DONNA’S DAY: CREATIVE FAMILY FUNBy Donna Erickson
Stir up a no-cook meal for your family on a hot summer day. Just spin the globe until your finger lands on Spain, and think Gazpacho! The season’s freshest tomatoes, cukes, peppers and onions come together in this satisfying and zesty cold Spanish soup.
Let your kids harvest some of the ingredients from your family garden, or choose them in peak condition at a farmer’s market. Teach your school-age children basic cutting and chopping techniques. They’ll have lots of practice with this recipe!
If you don’t mind turning on your oven for a few minutes, top off the soup with whimsical kid-made croutons in fun shapes. Serve it in the fancy bowl that you use for special occasions.
For 4-6 servings, here’s what you’ll need:GAZPACHO
2 cups seeded, finely diced plum tomatoes 1 cup cored, seeded, finely diced yellow bell pepper 1/2 cup peeled, seeded, finely diced cucumbers 1/4 to 1/2 cup finely diced celery 1/4 cup minced carrots 1/4 cup minced celery leaves 1/4 cup minced yellow onion 2 cups tomato vegetable juice (such as V8)1/2 cup clam juice (optional)2 tablespoons minced chives 2 tablespoons olive oil 1 tablespoon red wine vinegar Juice of one lemon Salt and pepper to taste Let your child mix all ingredients together in a large
bowl. Refrigerate for at least two hours to chill and enhance the flavor. Scoop into a serving bowl and top with shaped croutons.
SHAPED CROUTONS1 loaf French bread sliced lengthwise with crust
removed 3 tablespoons butter or olive oil 1 garlic clove, pressed 1 tablespoon grated Parmesan cheese (optional) Salt and pepper to taste
1. Make shapes from bread with favorite mini cookie cutters.
2. Combine melted butter or olive oil with garlic and salt and pepper. Brush on top of cutouts. Sprinkle with
Parmesan cheese (optional). 3. Bake in 350 F oven for 10 minutes.Tip: Put freezer-safe serving bowls for gazpacho in

DEAR PAW’S CORNER: I read your column with the question from Christine B. in Atlanta about her struggle to find pet-friendly housing. I am a director at a nonprofit housing provider, and previously worked as a fair-housing specialist in Nevada. I do not know Christine B.’s specific situation with her cats regarding whether or not she has a disability. However, I feel
compelled to offer the following comments and tips regarding Reasonable Accommodations in rental housing under U.S. Department of Housing and Urban Development, which applies to all rental properties of more than four units where the owner does not reside on-site.
In April 2013, HUD’s office of Fair Housing and Equal Opportunity released guidance stating that any comfort, therapy or companion animal is considered a service
animal. This is much broader than the more familiar ADA requirement defining a service animal as either a dog or a miniature horse trained to assist a disabled person with a certain task.
Many people who suffer from depression and anxiety as well as those with physical ailments who benefit from their companion animals (cats too!) can request a Reasonable Accommodation from a landlord. Because they are considered service animals per

Focus on Farming(NAPSI)—Farmers have been called the original
conservationists because they have a rich history of tending to the delicate balance between soil and water that sustains life for all. Their love of the land drives what may well be the next major evolution in agriculture.
Most industries strive to do more with less, and agriculture is no different. Today’s farmers use advanced tools and technologies that focus on the basics of plant science: how to make plants more efficient at taking up the essential nutrients they need. These new tools include products that increase fertilizer efficiency, make nutrients more available to growing crops and even create “hunger pangs” within those crops that signal plants to grab more nutrients.
By increasing nutrient use efficiency or ensuring more nutrients go to the plant, these technologies not only improve crop yields but also benefit the environment, especially soil health and water quality. Nutrients such as nitrogen and phosphorus that might otherwise wind up in waterways are instead left in the soil in significantly reduced amounts where they can be used by the plants that need them.
“Advanced science allows us to create new interactions among biological, chemical and physical relationships that benefit plant growth and output,” said Greg Thompson, president and chief operating
officer for Verdesian Life Sciences, an industry leader and global supplier of plant health, biological and nutrition technologies headquartered in Cary, North Carolina. “At the same time, the positive environmental characteristics of these innovations are helping farmers improve their sustainability and conservation efforts, which they desire as stewards of natural resources and which are also being demanded by consumers and food companies.”

“Farmers want to see their fertilizer and nutrients leave the field in a grain truck at harvest—not be left in the soil or washed away in drainage,” said Mike Wilson, specialty products marketing manager and agronomist for Wabash Valley Service Company, a
major supplier of farm inputs and agronomic services for farmers in Illinois, Indiana and Kentucky. “This new category of nutrient use efficiency products is every bit as revolutionary as the first John Deere plow.”
Wilson works closely with roughly 2,500 customers who farm across several environmentally sensitive watersheds. Each has a nutrient management planÊ that Wilson’s team helps farmers develop and implement. These plans are designed to maintain high crop yield potential while implementing the best possible environmental stewardship practices with fertilizer applications.
“We meet our environmental objectives by only applying the minimal amount of fertilizer needed to make a crop and we’re very careful as to what, when, where and how much is applied,” Wilson explained. “We also use new fertilizer efficiency technologies to get the most out of every pound of fertilizer applied by increasing the nutrient use efficiency of nitrogen and phosphorus—more in the plant means less in the environment.”
This latest agricultural evolution benefits consumers by maintaining a plentiful and affordable supply of healthy and safe food, clean drinking water and productive, sustainable soils that will feed and nourish us for generations to come, Wilson noted.
Extreme weather is seldom fun for anyone. Although people often have the means to escape inclement weather, animals are at the mercy of their caregivers.
Protecting animals during extreme weather is not restricted to domesticated pets. Those who have livestock on their properties must recognize that these animals will need various levels of care as well. Animals such as chickens, cattle, goats, and llamas can be adversely affected by extreme weather. Individuals can heed these safety guidelines to avoid subjecting such animals to the stress, discomfort and illness that can result from exposure to extreme weather.
Suitable shelterOne of the best ways to safeguard livestock from
extreme weather is to ensure they have a place to escape the elements. Animals can get sunburned and may overheat, so make sure shelters can block the sun’s rays on hot days while also allowing for air to circulate through the dwelling.
It’s also key that the shelter be capable of accommodating all of the animals at the same time.
Livestock shelters do not have to be complicated. They can be as elaborate as a barn or as simple as carports or tarps and shade cloth.
Fresh waterAccess to fresh, clean water is also essential.
Dehydration can set in, particularly for animals with thick coats or those that are young or elderly. Animals tend to expend a lot of energy to cool down or stay warm, so they will need an ample supply of water to remain hydrated and healthy.
Standing water can become a breeding ground for parasites and insect larvae. Therefore, change water frequently to make sure it is sanitary. Some farm
experts advise aerating troughs to help prevent algae growth or mosquito infestations. A small amount of raw apple cider vinegar may help as well. However, always discuss water sanitation methods with a veterinarian before testing them out on farm animals.
Mold-free feedHot, humid temperatures can cause mold to grow on
hay and other feed sources. Cows do not like to eat moldy hay and it can make horses ill. The University of Minnesota Extension says horses are particularly sensitive to dust from mold spores and can get a respiratory disease similar to asthma in humans called recurrent airway obstruction, or RAO, which is often referred to as heaves.
Hay needs to be dried out before it is fed to animals. Any feed should be stored in cool, dry conditions and inspected before being dispersed to livestock.
Hair cutWooly animals may benefit from a shear prior to
the onset of hot weather, advises the Maryland Small Ruminant group. Do not shear too short. For instance, a one-inch fleece can dissipate heat and help the sheep keep cool.
RestLivestock should not be worked and handled during
the heat of the day. Their productivity levels may be diminished, and the extra exertion may affect their health. Rest will help them stay happy and healthy until the extreme weather has subsided. TF177164

Spiced Kielbasa and Fruit KabobsGOOD HOUSEKEEPING ONE
Break the barbecue mold with this fast and fabulous summer weeknight dinner.
1 package (16 ounces) light kielbasa or other smoked sausage, cut into 1-inch chunks
3 apricots, pitted and each cut into quarters
2 ripe plums or peaches, pitted and cut into 1-inch chunks
3 tablespoons sweet orange marmalade1 teaspoon Chinese five-spice powder
1. Prepare outdoor grill for covered direct grilling over medium heat.
2. Meanwhile, alternately thread kielbasa, apricots and plums onto 4 to 6 long metal skewers. In cup, combine marmalade and five-spice powder.
3. Place skewers on hot grill rack. Cover grill and cook 5 minutes or until kielbasa browns and fruit chars slightly, turning skewers occasionally. Uncover grill. Brush marmalade mixture all over kielbasa and fruit. Cook 1 to 2 minutes longer, turning occasionally. Makes 4 main-dish servings
