The total maturity of the fruit - which had small, goldenyellow grapes this year - allowed us to achieve thismoderate acidity and considerable body.

The Winemaker's notes...this year in the stunning Chardonnay vineyard I wasparticularly bowled over by the extraordinary goldenyellow colour of the bunches. Promoting this magnificentcolour was the recurring theme of the entire winemakingprocess. I made sure that the golden colour of the bunchwas transferred from the skin to the must, with its intenseand shiny colour, reaching this excellent glass ofChardonnay fully intact. The total maturity of the fruit -which had small, golden yellow grapes this year - allowedus to achieve this moderate acidity and considerable body.

This is a vintage to remember. The exceptional seasonallowed us to effer this elegant and refined Pinot Grigio.The gift of an early grape harvest.

The Winemaker's notes...in this vintage, the grapes, which had fully ripenedbeneath the June sun, allowed us to carry out an earlyharvest. Thu must that was obtained, the result of uniqueseason, was heady. The entire cellar smelt of peach oncethe fermentation had got underway. This is a vintage toremember. The exceptional season allowed us to offer thiselegant and refined Pinot Grigio, the gift on a early grapeharvest.

The Winemaker's notes...the last harvest was preceded by a season that wasunusually hot that provided us with healthy grapes thatwere fantastic in terms of their acidity and sugar balance.The winemaking technique used allowed us to maintain allthe typically special characteristics of freshness andgrassiness of a true Cabernet Franc.

The Winemaker's notes...walking along the rows of Cabernet Sauvignon vines, a fewdays before the grape harvest, I noted to my satisfactionthat the bunches had been really sweetened by anunusually hot season. In that second, I made a mental noteto myself to preserve the extraordinary properties of thesesuperb grapes. A slow fermentation, suitably interrupted atthe right level of sugar residue, ensured that expectationswere met yet again this year. We are proud to present aprecious and aromatic wine, which I believe is one of thebest versions in recent years.

This Chardonnay is good young, but can keep allof its flavour until approximately 5 years after the harvest.Colourgolden straw yellow, bright and shiny.Bouquetfresh, with nuances of exotic fruit, pineapple and mango,grapefruit, with overtones of citrus fruit and vanilla.Flavourgood balance, it's warming and fresh at the same time,with nuances of field flowers and camomile, tropical fruitand toast, with a long-lasting flavour.Alcohol content 12,5% vol.Optimal serving temperature 12-14°CGastronomic matcheswhite meats, fish like eel, shellfish with sauces, smokedsalmon, excellent with fresh cheeses and also as an aperitifif served with lots of snacks.Packagingin 75 cl bordolese reale bottles in boxes of 6.

This wine is also the result of great care and attention intothe tiniest of details. Picked by hand at their most mature,the grapes are quickly transported and fermented. Onlythe first-pressing must is transferred into the barriques forfermentation, where it remains for a time that varies from 6to 10 months. The wine is then extracted, refined for a brieftime in steel vats and then bottled.

The Winemaker's notes...the common thread running through the entirewinemaking and ageing process of this wine was the ideaof offering a wine that's capable of astounding due to itsexceptional nature and uniqueness. A considerableamount of the work is in fact done in the vineyard wherebunch thinning is carried out so that the plant isn'toverloaded. This ensures that the remaining bunches arenourished as much as possible. A new selection is donewith the manual harvest, so that only the best bunchesreach the cellar. This is where the real winemaking processthen begins. Only the first-pressing must is sent tofermentation in the barriques after the addition of yeast. Atthe end of the fermentation, the battonage is done foreach barrique every week to keep the fine lees swirling(mainly consisting of yeasts). The lysis of the yeast lendsthe wine further structure and complexity. After a variableperiod of time, the wine is then aged in steel tanks andbottled.

The Winemaker's notes...the Sauvignon grape variety is difficult due to its natureand the grapes are usually strong and green, forcing thewinemaker to use controlled, low temperature processesand a small amount of the must remaining on the skins toguarantee that the wine will have the typical, varietalorganoleptic characteristics.

The fermentationprocess occurs at controlled temperature, below 28° C, anddaily checks and adjustments are made; moreover, duringthe fourth and seventh day of fermentation a “delestage”process is carried out. Once completed the phases ofalcoholic fermentation and extraction, peel racking andpressing may begin, while all the necessary conditions formalolactic fermentation are created. As soon as this latterprocess is carried out, decantation is indispensablyperformed in order to decide which is the best momentwhen the Sottovoce Merlot will be put into barrels forperfecting. The perfecting phase lasts about 10-18 monthsduring which analytical checks and sensorial analysis areregularly carried out by our chief oenologist. Storage and ageingstorage in a cool dry place is recommended, as the agingprocess for this important wine can last more than 4-6 years. Colourdeep red, dark, deep, with elegant browny red coloured notes.Bouquetclean, warm, with enjoyable hints of red berry fragrance,followed by a marked vanilla and toasted wood note. Atthe end, notes of green pepper are perceived.

Flavourexcellent mouth entry, enjoyable sensation of a lighttannin diffused on the tongue and a warmth andsweetness perception given by the alcohol, good lengthand persistence that leave a pleasant dry mouth whichasks for another sip.Alcohol content 13,5% vol.Optimal serving temperature 18°CGastronomic matchesSottovoce Merlot combines very well with all red roastedor grilled red meats, spicy grilled sausages, chilli con carne,tomato based pasta sauces like Ragù Bolognese orAmatriciana and also with red meat Indian curries. The Winemaker's notes...Merlot has always been one of my favourite grapevarieties. I love its gentleness, flexibility and the fact that itis easy to assemble with other vines. This year I adopted aknown technique, albeit not widespread, to ensure thatthe content of the bunches was transferred as well aspossible into the wine. A decision was made to work withdry ice. Using this technique, as soon as the skin of thegrapes comes into contact with the ice in the form ofpellets, a shock is created, when the state changes fromsolid to gaseous. This shock breaks down the cell walls andallows the substances contained inside them to leak out,whilst the interior remains perfectly preserved.

In January, the cuveè isthen prepared and the base wine is put into autoclaves,where the fermentation ends. The wine then rests for afurther 6 months at a temperature of 4°C before beingbottled.Storage and ageingin the cellar, at controlled humidity and a temperature of10-12°C. It is recommended that it is drunk young.Colourrosé with delicate, sparkling highlights.Bouquetpleasing, light, floral and reminiscent of small red fruits.Flavourdry and velvety, fresh, lively and fruity with nuances ofsmall red fruits. In honour of grandfather Batista, the family's progenitor,we are proud to present this wine, the fruit of a painstakingselection of the best Merlot and Cabernet grapes. This yearwe have also introduced a small amount of raboso grapevarietal, this in order to further distinguish our product.They are deliberately harvested late in order to carry out aslight, spontaneous, partial drying on the plant. This allowsa natural concentration of the wine's components,enabling it to last for a considerable period in the oakbarriques. The maceration is prolonged so that all thesugar content transforms into alcohol when it comes intocontact with the skins, in order to extract all of the grape'saromatic components.

The Winemaker's notes...in terms of the Batista we have also striven to present awine that makes an impression due to its unique andspecial characteristics. A considerable amount of the workis in fact done in the vineyard, where bunch thinning andthe optimal selection of the bunches is done using thesame methods adopted for both wines. Once themaceration has finished and after having done tworackings, the wine is transferred into the barriques, whereit remains for a variable period. Only the best barriques arechosen for this superb wine.

Subsequently it istransferred into a steel autoclave for secondary fermentinoand reach the destre pressure, this value ranging from 2,00to 2,50 ATM (Bar). At this point the Moscato IGT VenetoSparkling wine is cooled to -2°C in order to conserve it’ssugar residue and aromas, then after 10 days in theseconditions, it is then ready for isobaric filtration and bottling.Storage and ageingbest stored in a cool and dark cellar – note that it’s peakaromatic freshness is espresse within the first year ofbottling.Colourto the eye, a nice level of froth is apparent, a good tone ofyellow with delicate notes of green is noticeable.
