MULTI CULTURAL FEASTXingdong and his wife Lisa run ‘Xingdong Traditional Chinese Massage’ just near Supa IGA at Brookside.
Xingdong is from the Liaoning Province in the northeast of China that over 41 million people call home. Although Christmas is not widely celebrated in China Lisa says it is becoming a popular day with the younger generation.
Xingdong and Lisa will spend Christmas here this year even though both their respective families will be in China. They plan to have a day with friends at the Lamington National Park and bring traditional Chinese dishes to their picnic. Lisa says “It’s much easier now to buy traditional ingredients for Chinese cooking at the supermarket and Xingdong loves to cook.” Their get together on Christmas day will be a multi cultural feast where they invite other friends who have immigrated to Australia to join them.
In Liaoning Xingdong’s family will celebrate around a large table in the private room of a restaurant. Traditional regional dishes will be ushered in thick and fast to share around the table. Snow will be heavy on the ground and after a few sips of traditional ‘white liquor’, there is bound to be a playful snowball fight.

FIJIAN LOVO FEASTMost days you will find Epi at Car Heaven just outside Woolworths at Brookside but this Christmas Epi is heading home. Epi will be joining his extended family that are flying in from Canada, New Zealand and Australia to the island of Labasa in Fiji.
“I can’t wait to spend Christmas with my family” says Epi. “There will be about 30 of us together for our traditional Lovo feast” Epi tells me that the Lovo is like a Hungi where meats, like pork and chicken, are wrapped in leaves and buried in an underground oven. What he is most looking forward to eating though is the island’s seafood and in particular lobster. “All the men and boys get together a couple of days before Christmas and go diving together to catch our seafood for lunch.”
What about gifts? “We don’t really focus on presents, the best gift is having everyone together and having a good time.”
COMBINING TRADITIONSEmilian Jayakody will be celebrating Christmas in Brisbane this year with his family but in the past he has celebrated as far away as Sri Lanka and France.

main dish on the Christmas table in Negombo and often there will be turkey too. “There isn’t much difference between Christmas in Negombo and Australia,” Emilian says “but France is very different weather-wise.” Emilian lived in France for several years and his wife is also French. Christmas in France is celebrated with a meal on Christmas Eve. “We always have a big meal and champagne on Christmas Eve and usually there is snow everywhere.”
While there is no chance of snow in Brisbane at Christmas, Emilian and his family will celebrate this year with a nod to both French and Sri Lankan tradition. “Although we will miss our respective extended families this year we will celebrate with great food and wine and some French Champagne.”

MARINATED CHICKEN SKEWERS
Try these yummy crowd pleasers!
500 grams fresh chicken breast1 red capsicum cut to bite size pieces1 green or yellow capsicum cut to bite size piecescherry tomatoes
marinade 1 handful of fresh coriander 1 handful of fresh mint 2 cloves of garlic 1 red chilli zest and juice of 1 lemon sea salt and ground black pepper olive oil
Cut the chicken into similar sized cubes and place in a bowl. Blend all the marinade ingredients (except the olive oil) in a food processor, then loosen to a paste with a little olive oil.
Add the marinade to the chicken pieces and mix well. Marinate in the fridge for at least an hour.
Assemble the skewers by adding alternate pieces of chicken and vegetables.
Grill for around 5 minutes, turning regularly, until cooked. Feel free to cut a piece of chicken open to check if they’re done.
SPINACH AND BLUE CHEESE SLIDERS
Try this gourmet burger recipe for grown ups
500 grams lean beef mince150 grams gorgonzola1 small onion diced1 egg1 tablespoon Dijon mustardfresh chopped Italian parsleysea salt & ground black pepper
In a mixing bowl, combine the ground beef, diced onion, egg, Italian parsley, salt and pepper.
Stir to combine. Take handfuls of mixture and form into rounded patties or sliders.
Portion the gorgonzola and poke into the centre of each slider, then reform the slider.
Cook on the barbeque for 2 minutes per side.
Split the buns in half and place on the edge of grill and cook until lightly toasted.
Serve the sliders on the grilled buns with spinach, mayo and fresh tomato.
HOW TO COOK THE PERFECT BBQ STEAK
Ray Kelso at Barrow Lane Butchers says the best way to cook a steak on the Barbie is with a beer in your hand. Or if you prefer a chardonnay or shiraz he says that’s quite acceptable too. Choosing your meat is important and the staff at Barrow Lane can offer suggestions to suit. Ray says his favourite barbeque steaks are from the 100% Australian, family owned Nolan range and has offered the following tips;
1. Make sure the barbeque is up to temperature before cooking2. Rub some oil on the steaks, not the barbeque3. Season the steak with sea salt and fresh ground pepper4. Keep plenty of room between the steaks on the grill5. Rest the steaks for a few minutes on a plate before serving

My Vietnamese itinerary was thwarted by a typhoon the day of my arrival into Hanoi. No longer able to snake my way down Vietnam’s curvaceous coastline to Ho Chi Minh, I soaked up what Hanoi had to offer and was pleasantly surprised.
I was also glad I had earplugs. Hanoi is the locust-like sound of a million 50CC mopeds punctured with the continual ‘beep beep’ of Road Runner. And if you decide to wait habitually at a pedestrian crossing for the lights to change, you may end up looking like Wile E. Coyote. Red traffic lights don’t hold vehicles to a stop as you might expect, in Hanoi you just need to put one step in front of the other and go. Hanoi is a city on the move. A city that has been conquered and colonized repeatedly over the last thousand years has developed steadily by putting one foot in front of the other.
An increase in tourism has led to a mix of preservation and expansion in Hanoi. Buildings are being renovated and spruced in the Old and French Quarters, giving way to boutique hotel and new dining options, while high-rise commercial buildings are popping up around the outskirts. It is possible in Hanoi to have an espresso and a croissant at the terrace table of a French café and then turn a random corner and feel like you’ve stepped back in time. Follow a lady in a conical hat with a bamboo pole stretched across her shoulders, baskets of produce weighting down the ends to the pho street stalls. Families gather around these street stalls at small plastic tables on tiny plastic chairs slurping up steaming pho.
A morning walk around Hoan Kiem Lake and over the red lacquered Huc Bridge is a great way to start the day in Hanoi. Spend the afternoon exploring Hanoi’s ‘36 Streets’, named from the artist guilds that developed in the Old Quarter. Silk Street – Hang Dao, Silver Street – Hang Bac, Hang Thiec the street of tinsmiths. You’ll find traditional lacquerware and craft stores, smart boutiques and art galleries and on Hang Gai tailors will make you anything from a three-piece suit to a silk tunic.
Take a trip up north to Ha Long Bay and spend two nights on a boat exploring the UNESCO World Heritage Site. Be mesmerized by thousands of limestone islands rising out of calm waters that legend tells us were created by a great dragon that lived in the mountains. Halong translates as ‘where the dragon descends into the sea’ and it was his tail that smashed through the limestone structures to create the islands. I may have daydreamed that Captain Jack Sparrow was sure to round an islet at any moment.
Hanoi still retains a sense of ‘Indochine’ romanticism in its tree-lined lakes, sweeping boulevards and French cafes. A hint of Hanoi’s ancient past is felt in its guild streets, temples and craft stores. A vibrant street culture is witnessed in its markets and at dinner where families dine street side on steaming pho. If your travel plans through Asia happen to be thwarted, Hanoi is not a bad place to be stuck at all. Just bring your earplugs.
