Food for the Needy On Saturday, January 22nd, 2011, some Twin Palms 4-H members (Ruth, Anna, Dani, and Byron) served food at the Good News Rescue Mission in the food court. We served beans, rice, gravy, applesauce, pears, tapioca pudding, rolls, and soda to the people. In order to serve food, we had to wash our hands, put on latex gloves and aprons. There was another volunteer group there with us. They were the ones who served the trays to the people who were sitting at the tables waiting. There were about over two hundred people served, and we ran out of food. This made us think how good it is to give money to the Good News Rescue Mission to help buy food. We worked for about one hour serving food. Some of the people came up for seconds but they didn’t get all of the food we had in the beginning because we ran out. This experience made us think about how lucky we are to get three meals a day. Written by Byron Upshaw Twin Palms 4-H

Range Cleanup The Redding Gun Club shut down shooting and hosted a range cleanup of the rifle and pistol area on Sunday, 02/13/11. Because the 4-H Shooting Sports Rifle Project uses this area, they asked us to help clean it up, which we decided to do as a community service. James Cochrane, Devin Goschke, Byron Upshaw, Ross Packwood, Jenna Waite, and Cameron Pella and some of their parents pitched in with about thirty members of the Club to help with the cleanup. We worked for several hours to collect, stack, and burn the wood and cuttings from clearing the overgrowth in various areas on the range. We enjoyed the lunch some of the members put on for free. CLUB & PROJECT CONNECTION

Goat Education Day at Chico State On Saturday, February 12, I attended the Sheep and Goat education Day at Chico State. This was my second year attending. From my club, I saw three other people there. Two of those people are doing sheep and myself and a friend are doing goat. The event was very good and I learned a lot again this year. I attended three workshops, they covered Fitting, Showmanship and also how to choose a market goat. I really liked the showmanship workshop. The speaker told us of new requirements for showing goats, like having to brace your goat. This will help me to practice at home. Also at the event, there were a lot of booths, where you could purchase items, like slinkies for your goat or lamb, jewelry and crafts. They also had some sellers there where you could actually buy your market animal from one of the breeders. I also like going there, because all of the people that are doing workshops are very nice and will answer all of your questions. I am sure I will go again next year.

Cottonwood 4-H Quilters Cottonwood 4-H Quilters have been busy! Last month we visited Quilts in the Attic, in Cottonwood. Established in 2006, the shop is in the historic Train Depot in downtown Cottonwood. They specialize in current top-of-the-line fabric and wool with approximately 2000 bolts to choose from. Quilts in the Attic hosted our Quilting group for a tour and demonstration. We had a great time learning different things about quilting, and also looking at all the different fabrics. While there we started planning our final quilting projects. We are all excited to get to work on our own projects and enter them into the fair! ~Mikaela Santos

Foothill 4-H Sheep Project Foothill 4-H Sheep Project members, including Bailey Alexander, Jessica Alosi, Mason Bebensee, Mckinlee Boban-Gyves, Beau Boudro, Brody Dubos, Marissa and Samantha Havens, Ashley Lanzi, Tawny Pair, Kendall Renelle, attended the CSU Sheep Education Day in Chico. They learned about lamb selection, showmanship, fitting, feed and nutrition, and Quality Assurance.

Valley Small Animal Ag. Field Day This is your last event to fulfill your contract for the 2011 Shasta District Fair for small animals.

Valley Small Animal Ag Field Day will be held on Saturday, April 16, at the Shasta College Farm. You will have the opportunity to show your small animal projects. Registration that day will begin at 8 a.m.

Please fill out the mandatory event registration on page 9 of this TnT so you may attend. You can also find this registration at: http://ucce.ucdavis.edu/survey/survey.cfm?surveynumber=5947

Registration Forms are due: Friday, April 8th to the 4-H office.

Horse Ag Field Day By Mariah Hoffman Shasta County-Wide Horse is having their Buckle Horse Show and Ag Field Day on April 30th at PCR Arena in Millville. Sign ups are at 8am and the show starts at 9am. Judges are Pleasure: Mindy Nagel, Trail and Project Boards: Brenda Wolf and Gymkhana: Mike Caldwell. This is open to everyone in any 4-H horse group. Classes will be for 9-10 year olds, 11-13 year olds, 14 and up and additionally in Pleasure there will be a Novice rider class. Medals will also be awarded for Showmanship and Judging School. You can win a beautiful High Point Buckle for either Pleasure or Gymkhana Divisions. Reserve Champion and ribbons will also be given. Anyone interested in sponsoring a class, buckle, and medal or donate prizes for silent auction are welcome. A great snack bar will be open all day. Everyone is welcome to attend to cheer the kids on. Helmet, boots and long pants are required. Call Judy Hoffman for directions or questions at 365-0400.

Sectional Presentation Day

Congratulations to those who earned Gold at Presentation Day ~ You are invited to participate in the Sectional 4-H Presentation Day hosted by Siskiyou County.

Deadline for applications and $1 enrollment fee is Friday, March 11, to the Shasta County 4-H office.

The event will be held on Saturday, March 26, 2011 at Jackson Street School in Yreka.

Judges and Room Coordinators are needed in order for our members to participate ~ please contact the 4-H asap if you can help!!!

West Valley 4-H Buckle Series It’s time again for the West Valley 4-H Horse Project Buckle Series. The dates for this year’s shows are March 19 and April 16, 2011. Both shows will be held at Palo Cedro Rider’s Arena on Millville Plains Road in Millville. Registration begins at 8:00 am and the show will begin at 9:00 am. Pre-registration is greatly encouraged and comes with a substantial discount! 4-H Enrollment Fee Increase

The California State 4-H Youth Development Program increased the enrollment fees for the 2010-2011 year by $3 per member. The Shasta County 4-H office received this notification after enrollments papers were already distributed to the community leaders. The Shasta County 4-H Council voted to pay the $3 per member difference for this year. We would like to make all members aware of this situation so that you may prepare for the fee increase for 2011-2012 program year.

Poultry Show

The March poultry show is on Saturday, March 26th at the Shasta College Farm at 8:00am. Judging and showmanship starts at 9:00am. All birds must pass a health inspection prior to entering the farm building. We show our birds, have different contests such as best dressed bird, and raffles. There will be knowledge and poultry expo quizzes to take. We will have an awards assembly after the show. There will be many exotic breeds of chickens to see a the show. Reach for the Stars Are you in high school? Have you or will you be receiving your gold star rank? Are you looking to exhibit your leadership skill? If so, then here’s an opportunity for you!! The All Star is the highest rank available at the county level. It’s an opportunity to sharpen your leadership and speaking skills, become involved with the planning of the county Jr/Teen Retreat and Summer Camp. It’s what I call “fun work”. You also represent Shasta County at the State Leadership Conference. Valley Large Animal Ag. Field Day

This is your last event to fulfill your contract for the 2011 Shasta District Fair for large animals.

On Saturday, May 7, at the Shasta District Fairgrounds, members will have the opportunity to brush up on their showmanship skills before fair. Some rules and information follow:

• Unloading of animals: 7:30 a.m. to 8:30 a.m. No vehicles will be allowed on the grounds except during unloading and loading of animals.

• As a precaution for Porcine Circovirus, 4-H members will not be permitted to bring their hogs on the fairgrounds. However, there will be an educational activity for those members attending.

• Expo Challenge: Report to Trinity Hall between 8:00 and 8:30 a.m.

• Showmanship & Confirmation approximately 10:00 a.m. Round Robin after lunch.

• Members may only show one animal.

• Appropriate shoes must be worn. No open-toed shoes.

• Members must be dressed neatly, allowing you to safely show and tend to the animal. No shorts will be allowed. Remember the 4-H uniform is not required.

• Participants must clean pen area and check-out with the club person in charge of their barn before leaving the grounds!

• Everyone is to remain on grounds until the conclusion of the event to get credit. No walk-offs.

California 4-H will be 100 years old in 2013!!! Let’s celebrate! The UC 4-H Youth Development Program will celebrate its centennial anniversary in 2013 - 2014! The State Leadership Conference will celebrate its 100 year anniversary in 2013! While 4-H began nationally in 1902, 4-H in California did not start until several years later in Humboldt County. In preparation for the 2013 celebration, let’s gather the 4-H alumni of Shasta County and beyond to help us celebrate! Please get the word out and ask any alumni that you know to visit: www.4-h.org/information-for/alumni-friends/ so we may contact them and include them in the festivities!

Horseless Horse Project

Earn community service hours for your project report and enjoy being around horses, help MY-U Ranch prepare for their Production Sale on March 26th. We are asking the 4-H Community to help spiff up 12 of our horses. Able bodied helpers will groom, wash, clip, braid, & fuss over these 12 horses who will begin a new chapter of their lives after March 26th. Adult supervision on hand with safety a priority.

Starting February through March 22nd at MY-U Ranch Cottonwood.

4-H History Preservation Program Over the past century, 4-H has been at the forefront of experiential education, including both programs and processes. The stories of these unique ideas and their successful outcomes cannot be lost. To this end, in close collaboration with national 4-H headquarters at USDA, National 4-H Council, State and County 4-H programs, the 4-H History Preservation Program will help obtain, digitize, and share 4-H history. http://4-hhistorypreservation.com/.

California 4-H Military Partnership Program

The California 4-H Military Partnership Program has received funding to support 92 special needs youth who have a loved one serving in the military to attend Camp Ronald McDonald at Eagle Lake, a fully

accessible residential summer camp. Held August 7-12, the camp session will include traditional camping activities such as arts and crafts, hikes, fishing, canoeing, sports, swimming, talent show and campfires. The goal of the camp is to provide confidence-building experiences and programs that are designed to support each camper’s individuality through the challenges of outdoor group living and teamwork in a supportive environment staffed by trained Program Specialists.

Judges needed for State Field Day!

As part of the Field Day experience, we need judges. Counties who send members to Field Day are required to provide judges. For every 5 members that are sent in we ask that a county provide 1 judge. In past years it has been difficult to gather all the required judges. State Field Day coordinators will be holding counties accountable for sending judges. UC Davis CA&ES Field Day March 5, 2011, 7:15am - 6:00pm UC Davis College of Agriculture and Environmental Sciences are hosting the 35th annual CA&ES Field Day on March 5, 2011. Over 3,000 FFA and 4-H members (age 14 and older) will participate in 26 contests. High school aged 4-H members are invited to participate and/or observe the contests held on the UC Davis campus. This event will also serve as the California 4-H State Qualifier for the National 4-H Livestock Judging, Dairy Cattle Judging, and Poultry Judging contests.

State 4-H Photography Contest

The California 4-H Photography Contest is designed to provide an opportunity for regular 4-H members (9-19) to showcase their best photographs taken within the past 4-H year. The photography contest is held during the Califor-nia 4-H State Field Day at UC Davis. The entries will be judged in the morning to early afternoon. After the judging is complete, the doors will be open to the public for view-ing. Awards for the photography contest will be an-nounced during the Awards Ceremony at State Field Day

Attention Quilters and Sewers:

CA 4-H State Fashion Revue 2011 would appreciate your help. Make a quilt square, a quilt top, or a complete quilt for a wounded soldier. Special size for stretchers and gurneys, approximately 45 x 81 inches, are needed. Red, white and blue fabrics are preferred. If you make 12 ½” x 12 ½” squares then they can be combined with squares made by other people for a whole quilt. Bring or send your squares, quilt tops and quilts to State Fashion Revue at Olson Hall, UC Davis during State Field Day, May 28, 2011. Youth are invited to sew squares together and quilt during the morning SFR workshop. Financial Aid for State Leadership Conference

Twenty-Seventh Annual State 4-H Shooting Sports Match

It’s time to sharpen up your shooting skills and start preparing for the annual event! This is sponsored by the Siskiyou County 4-H Council. Entries for the State 4-H Shooting Sports Match must be postmarked by March 7, 2011.

State Leadership Conference

The Education committee of the State Leadership Conference would like to ask members, volunteers and staff to please consider presenting a session or workshop at SLC 2011. Sessions address many subject areas, but we ask that they emphasize the three National 4-H Mission Mandates. These mission mandates each focus on skills that youth need for success in the 21st century.

4-H Science, Engineering and Technology (SET) provides opportunities for youth to engage in the process of discovery and exploration in science, engineering, and technology.

Healthy Living teaches the youth to lead healthy and productive lives both physically and mentally as they grow into adulthood.

Citizenship is a strong focus in 4-H so that youth may become engaged and well-informed citizens in their community.

Tracks are five hours in length and will be presented on Friday, July 29. Mini tracks are two and a half hours in length and will be presented twice on Friday, July 29. Workshops are an hour and fifteen minutes in length and may be presented one to three times on Saturday, July 30.

Application deadline is January 14th though we will be accepting applications through winter and early Spring. California Equine Education Field Day 2011

We are very excited to inform you that in 2011 this event will be held in conjunction with State 4-H Field Day held in Davis, CA on May 28, 2011. This event will take place on campus. Equine Educational Field Day will be held May 28-29, 2011. Arrangements are being made regarding the facilities; once this is complete information will be announced as to where and when the events will be.

2011-2012 4-H State Ambassador Applications

Applications are now available for the 2011-2012 4-H State Ambassador Team. The 4-H State Ambassador position is one of the highest service opportunities and recognition attainable in the University of California 4-H Youth Development Program. 4-H State Ambassadors are youth who have excelled in the areas of leadership and community service, and have been selected to serve the 4-H Youth Development Program in roles that promote leadership through education and service. The deadline to apply is March 25, 2011. Interviews will be held in Fresno, Davis, and San Diego. Following the interviews there will be an information session for members and parents who would like to apply to be a State Ambassador starting at 5 PM. This is open to any future applicants. Family Nutrition & Physical Activity Report

The American Dietetics Association (ADA) has recently released their State of Family Nutrition and Physical Activity Report. Applications are short - just 5,000 words or less - and should summarize: how the project will involve others, who it will help, what effect it's expected to have, when it will start and how the funds will be used. 4-H Citizenship Initiative - Ready to Launch! 4-H Citizenship… will soon launch in California, joining 4-H SET and 4-H Healthy Living as the third of the 4-H National Mission Mandates. For a century 4-H has engaged youth in citizenship through service learning, decision making, communication, teamwork, problem solving, and critical thinking skills. The 4-H Citizenship Initiative will refocus interest and attention to the important and powerful contributions youth make in their communities everyday! Over the coming months watch for exciting new opportunities for youth to engage and rally their communities in support of active citizenship. Also check out citizenship activities on the state 4-H website at http://www.ca4h.org/Projects/Citizenship/ and opportunities to participate in the 4-H CAL-Focus Conference, recently awarded the National 4-H Award of Distinction. SCHEDULE (Approximate times)

9 - 9:45 a.m. Check-in and set up entries. NO LATE ARRIVALS.

9:30 a.m. Judges’ Orientation

10 - 11 a.m. Judging begins in all categories. All adults are to stay out of the judging area. Each member is to sit by their food entry, serve each judge a sample, and answer any questions. Members with multiple entries should watch for the judges as to which entry is judged first. Members must remain with the entry, if feasible, until all judging is completed for that specific category. Members with multiple entries may not be able to stay with each particular entry. When members are dismissed from their final class, they are to go to the Foods Quiz area. Following the completion of all judging, the foods will be open for viewing and picture taking.

Exceptions - Members are not to remain with their entries for Edible Centerpieces, Card Table Displays, or Decorated Cakes. They go to the Foods Quiz area to take part in the fun activities, heading to a waiting area when they are finished.

Foods Quizzes - All members are invited to take part in this quiz to see how knowledgeable they are about foods and related subjects. This quiz will be open at 10 a.m. Bring a pencil and take the challenge!

11:30 a.m. Buffet lunch is served after all judging is complete. Each family attending is asked to bring an additional salad or main dish for 10 people. Extra dishes are important so everyone attending (parents, siblings, etc.) will have enough to eat. Members are also encouraged to use their “Favorite Foods Day” entries for this lunch. Please do not eat your entry until the potluck begins. Everyone will need to bring their own place setting (plates, cups, utensils, etc.). Drinks will be provided. During check-in your additional food dish can be kept cold/warm in the kitchen until lunch.

Noon Awards Ceremony

NOTE: Participants may not leave until the awards ceremony is complete if they wish to receive credit for attendance.

IMPORTANT INFORMATION

EVENT ELIGIBILITY: This event is open to all 4-H members. Please check the category rules for entry restrictions.

RECIPE CARD: Page 10 of this TNT . A signed copy of the recipe must accompany each submitted entry form. These will not be taken to the event. Community leader must sign categories 6, 11 & 12. Project leader must sign categories 1, 2, 3, 4, & 7. No signature needed for categories 5, 8, 9, 10 & 13.

MENU CARD: Prepare one for each entry except 8 & 13. Type or neatly print on the sample menu card on page 10. Menus must be nutritionally balanced. Circle your entered Favorite Food item. Place the recipe for the entry on the back of the card. Be sure to include your name, project, year in project, club and grade. Bring to the event and set on table with place setting. These will also be collected at the end of the event.

CARD TABLE DISPLAYS: Formal and informal will be combined. Please work with members ahead of time on their table settings and displays. Each participant is responsible for setting up his or her own display(s).

UNIFORMS: Uniforms are acceptable, but not required. Clothing must be neat and clean.

PLEASE NOTE: Adult leaders and parents will NOT be allowed in the competition area until all judging is completed. There will be activities planned for parents in a separate room during the judging period. All Stars, Junior/Teen Leaders and older members will be available to help younger members and answer questions following check-in. Leaders and parents are to help fill out any required paperwork in advance. Allow enough time if you have entries in more than one category.

FOOD PREPARATION: Foods may be prepared using any source. No food preparation will be allowed at the event. They must be complete and ready for judging when brought in. All foods must be prepared with fresh ingredients. If presenting hot foods and prepared prior to the event day, properly refrigerate or freeze, then properly warm for presentation. Pack dishes properly - hot dishes stay hot and cold stay cold. Items may be kept in the facility refrigerator or oven upon request. Cream pies are prohibited for health reasons.

Category 1-4 Bring one complete place setting for the course being served. This includes: plate(s), napkin, place mat, utensils, and beverage glass(es). Members have the option of using paper, glass, pottery, wicker, plastic, etc. The place settings or centerpieces are expected to fit the theme. Be sure to bring an appropriate serving utensil for your food entry to serve the judge. Menu card MUST be nutritionally balanced. Small centerpieces and decorative touches are optional.

Category 5 Decorated cakes should follow the theme. All cakes will be judged for appearance only. Recipe method is not a con-sideration. Include a menu card showing use of cake. Cake forms may be used.

Category 6 Any 4-H member enrolled in a Market Animal project (beef, sheep, swine, meat goat, rabbit, or poultry) may enter a food item using meat from their market animal species. A nutritionally balanced menu card and recipe MUST be included along with a complete place setting. The place setting and menu are expected to fit the theme. Participation here DOES meet SDF Contract require-ments. Entry in this division must have more than one step in the preparation process. Example: slice of ham (not acceptable) vs. cas-serole with broccoli, rice and ham (acceptable).

Category 7 Entrants prepare and serve a dish or bread using the food they have preserved. Bring a complete place setting for the course being served. Include menu card and recipe.

Category 8 Create a sculpture from foods like cheese, crackers, vegetables, nuts & fruits, and edible flowers. Creations may be on wicker, foam, paper plates, plastic, etc. Be sure the theme is followed and at least 5 fruits and/or vegetables are used. A card giving directions on how the centerpiece was assembled is required.

Category 9 Decorate a card table to illustrate “A Taste of Italy.” No food is to be placed on these tables! Entrants must furnish their own card table, tablecloth, or place mats, dishes, and utensils. Entries will be judged on overall appearance, color design, and tex-ture coordination. Each display must have a menu card which will state whether it is a luncheon, dinner, or party.

Category 10 Primary members should enter their item under this Primary category.

Category 11 Prepare your bread using the appropriate utensils and dishes for serving. You must include a menu card with your rec-ipe. A place setting for your bread should follow the theme.

Category 12 Prepare your appetizer using the appropriate utensils and dishes for serving. You must include a menu card with your recipe. A place setting for your appetizer should follow the theme.

Category 13 You may want your cookbook to be spiral or loose leaf, allowing an addition each year. You may want to staple and make a new one each year. This category is to challenge your imagination and have fun at the same time. The cover, title, page and index will be judged on decoration, age appropriateness, how well presented, cleanliness, neatness, and the knowledge of the project. Content will be judged on category areas (main dish, salads, etc.) which may include recipes prepared in your cooking classes, recipes you’ve tried, or family recipes. Personalized comments on the recipes is part of the judging. The cookbook can be typed or handwritten (black or blue ink).

You may challenge only one species in the large animal category and one species in the small animal category in the Expo Challenge. You do not have to challenge both a large and a small animal. You do not have to be enrolled in the species project in order to participate. You will only be competing against yourself in this event. Animal expo medals will be awarded to those who achieve an overall average (written and hands-on) score of 80% in the species chosen. You will mark (Level I) if this is your first time. You graduate to the next level when you passed the previous level.
