Pizza Base Macphie Pizza Topping

Mozzarella (grated) Vegetables or Cooked Meats

Method

Spread pizza base generously with Pizza Topping. Place vegetables or cooked meat on top and finish

with a layer of grated cheese. Bake in a hot oven until cheese starts to bubble.

SAUSAGE ROLLSIngredients

1kg Macphie Sausage Roll Concentrate 1 litre GlenGlaze 2.25kg Cold Water

1.6kg Minced Pork Puff Pastry Sheets

Method

Place Sausage Roll Concentrate into mixer and add cold water, mix on 1st speed. Add minced pork and

thoroughly blend together. Pipe onto dough, fold over and seal. Cut to 120mm long. Rest for 30 minutes.

Spray or brush with GlenGlaze. Bake at 213°C/425°F for 25 minutes until golden brown.

PIZZA SAUSAGE ROLLIngredients

2kg Water 1.6g Minced Pork 500g Macphie Pizza Topping

1kg Macphie Sausage Roll Concentrate Puff Pastry Sheets

Method

Place Sausage Roll Concentrate into mixer and add cold water, mix on 1st speed. Add minced pork and pizza

topping and thoroughly blend together. Pipe onto dough, fold over and seal. Cut to 120mm long. Rest for

30 minutes. Spray or brush with GlenGlaze. Bake at 213°C/425°F for 25 minutes until golden brown.

CINNAMON SWIRLIngredients

4kg Bread Flour 1.6g Water 1.5g Danish Pastry Margarine

960g Danish Pastry Concentrate 560g Egg 200g Yeast

5th Avenue® White Icing Macphie GlenGlaze

Filling

1kg Macphie

Cinnamon Bakestable Filling 425g Water 220g Oil

Method

Mix 2 + 6 in a spiral mixer and rest dough in 2 x 3.6kg chunks for 10 minutes. Sheet to 10mm on the pastry brake in a rectangular shape.

Cover half the rectangle with Danish Pastry Margarine and fold over the other half of dough to give 2 dough layers and 1 fat layer.

Give 2 half turns and refrigerate overnight if possible. Give 1 further half turn and reduce to 3mm at 360mm width.

Combine all ingredients together and mix on 1st speed for 1 minute followed by a further 2 minutes on 2nd speed. Spread 2/3 of the dough

with Cinnamon Bakestable Filling. Roll up and cut into slices (approximately 2cm wide). Place on baking tray lined with silicone paper.

Prove at 32°C/85% RH for approx. for 45 minutes. Spray or brush with GlenGlaze then bake at 213°C/425°F for approx. 15 minutes.
