TEA AND ALCOHOL HOW WE BREW OUR TEA Welcome to the Tea Junction, the Isle of Man’s first and only true tea shop, offering you the opportunity to purchase over 25 varieties of loose leaf tea and infusions of the highest grade, along with a host of other treats to delight and stimulate your taste buds. Most of our teas are sourced from Pekoe Tea, a small family run supplier based in Edinburgh who trade ethically with small companies and estates guaranteeing the freshest and highest quality teas available. We’re a little OCD with our tea. You won’t find any tea bags at the Tea Junction. Fortunately, the Island is blessed with good quality soft water, ideal for brewing tea! Not so great is the added chlorine so we filter that back out. The tea you choose will dictate the water temperature and brewing time. Generally speaking the more delicate whites, greens and oolong teas require a lower temperature and brew time than the black teas and infusions. We take care of the temperature and provide you with a timer at your table so that you can pour your tea at just the right moment. Some teas can be reinfused more than once, please ask if you would like a hot water top up. All our teas and accessories are available for purchase, please ask at the counter. Our range of fruity and tea based home infused gins are now available to take away in 50ml bottles and our tea based gins can also be purchased in 250ml bottles. B L A C KBlack tea is thought to have been developed during the Ming Dynasty (1368 - 1644). It is the most oxidised of all the tea types and generally has a stronger flavour than other teas. We stock black teas from China, India & Sri Lanka. Most black tea is made from fully oxidised green tea leaves.

DARJEELING 2ND FLUSH BOPDarjeeling is known as the champagne of teas and is known for its muscatel flavour. This broken leaf tea version is perfect for everyday drinking and infuses strongly enough to take milk.

GOLDEN MONKEYLegend has it that Golden Monkey gets its name because it was picked by specially trained monkeys from bushes that were inaccessible to humans. It is made from early harvested young buds which give it its golden colour. This tea is very famous in China and highly regarded as one of the best black teas that China produces.

LAPSANG SOUCHONGA black tea originally from the Wuyi region of the Chinese province of Fujian. It is sometimes referred to as smoked tea. Lapsang is distinct from all other types of tea because lapsang leaves are traditionally smoke-dried over pinewood fires which produces the distinctive smoky flavour. Our Lapsang is hand processed using the best tea leaves and wood for smoking.

RUSSIAN CARAVANWith its typical aroma this strong Russian blend will remind you of times past when teas were still transported by camel caravans from the land of origin to Russia & Europe. Best served black but can be taken with milk or a slice of lemon.

W H I T EWhite tea is famous for its mellow, delicate flavour and its smooth mouth feel. Made from young buds and leaves harvested in early spring, white tea is the least processed of all teas and undergoes very little oxidation.

MOONLIGHT WHITEMoonlight White is a superb example of Chinese white tea from Yunnan Province. It has a smooth creamy texture and a clean, refreshing and slightly fruity flavour.

ORGANIC SENCHAWe import this Japanese Sencha ourselves. It is a spring harvest tea with a pleasing balance of sweetness and astringency, along with a slight vegetal taste. Grown and harvested in the Makinohara district of Shizuoka Prefecture, one of the world’s premiere tea growing regions.

G R E E NGreen tea has a history that stretches back thousands of years. Today there is an almost unfathomable variety, ranging widely in shape and flavour. Green tea is kept green by halting the oxidation process very early on, and tends to be light and sweet or fresh and grassy – however some exhibit rich, umami (savoury) flavours.

DONG DING – CHINESE OOLONG TEADong Ding Oolong is traditionally made in Taiwan and consists of tightly rolled leaves of slightly oxidised tea. This tea, from Fujian Province, infuses with a gentle sweet light taste.

O O L O N GOolong (or Wulong) is a type of tea that is allowed to partially oxidise after withering. Originally grown in Fujian Province China, Oolong is now produced in several locations and processed into a remarkable assortment of highly specialised teas.
