Sunday, February 19, 2017. Over 100 people gathered to bid farewell to our Console

Maria Luisa Lapresa . She has been transferred to a new position in Romania and will be

leaving in early March. The farewell dinner was sponsored by the Dante Alighieri Soci-

ety, the NOI Foundation, the Italian American Cultural Center, the Italian American Club

of Livonia, the Italian American Club of Livonia Charitable Foundation and the Venetian

Club. Representatives of the sponsor clubs honored Console Lapresa for her efforts and

accomplishments during her tenure here in Detroit and the five (5) state district which

she represented. The FADM presented her with a portrait of the Detroit skyline and with

an honorary membership to our organization. Everyone wished her well in her new as-

signment.

She thanked everyone and all the organizations for giving her this special tribute and

stated that she has made friends that will last a lifetime.

The remains of the old capital of the Peligni rise a few kilometres from the

modern town of Sulmona, in one of the depressions that characterize this terri-tory. The archaeological excavations,

which have been going on for years, have brought to light remains of the ancient urban center. Whereas with the theatre and amphitheatre it is only possible to

discern the basic layout , due to the superimposition of modern housing. The remains of the ancient sacred area are in a better sate of conserva-tion, situated just outside the centre, along the so-called Via di Pratola. Well conserved are two buildings with a rectangular plan, of which the

biggest is dedicated to Hercules. Close to the cathedral of San Pelino and the so-called morroni di San Pelino lie the remains of a wall of a circular mausoleum. Of great interest are the finds made over the course of the

past few years: in Plano San Giacomo the remains of a Roman villa with a splendid mosaic floor, and at Fonte San’ipplitto, a few kilometres from the village, a sacred area dedicated to Hercules divided in two terraces;

the upper one houses a little temple that leans against a long wall made from large blocks; the

lower one has a monumental fountain.

Eccellenze d'Abruzzo: il vino cotto

Il vino cotto è oggi riconosciuto come uno dei prodotti agroalimentari tradizionali di eccellenza anche dal Ministero delle Politiche Agricole, Alimentari e Forestali. Per la tutela e salvaguardia di questo pregiato elisir è nata l’Associazi-one produttori Vino Cotto d’Abruzzo, con il contestuale riconoscimento di un preciso disciplinare per la preparazi-one del vino cotto.

Il vino cotto è stato anticamente introdotto nei territori dell’Italia Centrale dai Greci i quali utilizzavano questa tecnica di produzione che, partendo dalla cottura del mosto delle uve autoctone prodotte dalle alberate (metodo di allevamento della vite con utilizzo degli Aceri o alberi da frutto anziché degli attuali pali in legno o cemento) effettuavano la cosiddetta interzatura, ovvero la riduzione a caldo del volume di un terzo del mosto iniziale, ottenendo un prodotto che messo poi in botti di legno subiva una lenta fermentazione e successivamente l'invecchia-mento.

Questo procedimento rendeva il vino meno acido e quindi poco soggetto a trasformarsi in aceto. Quando il raccolto era peggiore del solito o quando il proprietario del terreno sceglieva l'uva migliore e lasciava al contadino quella più rovinata, questi, per non rischiare di rimanere senza vino, facendo ricorso alle sue migliori risorse ed alla sua creatività, riusciva a bere per tutto l'anno un vino forse migliore di quello del padrone. Nella storia antica i Greci indicavano l'Italia con l'appellativo di "Enotria" ovvero "Terra del Vino"; infatti, certe produzioni di élite venivano osannate da Plauto (191 A.C) che riteneva il vino cotto la più ricercata delle bevande, consigliandolo in ogni banchetto. Oltretutto egli, da esperto del settore, definiva il me-todo di preparazione "un'opera di ingegno". Secondo gli storici, il condottiero cartaginese Annibale, nella guerra punica contro i Romani, fece sosta ad Atri dove rifocillò i propri cavalli ed uomini con del vino cotto. Molto apprezzato, nel 1534, anche dal Papa Paolo III che lo definiva come "una grande cosa".

La prima sperimentazione in Abruzzo di questo nuovo tipo di vinificazione fu fatta nel territorio teramano (in particolare nei comuni di Bisenti, Cermignano e Basciano) e in tale opera viene sottolineata la grande qualità che tale prodotto assume con il trascorrere degli anni.

Il vino cotto è ottenuto dalla pigiatura di uve locali, nello specifico il Montepulciano, ridotte in mosto che viene poi cotto nel “caldaro”, che in realtà è un grande calderone di rame, con l'avvertenza, tramandata dalla tradizione, di porvi una verga di ferro nudo per impedire al rame del caldaro di passare in soluzione. La verga di ferro si tiene fino a che il mosto non si sia scaldato. In tale recipiente il mosto viene cotto a fuoco vivo fino a quando l'evaporazione non porti il contenuto a ridursi di una quantità variabile tra un terzo e un mezzo di quella iniziale; la maggiore o minore con-centrazione varia a seconda del grado zuccherino di partenza. Non appena raffreddato, il mosto concentrato viene "rimboccato" in caratelli di rovere ove è lasciato fermentare. A fermentazione alcoolica avvenuta è trasferito in un contenitore in cui è già presente il vino cotto degli anni precedenti; molto importante sarà un suo lento e lungo invecchiamento evitando forti ossidazioni. È proprio questo il punto più delicato ed impor-tante della vinificazione: in questa fase è necessario calcolare il giusto dosaggio fra il vino cotto nuovo con quello vecchio ed effettuare una spillatura accorta, per evitare problematiche ossidazioni. Eventuali errori in queste operazioni potrebbero impedire il formarsi del profumo fruttato caratteris-tico della bevanda. Non è infrequente che il mosto concentrato e non ancora fermentato venga "rimboccato" direttamente nel vino cotto vecchio, ma tale pratica è rischiosa e riservata ai più esperti, in quanto essa rischia di compromettere il giusto dosaggio tra nuovo e vecchio, e di provocare con la fermentazione il sommovimento dei depositi contenuti nel recipiente e il temporaneo intorbidimento della bevanda.

L’invecchiamento del vino cotto ha una grande variabilità: si parte da un minimo di due anni, fino ad arrivare a tempi lunghissimi. La produzione abruzzese vanta anche delle qualità di un’età quasi centenaria. È il tempo infatti l’ingrediente principale di tale prodotto, perché il tempo gli dona una densità sciropposa, sapore abboccato, aromatico, lievemente amarognolo dal colore rosso cupo.

In Abruzzo, soprattutto nel territorio teramano si elaborano quattro maniere del vino cotto: conservato, crudo, semplice e crudo ritornato. Preparato ancora oggi anche in versione casalinga, un tempo era riservato al festeggiamento di occasioni importanti come un matrimonio: se si sposava un fig-lio, il vino cotto che veniva gustato era quello preparato nell’anno della sua nascita.

Anche per questo prodotto vale la regola del sapersi ingegnare e dell’arte del recupero degli scarti. Accadeva che, quando il raccolto non era ottimale, il proprietario del terreno teneva per sé l’uva migliore, lasciando al contadino quella più rovinata. Come la storia abruzzese insegna, grazie alla bravura e all’ingegno, ancora una volta il povero è riuscito ad ottenere un prodotto migliore di quello del ricco.

Recentemente la Facoltà di Agraria dell’Università di Teramo ha pubblicato i risultati condotti sullo studio ed analisi del vino cotto riconoscendo, scientificamente, l’alto potere antiossidante di questo prodotto dovuto proprio alla caramellizzazione degli zuccheri durante la pastorizzazione del mosto.

FADM DINNER CLUB OUTING AT PIZZA NOSTOLGIA

FEBRUARY 23, 2017

The FADM Dinner Club met and sampled the gourmet pizza station Pizza Nostalgia, on Thursday, Feb-ruary 23. Pizza Nostalgia is located at 57889 Van Dyke Avenue just north of 26 Mile Road in Washington Twp. Twenty-seven (27) Members and friends of the FADM gathered in fellowship and fun to try the many varieties of Pizzas and pasta dishes available on the menu. After the meal, members of the FADM Coro along with accordionist Tony Di Ponio sang for the group and the customers. A good time was had by all and particularly the customers who kept asking for more songs. A big thank you to our coordina-tors Angela Beaumont and Teria DeLorenzo for all the arrangements. Lettomanoppello, Guardiagrele Since Medieval times the working of precious metal has also inspired

copper and wrought iron smiths, who spent heir days in humble work-

shops, never to know the fame of the goldsmiths of their times.

Typical and simply crafted the two-handled basins, water vessels and

wrought iron bed heads are all traditional items that craftsmen form

Guardiagrele, and form the Chieti, Tossicia and Teramo area are still

made today, with designs that combine the contemporary with the tradi-

tional. At Loreto Aprutino the skilled work of the knife-makers produce

commercial and handmade quality items and in particular the Gobbo

knife, with its rounded horn

handle. The stone-cutters of

Lettomanoppello are experts at

working marble and Majella

stone and can rival sculptors

from the Aquila area with its

quarries and produce a quality

white stone
