It’s also known as Filet Mignon. It is the most tender of steaks yet has very little fat marbling. Since it is both lean and tender it’s the best choice for those watching their fat intake. It has the mildest flavour compared to other cuts.

SMITH’S PREMIUM PORK Product is cut only from boneless lean loin meat from
graded hogs. Improvements in the pork industry no longer
require cooking temperatures past 160°F or 71°C. This
ensures that the pork stays moist and flavourful.
All Smith’s pork chops are cut from Canadian federally
inspected hogs sourced in Canada. Chops are hand-cut on a
band saw reducing the chance of bone chips.
At Smith’s our center cut chops are based on thickness,
because the chops come from the center portion of the pork
loin, they will be uniform in size and weight.
Affordability makes the end to end cut pork chops ideal for
volume functions. End to end chops are cut either 1/2” or
3/4” thick. Product specification is based on thickness &
portion weight will vary slightly. End cut chops come from
either the loin end or from the rib end of the pork loin.
Boneless pork loin chops are a very versatile product, easy
to slice or marinate. Smith’s pork cutlets are a whole muscle
cutlet produced using boneless loins from graded hogs.
Portioned pork slices are mechanically delicated to tenderize
the cutlets. Cutlets are normally no more than 3/4” thick so
cook time is quick.
