Be a Responsible HostBefore the First Toast...In this guide, you’ll find all the necessary information for planning a memorable holiday party, including convivial punch recipes, flavorful cocktails, a guide to seasonal beers and how to serve wine with style. But before we help you kick off your celebration, let’s take a moment to plan for the post-party, to ensure that guests have ample options to exercise moderation and return home safely. Before you raise that first glass, add these ideas to your checklist.

Don’t let guests drink until they walk out the door. Institute a “last call” at least an hour before the end of the event. Offer to call a cab for anyone who needs one.

Prepare a guest room in advance, so there is clearly no inconvenience should a guest be unable to find their way home safely. They’ll stay the night willingly, and thank you over coffee in the morning.

HOSTING TIPS

Suggest that guests who live near each other carpool with a designated driver or plan to share a taxi.

Make sure food is available whenever alcohol is being served.

Don’t take a self-serve attitude, where guests mix their own drinks. If you can’t handle mixing the drinks personally, designate or hire a bartender who will be able to serve and monitor guests.

On your invitation, include a list of alternative transportation options, in-cluding the nearest public transpor-tation and phone numbers for local taxi services.

As guests arrive, ask them how they intend to get home after the party. If they plan to drive, collect their keys until it’s time to leave and only allow them to leave if they are not too intoxicated to safely and legally operate their vehicle.

Remember that alternative beverages can be, and should be, every bit as interesting as your alcoholic treats. Water and soda are fine, but gour-met flavored sodas, or a signature cocktail without the alcohol will help non-drinking guests join in the fun.

Pair with grilled meats and especially some roast pork. Rated wines like this don’t last long. While supplies last!

Benegas Malbec 2008seen elsewhere $21.99 club price $14.98Complex aromas of cher-ries and mature blackber-ries are present on the nose of this Argentinean treasure. The palate pres-

ents a very good structure and it is persistent in the mouth with dark berries and some spice box and a hint of vanilla on the finish. Sweet tannins finish this wine off beautifully with little to no drying effect. Let’s just say this bottle didn’t stand much chance after the tasting.

San Pedro 1865 Malbec 2007 seen elsewhere $22.99 club price $13.98Great aromatic intensity is present from cherry, berries and plums combined with toasted and smoked aro-mas. But the true joy from this gem is on the palate. Great Balance, excellent structure, dark berry flavors and a touch of tobacco and spice really set this wine apart form the rest.

From a 120-year-old parcel of vines, the oldest of the Cairanne appellation. Displays stunning roasted herbs, garrigue, lavender, black cherry and raspberry with some pepper and loamy soil notes. The complex aromatics are followed by a broad, expansive, full-bodied wine with fabulous density, sweet tannin and a long finish. This is absolutely amazing wine (a blend of 85% Gren-ache and 15% Carignan) that transcends the appellation.

Chateau Gaby Canon Fronsac 2008 seen elsewhere $32.99club price $23.98A really nice Bordeaux that’s ready to take home, pop the cork and drink. A novel idea! Silky and elegant with some earthy overtones to the ripe dark fruit. Bring on that sirloin you’ve been meaning to cook up!

Decant LoseNot limited just to vintage Port or old Bordeaux, many wines are good candidates for decanting. By pouring big young red wines from their bottle into a decanter

an hour or more before the party begins, you introduce oxygen that can help them taste softer and more flavor-ful. And, if you choose to buy volume wines, like 1.5 liter bottles or quality box wines, a decanter may im-prove not just their taste but their visual presentation.

Perfect PourBefore the party, measure out 5 oz. of water into your wine glass and make a mental note of the fill level. Regardless of how it appears, this is your standard pour; Some large wine glasses could easily hold half of a bottle. Pour the wine into the center of the glass and twist the bottle as you finish pouring to best avoid drips. You might also consider flexible pouring spouts designed to give drip-free pours and bottle collars to prevent wine from running onto your festive tablecloth.

Holiday Cheers

1 cup Pama Liqueur2 bottles red wine1! cup water2 cups sugar4 cinnamon sticks12 whole cloves" tsp. ground nutmeg4 lemons, sliced2 oranges, sliced

In a large saucepan over medium-low heat, combine all ingredients. Heat for 15-20 minutes but do not bring to a boil. Remove from heat and strain. Return liquid to pan and serve warm. Serves 8-10.

Denizen Spiced Daiquiri (by Marshall Altier of Jbird, New York City)

2 oz. Denizen Rum# oz. fresh lime juice# oz. spiced syrup* Freshly grated nutmeg

*Fall Spiced Syrup

1 cup water1 cup sugar! Tbsp. ground nutmeg! Tbsp. ground cinnamon! Tbsp. ground allspice5 whole cloves

Bring the water and spices to a boil in a saucepan. Once the spices are infused, lower the heat to medium while stirring in the sugar. Once sugar is completed dissolved, remove from heat and let cool on stove for 30-45 minutes to let the spices settle. Once

cooled, strain the syrup through a chinois strainer to remove the particles. Keep refrigerated until use.

Spiced Hot Toddy

1" oz. Sailor Jerry Spiced Rum

1 oz. infused simple syrup (Equal parts sugar and water, infused overnight with 1 vanilla bean and ground nutmeg. Strain through a fine cloth.)

2 dashes Angostura Bitters! oz. fresh lime juice3 oz. hot water

Combine ingredients in a mug and stir. Garnish with freshly grated nutmeg.

French Apple Pie Martini

2 oz. Bauchant Apple XO Liqueur

" oz. Calvados" oz. dry vermouth

Pour the Bauchant Apple XO, Calvados and dry vermouth into a cocktail shaker half-filled with ice cubes. Shake well and strain into a chilled cocktail Glass. Garnish with a thin slice of apple and serve.

Ginger Snap, Swizzle & Flip

2 oz. Snap Ginger Liqueur1 whole egg" oz. simple syrup (equal parts sugar and water)

! oz. fresh lemon

Combine ingredients and dry shake to emulsify egg. Add ice to the shaker and shake very well. Strain over crushed ice in a rocks glass. Rub or “swizzle” a bar spoon between the palms of both hands to mix into ice. Garnish with a mint sprig.

Firefly Igniter Martini

2 oz. Firefly Sweet Tea Flavored Bourbon

" oz. cinnamon schnappsSplash of cherry juice1 maraschino cherry! tsp. cinnamon

Combine all liquid ingredients in a shaker with ice and shake vigorously. Strain into chilled martini glass.Garnish with a cherry and a sprinkle of cinnamon.

Combine Baileys and hot chocolate in a coffee mug. Top with a dollop of whipped cream. Sprinkle crushed candy cane on top. Garnish with a mint leaf.

Hornitos Holiday Smash

In an old fashioned glass, crush the cloves with a mud-dler. Add the pear, orange, lemon and simple syrup, and muddle again. Fill the glass with ice, add the tequila and stir to combine.

Combine all liquid ingredi-ents in a shaker with ice and

Bubbly Time On their own or in tasty cocktails, nothing shouts “celebration” like sparkling wines. Their lively effervescence and bracingly fresh flavors enliven any gathering. While Champagne, made only in France’s Champagne region, is commonly considered the king of sparkling wine, other affordable options from France, the U.S., Spain and Italy mean there is a bubbly wine to suit any party budget.

SPARKLING COCKTAILS

Champagne Cocktail1 cube sugarAngostura Bitters 4 oz. brut Champagne or sparkling wine

1 lemon twist

Place the sugar cube in the bottom of a large Champagne flute and add several dashes of Angostura bitters. Add the sparkling wine and garnish with a lemon twist.

Champagne Mojito1! oz. Sailor Jerry Spiced Rum

" oz. simple syrup (equal parts sugar and water)

! oz. fresh lime juice10 loose mint leaves2 oz. Champagne or sparkling wine

Combine ingredients (except Champagne) and shake well with ice. Strain into a tall glass over fresh ice. Top with Champagne. Garnish with a mint sprig.

Pop Goes the Pisco!2 oz. Gran Sierpe Pisco 10 grapes or white grape juice

Muddle grapes in the bottom of a cocktail mixing glass. Add pisco, lemon and honey and shake vigorously with ice. Strain into a Champagne flute to serve.

Sparkling Cosmo3 oz. Freixenet Carta Nevada Cava

" oz. Cointreau 1! oz. cranberry juice 1 lime wedge1 orange slice

Mix the chilled liquid ingredients together in a large chilled mar-tini glass. Squeeze in the juice of the lime and discard. Garnish with orange slice.

French 752 oz. Cognac1 tsp. superfine sugar" oz. lemon juice4 oz. Champagne or sparkling wine

1 lemon twist

Combine the Cognac, sugar and lemon juice in a shaker with ice. Shake vigorously and strain into a Collins glass half full of cracked ice. Top with Champagne and garnish with a twist of lemon.

Poinsettia ! oz. orange liqueur 3 oz. cranberry juice cocktail

4-5 oz. Freixenet Carta Nevada Cava

1 orange wedge1 lime twist

In a highball glass or sparkling wine flute, squeeze the juice of one orange wedge, add orange liqueur and cranberry juice, then cava and stir gently. Garnish with a lime twist.

Saké Sunrise2 oz. TY KU Sake1 oz. orange juice1 oz. Champagne or sparkling wine

Build ingredients in a flute and serve.

Bellini1 Tbsp. peach purée

4 oz. Prosecco or other sparkling wine

Place the peach purée in the bottom of a champagne flute and fill with Prosecco.

Black Velvet4 oz. Guinness Stout4 oz. Champagne or other sparkling wine

Combine chilled ingredients in a tall glass and stir gently to combine.

SPARKLING COCKTAILS

Cava Spain’s answer to Champagne, Cava is made from native grapes and undergoes a second fermentation in the bottle. Cava is not a single region in Spain, but can be made in approved areas throughout the country.

CrémantFrance’s sparkling wines are not limited to Champagne. The country’s next largest pro-ducer is the Loire Valley and crémant wines are also found from Bordeaux, Bourgogne, Jura, the Rhône, Limoux and Alsace. They typically use regional grapes, but all are made using the traditional Champagne method.

ProseccoHailing from Italy’s Veneto region, Prosecco is a fairly gentle sparkling wine made from the Glera grape. By using the bulk, or Charmat, method to introduce the second fermentation in large steel tanks, Prosecco offers a value price.

New World SparklingYou’ll also find good value sparkling wines from South Africa (called Cap Classique), Australia and closer to home. Many of the best sparklers in the U.S. are made from the traditional Champagne grape varieties and hail from California, Washington, New York and even New Mexico.

Old World (European) wines lean toward “elegance” (subtlety), with less obvious fruit, moderate alcohol and often notes of earthiness.

Price matters. In most genres, you can find wines spanning across a price spectrum; higher-priced wines (think over $20 retail) tend to be more structured, more intense, more complex (layered, varied), and looooooong on the palate—but that doesn’t mean they are more enjoyable. Many people prefer the smooth, easy-drinking simplicity of a $10-$12 wine.

The more specific the region of origin, usu-ally the more personal the winemaking and more character in the wine; but again, this doesn’t necessarily make them “better.” Site-specific wines will also tend to be more expensive, due to their limited supply.

Ratings are fool’s gold. They reflect a single critic’s preference, not absolute quality. They also do not account for context. The vast majority of “rated” wines qualify as “good” if the numbers are translated. Forget looking for 90-point wines, it is way more important to find styles of wine you like, and to use different styles in different contexts...thereby creating a 90-point experience!

The key to any wine tasting “good” is bal-ance. The most important elements are fruit and acidity–although sometimes tannin, alco-hol and oak enter into the equation as well.

Fear not tannin: with food, a wine’s rough tex-ture will become dramatically less noticeable; and if a wine seems too tight and rough, it will benefit from decanting (breathing).

Watch the alcohol. White wines under 12% alcohol are off-dry (slightly sweet) and on the light side. The higher the alcohol, the fuller the body (for both red and white); high-alcohol reds can be trickier with food.

Well-balanced reds with good concentra-tion of fruit and structure (tannin, acidity) make the best candidates for aging. Tannin and acidity work like preservatives, while the wine develops distinctive, non-fruity aromas and flavors. These wines are also more apt to change in the glass over the course of a meal.

There are no bad wines, only wines you may not like.
