What began as a humble and insignificant set-up a decade ago has grown
into an internationally noted agro-industrial export unit with an annual
turnover of 8 million dollars employing 250 workers and 50 management
staff.
First and foremost, I thank God for the blessings He has showered on us,
my better half Mrs. Zakira Nazreen who stood with me through thick and
thin, my workers and staff whose untiring efforts made my dream a reality,
the farmers who toiled from daybreak to nightfall in the sweltering heat
of Dindigul to produce the finest crops possible, the importers and
consumers who appreciated quality and stayed with us all along and the
administrative authorities and financial institutions who were
magnanimous towards my maiden venture in agro-industrial business.
In a world sinking into the troubled waters of global recession and
gasping for breath, our industry has the inbuilt stamina to stay afloat and
move forward. This is the result of our constant adherence to the highest
quality and punctuality and an ever increasing demand from our overseas
customers. 'Quality pays' is the lesson we have learned from our decade
long struggle to move forward against all odds. We have to keep on
moving and moving uphill, climbing the steep slope of success, without
stopping for rest, because, in this track, stopping means moving down a
descending elevator.

Italy, Belgium, etc., for a decade, earning India precious foreign exchange and high

The Administrative machinery at Bnazrum is a well-oiled set up with dedicated staff that look after the welfare of the
employees, making them feel a homely atmosphere in their personal amenities and facilities, at the same time maintaining

other duties.
The factory premises are kept spick and span always with nothing allowed to come in the way of cent-per-cent
cleanliness and perfection in all the processes and products. No stone is left unturned in ensuring that the highest

Bespoke products are marketed adhering to the requirements of the purchasers both in quality and time-frame. It is

The farms and fields, both under the direct control of the Company and under cultivation by farmers who supply the
produce to the Company, are kept always under the vigilant supervision of the field officers of the Company who ensure
that no spurious or harmful chemicals or other materials are used in the cultivation and harvesting at any stage. All the
inputs are inspected by the staff of the Company before being used in the field.

The word 'gherkin' may have come from the
Swedish word 'gurka' or the German word 'gurke'
both meaning 'cucumber'. Gherkin is cucumber
pickled or preserved in brine or vinegar. It is the
fruit of the plant cucumis sativus from the cucurbit
family. There are two types of cucumber: those
with smooth epidermis and those with spiny
epidermis. Only the type with spiny epidermis is
made into gherkin. It is a cucurbitaceous vegetable
crop of 90 days duration whose raw young fruits
are harvested and pickled immediately after
harvesting in brine, natural vinegar or acetic acid.
Though gherkin originated in India, the first ever
mention of it, in the recorded history, is related to
Mesopotamia. It is believed to be the first ever
pickle in recorded history, enjoyed by the people
of Mesopotamia four and half millennia ago.
Cleopatra was fond of pickles as she thought that
pickles helped in enhancing her beauty. Roman
soldiers and Napoleon's troops were given pickles
as part of their food supplies. Gherkins were
thought to be a sacred food of the Yaskxia people
of Russia.
Pickled gherkin is mentioned in English in the 17th
century. Virginia Gazette of 1792 carries an
advertisement for sale of gherkin to the American
public, thus introducing it to the Americans. It
conquered the American palate so quickly that it
became 'the pickle' to the American within a
century. During the Second World War, 40% of all
pickles manufactured in the US were allocated for
the soldiers engaged in war as a delicacy they
would like and remind them of their homes.
Pickles would make up for the lack of appetizers
and tasty side dishes that would be lacking in the
makeshift kitchens on the warfront. Gherkin pickle
in glass jar became a commercial product in France
in the 1820s.
GHERKINS (CUCUMBER)
Gherkins are graded according to the count
which is the number of fruits per kilogram.
'Higher the count, greater the value' is the general
rule. Fruits which are less than 12 mm in length
will take 300+ to weigh a kilogram, while fruits of
25 mm length will require less than 30.
According to experts, the perfect gherkin should
have a length to diameter ratio of 3:1 with the
ideal length being between two to four inches.
In North America, a perfect gherkin is expected
to sport seven warts per square inch all over its
outer surface, while in Europe gherkins without
any wart is preferred.

Gherkins are properly graded, sorted, soaked and washed before being
put into the packing medium in barrels of High Density Polyethylene
allowed for food products with an adjusted mechanism (compensator)
that pushes the gherkins down under the cover liquid which fills the
barrels entirely. Lid with gasket and O-ring is used to avoid any external
contact.
The 3 categories according to the media of packing are 'in brine', 'in
natural alcoholic vinegar' and 'in acetic acid'.
Salinity of gherkin preserved in brine (as sodium chloride) is 15%, with an
allowance for 1% (+) or (-), acidity (as lactic acid) >0.6 % and pH
<3.5%. Acidity of gherkins packed in acetic acid and natural alcoholic
vinegar is 3.2%, with an allowance for 0.2% (+) or (-) and its salinity is
4%, with an allowance for 0.2% (+) or (-).

Quality controls are strictly exercised at all stages of farming and processing of the products according to the
quality standards prescribed by the purchasers/importers. Besides, the standards enforced by American and
European laws have to be complied with. The production units have implemented the Hazard Analysis and
Critical Control Points (HACCCP) system in which the product quality can be traced to all critical control points.
The specifications regarding the grades of gherkin fruit, ingredients that should go into the pickle, quality and
category of the packing medium, size and material of the container, etc. are all decided by the importers, who
constantly analyse the preferences of the end consumers. During the process of packing, the temperature,
bacterial count, etc. inside the container are measured by a microchip planted inside one of the fruits inside the
container and, based on this data, necessary action is taken to ensure the specified quality and standard.

our motto. Negligence, even for a second, might end in loss of the discerning
customers whom we have to satisfy always. There is no short cut to perfection. It is
an ever-upward and steep climb that never reaches a plateau of restful complacency.
We have to constantly watch the farming practices adopted by our contract farmers,
analyze the slightest degradation in the harvested product, monitor all the processes
of pickling and packing and train our ears carefully for even the slightest sound of
disapproval coming from our customers.
POLICY ON QUALITY
The Company enjoys a unique selling position among similar ventures because of its close interaction with the contract
farmers. The farmers are educated on the analysis of the quality of the soil and the right quantity of fertilizers it needs, on the
dangers of chemical residue on the fruits, on the technique of picking and collecting the fruits without any damage, etc.
