A party of gentlemen, visited the premises of the Aylesbury Dairy Company at 'Bayswatcr recently to inspect the working of tho new vacuum ice machine patented by 'Messrs. iWindhausen and Picper. This very complete and valuable be stated, though now in, operation on tho property of tho Aylesbury Company, is distinct from that under- taking; but' it is obvious that for the purposes, of milk-coolin- g or conden- sing such apparatus might be cm-ploy- with advantage in dairies conducted on a large scale. The company included Professor' Frank-lan- d, F.li.S., Dr. Hopkinson, F.R.S., Mr. Imray? .C.E., Surgeon-Gener- M'Kinnon, C.B., and Mr. rEmest Hart;-an- d Mr. Carl Picper, the rep- resentative in this country of the proprietoreafvthepatcntsjjcxplained the working of the pump, refrigera- tor, and iccr machine in detail. Further, the visitors had tho advant- age1 of seeing the ice actually emerge from tho freezing cylinders in a condition ready for use; and as it differs from ordinary block ice in being opalcbcent, and is turned out in what may in fact be described as huge columusof crystal, it presents a pretty and novel-appeara- nce, being something in tho iiaturo of masses of hailstone; This is owing to vacuoles in, the jBubstanco ' of the jco, duo to its lifbduction m a vacuum chamber.,, ,jOu wthafe account it is saiil to bo jrioro durable; but the machine, it jnay ba mentiouen, is p capablo of 'producing, 'if desired, transparqnt ice at ia somewhat' greater cost. Tho machino exhibited, which has ten cylinders,, is capablo of manufacturing 12 tons a day with tho berviccs of only one man, and tho amount of steam powor required, buing also comparatively bmallj a further considerable econ- omy is effected. Thereis hardly a week goes by but whatsome case turns up in which theabsolute necessity for this species ofvigilance is not felt.

It is commonly said in Honolulu,u whenever you want to go on a

spree, go down country, there arc no.police to interfere with you," andeven in Honolulu some districts can-

not have a policeman regularlystationed there, and the conse-

quence is that those who wish tooffend against the laws retire tothese spots lo do so.

It would redound to the credit of

the Ministry if they would providefurther funds for this importantneed in our city, and they will beheld lo be justly to blame if anyserious disaster happens from thewant of it.
