Choice grape varietiesCabernet-Sauvignon, first planted more than 2000 years ago by the first wine growers of the region, has developed marvellously, where the gravelly soil retains the heat so well and drains excess water, producing powerful and complex wines: deeply coloured, almost blueish like the grapes themselves, with firm tannins and incomparable ageing potential. Merlot, which ripens more easily, thrives here and provides balance in the blend thanks to its
opulence and rich fruitiness, contrasting with the rigour of Cabernet Sauvignon and lending smoothness and suppleness to the wines. Cabernet Franc, while less used, can nonetheless contribute in terms of its freshness and delicate aromas, adding a precise touch to the blends, just as the tannins of Petit Verdot bring their own wild character.
Elegance, elegance and more eleganceWine lovers, connoisseurs, winegrowers and owners, all agree on the word ‘elegance’, used to qualify the red wines of the Graves and particularly the Pessac-Léognans. It is the first word on the lips when distinguishing these wines, from the delicate twists in flavour to the texture which is suppler than, though not dissimilar to, the wines of the Médoc. Elegance is a term often overused but in this case appropriate. Elegance in their crafting, their deportment, their presentation, the purity of line, flowing naturally like an architectural masterpiece from some near mystical inner alchemy. Yes indeed, elegance which generates de facto seduction, natural and unspoilt. The wines of Pessac-Léognan incorporate the subtle, yet envious mix of power, delicacy and refinement. They possess a distinction in their purity. here, artifice is naturally swept away faced with the respect of natural beauty. approachable wines, easily expressing notions of pleasure. Warm, embracing wines.
The red wines of Pessac-Léognan are the ideal accompaniment to all red meats,
game, foie gras and cheese. They also go just as well with grandmother’s cooking as with classic dishes or Nouvelle Cuisine. as with all great vintage wines, avoid spicy sauces.
Young, the dry white wines of Pessac-Léognan harbour a pale yellow straw colour, combining power and finesse; delicate, aromatic and fresh.
The dry white wines of Pessac-Léognan also have staying-power. They are complex,
they can age up to 10, 15, sometimes even 20 years. or even longer. on the nose, notes of linden-tree mingle with hay and hints of honey. on the palate, powerful and yet subtle, they can pleasantly express flavours of bay leaf or crushed cassis leaf. Complex, full and fleshy, and when made in both sweet and dry styles, they give a lasting taste with an aromatic finish.
Perfect as an aperitif, they are a wonderful accompaniment with shellfish and seafood, hors d’oeuvres and starters; mature wines are excellent with fish and white meats; after long ageing, when the bouquet is at its peak, they go very well with cheese.
