[EDITOR’S MESSAGE]

AS SURE AS the sun is always shining somewhere, even on the most dismal of winter days, when we start a new calendar year, the clean slate brings with it the irresistible urge to start again and rapidly fill that blank canvas with the business of busyness.

Before you begin feverishly scribbling in a long 2016 To Do list, consider some sage advice I once read that goes something like this: Don’t waste the perfectly good person you

are by trying to be somebody else. We shouldn’t feel we have to become someone else’s idea of who we should be.

Sure there may be a few pounds to lose—but with an eye to improving overall health and care of joints like hips and knees. Maybe there’s more grey hair to camouflage too, as we long as we don’t sacrifice our humanity for vanity. Or perhaps you want to learn another language—at least a few key phrases to help you better navigate that one exotic destination you hope to check off your bucket list this year.

Before you hit the ground running to get a head start on 2016, consider resetting the pace in your race to fill up calendar space by taking a page out of Brené Brown’s book The Gifts of Imperfection. Brown, through her own midlife unravelling discovered that this is a time when we become desperate to live the life we want to live not the one we’re supposed to live. She says, at this significant time, we’re being challenged by the universe to let go of who we think we’re supposed to be and embrace who we are.

Let the unravelling begin and, by all means, take all the time in the world!

Check out our new Emporium Go to page 12!

FOR MANY OF OUR well-travelled readers, it will come as no surprise that tipping etiquette is different around the world. For example, in America tipping anything less than 20 percent at restaurants is consider- ed bad manners, but across the pond in places like England and France, there’s generally no expectation of a tip for service. When I was in England, I learned quickly there was no need to tip at a bar.

Is tipping an out-of-date custom or is it still a relevant way to say “Thank you” for serving us so well. Some North American businesses want to eliminate tipping, but does it make economic sense?

Eliminating TippingA restaurateur in New York City, a place with arguably the most established tipping culture, wants to remove tipping from all restaurants. Danny Meyer’s is chief executive at Union Square Hospitality Group.

He recently announced they will be eliminating tipping at 13 restaurants operated by the company. Instead servers and staff will receive better hourly wages. To make this happen, prices will be increased and all menus will show that hospitality prices are included. The bills will no longer have a blank line to include tip. Customers will pay what they see. That’s it. Meyers believes this will help by providing more predictable and reliable wages and give his 1,800-plus employees more job security.

The Economic ImpactAccording to University of Guelph Associate professor Bruce McAdams, tipping brings $6-billion annually into Canada’s economy. McAdams teaches at the School of Hospitality and Tourism Management. He based that number on an average 15 percent tip rate at full-service restaurants across Canada. He says tipping for Canadians is a social norm and taking it away may prove to be difficult.

In 2014, a restaurant called Smoke and Water, in Parkville, B.C., attempted to eliminate tipping by doing much like Meyers is in New York. But they abandoned the effort after only three months when they discovered that customers didn’t like the idea of not having control over how much they could tip.

Canadians are GenerousIn a survey of five major cities, the online travel rating site Trip Advisor found Canadians tip anywhere from

15 to 20 percent. That was the range it recommended to tourists visiting our country. Ottawans are the most generous tippers at 15.6 percent then its Montreal, Toronto Vancouver and Calgary. Calgarians tip on average only 13.3 per cent. Eliminating the custom of tipping would mean raising prices by that much in order for servers to feel like they are being adequately compensated.

Would Eliminating Tipping Work?Getting rid of tips from establish- ments like restaurants, hair salons and taxi cabs would take a lot of courage from the individual companies. Business owners would have to feel confident that raising wages and increasing prices wouldn’t scare customers away.

Tipping in North America is much more established but has been criticized as an ineffective way to pay those who work in the service industry. In many cases, servers get lower wages because the expectation is they will make more money by collecting tips.

Economically, new rules would have to be established to raise the minimum wage of servers. There could also be tax implications for staff who may not be claiming all their cash tips in their annual salary. It’s one thing for a tourist to adapt to the tipping culture in a foreign city but it’s another kettle of fish when you try to change the habits of customers in their home town. n

For tried and true Toronto Maple Leaf fans, there is no middle ground, no centre ice; it is a roller coaster of breakaway emotions, playoff dreams, and dare we say it, a Stanley Cup parade, all the

way down Yonge Street and back up Bay to the team’s home at the Air Canada Centre.

It has been decades of unrequited dreams but with the new face of the 2015-2016 Leafs’ team, coach and management, hope, once again, springs eternal. A key driver and strategist of these new initiatives is Brendan “Shanny” Shanahan, President and Alternate Governor of the Toronto Maple Leafs.

Shanahan, 46, comes with the goods. A career packed with goals, gold medals, and thousands of penalty minutes. At the time of his retirement in 2009, Shanahan was a leader among active NHL players for goals scored. In fact, he is a walking trophy case.

In June, 2011, he became the NHL’s chief disciplinarian, delivering numerous suspensions to players via video replay of the disputed infractions, a process which is now a de rigueur NHL policy of discipline around regulatory violations. On November 8, 2013, Shanahan was inducted into hockey’s revered Hockey Hall of Fame.

FAMILY AND FRIENDSWhile Shanahan’s world has evolved exponentially from his family home in Mimico, his dedication to both family and his childhood friends is constant. By the time he turned 16, Shanahan had left home to play hockey in London. At 18, he was in the NHL.

While thousands of young would-be hockey stars would salivate for such an opportunity, it was a bittersweet time for Shanahan, whose dad, Donal, a chief inspector for the Etobicoke Fire Department, was stricken with Alzheimer’s at the young age of 52.

“My dad never got to see me play in the NHL,” Shanahan says. “He started to disappear on me when I was 16 and died when I was 21.” After Shanahan won his first Stanley Cup with the Detroit Red Wings in 1997, he made a private Saturday afternoon visit to his Dad’s grave to show him the Cup and share in his happiness.

There is an irony to Shanahan’s interpretation of his initial hockey-playing success, an endearing detail that reflects his down-to-earth persona. “I thought my friends’ lives were so much more interesting because they were doing all these new things,” Shanahan says.

“I was certainly the more interesting at the ages of 16 to 18 because I was starting my career as they were finishing high school. But then my friends went to college, started a job, got promoted. They said to me, ‘What are you doing?’ I felt a little bit envious of the variety of their lives while I still had the same job over a 21-year period.”

AN OFFER HE COULDN’T REFUSEWhile Shanahan did that “same job” with five different teams over the course of his career, including the St. Louis Blues, Hartford Whalers, Detroit Red Wings, New York Rangers, and two stints with the New Jersey Devils, he always had one eye on “his” Toronto Maple Leafs, a commitment to the team which is deeply personal.

“I watched the Leafs while I was growing up and always kept one eye on them,” Shanahan says. “I understand what it means for people in this city for the team to have success. And how it feels when it doesn’t appear there is hope. It’s like a kid growing up in Dallas being asked to run the Cowboys, or a kid in the Bronx being asked to run the Yankees.”

Shanahan’s ties to Toronto run deep. His Mom, Rosaleen, who Shanahan calls his hero—she drove to London most weekends to watch him play hockey after Donal died—still lives in the same family home. So when he was approached with the offer to be the Leafs’ president, Shanahan tried to weigh the decision objectively and without emotion. It became a family decision that included his wife, Catherine, his 13-year-old twins, Jack and Maggie, and daughter Cate, 11.

“My wife has been incredible. She has given me a great gift in allowing me to come here and do this. When we finally made the decision—with the kids a part of it—my wife gave me a hug and said, ‘I knew you were taking it the day they talked to you about it’,” Shanahan says with a smile.

STRESS AND SOLITUDEShanahan’s jam-packed schedule reflects the pressure and expectations that die-hard Leaf fans have around this season’s team. As a stressbuster and a means to Ph

staying physically fit, Shanahan runs, something he did a lot of throughout his NHL career. When asked whether he runs long distances, Shanahan replies sardonically, “They seem long to me.”

A big believer in being totally immersed in the challenges at hand, often to the point of obsession, Shanahan is also a firm believer in solitude as a means to strategize and decompress. Often he will sit in the corner of a restaurant, iPad in hand, and spend some time thinking.

“People in this town must think I’m a very lonely guy,” Shanahan says with a wry grin. “It’s part of my treatment for myself, just getting alone with my own thoughts.”

WHETHER YOU WIN OR LOSEOne of the hardest transitions of aging for Shanahan is recognizing life’s victories and failures, a fact that he says was not nearly as hard when he played hockey, where the victories were obvious and clear cut.

“One wins and the other loses,” Shanahan says. “As a hockey player you get hit over the head with your victories. When you score, people cheer. The thing I had to learn in my five years at the league is balance. That means having a thick skin. It is learning how to take in the good and block out the bad.”

Another factor that hockey players deal with when they retire is the feeling that a part of them has died; the ability to go out on the ice and perform is taken away at a fairly young age, somewhere between the mid 30s or early 40s as was the case for Shanahan.

“You look for other ways to get going,” Shanahan says. “I’m definitely a challenge-oriented person. I don’t mind sitting back and relaxing in the midst of having a challenging job, but I wouldn’t enjoy sitting back and relaxing without knowing that the wheels were turning somewhere in my mind with a challenge that I had taken on.”

EVER YOUNG AT HEARTFatherhood is at the top of the list when Shanahan counts life’s gifts. “It is a blend of me getting older and my children getting older too. Each age has been so much fun. With my kids I’m part dad and part kid. Often- times, my wife will say she is laying discipline on all four of us children,” Shanahan says with a boyish grin.

“I really don’t focus a lot on age. When I was younger I felt older, like a 28-year-old man who had a job and responsibilities. Now that I’m older, I feel younger, until someone calls me ‘sir’ on the street that I think is way older than me, or I see a photo and I see I have a lot of grey hair. I remain young at heart and mind by being around the game. That’s the gift that hockey gives to us; it allows us to be kids at heart.”

GO LEAFS GO!And at the end of the day, hockey is what quickens the spirits of Torontonians, arguably one of the most hockey-crazed cities in either division. Shanahan, Toronto’s home-grown Mimico boy, understands that, lives that, is committed to that.

“I don’t forget what the team meant to the people that I grew up with, to what hockey means to the entire city. Underneath my smile is a fierce determination to do whatever it takes. My single biggest dream, the one that I am committed to achieving, is to win a Stanley Cup here in Toronto. I won’t be entirely happy until I achieve my goal here.”

May the force, in the guise of Mike Babcock, Lou Lamoriello, Kyle Dubas, Mark Hunter, and the entire Maple Leafs roster be with him and all of Toronto too. n

SHANNY STATS

A member of the elite Triple Gold Club, Shanahan won three of the most prominent titles in ice hockey (see the first 3 below):

• Gold at the 1994 World Championships

• Gold with Team Canada at the 2002 Winter Olympics in Salt Lake City

• Stanley Cup with the Detroit Red Wings (2001-2002 season); 1 of 3 Cups with the team

• Played on the NHL All-Star team 8 times

• The King Clancy Memorial Trophy

• The Mark Messier Award

• The only NHL player with over 600 goals and 2,000 minutes in penalties

Winter Skin RoutineThis weather can contribute to premature aging, fine lines and wrinkles. Although your basic skin care routine may remain the same, it is necessary to add an intense moisturizer or oil-based cream. Serums and products containing hyaluronic acid are especially beneficial and suitable for all skin types. Hyaluronic acid is a natural component already in the body, a glycosaminoglycan found in extracellular tissue space, joints and eyes. It is also a valuable anti-aging defense in skin care products. Washing with tepid water instead of hot will help reduce the drop in PH levels. These products will create a protective barrier for the epidermis and maintain hydration in the dermal tissue.

In addition, don’t forget the importance of sunblock during the winter months; UV rays are just as damaging from winter sun. Skiers should be especially diligent with moisturizers and sun block.

Exfoliating more regularly will also help shed dead skin cells and allow better penetration of moisture. Either a simple, gentle exfoliating scrub or a chemical peel from your medical esthetician once a month will do wonders. Chemical peels will also stimulate collagen and elastin cells, plumping up skin and leaving you with a youthful radiant glow.

Extreme winter cold can exacer-bate some sensitive skin conditions

such as rosacea and eczema. In this case, a gentler more specific treat-ment may be recommended by your skin care professional or physician.

Defining Skin ProductsSkin care products can vary greatly in cost and efficacy; however, it is important that you consult with a professional to identify products best suited to your skin type and needs.

The major difference between drug store products and products from a clinical Medi Spa is the allowable percentage of active ingredients governed by the CSA. For example, ingredients such as Glycolic/AHA (Alpha Hydroxy Acid) has a 2 percent maximum and at a clinical level can be as much as 15 percent. Products containing Retinol are also very effective in skin repair and vary in percentage according to the source.

Laser Skin TherapyWinter is an ideal time to introduce Laser Skin Therapy. Although it is safe to have laser treatments all year-round, you have to be extremely cautious with sun exposure during the core summer months. There are many different lasers to address an array of skin concerns and the downtime will vary according to each technology.

Non-invasive technologies, such

Cold-Weather SKIN CARE Protective, preventative and corrective tools to help your skin this winter

as IPL (Intense Pulsed Light), has little to no downtime. IPL/Photo Rejuvenation is used to treat sun damage, broken blood vessels and help reduce fine lines while stimulat-ing collagen and elastin. IPL is a good anti-aging preventative measure alternating with chemical peels and treatments such as Oxygeneo and SWiCH, all with minimum downtime.

Fractionated technologies, such as Fraxel Restore skin resurfacing, are also non-invasive, but have an approximate downtime of three days. This treatment is targeting the deep-er dermal tissue for tightening and remodeling, while shedding several layers of the epidermis resulting in resurfacing. Fractionated technology will significantly reduce acne scars and surgical scars as well as reduce sun damage and shrink pores.

Ablative resurfacing technologies are actually removing the epidermis, exposing the deep dermal tissue for anti-aging and tightening. Ablative treatments generally have a two-week downtime with strict home care instruction. n

For advanced skin care treatments, research and qualify the accreditation and experience of the professional you choose. Safety and results should be the criteria for you both.

BY KATHERINE MOORE

Weight Loss & Fitness More than a New Year’s resolution, improving one’s diet and following a fitness routine are long-term commitments to better health

AT THE BEGINNING of every year, diets are sourced on the internet or on the recommendation from someone who is living proof it works, and so the cycle begins. During the early stages, the scale tallies up the pounds shed, and let’s say you achieve your weight goal. Then youstart adding some “harmless” foodsmore often than you should and theworkout frequency lapses too.

Next thing you know, the pounds are creeping back and you begin complaining to anyone who will listen that “the diet” doesn’t work. But isn’t it more likely, that you stopped working at maintaining your weight and fitness level?

In some ways, achieving weight loss is easy…it’s maintaining the same weight over an extended period of time that proves to be so difficult.

For extended versions of the two stories that follow, as well as other personal accounts of weight loss challenges and successes, menu planning suggestions, and skin and hair care advice, visit our website active-life.ca

Break the Snack HabitCatherine Peterson, now 51, took stock of her health and weight issues in her late thirties after having five children and putting on 50 pounds.

“After the birth of our fifth child, I found that for the first time I was overweight, and unhappy.” Peterson confessed that, “My daily routine included a bag of cookies during

nap time and eating a family-sized chocolate bar with a Coke after the kids went to bed.

“But there were other problems. I was diagnosed with depression and anxiety disorder. The medication caused further weight gain. Although my doctor encouraged me to exercise, it was the last thing I wanted to do.

“However, I did hire a personal trainer and began to see results. During my year-long journey of losing the 50 pounds, I discovered an incredible passion for helping women become healthy and strong. I took the courses and became a Certified Personal Trainer Specialist.”

When the Curves near Peterson opened in the early 2000s, she submitted a resume and was hired. “I lost my last 10 pounds with the Curve Circuit and by following the

Curves Complete program.” In April, 2009, Peterson bought the Newcastle Curves location in Clarington and is now the franchise owner.

“My heart absolutely aches for women who are unhappy, unhealthy, overweight, underweight, depressed, and lonely. I feel burdened by this and I am determined to make a difference. We have quite a diversity of women here; women with physical challenges, psychological challenges, and so on. My goal is to empower every member and to help them discover their true potential.”

On the Road to FitnessSix years ago, Maureen Catania, 56, shared her story with ACTIVE about losing 50 pounds. We recently asked her how she’s doing. Because her work takes her out of town quite a bit, either by car or air travel, she has encountered a few hurdles, but she has maintained and even lost a few more pounds. “I credit working with a personal trainer as my key to continued fitness success,” says Catania. “The return on investment is significant for me.”

The personal trainer outlined a routine Catania can do in a hotel room. “I have a routine that includes planks, back lunges, push ups, and so on,” she said. Catania brings along a portable fridge and her trusty NutriBullet when she’s travelling by car. When at home, she maintains regular sessions with the trainer and visits the gym almost daily.

CURVES WORKS FOR YOU The women-only facility is a circuit of specially designed strength machines targeting upper body (arms, shoulders, chest, back), middle body (lower back, abdominals), and lower body (glutes, legs). In between each machine, you work on a fitness mat to maintain an elevated heart rate.

You’re at each station, machine or mat, for 30 seconds, which is the ideal time to work a particular muscle group. All five elements of a complete workout are built into the system: warm up, strength training, cardiovascular training, cooldown, and stretching and flexibility. Three or more visits a week are recommended.

Weight Loss & Fitness

“On the road, my day begins with an omelet and coffee. Often I have lunch or dinner with franchise owners. I never order off the menu and opt for grilled chicken, fish, sautéed shrimp, or steak with vegetables or salad. No starches. I stock the bar fridge in the hotel room with tuna, peppers, cooked chicken or beef, pre-washed salad, Greek yogurt, and almonds. And I can always make a protein shake.”

When asked what her biggest obstacle has been, Catania admitted, “The single biggest thing I’ve changed is cutting out sugar. I was a sugar addict. Sugar kept me fat and prevented me from achieving my weight goal. I stopped eating cake, cookies, pastries, pasta, bread, rice, and potatoes. And, I limit myself on whole grains.”

She likens the whole weight loss and fitness process to moving a boulder uphill. “It gets easier once it’s moving and I have no intentions of having the boulder roll back downhill. It was a lot of effort in the beginning to get it going but now it’s much easier to maintain.”

Although Dr. Alois Alzheimer first identified the disease in 1906, it was not until 1976 that Alzheimer’s was recognized as the most common form of dementia. Today, Alzheimer’s diag-noses are still on the rise, and most of us are affected by it in some way.

There are several age-related changes we can experience, such as minor memory loss, vision changes due to cataracts, and occasional weariness that are not necessarily

signs of Alzheimer’s. But when should we start to worry?

Dementia vs Alzheimer’sDementia is a decline in memory that affects one’s ability to perform every-day tasks. Alzheimer’s is Personal online memory test. And definitely do not bury your head in the sand.

Alzheimer’s is a progressive dis-ease that destroys memory loss and functions such as intellectual and social skills due to brain cell degen-eration. High-risk factors include age, genetics, environment, lifestyle, and co-existing medical conditions. At present, no cure means relying on medication and management techniques to temporarily improve symptoms and stall progression.

Research is showing that a healthy lifestyle may prevent and/or slow down the disease. A healthy lifestyle includes: regular exercise, a healthy diet and weight, social and intellectual stimulation, control-ling type 2 Diabetes and high blood pressure, no smoking, and obtaining treatment for depression.

Living with Alzheimer’s My sister-in-law, Carolyn, was di-agnosed with Alzheimer’s ten years ago. Over the years, Carolyn’s family has been very grateful for the help extended by the Alzheimer’s Asso-ciation. They provided information, support groups, respite care, and a day-away program. When Carolyn was transitioned into a long-term care facility, the association assisted.

You can read more of Carolyn’s story by visiting the May/June 2013 issue in the archive section of our website active-life.ca

We also encourage you to visit the Alzheimer’s Association at alz.org n

EARLY SIGNS AND SYMPTOMS OF ALZHEIMER’S versus TYPICAL AGE-RELATED CHANGES:

“So many people with this disease feel isolated and marginalized,” said Julianne Moore during her Oscar acceptance speech for her role in Still Alice. “And one of the wonderful things about movies is it makes us feel seen and not alone. And people with Alzheimer’s deserve to be seen, so that we can find a cure.”

Kaikoura, Canterbury Swimming with dolphins is one of those life-changing experiences. So when you visit Kaikoura, don’t miss the chance to spend some one-to-one time with the resident dusky dolphins. They’re highly social and very playful. They’re also very plentiful and Kaikoura dolphin pods can include thousands of dolphins at certain times of the year.

Clarke Glacier, Queenstown Queenstown is your launch pad into the mind-blowing scenery of the Southern Alps. This huge range of mountain views runs almost the entire length of New Zealand’s South Island, with many peaks reaching more than 3,000 metres above sea level. Numerous glaciers provide safe landing areas for sightseeing helicopters.

Rotorua, Rotorua If you get a chance to experience authentic Maori culture, go for it. In a traditional formal greeting, called a hongi, you exchange breath with forehead and noses touching. No distant nods or insincere handshakes here. This is up close and real, so you know you’re genuinely welcome. n

French Ridge Track, Mt Aspiring National Park, Lake Wanaka The French Ridge Track in Mount Aspiring National Park gets rave reviews from inter-national hikers. Some say it’s the best walk they’ve ever done. The experience starts with a warm-up over the gentle flats of the Matuki-tuki River, then it heads steadily uphill. It’s a fantastic challenge for outdoor adventurers with a moderate-to-high level of fitness.

FARMERS’ MARKETYou may be well-travelled but perhaps you’d rather not say the same about your produce. In which case, check out the Peterborough Farmers’ Market. Open all year-round every Saturday at Morrow Park, you’ll find fresh-baked goods, produce, meats, dairy products, and crafts at dozens of vendor kiosks. Outside of Peterborough, visit markets in Apsley, Buckhorn, Millbrook, Lakefield, Havelock, and Keene. Not all of the markets are open year-round; check the timing before you head out.

SQUARE NAIL PORKIn 2013, Primal Cuts (local butchers) aligned themselves with The Publican House (brewers of Square Nail Ale, and more) and Hawthorne Ridge (a local heritage farm). The brewery provides their spent grains to add to the already desirable grass, hay, fruit and veg that the English Large Black pigs eat on the farm. Then the cutting-edge butcher makes available roasts, sausages, bacon, and chops in the Landsowne Avenue shop. Be sure to check out the full selection of products that all three have to offer.

THE BUTTER TART TOUROfficially named the Kawarthas Northumberland Butter Tart Tour, the list of 40-plus bakeries will take you as far south as Port Hope and eastward to Campbellford, and many points in between. Last September, Sweet Kitchen in Lindsay won the Best Overall Plain Butter Tart, while Peterborough’s Whistle Stop Café won Best Locally Sourced Butter Tart. They’re known for their Cream Cheese version. Visit the tour’s website to download the map and create your own tour anytime of the year.

[DESTINATION ONTARIO]

There is no shortage of opportunities to maintain an active lifestyle if you decide to relocate around Peterborough and the Kawarthas. Whether you’re looking for watersports, hiking, cycling, eco tours, or perhaps spending time getting to know the local golf courses, you’ll have no reason to be idle for long.

ECO GARDENSAnother tour of interest to the green thumb brigade is the Garden Route. Combine two or three mini tours and lodge at one of the local B&B’s such as Stillwater on the Lake or Winston’s Inn. There are at least nine garden stops along the way, featuring superior garden displays and specialty shops. Among them, Blossom Hills has 380 named varieties of peonies, plus they specialize in Delphinium elatum. Visit the website to download the map of locations on the tour.

ROCK OF AGESWith a flashlight or headlamp, explore the Warsaw Caves formed thousands of years ago at the end of the last ice age by the rushing melt waters of a glacier that covered Ontario. You can download the Spelunkers Guide to the Caves from the website. And don’t miss Kinomagewapkong – the teaching rocks. They’re the largest collection of aboriginal rock carvings on the continent. About 900 figures of turtles, snakes, birds and humans tell a story of the area’s deep spiritual connection to First Nations peoples, both past and present.

Also popular, the Petroglyphs Provincial Park, Peterborough Lift Lock, and the Peterborough Musicfest. And be sure to book a cruise along the Trent-Severn Waterway. When it comes to heritage and culture, good eats and the great outdoors, Peterborough and the Kawarthas will keep you informed, educated, entertained, and well fed.

Peterborough is home to the largest collection of canoes and paddled watercraft in the world. After all, this was once the canoe-building epicentre. With so many lakes and waterways in the region it makes sense to locate such a Museum here for enthusiasts and curious onlookers to explore. If you’re new to the area, this is also the place to discover the best paddling routes in the Kawarthas. canoemuseum.ca n

GOOD EATSEvery Saturday morning and Wednesday afternoon from May to October, the Farmers’ Market showcases seasonal vegetables, local meats, honey, preserves, flowers and crafts. Not in the mood to cook? Try the Black Beans Steakhouse, Bulalai Taste of Thai, or the Trattoria Gusto, which is located in the beautifully restored Waddell Hotel. Plus, the Yellow Cake Bakery and Dreamer’s Café are on the Butter Tart Tour.

ARTS & FESTIVALSWhether you’re in the mood to take in one of the garden tours, artisans and crafters’ shows, some exceptional jazz, or a wintry candlelight walk, you can maintain a full schedule of seasonal events. For instance, in the autumn, there’s the annual Agricultural Fair and Historic House Tour. And in December, celebrate with a Festival of Trees, Harvest of Christmas Delights, and the Santa Claus Parade.

THEATREOne of the last remaining atmospheric theatres in operation in Canada today, the Capitol Theatre, which seats 380, is like sitting in an outdoor medieval castle courtyard, under a blue star-studded sky with moving clouds. The multipurpose facility features live theatre, concerts, HD films, HD opera, and private functions. Nearby Cobourg is home to Rainbow Theatres where you can see first-run movies.

Port Hope

Known for an abundance of beautifully restored heritage-type houses and buildings, Port Hope boasts more such restorations per capita than anywhere else in Canada. Of interest to discerning collectors, the town also has many antique dealers, as well as a fine selection of men’s and ladies’ apparel shops, home decor, galleries, and specialty stores. In recent years, Port Hope has become a sought-after retirement destination, and it’s easy to see why.

A SPORTING LIFEThis is where you’ll find some of the most diverse year-round fishing in Ontario. Anglers can fly fish in the Ganaraska River that runs through the heart of town and empties into Lake Ontario. Excellent for trout and salmon fishing, charter boats will take anglers out on Lake Ontario during the summer months.

And, when you’re not fishing the Ganny you might try floating your Fanny down the river. The annual 10 km race welcomes canoes, kayaks, and crazy watercrafts.

Golf enthusiasts will enjoy the Port Hope Golf and Country Club with its challenging 18-hole course overlooking Lake Ontario. Nearby Trickle Creek Farms offer horseback riding. And, one of Port Hope’s best-kept secrets is a bowling green established in 1900.

There’s no shortage of places to take a hike, such as the trails along Lake Ontario, the Ganaraska River, and in the Ganaraska Forest Centre. The Forest Centre offers Tree-Top Trekking, an aerial adventure tour using platforms, ropes, bridges and zip lines. The Waterfront Trail and country sideroads are perfect for cyclists to take a scenic tour through the Municipality’s pretty villages and hamlets.

Joseph Medlicott Scriven was a scholar and lay preacher who penned a particularly famous poem in the 1800s. William Leonard Hunt was a high-wire daredevil known as The Great Farini.

Scriven came to Ontario from Dublin, Ireland in 1845. The poem that went on to become a beloved hymn was first published in the Port Hope Guide in 1870. However, it wasn’t until Charles Converse found a copy of the poem in his Pennsylvania organ factory—it was mistakenly left behind by a travelling music salesman—that the words were put to music. Today we know the collaboration as “What a Friend We Have in Jesus”. While the hymn became universally known, Joseph Scriven died in obscurity. You can learn more about Scriven at josephscriven.org

Hunt, born in 1838, lived an adventurous life that early on included walking a rope strung between two buildings about 80 feet above the Ganaraska River in Port Hope. During his second river walk onlookers were awestruck as he stood on his head in mid-walk. In 1860, Hunt challenged the legendary Frenchman Blondin to a high-wire competition 180 feet above the Niagara Gorge near the Falls.

More than a showman, Hunt was innovative in other ways, from creating folding theatre seats to the modern parachute. He spoke seven languages, wrote several books, and his paintings were shown alongside those of contemporary Canadian masters. Some evidence suggests he worked as a spy in the American Civil War. For more details on Hunt’s extraordinary life, look for Shane Peacock’s book The Great Farini (Penguin Books Canada Ltd.). n

ARE YOU LOOKING for long-flowering, easy-to-care-for plants with exotic flowers and a habit of re-blooming without much fuss? Some orchids are so easy to care for that I put them in the same category as African violets: only orchids are easier. If you enjoy ignoring your indoor plants, allowing them to go dry for long periods of time, orchids are the perfect fit for you.

The availability of orchids today is a testament to the advances made in plant propagation through “meristem propagation.” Karl von Nägeli was the first to use this

technique in 1858. We have merely perfected the process since then and put it into production.

Orchids consist of more than 26,000 species and 143,000 hybrids (about 1,500 of which are naturally occurring, including many that grow in Ontario). Most orchids sold for use in the home are members of three groups: Phalaenopsis, Paphiopedilum and Cambria.

These are reliable indoor performers that tolerate our dry air in winter and the low light of our northern latitude. The limited root mass makes for an ideal window sill plant.

PHALAENOPSIS

This is the most popular of orchids for the home gardener. They are epiphytic, which means that they grow in trees and rocks in the tropics. When the bloom fades, cut the stems below the last flower, just above a node (where the leaf meets the stem). In most cases, a new stem will develop and it will re-flower.

LOCATION: Warm home. Low-light conditions/no direct sun. Enjoys a north-facing (low-light) window, but prefers an east-facing one.TEMPERATURE: Low 18C and high of 29C.HUMIDITY: Stand in a tray of pebbles among a group of like-minded plants. Mist leaves often with tepid water, including the roots that are exposed.RE-BLOOMING: Three weeks of cooler (18C) temperatures will kick-start this orchid to re-bloom.

PAPHIOPEDILUM

These are ground dwellers [terrestrial]; orchids that grow naturally in tropical and subtropical Asia. They are easily identifiable by their pouch-like lip, much like our native Lady Slipper orchids. This is a spectacular species with gorgeous single blooms born on a stem ranging in colour from white, green, brown, claret, red, yellow and pink.

LOCATION: Defused light to direct sunshine. Versatile. TEMPERATURE: Low 13C to high of 24C. Generally like it cool. Green-leaved hybrids are tougher than varieties with mottled leaves. HUMIDITY: Use pebble tray to increase humidity. Misting can cause mould.FERTILIZE: Sensitive to fertilizer burn. Feed year-round with high-nitrogen fertilizer.

CAMBRIA

Cambria orchids provide a spray of bloom on a single stem that is quite impressive.

LOCATION: Diffused light, north or west facing window is ideal most of the year. North is favoured during the intense summer time.TEMPERATURE: Low of 13C and high in the summer of 24C. HUMIDITY: Group with other plants and use a pebble tray with water in the bottom to raise humidity, especially in late spring and summer. In winter, reduce temperatures and watering frequency. FERTILIZE: Use half-strength Schultz orchid fertilizer.

hen it comes to innovative design, Mason Homes shines with its Courtyard Collection of bungalow and bungalow-with-loft layouts, available in a number of communities. At Lakeside

Village in Port Hope, you can tour the newly opened Oakwood bungalow-loft model home. This three-bedroom, 3.5-bathroom, 2,052-square-foot model exemplifies the Courtyard designs.

Benefits include pleasing front elevations without driveways and garages dominating them, maximized interior living spaces, plus substantially more windows at the front, rear and sides of the home. The garage is accessed from a rear lane with a connection that houses a mud room, laundry room and powder room (as per plan). The in-between area creates an outdoor courtyard that offers a multitude of uses, from gardening to hot-tubbing and alfresco dining. The homes are built to the ENERGY STAR for New Homes construction standard, and are Holmes Approved certified by Mike Holmes-approved inspectors.

Also available at Parklands in Peterborough, the Classic Collection is perfect for empty nesters and active adults looking to downsize in space but not convenience and luxury.

DUNPAR HOMES Luxury townhome living in Oakville at Trafalgar Ridge

Dunpar Homes, the GTA-based builder and developer of luxury townhomes is bringing its portfolio of quality engineering, craftsmanship and timeless design to Oakville with Trafalgar

Ridge. Located in Oakville’s sought-after area of Trafalgar Road and Dundas Street, the highly successful develop- ment is an exclusive community of just 112 townhomes that offers easy access to amenities.

“When Dunpar selects a location for a community, we only choose vibrant neighbourhoods in sustainable communities with easy access to shopping, schools, parks, highways, transit, and green space,” says John Zanini, President of Dunpar Homes.

Trafalgar Ridge will follow in the same direction as other Dunpar Homes communities by creating an elegant environment of estate townhomes that blends seamlessly into the surrounding neighbourhood. Located conveniently between the growing Oak Park Plazas on Trafalgar, the community is steps away from the Upper Oakville Shopping Centre, parks, public and private schools, Sheridan College, and several golf courses.

Trafalgar Ridge residents will be able to enjoy the natural greenspace of nearby parks, including Castlefield, Oak Park and Laurelwood. For shopping, there’s the Real Canadian Superstore, LCBO, Longo’s, and Oakville Place close by. Trafalgar Ridge residents looking to improve their golf game can visit nearby White Oaks Golf Club. The transit-friendly location is close to the Oakville GO Station and QEW, which offers easy access to Mississauga, downtown Toronto and Burlington.

The luxury townhomes of Trafalgar Ridge will feature classic Georgian architecture and start from the mid

$600,000s. Each home features three bedrooms plus a den, two bathrooms and one powder room, a two-car garage, beautiful landscaping, and a plethora of luxury standard finishes. As with all Dunpar Homes townhomes only genuine, quality materials are used, including custom, natural Indiana limestone, natural-stone planter boxes and artisan hand-tumbled clay bricks for an authentic texture.

The Dunpar Homes approach of creating highly functional and efficiently designed space is evident with their open-concept townhomes that feature soaring nine-and-a-half-foot ceiling heights on the main floor and nine-foot ceiling heights on the loft floor. The master ensuite boasts his and hers oval sinks with marble vanity countertops. All kitchens have a choice of granite or marble countertops as well as a full backsplash, quality custom cabinetry and stainless steel kitchen appliances.

As with all Dunpar Homes townhomes, a convenient, maintenance-free lifestyle is part of everyday living. Outdoor landscaping and snow removal is provided for, which is especially convenient for residents who travel frequently. The ground-breaking for Trafalgar Ridge took place in the fall of 2015 and occupancy is planned for fall 2016. n

[NEW HOME COMMUNITIES]

BLYTHWOOD GROUP Niagara’s builder of extraordinary homes for upscale retirees

Robert Mills, President of the Blythwood Group, is famous for saying, “If it isn’t remarkable, it’s not worth building.” As one of Niagara Region’s most erudite homebuilders, this philosophy

has served him well, as it has those who are fortunate enough to live in a Blythwood community. Specializing in homes geared toward upscale retirees, Blythwood’s communities have firmly established the company’s reputation for building extraordinary homes.

Currently building at Ridgeway by the Lake in Ridgeway and Tanbark Trail in Niagara-on-the-Lake, Blythwood is well known for innovative home designs and outstanding quality. So much so, that Tanbark Trail is virtually sold out and Ridgeway by the Lake is now building out its final phase.

Blythwood is the premier luxury builder in the much sought-after Niagara Region. That’s because Blythwood carefully selects building sites in Niagara that suit the lifestyles of smart retirees. Also these communities are architecturally controlled so home buyers can buy with the confidence that their new neighbourhood will be the way they want it to be and their homes will increase in value over time. It’s no wonder that Blythwood is enjoying brisk sales.

Blythwood’s homes are designed and built to specifi-cations you would normally expect only from a premium custom build: 10- and 12-foot ceilings are standard fare, as are rounded corners throughout, extra-wide trim, enormous oversized windows, and kitchens envied by professional gourmet chefs are all standard. Buyers love the spacious Great Rooms made for entertaining, expansive and luxurious master suites and elegant

covered patios that make for a great lifestyle. In addition to having style, these homes are also

solidly built: they include items such as 50-year fiber- glass shingles, 97 percent efficient furnaces, Cardinal low-E cubed glazing, and extra insulation to save on heating and cooling. While Blythwood will build homes to your custom specifications it also maintains up to six finished homes, which are available for quick closings.

Blythwood also understands that most discerning home buyers do not want to live in cookie-cutter homes, so customization is not only possible, it’s encouraged. And Blythwood’s professional and friendly staff will make the selection of your home finishes fun.

While Tanbark Trail in St. David’s is all but sold out, Blythwood is now launching its newest project, The Towns of St. David’s, a unique collection of just 58 townhomes built adjacent to a vineyard with many attractive view lots. Designs are now being finalized and reservations are being accepted for the first phase.

The Towns of St. David’s will offer Blythwood’s unique and very popular townhomes, which sold quickly at both Tanbark Trail and Ridgeway by the Lake. But then, when one considers the incredible value in the 1,600- to 1,800-plus-square-foot bungalow townhomes, priced from the high $300,000s, it’s a small wonder. n

Blythwood usually maintains four to six model homes open for viewing. Visit the website to see the selection of homes available in these fine communities.289.296.4495 / blythwoodhomes.ca

There’s a good reason why so many astute retirees are choosing to retire to Ridgeway by the Lake.First and foremost the location. Ridgeway by the Lake is sited in a beautiful, tranquil place, just a stone’s throw from the shores of Lake Erie, yet is close to golf courses, wineries, restaurants, healthcare and countless other amenities. As Ridgeway by the Lake is only a 15 minute drive from the Peace Bridge you are close to the Buffalo airport for lower fares and less hassle.Next is the climate, where a longer summer leaves you more time to enjoy life. Then there are the home prices which represent substantial savings over the GTA while offering better quality, large scenic lots and spectacular views.Best of all are the homes. The quality of Ridgeway by the Lake is evident in everything you touch, feel and see. The standard finishes of these homes far exceed many other builders’ upgrades.Perfect for entertaining! But don’t take our word for it. Come in & tour 4 beautiful Model Homes!

AVERTON SQUARE Luxury bungalows in the heart of Niagara-on-the-Lake

Many have dreamed of retiring in Niagara-on-the-Lake although relatively few have been fortunate enough to make that dream come true. The town led to the burgeoning

development in nearby villages like Virgil and St. David’s due to lack of property within. The opportunity to choose from a selection of new homes directly within Niagara-on-the-Lake itself had simply not been available, until now.

Averton Square has changed all that. This wonderful new infill site is located at 120 John Street West, a short stroll to the town’s charming main street and its attractions, including the Shaw Festival Theatre and the Pillar and Post Inn & Spa.

Averton Homes – one of Canada’s few national new home builders – is offering a limited edition of 20 beautifully designed and luxuriously appointed bungalows on 50-foot lots, each with an inviting front porch where owners will relax and enjoy the nature of the very special neighbourhood which surrounds them.

There are five different bungalow models to choose from, some offering optional upper level lofts with an extra bedroom and bath. The list of standard luxury features is long and inclusive: gourmet kitchens with designer cabinetry and granite countertops, spacious master bedrooms with sumptuous ensuites and great rooms with fireplaces.

Following the successful opening of Averton Square’s Model Home in early spring, the demand was immedi-ate. Only a select group of bungalows remain for those who act quickly. Nowhere else in Ontario will you find a greater abundance of amenities than in Niagara-on-the-

Lake. There’s the Shaw Festival, bou-tiques and antique shops, art galleries, cafes, an array of fine dining restaurants for every taste, and many world-class wineries in the surrounding countryside.

The waterfront and nearby access to the Bruce Trail provide ample opportunities for the nature lover. A short drive away is the new Outlet Mall with an array of designer label stores, or it’s always easy to hop the bridge and enjoy a little cross-border shopping.

Averton is a new home builder actively redefining homes in Ontario and Alberta, with the goal of creating modern, affordable luxury that pushes the boundaries of traditional home design. Every feature in an Averton

home is designed with unparalleled craftsmanship and integrity to ensure it has a lasting connection to your lifestyle. At Averton, design is everything. n

The Sales Office, located at 120 John Street West, Niagara-on-the-Lake, is open from noon to 5:00 p.m. Thursday to Sunday. 905.378.2500 / averton.ca

Organic Valentine’s Day 2016 by Abbey Sharp. greenandblacks.com

INGREDIENTS 2 ½ tbsp Chèvre 1 ½ tbsp Greek yogurt, plain ¼ tsp range zest, plus extra for garnish 4 figs, large (Black Mission or Brown Turkey)* 50 g Green & Black’s Maya Gold Chocolate Bar, finely chopped (½ bar) 1 tbsp pistachios, finely crushed Honey, for drizzling

*Note: If fresh figs are not available, substitute fresh strawberries or large dried figs.

DIRECTIONS • Prepare a baking sheet with a silicone mat or piece of wax paper.

• To create the mousse, purée the chevre, yogurt and orange zest in a small food processor until smooth and light. Transfer mousse into a piping bag or into

a plastic, re-sealable bag with a small hole in the corner cut out. Set aside.

• Cut the stem off of the figs and cut an X into the tops of them, slicing almost all of the way down to the base. Be careful not to cut fully through the figs.

• Place the chocolate in a glass heat-proof bowl set over a small saucepan filled an inch high with water.

• Bring the water to a boil then reduce the heat to a simmer. Stir the chocolate slowly, allowing it to melt gently. Once melted, remove from the pot and set aside.

• Dip the base of the figs into the melted chocolate, swirling to coat the figs about 1/3 of the way up.

• Place onto the prepared baking sheet and continue with the remaining figs.

• While the chocolate is still wet, pipe the chèvre mousse into the figs, prying them open carefully to allow the mousse to get

all of the way down to the base. Once filled, gently press the corners of the fig together to seal in the filling.

• Transfer to the fridge and allow the chocolate to fully set for about 15 minutes. Once the chocolate is dry and cool they are ready to enjoy.

• Top with crushed pistachios, a drizzle of honey and additional orange zest (if desired), immediately before serving.

Tip: For a slightly more health conscious take, you can substitute non-fat, plain Greek yogurt and reduced fat chèvre. n
