The Ambruosi & Viscardi company has been leader in the cultivation and distribution of curly endive, escarole, sugarloaf chicory and red radicchio for 30 years. The company’s strong point in these years has been the processing of first range produces. The project of the Ambruosi & Viscardi company evolves through the respect of precise planning rules that lead to high, monitored and, above all, continuing throughout the whole year quality standards.The fourth range warehouse comes up beside the first range process-ing to meet the new demands of a market in continuous developmentAll that, without ever forgetting the origins of the rural culture, those which transfer to the produces the love of the land and the warmth of the best agrarian tradition.

ASSOCIATE

The production of curly endive and escarole in the Marches is certified in compliance with the Global-GAP Version 3.1 2009 standards.

The production of the fourth range factory is certified in compliance with the IFS Version 4 Higher Level quality standards.

The production of curly endive, escarole, red radicchio and sugarloaf chicory is certified in compliance with the “In-tegrated Food Process-ing” standards.

The traceability of the First and Fourth Range processing chains is certified in compli-ance with the UNI EN ISO 22005=2008 norm’s standards.

Farming

The experience gained over the years is surely one of the strong points of the company, which fromthe beginning has aimed at achieving a guaranteedand qualitatively exemplary production.

That’s possibile:

• By means of appropriate varietal choices;

• With the accurate choice of the production sites;

• Through the use of modern farming techniques;

• With “low environmental impact” productions and low en-ergy consumptions;

• With irrigation systems that offer advantages in terms of water volumes’ saving;

• With rational fertilizations, considering the real needs of the farming;

• With the phytosanitary defence based on the “integrated pest control mangement” principle;

• Through the constant farming’s control in the field by tech-nicians and qualified agronomists.

• With the Lots’ Traceability that allows us to reconstruct all the story of the product starting from the moment of the sowing in the nursery.

Environmental Sustainability

The Ambruosi & Viscardi company considersthe environmental conservation a fundamental aspectfor the quality of life and the sustainable development.

The choices made on the subject of the environment not only en-sure the continual and punctual respect for the legislation and the applicable regulation, but allow us also to achieve a continual im-provement of the environmental performances, always aiming at preventing pollution. All this is done because the company wants to guarantee that its productions are made respecting the envi-ronment. Thus, all the investments made in the last years have limited the impact our productive chain has on the ecosystem.

Factories All the factories in Sant’Elpidio a Mare are entirely fuelled by clean energy obtained by using 6600 solar panels put on the fac-tories’ roofs and able to produce 1.2 Megawatt of clean electric energy, which permits energy self-sufficiency. All the garbage got in the production process is managed through agreements with companies specialized in recycling and, in case of special waste, with waste disposal companies.

TransportsWe consider the possible environmental consequences also in the transport phases, trying to limit the impacts where possible. Here is why during the choice of the lands to be cultivated, in the evalu-ation parameters, we have introduced also the distances from the business centre and the theoretical consumptions of fuel, in order to limit the transports and the emissions in the atmosphere.Another choice has been that of buying methane-fuelled means of transport, replacing the diesel-fuelled ones, and our aim is to replace all of them.

Process vegetable waste At present, it is used in part as organic fertilizer on our lands and in part it is carried to a local biogas plant to produce electric energy. The beginning of construction of a biogas plant to produce energy that will be fuelled exclusively by raw material vegetable waste coming from the factories is imminent. The energy produced will be used to fuel the new fifth range factory. The residual compost produced by the plant will be used as organic amendment to fertilize the lands.

Production lineFIRST RANGE

The produce is picked in the countryside and carried to our warehouses where it is peeled by qualified personnel and cleaned off the earth and the inedible parts with some drinking water. From here, the produce is packed (one-way crates or pooling crates) and promptly delivered to the large retailers.The quality and healthiness of the produce are guaranteed by:

• Control in the field by the Campaign Manager assisted by the Technical Manager who qualify the lots of the picking;

• Control of the plant protection products’ residues by means of periodic chemical analysis;

• Cutting, in the field, of the produces that are strictly neces-sary for the warehouses’ daily requirements (we resort to the refrigerator storage as little as possible);

• Qualified personnel that throughout the processing line con-trol the absence of foreign bodies;

• Absolute respect for the hygiene norms and the occupational safety (Reg CE 852/04 e Dlgs 81/2008);

• Maintenance of the “Line of the Cold” from the peeling to the refrigerated trucks to be used for the delivery, with constant and controlled temperatures between 2 and 4 °C.

Production lineFOURTH RANGE

It is grown out of the necessity to satisfy the demands of our always more rigorous customers that has to address its supply to an always more careful and demanding consumer.

• The air-conditioning of the work places is never over 13 °C, in order not to nullify the processed vegetables’ healthiness and fragrance;

• More than 4 visual controls, throughout the itinerary, prevent the presence of foreign bodies in the salads;

• Three tanks filled with gurgling cold water (the last of the three is at 3 °C) and some high pressure jets of water wash accurately any type of residue;

• Some “shaking” belts and a centrifuge dry the pre-cut salads, to make them more suitable for the conservation in plastic bags by guaranteeing their crispness;

• The water used in the processing is integrated in a purifica-tion system that makes it drinking.

With the use of data storage devices, in each processing phase the Traceability System, which allows us in any moment to go back to the Lots of origin of the raw material employed every day, is maintained constantly effective. Finally, an ef-ficient distribution network, only equipped with refrigerated means, allows us to deliver to our clients the packed product in less than 24 hours from the moment of the salads’ picking in the field.
