Tax Free Weekend! (Aug. 7th - 9th)
Effective July 1, 2015, all three of Virginia’s Sales Tax holidays will be consolidated into one. The combined tax holiday will be held from August 7 – 9, 2015 and will apply to items previously covered in the Hurricane Preparedness, Back to School, and Energy Star/Water Sense Tax Holidays.
Items that are required to be tax free during this three day holiday include: - School supplies ($20 or less), clothing and footwear ($100 or less) - Energy Star and WaterSense items ($2,500 or less) - Hurricane and emergency equipment (portable generators $1,000 or less and many more items)

Polynesian Watermelon Drink
Ingredients:
1 seedless watermelon, halved and sliced
3 cups water
1 (15.25 ounce) can crushed pineapple
1 (12 fluid ounce) can evaporated milk
1/2 cup shredded coconut
2 tablespoons white sugar, or to taste (optional)
1/2 lime, juiced
Steps:
1. Grate watermelon with a fork from the rind into a large bowl, leaving no large chunks.
2. Stir water, pineapple, evaporated milk and coconut into the grated watermelon.
3. Add sugar, stir until dissolved
4. Squeeze lime juice into the watermelon mixture.
Serve and Enjoy!
Lemon Almond Tea
Ingredients:
2 family-sized black tea bags
4 cups boiling water
2 lemons, thinly sliced
1 cup sugar
1 tablespoon almond extract
2 teaspoons vanilla extract
1 (2 liter) bottle lemon-lime flavored carbonated beverage, chilled
Steps:
1. In a saucepan, brew tea bags in hot water for 15 minutes. While waiting for tea to brew, squeeze the lemon slices as you put them into a large pitcher. Pour in sugar.
2. Pour brewed tea into the pitcher with the sugar and lemons. You can let this sit in the refrigerator for up to 1 day, or use it right away.
3. When ready to serve, stir in almond and vanilla extracts and lemon-lime soda.
Enjoy!
Citrus Blueberry Slush
Ingredients:
1 (16 ounce) can frozen orange juice concentrate
6 fluid ounces water
1 cup fresh blueberries

Steps:
1. In a blender, combine water, blueberries, orange juice concentrate and ice cubes.
2. Blend until slushy.
3. Pour into glasses and serve.
Enjoy!
Orange Pineapple Drink
Ingredients:
2/3 cup orange juice
1/3 cup pineapple juice
3 scoops orange sherbet
2 pineapple rings
Steps:
1. Place orange juice, pineapple juice, and orange sherbet into a blender and blend until smooth. Pour into two glasses; garnish each with a pineap-ple ring.
Serve cold and enjoy!

Rosemary Ranch Chicken Kabobs
Ingredients:
Steps:
1. In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire sauce, rosemary, salt, lemon juice, white vinegar, pepper and sugar. Let stand for 5 minutes. Place chicken in the bowl, and stir to coat with the marinade. Cover and refrigerate for 30 minutes.
2. Preheat the grill for medium-high heat. Thread chicken onto skewers and discard marinade.
3. Lightly oil the grill grate. Grill skewers for 8 to 12 minutes or until the chicken is no longer pink in the center and the juices run clear. Remove from grill.
Serve and Enjoy!
1/2 cup olive oil 1 teaspoon lemon juice
1/2 cup ranch dressing 1 teaspoon white vinegar
3 tablespoons Worcestershire sauce
1/4 teaspoon ground black pepper,
1 tablespoon minced fresh rosemary
1 tablespoon white sugar, or to taste
2 teaspoons salt 5 skinless, boneless chicken breasts
Mini Cheesecakes
Ingredients:
Crust:
1/3 cup graham cracker crumbs Filling:
1 tablespoon white sugar
1 tablespoon margarine, melted
Steps:
Preheat oven to 325 degrees F. Grease a 6-cup muffin pan.
In a medium bowl, mix together the graham cracker crumbs, sugar and margarine with a fork until com-bined. Measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pressing firmly. Bake in the pre-heated oven for 5 minutes, then remove to cool. Keep the oven on.
Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy. Mix in the egg.
Pour the cream cheese mixture into the muffin cups, filling each until 3/4 full. Bake at 325 degrees F for 25 minutes. Cool completely in pan before removing. Refrigerate until ready to serve.
Top with your choice of fruit filling and Enjoy!
