    Congratulations JambalayaAssociation, you have done itagain. This years 48th AnnualFestival was a huge success.

    I have been attending theJambalaya Festival for 40 plusyears and this years festivalseemed to have it all. The food,

    the events, and the entertain-ment makes this event one ofthe most diversified festivalsaround.

    Its been a long time comingfor the festival to build up tothe excitement that once washeld in the streets of downtownGonzales. This year, I believe,proved to me that the festival isback and is bigger and better

    than ever.A wide variety of entertain-

    ment from bands like HaiKarate, Eddie Smith and Chee Weez rocked the stage while hometownfavorite bands such as Van & Grace Broussard, Kenny Fife and Na Na Shakept our dancing shoes moving.

    It was exciting this yearwhen the World ChampionJambalaya Cook was awarded

    to Lee Elisar and his helper andbrother Kirk. The real excitingpart of the victory is that thiswas Lees second year to cookas the lead cook and with hisvictory he now owns the covet-ed title of being the youngest

    Childrens Research Hospital.While at the the festival I saw

    many friends. There was Markand Denette, Terri and Mike.Eric and Stump were there too.There were Queens, dreams andHot Rod Machines.

    Grace and Van Broussardplayed together as the jitterbugging kept us from thinkingof the heat. If you are new tothe area and have never attend-ed the festival you are missing agood time. Along with the

    Can a Fruit Helpwith SugarCravings?

There isa natural compound in Garcinia calledHCA, Hydroxycitric Acid, thats saidto boast metabolism, increase energylevels, decrease sugar cravings andeven give you better sleep.

    Starlets like Jennifer Aniston andJennifer Lopez are rumored to havetried this supplement and have doneso with success, so a month ago Idecided to try my first bottle.

    After doing loads of research, I readthat the highest percentage of HCAyou can get in this supplement is 80%,so I decided to order a bottle (shown below) that had the highest

    percentage of HCA.

    The directions state to take a pillabout an hour before each meal, andpreferably before lunch and dinner.Thats exactly what I did. I took thissupplement faithfully, and about aweek or two into the bottle, I noticedI was fuller more quickly duringmeals, and I could go longer inbetween meals. A couple of weeksinto the bottle, I noticed I was sleeping much more soundly. I eventually increased to one to twopills before meals and that seems towork even better. I didnt notice anynegative side effects of the supplement, which is nice.

    Long story short, I lost about fivepounds that I gained earlier in thespring. I feel good, and I feel like mysugar cravings are almost nonexistent.Its quite amazing, I actually onlycrave fresh, healthy foods. I feel sogood that I just ordered another bot-tle of this supplement. I give GarciniaCambogia a 4.5/5 stars!

    Will needling become thenext big thing?I recently visited dermatologist, Dr. Terezakis, inventor of belovedGreen Cream, (I wrote about GreenCream in one of my very first articles love!) because of a recent black headbreakout. I attribute the breakoutdue to the change in seasons. Moresweating, more yardwork, more dirtand more clogged pores!

    Well, I met with Dr. Terezakis whotold me she was just beginning tooffer dermal needling. I told her Iwas very interested, and that I wouldmake an appointment soon.

    So, I went home that night and did

    some research. Why am I just learning about this procedure? Peoplehave been doing this treatment foryears. Dermal needling is also calledderm rolling and percutaneous colla-gen induction. Its basically the use ofneedles via a roller mechanism topuncture the skin in order to inducetiny areas of trauma to the skin andthus stimulating collagen production.The needles only go down into theupper dermis, so you really dontnotice much trauma, except a littleredness.

    SOclaims are (and there are loads ofbefore and after photos on the internet check them out!) dermneedling helps heal acne, cellulitereduction, reduce fine lines, improvediscoloration, smooth stretch and acnemarks, improve atrophic white scars,

    even promote new hair growth.Different size needles accomplish different improvements. You wouldwant to use larger sized needles,around 2.0 mm, for things like stretchmarks and cellulite reduction andsmaller needles for the face.

    After doing LOTS of research, I

    noticed that most online reviews werepositive. Id say 80% or more of people that had derm needling had apositive experience.

    I called a local medi spa to set up,minimally, a consultation, but theexpense was $570! No way was Idoing that, so I did more research,and I found that derm rollers were forsale. So, I bought one. I bought theLilian Fache derma roller shown here.

    With apprehension and excitement I proceeded with my first personal session of derm rolling from home.Let me interject quickly dermneedling is effective because afteraerating your epidermis, its allowsa topical treatment to become waymore effective that just applyingdirectly to the surface of the skin.With this being said, after my firstderm needling session, I made sure Iput on a quality anti oxidant SkinCeuticals Phloretin CF.

    After disinfecting my skin, hands androller, I moved the roller back andforth all over my face and neck, proceeding with caution around mynose and mouth areas.

    Although I didnt apply much pressure with the wand, I feel asthought my first session was effective.My skin was slightly red and felt tinglyfor a couple hours after the process.

    This is going to be a commitment,because it takes while for collagen toreproduce and become visible. It maytake a month of two before I noticeresults, but Im willing to do so.Some say its a great solution to fraxellaser resurfacing. (I looked into fraxellaser resurfacing, but I wasnt willingto endure the down time.)

    There are two types of treatment thatone can proceed with derm needling:One mild to moderate session up to 5 times a week or one aggressivetreatment every 1 to 2 months.

    I am currently going to go for the lessaggressive method, since it will onlytake a few more minutes to my nightly regimen. I will keep you posted on the progress of my dermneedling endeavors. This is veryexciting!

  • A Memorial Benefit Garage Sale for the late Cindy Allen age 58 fromLivingston, La. who lost her second round battle with cancer within a year

    on May 13, 2015. The Benefit Garage Saleis to help her family pay for her medical billsand other debts from her cancer.     The VoiceRecently I watched a Sheriff'sDepartment patrol vessel cruisingslowly alongside the riverbank nearmy home as they searched for thebody of a missing boater. An houror two later they were followed byan older boat, its ancient, smoking Evinrude putteringalong. Its somber crew spoke little as they scanned both rightand left, peering beneath decksand piers. Undoubtedly they werefriends or relatives of the missing,having joined the search.

    The boater reportedly went downin a 12 foot bateau powered by a6 HP outboard on BayouManchac. He and his passengerwore no life jackets. The sun hadset on a day in which we experienced some of the worststorms ever to sweep cross ourriver. His passenger bailed out and was able to swim ashore as theboat was swamped. It was recovered a couple of days laterand miles downstream. The searchfor the body continues.

    Social media postings now allowus a glimpse into the lives of thenames we read in the news and abrief search of the internet produced a photo of the missingyoung man straddling a HarleyDavidson. He held a beer in onehand and the slightest of smiles onhis face. His Facebook profile picture had been posted one day

    before the accident and anotherphoto shows him casually smokinga cigarette as the wake from hisboat trails off into the muddywater behind him. He was busyleading a young mans life andoblivious of life racing towards anuntimely end. Without a bit ofawareness, he began doing thingsfor the last time.

    He made a last Facebook post. Helistened to his favorite song. Hedrank a last beer. He huggedsomeone he loved. He smoked alast cigarette. At some point, hecracked his last joke and perhapswhen he laughed it was his lastlaugh. He gazed at an overcast skyand felt the cool, wet air blowingagainst his face. Maybe as he sankbeneath the water, he said a lastprayer. And at a most unexpectedtime, he drew his last breath.

    Where does that voice come fromin a young persons head? The onewhich convincingly speaks ridiculous thoughts such asNothing bad can happen. OrYou are young and now is thetime to make the stories you willretell from your rocking chair!Or maybe it just shouts Tell emto hold your beer and watch this!Whatever it says, it too oftendrowns out the voice of commonsense and rationality.

    Surely most of us remember thatvoice. It must spring from someslowly developing gray matterdeep within our youthful brain,the same part thattells a toddler to touch fire or a sixyear old to chase balls into busyintersections. Most are luckyenough to experience it's fading toa distant murmur as we mature,hastened by mortgages and babiesof our own. But that damn voiceis the very reason so many youngpeople die needless deaths.

    Though hearing that voice is apart of the human experience,nature itself gives no credence toits words. Nor does nature forgivethose who do.

    Wisdom teeth, also known asthird molars, are the last teeth toerupt in your mouth. This general-ly occurs between the ages of 17and 25, a time of life that has beencalled the "Age of Wisdom."

    Anthropologists note that therough diet of early humans result-ed in the excessive wear of theirteeth. Normal drifting of the teethto compensate for this wearensured that space was availablefor most wisdom teeth to erupt byadolescence. The modern diet,which is much softer, and the pop-ularity of orthodontic toothstraightening procedures producea fuller dental arch, which quite commonly doesn't leave room forthe wisdom teeth to erupt, therebysetting the stage for problemswhen the final four molars enterthe mouth.

    What is an Impacted Tooth?

    Complications such as infection,damage to adjacent teeth and theformation of cysts may arise fromimpacted teeth.

    A tooth becomes impactedwhen there is a lack of space in thedental arch and its growth anderuption are prevented by overlying gum, bone or another tooth.

    How Serious is an Impacted Tooth?

    Impacted teeth can be painfuland lead to infection.They mayalso crowd or damage adjacentteeth or roots.

    More serious problems mayoccur if the sac surrounding theimpacted tooth becomes filledwith fluid and enlarges to form acyst. As the cyst grows it may hollow out the jaw and permanently damage adjacentteeth, the surrounding bone andnerves. Rarely, if a cyst is not treated, a tumor may develop from its walls and a more serioussurgical procedure may berequired to remove it.

    Despite the considerable concern regarding impacted thirdmolars, a recent study finds thatthird molars which have brokenthrough the tissue and eruptedinto the mouth in a normal,upright position may be as proneto disease as those third molarsthat remain impacted.

    Must the Tooth Come Out if it Hasn't Caused AnyProblems Yet?

    Not all problems related to thirdmolars are painful or visible. Damage can occur withoutyour being aware of it.

    As wisdom teeth grow, theirroots become longer, the teethbecome more difficult to removeand complications become more

    likely. In addition, impacted wisdom teeth are more likely tocause problems as patients age.No one can predict when thirdmolar complications will occur,but when they do, the circumstances can be much morepainful and the teeth more difficult to treat.

    When Should I Have MyWisdom Teeth Removed?

    Wisdom teeth are easier toremove when the patient isyounger, since their roots are not completely formed, the surrounding bone is softer, andthere is less chance of damagingnearby nerves or other structures.Removal of wisdom teeth at a laterage becomes more complicated asthe roots have fully developed(may involve the nerve), and the jawbone is denser.

    It isn't wise to wait until yourwisdom teeth start to bother you.In general, earlier removal of wisdom teeth results in a less complicated healing process.

    The AAOMS study strongly recommends that wisdom teeth beremoved by the time the patient isa young adult in order to preventfuture problems and to ensureoptimal healing.The researchersfound that older patients may beat greater risk for disease, including periodontitis, in the tissues surrounding the third

    molars and adjacent teeth.Periodontal infections, such asthose observed in this study, mayaffect your general health.

    What Happens DuringSurgery?

    Before surgery, your dentist will discuss with you what toexpect. This is a good time to ask questions or express your concerns. It is especially importantto let the doctor know about anyillness you have and medicationsyou are taking.

    The relative ease with which awisdom tooth may be removeddepends on several conditions,including the position of the toothand root development. Most wisdom tooth extractions are performed in the office under localanesthesia, oral or intravenoussedation. Your dentist will discuss the anesthetic option that is right for you.

    What Happens after Surgery?

    Following surgery, you may experience some swelling and milddiscomfort, which are part of thenormal healing process. Cold compresses may help decrease theswelling, and medication prescribed by your dentist can helpmanage the discomfort. You maybe instructed to modify your dietfollowing surgery and laterprogress to more normal foods.

  • Social SecurityBenefits the Basics

    While many have delayed retire-ment because of the recent reces-sion, for those close to retirementage or contemplating retirement,a basic understanding of SocialSecurity is imperative. There aremany different things that youneed to understand about SocialSecurity to help you make aninformed decision. While a discus-sion of everything relating toSocial Security is beyond thescope of this article, you shouldbe familiar with the followingbroad concepts before you make adecision to start receiving your

    Social Security benefits.

    Social Security benefits are avail-able for those who have con-tributed to the Social Security sys-tem for at least 10 years or 40quarters. This is most Americansexcept those who have neverworked or who worked for a gov-ernment entity that does not par-ticipate in Social Security. Assuch, Social Security benefits makeup at least a part of most peoplesretirement income; for some,these benefits may make up alarge part of their retirementincome or even all of their retire-ment income. Therefore, timingyour decision as to when you willstart receiving the benefits tomaximize your monthly amount iscritical.

    If you wait until your full retire-ment age (FRA) to receive bene-fits, you will receive 100% of yourbenefits. Full retirement agevaries depending on when youwere born. If you were bornbetween 1943 and 1954, yourFRA is 66. If you were bornbetween 1955 and 1960, your fullretirement age is between the agesof 66 and 67. The FRA dependson the year you were born. Forexample, if you were born in1958, your FRA is 66 years and 8

    months. If you were born in1960 or later, your FRA is 67.

    An average of your top 35 wageearning years will be used to cal-culate your primary insuranceamount (PIA). If you have lessthan 35 years of employment atretirement, zero is used for eachyear in which there are no earn-ings. You can increase theamount of your benefit by waitinguntil after your FRA to startreceiving benefits. For each yearafter your FRA that you delay tak-ing your Social Security benefitsyou will receive an 8% increase inyour PIA. If your full retirementage is 66 and you wait until 70 tostart receiving benefits, you willreceive a whopping 32% more inyour monthly benefit and thisamount will last for your lifetime.As you can see, delaying the bene-fit may make sense if you expectto live a long life.

    Conversely, if you take your bene-fits before you reach your FRA,you will have to take a reductionin your PIA. The earliest you canstart receiving benefits is 62 yearsof age. Should you decide to takeyour benefits at 62 and your FRAis 66, you can expect a monthlyreduction of 25%. Again, thisreduced amount will be for yourlifetime.

    Upon the death of one spouse,the survivor (if they have reachedtheir FRA) is entitled to receive100% of their spouses benefit

    amount as of the date of death. Ifthe survivor has not yet reachedFRA, she can start taking survivorbenefits at a reduced amount atage 60. Then, at age 70, the sur-vivor can start taking her ownbenefits and will receive a greateramount each month since shedelayed drawing on her ownrecord at FRA. Another optionallows a survivor who has a lowbenefit to start receiving their ownreduced benefit at 62 and then toswitch to their deceased spouseshigher benefit at FRA.

    As you can see, the timing ofwhen to take your Social Securitybenefits can be complex and it canaffect not only you but also yoursurviving spouse. Next month,we will discuss some additionalstrategies to maximize your bene-fits. Until then, make sure youalways consult with someone well-versed in Social Security benefitsbefore you make an election thatcould last a lifetime.

    GONZALES, LA (May 4,2015) Tammy OConnor,BSN, CEN, President-Elect ofthe Louisiana EmergencyNurses Association (LENA),and Jennifer Sing, BSN, bothteam members of St. ElizabethHospitals EmergencyDepartment recently visitedWashington D.C. as representa-tives of LENA. The NationalEmergency Nurses Association(ENA) Day on the Hill washeld on April 28 and 29, 2015.Over 100 ED nurses fromacross the nation were presentwith a unified voice for a common change. The individual state delegates wereadvised to meet with their StateSenators and/or HouseRepresentatives to lobby forsupport with the Mental HealthReform Legislation and TraumaCare Systems. Delegatesreceived a day of training inpreparation on how to presentvarious bills, and instruction onoptimizing time with state representatives.

    According to OConnor, thecomprehensive Mental HealthReform Legislation will help toensure resources are availablefor the mentally ill. The billspecifically focuses on programsand resources for psychiatriccare of patients and familiesmost in need of services. Itprovides additional funding for

    inpatient and outpatient treatment by eliminating restrictive reimbursementthrough Medicaid.

    We are thrilled to have had theopportunity to meet withSenator Bill Cassidys SeniorPublic Health Advisor, BrendaDestro, said OConnor.

    In addition to Mental Healthsupport, ENA strongly advocates support for thenations Trauma and EmergencyCare Programs. Pending legislative action, H.R. 648,authorizes two trauma centergrant programs to support stateand rural development of trauma systems. Another, H.R.647, supports developing trauma care regionalization toensure better access. We werealso fortunate to have met withSenator David Vitter who supports this legislation forTrauma Care funding and availability, said Sing.

    This was a great experience forboth Jennifer and myself, andwe look forward to continuinginvolvement in governmentalrelations. We encourage othernurses to get involved and be avoice for their practice, theirpeers, and their patients, noted OConnor.

  • EATEL AwardsSix LocalStudents with LaptopComputersSix outstanding scholars from our local highschools were honored on April 22, 2015 atEATELs annual Technology Awards Ceremony,now in its 29th year. Focusing on the importance of both technology and academicsuccess, EATEL presented one outstanding graduating senior from each high school in itsserving area, Donaldsonville, Dutchtown, EastAscension, French Settlement, Maurepas andSt. Amant, with a touch-screen, ultra-portablelaptop computer. The ceremony was held in the lobby of EATELs Administration Building(406 E. Worthey Road, Gonzales, LA).

    EATEL Technology Award applicants must havean overall grade point average of 3.0 or higher, actively participate in school and community activities, and plan to pursue theirstudies at a Louisiana-accredited college or university. These students must also plan topursue a major in one of the STEM categories:science, technology, engineering, or math. The2015 recipients were chosen from a pool ofapplicants by a counselor from each school.

    My hope for these students is that theyll continue to persevere in their academic successas they seek their undergraduate degrees,said Ashley Phillips, EATEL Executive VicePresident, Infrastructure. I hope that whenthey graduate, our Louisiana economy will provide them with great jobs, so that they canraise their families here and continue to be anintegral part of our thriving community.

    Christian Logarbo ofDutchtown High SchoolChristian is an Eagle Scout with perfect atten-dance for all his years of schooling. In additionto that, he has taken all honors and AP classesthroughout high school. Hes a member of theNational Honor Society, Mu Alpha Theta, AlliedHealth Program, and Interact. He is a tutor forathletes at Dutchtown and he has won theGallant Griffin Award and Super Senior Award.Christian is also active in athletics having beena 4-year member of the football and track andfield teams. Moreover, he is a proud memberof the 2011 5A State Championship TrackTeam. Christian is also an active member of St.John the Evangelist Catholic Church where he isan usher. He also volunteers for the church fair,food bank, and other projects for the youthgroup. Christian plans to attend TulaneUniversity where he will pursue a doctoratedegree in Biomedical Engineering.     Anastasia Britton of EastAscension High SchoolFor the last four years, Ana has played soccerat East Ascension where this year, she hasserved as team captain. She also coaches atCentral Middle School. She has also served asthe president the Beta Club and treasurer of theNational Honor Society. Ana has also participat-ed in DECA, FCS, EA's Senior Mentor Program,and Girl Scouts. In the fall, Ana will be attend-

    ing Louisiana Tech University to major inChemical Engineering. She would also like toobtain a masters in business administration.She hopes to one day work in an executiveposition at a chemical company.

    Joseph Baker of St. Amant High SchoolJoseph has earned 11 top 10 placements atMu Alpha Theta Competitions, 11 top 3placements at Science Club competitions andvarious other outstanding placements. Hesbeen a member of the Science Club, where heserved as reporter twice and Vice Presidenttwice. Hes also been a committee member forMu Alpha Theta and has been a part of theFrench Club and National Academic QuizTournament Team. Joseph is also an activemember of the community as a boy scout andnow a venturing scout. He also serves at hischurchs childrens and high school ministries.Joseph plans to attend Northwestern StateUniversity where he will major in PhysicalSciences/Pre-Engineering. She is theLibrary Club Vice President and was a memberof the Louisiana Teen Librarians Association.Sarah is a member of the St. StephensCatholic Church in Maurepas and in her sparetime, is passionate about the Krewe of Erin, aphilanthropic group in Ponchatoula whose goalis to promote the Irish Celtic Heritage andencourage the self-motivated empowerment ofyoung ladies.     Over the years the number ofhunters has declined in general.The days of picking up your shot-gun and entering a patch of woodsnear your home to pursue whatevergame you desire for an eveningmeal is, for the most part a thing ofthe past. Most hunters who fit thedescription "occasional" hunterhave dropped from the ranks ofbuying a license and have retiredtheir old shotgun or rifle forever. Ipersonally know some folks that fillthat bill and often talk to othersthat join the rank of used to behunter. Our state does offer thou-sands of acres of public land avail-able for all types of hunting.Although these lands are well man-aged for game and waterfowl, anindividual would have to be a pret-ty serious hunter to go through theeffort it takes to use these ares.Some hunters accept the challengesof public land use, others with thedie hard hunter blood belong tohunting clubs. I now belong to twohunting clubs and also hunt a cou-ple of Federal refuges.

    I was only five or six years oldwhen my dad joined the RomevilleHunting Club. At that time thecost was approximately $10.00 ayear for a membership. Years passedby and for whatever reasons, dadmoved on from the Romeville club.During those years hunting land inour area for squirrels, doves, ducks,rabbits, quail and woodcock waseasy to find. At some point in time,because of development or leasingof land, these favorite hunting potsof mine began to disappear. Ifought the situation for severalyears and finally came to the real-ization that I had nowhere to huntanymore. That's when I joinedMullins Swamp Hunting Club inSt. Helena parish. The cost at thattime was $250.00 a year. The duesare now $950.00 a year member-ship. I've been a member there forapproximately thirty years now.

    My dad, Thompson Brown andI had already acquired our ownduck lease at Venice,LA before myventure into the St. Helena club.The cost of that lease at the timewas only $300.00 per year and thatwas not per person, that was thetotal amount. It's not like that any-

    more at this day and time.Through the years from then tonow I've probably belonged toseven or eight different huntingclubs. I've belonged to two ormore in the same year. One partic-ular hunting club in Fordoche cost$1500.00 when I first joined. I'mno longer a member of that groupbut I do know that yearly duesthere are well over $2000.00 at thepresent time.

    The forming of hunting clubshas been good in many ways, but italso had some negative affects inother ways. One thing for sure, ithas stopped many minimal huntersfrom buying a license and promot-ing the future of hunting. That'snot good. Is it worth the price?Yes. To me it is. But understandthat I'm a serious hunter. Noteveryone falls into that categoryand I fully understand that. Everytime I pull the trigger on a St.Helena gobbler it's money wellspent. Each morning I have theopportunity to make a squirrelhunt at Lake Ridge Hunting Clubis a pleasure and worth every cent.To enjoy a cold, clear winter morn-ing hunting deer with my daughteris priceless. One thing is for sure,hunting leases are here to stay.Another thing you can bet yourcheck on is the fact that the priceto belong to one will only rise inthe future. It may even get to thepoint that middle class people suchas myself can't afford to belong toone. Now that's not a good thingfor the future of hunting...

    industry that need a shot in thearm, its horse racing.American Pharoah-the mis-spelling was never correctedwhen his name was approved- isa superstar in the making thatjust might draw even theyounger X-box generation backto the track.

    Pharoah has a bit of everyman in him that shouldappeal to the masses. He is notas big as the majesticSecretariat. He never had arival like the hard luck Alydar(the only horse to come in second in all three TripleCrown races) to push him tothe absolute limit of his abilitylike Affirmed. And hes not aspretty as Seattle Slew due to anunsightly short tail that was

    chewed off by a jealous cohortwhen he was a 2-year old. Healso has to wear ear plugs tokeep him relaxed in front ofbig crowds.

    But can he run. Sure histime in the Belmont was a fulltwo seconds slower than thefreakish Secretariat, but as theysay at the track-The only onesworried about time are thosewho are doing it in prison.

    And his cardiac cavity maynot be equal to Big Reds inphysical size (An autopsyrevealed Secretariats heart wastwice the size of a normal thoroughbred.) but he hasshown the heart and soul of achampion who can come frombehind to win the KentuckyDerby, survive a post timethunderstorm which sent FiringLine among others to theirknees in the Preakness andcome back to go wire-to-wire

    against fresh horses in the grueling one and one-half mile Belmont.

    And the good news is hisowner Ahmed Zayat-no, hesnot Ahmeds a Yat from NewOrleans who used to call BuddyD.s football show-is going torun him several more times thisyear before Pharoah retires tostud-at about $100,000 a pop.

    Then maybe his offspringswill perform as well asSecretariats most famous sonRisen Star-who was NewOrleans based-and would havewon his own Triple Crown ifnot for drawing the dreadednumber one post position inthe Derby (He went on to winthe Preakness and Belmont by acombined 16 lengths.).

    Shel because hes connectedwith a 1972 record that hasfinally been released-43 yearsafter its conception-that I havereally fallen for.

    Im sure youve seen some ofmy writings waxing nostalgicabout the good old dayswhen Prairieville was still country and you knew everybody in church and theFourth of July was spent atLandrys Park playing ball andclimbing greasy poles.

    Well, a couple of visionariesnamed James Casey and VinceMatthews tried to capture thatPolaroid snapshot of anAmerica gone by in an albumcalled The Kingston SpringsSuite over four decades ago.

    Matthews was the drivingforce of this ambitious projectthat was backed by Nashvilleheavyweights including JohnnyCash, Kris Kristofferson andCowboy Jack Clement. Theproducer was none other thanyour favorite renaissance manShel Silverstein.

    Fueled by amphetamines, thislong-haired Nashville rebelwent full speed ahead with hisrevolutionary plans-even pro-posing the then-preposterousidea of filming a video for eachsong on the album.Remember-this was almost 10years before a television channelcalled MTV was launched in 1981.

    If Vinces life was a trainwreck, it paled in comparisonto the actual train wreck hecaused in Kingston Springs (20miles outside of Nashville andlight years apart) which almostended his video career before itgot started.

    Matthews wanted to shoot achorus of townspeople singingGod Save Kingston Springsfrom the highest point in townwhich happened to be a traintrestle. He rented a cherrypicker from a local tree-trim-ming company and placed hiscameraman in the bucket on

    remember music has alwaysbeen a way of life for the Foretfamily. Uncle Wayne Foret andcousin Aaron Foret have beenlighting up the music scene inthe south for decades. Thatswhy it only seemed natural tocall the project that started as asmall two piece nearly 15 yearsago Foret Tradition. Ryan,joined by Brandon Foret beganplaying as a band around theage of 16 or 17, and in 1999released their first album,Dance With Me featuring 10songs written by the duo.

    Over the past fifteen years theband has seen a few lineupchanges but now contains fiveall star members from around

    South Louisiana. Ryan Foret,the ring leader, featured on leadvocals and keys is fromWestwego. He has been part ofmany great groups, playing onthe road with Wayne Toups andJohnny Allen to name a few.Backing up Ryan, the all starband features Jason Parfait onkeyboards, saxophone andbacking vocals. Jason is fromthe Houma area and has giggedwith Marc Broussard, recordedwith Ray Boudreaux of TheVoice and was recently induct-ed into the Westbank MusicHall of Fame. Mark Templetis the guitar player in the groupand also shares background

    We All MakeMistakes.

    To quote the words from aTracey Lawrence song, TimeMarches On, I can assure youthat is does. Our hearing starts togo from the many rock concertswe attended in the 70s. Ourmemory turns on and off and likewe all have done our entire life, we make mistakes.

    Ive made a few in my days. Ilearned when you pick up sweetbabies they dont always smell

    sweet. I learned in the 5th gradenot to dust the chalk line off yourfavorite teachers butt just to helpher out. If you do, be ready forthe butt chewing of your life andto get your heart broken for thefirst time. Ive learned never to goback to an ex-wife or girl friend.They are exs for a reason.

    Like my mother taught me, Ivelearned it is always best to admitto the mistake and move on andlearn from it.

    Last month I was in charge ofputting the Official Program ofthe Jambalaya Festival togetherand sure enough the first morningI had a couple of people point outa mistake I had made. It was anhonest mistake but a mistake neverthe less.

    Last year when I was takingphotos of the Champ of Champscontest. I was told all of the cookson the end row were the participants. All the cooks looklike champions to me. When I gotto the end of the row I took aphoto of Ralph Delatte and hishelper. Little did I know they werethe first cooks of a second row ofcooks along the back side of thecontest. Needless to say I put

    them in as a past champion and itwas brought to my attention by aformer champ. Oh well. Sorry

    You never know when a mistakeis going to jump up and bite youon the butt. Last week, after ourfriendly money round of golf with15 players. We were sitting in theclub house and reminiscing aboutthe round. Sam Lavigne is one ofthe most respected golfers out hereand everyone considers him the Aplayer. He had a decent round butmention he went in the sand trapon number 3. He wasnt worriedbecause he knew the trap and itwould be an easy up and down forpar. When he approached the trap

    he saw that his ball was in a footprint. Someone in the groupsahead of him had not raked thetrap. I thought it would be fun tostart some s*%#. I spoke up immediately and said it was Jimfrom my team. Jim looked at meshouted, No, not me! Dontthrow me under the bus. Werecounted our 4 man group andnone of us had been in that trap.The group that played ahead of usstarted looking at each other. Thenthey realized several of them hadbeen in that trap and they startedpointing fingers.

    The point of this story is withour friendly game of golf it couldhave been anyone of our balls inthat foot print. It could be David,Jim, Jeff or Pete. It could be Bill,Mike, Russell or Frankie. It would-nt have mattered one bit but youdont mess with Sams game.

    Taking Back the

    Responsibility

    There have been many trends or shifts throughout our lives that have changed our way ofdoing things.

    Fifty or more years ago the majority of families raised theirown meat animals, vegetable gardens, canned their own jellies,and collected their own eggs. Theword organic didnt exist, natural,either. Growing was basic, it wasnatural and didnt need an extratitle to tell us so.

    Breakfast consisted of farm fresheggs gathered from the coop inthe early morning, bacon from apig that lived in the yard, jellyfrom the berries gathered from the field, and butter that waschurned while sitting on theporch. If you wanted a loaf ofbread, you made that too.

    In the late 80s and early 90sthere was a major shift thatchanged this way of life. Womenwere no longer interested in performing the demeaning dutiesof domestic chores and insteadbecame enthusiastic about enteringthe workplace and earning a monetary living like their malecounterparts. The prized possession of the day shifted froman award winning pie to a day-planner. Anyone who was any-one carried one and the fuller itwas with appointments the more successful a person wasthought to be.

    With such a busy lifestyle no onehad time left in the day to preparemeals from scratch or to raise theirown meat or vegetables and truthfully, no one really wanted to, so the task of providing foodfor our families fell into the hands of strangers.

    The convenience of going to thegrocery store and choosing anything we wanted was a delight.Everything was prettily packagedand just sitting there waiting on usto swing by and scoop it up.Convenience didnt stop with justpackaged meat it offered perfectlycolored tomatoes and bell peppers. And if we were too busy to diceup a tomato, we could buy boxedfood that contained dehydratedvegetables and cheeses. We simplyadd hot water.

    This pleased the public very much.Quick and easy is the ticket for themodern, busy world.

    It wasnt until recently did wefinally notice that our young girlsof 8 are aging as though theyre17, obesity is at an all-time highand our overall health has deteriorated. Then did we finallylook into the food on the grocerystore shelves and ask where did it come from? What we found horrified us.

    Our beef and poultry have neverseen the light of day from a pasture, but instead grew in a feedlot on grain and sometimes groundup animal parts. (Hence, MadCow Disease) A feed lot? Thatword never existed, either. Whenraising animals in feed lots antibiotics are necessary to combatthe diseases that are inevitablewhen packing that many animalstogether, and GMOs (GeneticallyModified Organisms) are in placebecause we insist on a turkey-sizedbreast from a chicken and a perfectly shaped cucumber.Preservatives are added becausemuch of our vegetables are shippedfrom other regions of the worldand would spoil under natural conditions.

    Suddenly were ready, willing andeager to take back the responsibili-ty of feeding our families. Nolonger insulted by what we oncethought to be a demeaning role.Weve learned it is the role thatholds the most value of all, ourhealth and the future of our chil-dren. You Are What You Eat.

    The new upscale 19th Hole SportsBar will be open for drinks eachnight. On nights when spectacularsporting events are televised andshown on our gigantic televisionscreens, the 19th hole Sports Barwill have later extended hours.Appetizers and food will be availableduring the earlier hours.

    The large pavilion at the LakesClubhouse will be moved to the leftrear side of the Links Clubhouse foroutdoor concerts, plays, and comedyshows. However, at times we willoffer entertainment at different venues: on the outside deck

    Prep Time: 30 minutes

    Servings: 6 servings

    Ingredients:

    6 Fresh Medium Tomatoes

    2 lbs Chicken Breast Cup Mayo Cup Creole Mustard1 Tbsp Fresh Garlic (minced)1 Tbsp Salt Tbsp Black Pepper Cup Celery (chopped) Cup Red Onion (minced) Cup Green Onion (thinly sliced)1 Tbsp Fresh Parsley

    Method:

    Season the chicken breast using salt and pepper. Grill or bakethe chicken for about 15 minutes or until done. Allow to coolfor 10 minutes then cut the chicken into cubes. Toss all theingredients into the food processor and pulse until the desiredtexture is achieved.

    For extra spice add 1 Tbsp of your favorite Creole seasoning ora tsp of red pepper.

    For the tomatoes, using a small paring knife carefully cutaround the core of the tomato. Using a spoon, scoop theseeds from around the inside of the tomato. Carefully stuff thetomato with chicken salad and serve.
