens has helped us to underpin

and communicate everything that is special to Combe

House Devon.

An Elizabethan countr y manor full of histor y, yet infor-

mal and relaxed, surrounded by gardens that provide

our chefs with wonderful seasonal produce to create

menus for a restaurant with great food and genuine

hospitality.

Ken and Ruth have been passionate about the prov-

enance of the produce that makes its way into the

kitchen from the day that they arrived.

Combe House Devon is a hotel and restaurant in equal measure, with good food a central part of the Combe House experience. The

restaurant is home to Masterchefs of Great Britain, Hadleigh Barrett and Stuart Brown, who create contemporary British dishes using the

finest local produce and home-grown herbs, fruit and vegetables from the restored kitchen gardens and leading local producers.

Arriving for the first time, as you round the corner of the

long and winding drive from the distance appears Gidleigh

The Car y Arms, a stylish inn located r ight on the beach in Babbacombe Devon, exudes the charm and character istics of an English inn,

Behind the dramatic red brick facade, the Victorian grandeur continues,

welcoming guests and non residents into a relaxed home from home,

complete with roaring fires, comfy sofas, contented dogs, an excellent dining

experience and panoramic views. The Headland’s 5-star self catering cottages

are also utterly unique; here guests can enjoy the space and freedom of their

own contemporary cottage by the sea with the added benefits afforded by

a luxury hotel right next door. Incredible views, delicious food and relaxed

elegance – you might even want to enjoy a sunset first with some alfresco

fizz! Our secret is to use carefully selected, fresh, locally sourced produce

to create innovative dishes, cooked to perfection. Friendly, yet elegant, great

service and a stunning location complete the recipe. If you desire good food

The Headland is a fabulous example of late Victorian architecture in a truly

stunning location. Surrounded by the raw beauty of the Cornish coast on

three sides, the views are simply breathtaking. Wild Atlantic rollers pound

the shore while The Headland towers regally above, surveying the golden

sands, marram grass and rocks dividing land and sea; floor to ceiling windows

bring this panorama to your dining table. When work commenced there was

immediate opposition from the local fishermen, who claimed the hotel was

being built on common land they had used to dry their nets for generations.

Feelings ran high and local workmen were intimidated into stopping work.

One night a group came up from the town and pulled down the foundation

walls, burned the scaffolding and threw the foreman’s hut into the sea. The

Newquay Riots, as they were known, resulted in several men being fined and

all work grinding to a halt. Two hundred unemployed miners from Redruth

were recruited because the locals were unwilling to return to the site, and as

the new workers arrived in Newquay, traction engines equipped with steam

hoses were used to keep the resentful natives at bay.

house hotel is a fine Georgian listed house in the picturesque village of Evershot,

West Dorset. The privately owned Relais & Châteaux countr y house hotel is set

in 4 acres, offers facilities such as croquet lawn, heated indoor pool, all-weather

tennis cour t, spa facilities and an award-winning restaurant. The hotel adjoins a

600 acre deer park offering excellent walking and an abundance of wildlife and

flowers throughout the year.

Built in 1798 as a dower house by the 2nd Ear l of Ilchester, the proper ty was

enlarged in 1893 with a second floor added by the 6th Ear l who commissioned

his fr iend and local author, Thomas Hardy, (an architect by profession) to draw up

the plans. The house was fur ther modernised in 1932 by the last Ear l to live in

Dorset, when as Lord Stavordale, he brought his bride to live at Summer Lodge.

When Margaret and Nigel Corbett purchased the proper ty in 1979, they became

only the second owners in near ly two centuries. At that time, the 12 bedroomed

proper ty with dilapidated outbuildings, had been empty for 3 years. Within 7

weeks, they had conver ted Summer lodge into a hotel and their private home -

with eight bedrooms. The first guests paid £10.50 for dinner, bed and breakfast.

In 1988, the stables and coach house were conver ted into bedrooms and an all-

weather tennis cour t and heated pool were added. In 1991, the Dining Room was

enlarged and remodelled to compliment the Thomas Hardy designed Drawing

Room with its full length sash windows. The hotel became a member of Relais

& Chateaux. In 2003 the hotel came under new ownership with a complete

refurbishment in order and is now receiving guests from all over who continually

comment on its magnificence.

Welcome to drakes of Brighton, a stunning hotel on the seafront that combines breathtaking design with warm, fr iendly ser vice and all the contemporary amenities that

one would expected in a five star hotel. From the 20 individually designed bedrooms to the sea front Cocktail bar, from the restaurant to its unbeatable location, drakes is

true to its original premise: to deliver the best of everything.

At the very hear t of the drakes philosophy is the desire to see guests as fr iends coming to stay. drakes is never stuffy or formal, but is about relaxed glamour, an escape from

everyday life, and total relaxation. Created by award-winning architect Michael Phillips and designed by Tim Shepherd, drakes is more like an exquisite home than a hotel,

with colours and textures that stimulate the senses, from natural woods, rich brocades and heavy linens in slate grey, olive green and the signature dark rich red. Two listed

Georgian townhouses have been completely stripped to create a unique, intimate space spread over four floors, where drakes has 20 bespoke rooms, most with superb

sea-views, to the east of Brighton Marina and to the west of Palace Pier. Bedrooms are defined by European elm doors which can be reached via a magnificent sweeping,

cantilevered staircase, with no anonymous sprawling corridors.

The individually designed rooms each have a character of their own, from the 25 square metre triple aspect circular room with free-standing bath set in front of the floor to

ceiling windows, which offer breathtaking sea views, to the more intimate top floor attic rooms with balconies. All rooms have wet-rooms for long, indulgent showers. Once

in the room, divine Egyptian cotton sheets and velvet throws cocoon and cosset, ensuring a sweet night’s sleep. The rooms also provide state of the ar t technology for those

who can’t escape too far from the madding crowd: all en-suite rooms are fully air conditioned and finished to the highest standards with flat screen satellite televisions, state

of the ar t DVD players, music systems with a CD librar y and wireless broadband connection.

The lounge bar on the ground floor is available to all and offers a comprehensive list of cocktails and long drinks served from two discreet drinks dispensaries. The classical

open space echoes the decadence of a past era, with fabulous drinks trolleys and cabinets built into wall columns, giving a modern take on a relaxed private members’ club.

Guests will be delighted with the drinks lockers, whilst hosts will be on hand 24 hours for residents to top up drinks and really make them feel at home. drakes is placed in

an ideal seafront location in the hear t of Brighton. Brighton Pier, the Royal Pavilion, the Brighton Conference Centre and The Lanes are all less than five minutes walk away,

Gatwick Airpor t less than half an hour by car or train, and London only 50 minutes by train.

Created by celebrated chef Raymond Blanc OBE, Belmond Le Manoir aux Quat’Saisons is renowned for offering one of Britain’s finest gastronomic experiences. Situated in the pictur-

Caring comes easily to those of us who have the privilege of

working in and on the magnificent estate of Ashford Castle. And

because we care we wish to share this proud tradition with you our

guest. From the laying of the first stone in 1228 by the de Burgo

family through the philanthropy of Lord and Lady Ardilaun in the

19th century, there has been a seamless joining of ancient history

with the luxury of a modern hotel. This is what has made Ashford a

byword for excellence throughout Ireland – and beyond.

The very pinpoints of light that glint from the glorious surface of

Lough Corrib, Ireland’s second largest lake, seems to reflect not

only the story but the personality of these blue waters. The view

across the Lough has not changed in six thousand years. These

shores still remember the ancient hunters who once dwelt there

while welcoming the newer guests that come to take full advantage

of the many amenities afforded by the castle. There is the bountiful

fishing from a lake that also gives our guests the opportunity to

sample some island hopping or a wonderful leisurely cruise. George

Moore, who stayed at Ashford during the 1880s, remembered “the

fairy-like silences” and that the “noble wilderness, the wild outlines

of the guardian mountains which arise are as still and calm as the

visions of an Icelandic god, and in the exquisite clarity every detail

is visible.” There is our challenging golf course, and for those wishing

to learn the basics in the Art of Falconry the hotel provides this

special experience. Archery, clay-pigeon shooting, and from the

equestrian centre cross-country riding may also be enjoyed. Both

male and female guests can enjoy our health and beauty rooms. In

keeping with our desire to care for both our guests and the castle

we have replanted hundreds of majestic Oak, Beech and Chestnuts.

The result is that, working from the original maps, the famous

Woodland Walk is once again open. Indeed, when it was decided in

1996 to restore Lady Ardilaun’s gardens to their original splendour,

a service was done not only to the estate but to all who care about

the beauty of Ireland’s countryside. In the hotel itself you will find

our various dining rooms can cater to whatever your culinary needs

of the moment are, with many of the ingredients coming fresh

from the estate itself. Whether you wish to visit the award-winning

Connaught Room or the George V dining-room in order to enjoy

the marvellous views of the lake, we will do our utmost to ensure

that your visit is a memorable one. The Drawing Room offers an

all-day menu, including our renowned afternoon tea, while in our

informal Bistro, Cullens at the Cottage guests can enjoy a large

menu featuring fish, lobster fresh from the tank, steaks and more.

Pre-dinner drinks can be enjoyed in our Prince of Wales cocktail

bar and post-dinner drinks and entertainment in our world famous

Dungeon Bar.

In addition Ashford Castle has retained the charm and dignity of

its original architecture. It is a visual feast where you will be able

to enjoy everything from Waterford chandeliers and Roccoco gilt

mirrors to the sight of a carved Dante looking benignly down at

you from the walls. Whether you seek out the exhilarating feeling

The most famous hotel in the Channel Islands is steeped in history

and staying here is a truly unique experience. With impeccable staff

and service levels, our hotel proudly lives by its motto where “No

request is too large, no detail too small”

The Old Government House Hotel and Spa has operated as

a hotel since 1858 but its history dates back to 1796 when

it was the official Governor’s residence for the island and the

Bailiwick, which includes Alderney, Herm and Sark, until 1842.

The last Lieutenant Governor to use it, as Government House,

was General Sir James Douglas, after whom one of our modern

meeting rooms is now named. John Gardner purchased the prop-

erty and launched it formally as Old Government House in 1858

where it was quickly established within Victorian society as “An old

and comfortable country mansion”. The hotel has been extended

and modernised but has never lost its character and charm. There

was one period when the life of the hotel changed. That was from

1940 to 1945, when the Germans occupied it as their General

Staff Headquarters. The war over, great alterations were made. The

hotel was enlarged and refurbished, yet its unique atmosphere of

dignity and good fellowship remained and these qualities are as

evident today as they were in the Gardner’s time.

In 1957 Old Government House Hotel was honoured by the pres-

ence of Her Majesty the Queen at luncheon. She and the Duke of

Edinburgh were the guests of the States of Guernsey, whose Bailiff,

Sir Ambrose Sherwill, received them as the Royal Standard was

hoisted. Several islanders were presented and the Bailiff proposed

the loyal toast. The meal, needless to say, was fit for a Queen.

In March 2008, also our 150th anniversary year, the hotel was

acquired by The Red Carnation Hotel Collection. They undertook

a substantial refurbishment, but making sure to retain the fine

character and heritage of this, Guernsey’s most historic hotel. The

OGH has 63 elegantly stylish rooms and suites, each individually

designed to cater for a wide range of tastes and requirements. All

have recently benefitted from a major refurbishment – whilst the

decor is in keeping with the historic nature of the building, every

room and suite includes all those modern comforts you’d expect,

from en-suite bath and shower to air-conditioning, tea and coffee

making facilities as well as an in-room safe.

All rooms and suites are also fitted with televisions that offer cable

television, pay per view movies and radio. Complimentary internet

access is provided throughout the hotel, in all rooms and public

areas. Guests without a laptop can access the internet through their

television in each room, plus the hotel also includes an internet cafe.

The Old Government House Hotel has maintained an excellent

reputation for superb dining and a remarkable cellar for longer than

anyone can remember.

From hearty breakfasts to light snacks and al fresco lunches to

exquisite dinners, Chef and his team provide guests with a succes-

sion of delightfully presented treats, prepared from the finest local

ingredients. The hotel, not surprisingly, boasts two AA Rosettes and a

Gold Award from VisitGuernsey.

The hotel is on Bryher, which is the smallest of the inhabited islands

of Scilly measuring only about half a square mile. There are a couple

of dozen houses dotted around, the Fraggle Rock bar and a small shop

and deli. The island is vir tually traffic free and is criss-crossed with paths

and tracks that take you up over the grassy and rocky knolls and to the

deser ted sandy beaches that make up much of the coastline. Br yher’s

closest neighbour is the island of Tresco, where you can find the famous

Abbey Garden in addition to a pub, delicatessen and restaurant. Tresco

is owned by the Dorrien Smith family, who also own Hell Bay.

Sympathetically conver ted in the 1930s by the Sutcliffe family, who are still its current

custodians, the hotel possesses a plethora of original details and features including

mullioned windows, Jacobean fireplaces, a rare oakwell staircase, authentic tapestr ies

and moulded ceilings.

In 1918, the Hon Gerald Samuel Montagu purchased Great Fosters and commissioned

the famous architect W H Romaine-Walker to conver t the house to the Elizabethan

design that it honours to this day. W H Romaine-Walker and Gilber t Jenkins worked

together to establish the exceptional gardens, with their clipped yew hedges, knot

garden and archer y pavilion. Over the years, the grounds have been extended, restored

and enhanced, but aside from their scenic and floral acclaim they also boast historical

renown in their own r ight, with features such as the Drake sundial, which historians

suggest may have been donated by Sir Francis Drake. Today the gardens offer a stunning

setting for a romantic wedding and is an idyllic place for visitors to relax in pr ivacy.

They feature a Saxon moat with wister ia draped Japanese bridge leading to a sunken

rose garden, grassed amphitheatre , four secret gardens and a lake.
