Roxy is a dog forall reasons. Beth Whit-ney of Vilas, N.C.,wanted a dog as a play-mate for her toddler sonand a companion for herhusband and her.
But she alsowanted a dog that wouldwarn off any strangerswhen her husband, aU.S. Army Reserve Ser-geant, was away ontraining.
A friend told herabout Petfinder, and shebegan searching. “I wasquickly greeted by hun-dreds of beautiful furryfriends, but one in partic-ular stood out,” she says.
She was aDoberman Pinscher mixnamed Cherokee listedon Petfinder by Eliza-
bethton Carter CountyAnimal Shelter in Ten-nessee.
She and her sondrove about one-and-a-half hours to meet thedog. “The shelter work-ers told me she had beensurrendered by her own-ers along with three otherdogs,” Whitney says.
“The previousowners were unable tocare for the dogs as a re-sult of being forced toleave their apartmentwhen the bank fore-closed on the propertyfrom their landlord.”
The three otherdogs had been adopted,but the one she was in-terested in remained atthe shelter for a longtime. She knew at once
Cherokee, now namedRoxy, was the perfect fit.
“She is my work-out buddy,” Whitneysays. “We take dailyhikes on our property.When Roxy isn’t hikingwith me, she is playingwith my son on our deckor in the yard.
“A majority of hertime, however, is spentcuddled up on the couchwith her head in my hus-band’s lap or engulfed inone of my son’s blankieswhile he uses her as apillow,” she adds.

This recipe is de-signed with tender baby-back ribs in mind. If youprefer larger, meatierspare ribs, simply reducethe oven temperature to300F, and increase thecooking time to 3 1/2 to 4hours.
Brine and Ribs:1/4 C coarse salt1/4 C dry rub
barbecue seasoning forpork (use your favorite)
24 ounces rootbeer, divided
2 racks baby-back pork ribs
Sauce:1 C ketchup1 C root beer1/2 C cranberry
or apple juice2 Tbl
W o r c e s t e r -shire sauce
2 Tblsapple cidervinegar
1/4 Clight brownsugar
2 Tblsdry rub barbe-cue seasoningfor pork
1. To preparebrine, combine salt, dry
rub and half the root beerin a small saucepan.
Cook overmedium heat, stirringconstantly, until salt and
seasoning dissolve. Re-move from heat. Add re-maining root beer. Let
cool completely in the re-frigerator.
2. Pat ribs dry.Use a sharp chef’s knifeto score “X” patterns into
the mem-brane thatruns alongthe back(concave)side of theribs.
C o m -bine ribsand brinein a ziptopplastic bagand mari-nate in the
refrigerator 12 to 24hours.
3. Preheat oven
to 375F. 4. Drain ribs and
discard brine. Wrap eachrack in 2 layers of heavy-duty aluminum foil.
Place in ovenand bake until tender, butnot falling apart, about1½ to 2 hours. (MakeAhead Tip: Ribs may beprepared in advance upto this point, wrapped inplastic and stored forseveral days in the refrig-erator.)
5. To preparesauce, combine all ingre-dients in a smallsaucepan. Bring to a boilover medium heat,whisking occasionally.Reduce heat and simmer
20 minutes to thicken,stirring occasionally. Letcool, cover and store inthe refrigerator up to 1month.
6. When you’reready to finish cookingthe ribs, heat broiler.Slice foil packets openalong the top of eachrack and peel back. (Youmay remove the foil com-pletely, but leaving it onmakes cleanup easier.)
Brush the ex-posed ribs liberally withsauce and broil untilcaramelized and bubbly,about 5 minutes. Makes2 full rack and 3 cupssauce. Serves 6.
