    By Janis Switzer

Steve Arnold didnt plant his 32-acre

    vineyard just outside Santa Margarita

13 years ago with the idea of becoming

a winemaker. He did it as a practical way tobring some additional income off his vast

cattle ranch for the needs of his growing

    family. The fourth-generation cattle rancher

didnt even know much about grapes at the

time. It was good friend, Don Talley a

neighbor with vast vegetable and fruit farms,

and owner of Talley Vineyards who

    suggested the idea.

Today, that simple suggestion has grown

into a family mission and passion. While the

vineyard that was subsequently planted has

been supplying wine giant Mondavi withgrapes over the last dozen years, the fifth

generation of the Arnold family has taken

winemaking to a much smaller and personal

    level.

After laboriously planting and pruning the

vineyard throughout their high school years,

son Joey Arnold and his sister Michelle

suggested in 2002 that the family start making

some of their own wine from the vineyards

fruit. Before their father and mother

approved, Michelle says, They wanted proof

    we could do it.

So that year, Joey brought one ton of

grapes to a friends winery, and produced his

first two barrels of Zinfandel. Both Michelle

and Joey are fruit science grads from Cal Poly, and those first barrels apparently provided the

proof their parents were looking for. The next

year they produced the first 500 cases of Pozo

Valley wines, including the three varieties they

grow in the vineyard; Cabernet Sauvignon,

    Merlot and Zinfandel.

As winemaker, Joey, now 29, says he has

developed his skills, by doing. Starting with

that first 2003 vintage, he has been making

his wines at the Paso Robles Wine Services

facility, where he has had a pool of several

other winemakers to learn from. The nicething about being in there, he explains, was

if I ran into a problem, there was always

someone around who knew how to fix it.

He credits fellow winemakers Paul Ayres,

Tom Banish, and Dan Kleck for honing his

    skills.

Today, Pozo Valley is making about 800

cases each year, and is adding new varietals to

the mix, including some new blends, and

their first white, a Viognier. The tasting room

currently offers six different wines to taste

    complimentary.

When Michelle isnt doing her day job

secretary for an excavating company, she d

all the paperwork and compliance w

required for selling the wines, and also dmost of the sales and promotional work.

also rotates with her aunt and her mot

Debbie in manning the tasting room.

Arnold family member is always pres

    pouring behind the bar.

Pozo Valley itself is located 18 miles sou

east of Santa Margarita. The word po

means water well, and refers to the v

    underground aquifer that runs through

valley. The area isnt part of any formal app

lation, sitting just south of the Paso Rob

AVA, so its distinct in both geography climate to the rest of the region. The va

    maintains a coastal influence, evidenced

the fog that can often be seen creep

through the mountain passes. The extre

    fluctuation in daily temperature during

growing season has proven to be an id

climate for growing intensely flavored fr

    resulting in some delicious wines.

inviting tasting room is part deli,

part gift shop and part gourmet

    foods store. The merchandise

    changes with the season, and

theres always something new tobrowse through.

Aside from the tasting room, its

difficult to find Pozo Valley wine.

While it is available at The Range

    restaurant in Santa Margarita, at

the Madonna Inn in San Luis

Obispo, and the Hotel Cheval in

    Paso Robles, along with several

    scattered restaurants in Fresno,

    Los Angeles and Sacramento, the

    Arnolds have been cautious about

extending into retail. We stillhavent quite figured out the route

we want to go, Joey explains.

    Because our production is still

fairly small, we dont want to get

    too extended.

    The Arnolds are still finding

their way in a number of areas,

    including production levels, distri-

    bution strategy, and future varietal

direction. But it is their youthful,

    unassuming attitude that makes

them a refreshing change from thesometimes-staid wine world. For

instance, Michelle was afraid to let

the family know she entered their

2003 Cabernet into the San Fran-

    cisco Chronicle wine competition

    uncertain what the outcome

might be. To her surprise, it

earned a silver medal. The family

    hopes many other medals are

    likely in their future.

The Pozo Valley tasting room is

located less than two miles east ofHighway 101, at 2200 El Camino

    Real, Santa Margarita, at the

corner of Pinal Avenue, in the

center of town. Its open from

noon to 6 p.m., Friday through

    Sunday, and by appointment.

Wine tasting is free of charge. Call

WINE COUNTRY NEWS WINE COUNTRY THIS WEEK

    www.winecountrythisweek.com10

Eleven years ago, Hans Nef broke ground on his first estate vine-

yard in Paso Robles, embarking on a dream to start his own

family winery in a region rich with potential.

Today, Nefs dream has come true, and the potential of Paso Robles

has rapidly become a dynamic reality, with more than 170 wineries

    now calling the region home.

Among these wineries, Nefs own Vina Robles winery stands out for

its unique Swiss heritage, as well as its breathtaking new hospitalitycenter in the heart of Paso Robles Wine Country on Californias Central

Coast. The new hospitality center features a tasting room, gourmet

marketplace, art displays, picnic areas and more.

I want Vina Robles to express a unique balance of European

heritage and American opportunity, says Nef, who tapped fellow Swiss

native Matthias Gubler to lead his winemaking operations. As individ-

uals, we are rooted in the Old World. As winemakers, we are inspired

by the New World. Both worlds bring value to what we do, and we

endeavor to capture this distinction in our wines.

Under the guidance of Nef and Gubler, Vina Robles specializes in

varietals that excel amid the amenable growing conditions of Paso

Robles, specifically Cabernet Sauvignon, Petite Sirah, Petit Verdot,Syrah and Zinfandel. The winery also makes a trio of ultra-premium

red blends under the banner of the Vina Robles Cuvee Collection,

which showcases the art of blending in the pursuit of quality,

    complexity and dimension.

The roots of Vina Robles date back to Nefs childhood in Switzer-

land, where he developed an appreciation for his rural surroundings

and the blessings of agriculture. Trained in civil engineering, Nef later

founded a successful firm specializing in major public projects in

Zurich. In the early 1990s, he expanded his interests into agricultural

land in the southern United States. At the same time, Nef also leveraged

his passion for collecting fine Bordeaux wines into a wine importa

business, furthering his appreciation for California wines.

As his interest in California wines intensified, Nef dreamed of es

lishing a family winery dedicated to the production of distinctive es

crafted wines. His search for the ideal location ended in Paso Rob

where he acquired prime viticulture land and planted his first viney

For me, Paso Robles has it all the quality of the wines, the nat

beauty, and a sense that the best is yet to come, Nef says. Im very f

of European traditions, but I ultimately wanted my winery to be a

    of something young and exciting.

Nef soon enlisted Gubler as his winemaker, and their first w

were released beginning with the 1999 vintage. Ever since, Vina Ro

has employed its own estate fruit as the cornerstone of its winemak

    program.

At the heart of the Vina Robles experience is Huerhuero Viney

which lies along the southeast border of Paso Robles, where the rol

oak-studded terrain reaches an elevation of 1,230 feet. Here, the mi

climate is moderated by cool marine air that flows through

Templeton Gap, a notch in the coastal mountains. Blessed with ex

tional growing conditions, Huerhuero Vineyard is the foundation owinerys estate program, yielding fruit of uncommon depth

    elegance.

Huerhuero Vineyard is complemented by Jardine Vineyard, loc

a few miles to the north. Here, a warmer growing season is particu

suited for Petite Sirah, which has emerged as one of the winerys m

    acclaimed varietals.

Selecting fruit from only the finest blocks at the winerys estate v

yards and other notable local vineyards, Gubler is able to maxim

wine quality and complexity from vintage to vintage. True to his E

pean heritage and training, Gubler guides each wine with a passion

balance, capturing the estates exuberant Paso Robles fruit, craftingartful and food friendly wines.

Last summer, Vina Robles unveiled its new 14,000-square-foot

hospitality center, which occupies 30 acres with sweeping views of the

surrounding Wine Country along Highway 46 East. Combining classic

California mission-style design with modern European elegance, the

Vina Robles hospitality center welcomes visitors with a charming court-

yard and an airy, spacious interior.

It was very exciting to open our doors and see Vina Robles become

an integral part of the Paso Robles visitor experience, Nef says. Our

first goal as a winery was to establish our own vineyards and to secure

widespread distribution and recognition for our wines. Now the time

has come to achieve our second goal, which is to personally share ourwines with visitors from around the world.

Visitors to the tasting room can choose from three options to best fit

their interests. The Estate Tasting features the winerys main estate

wines at no charge. The Reserve Tasting features the winerys limited-

production wines for a fee of $5. These same wines can be enjoyed with

a selection of fine artisan cheeses for a fee of $10.

Vina Robles will host a variety of public events throughout 2008,

including a monthly concert series. The hospitality center is also a

versatile venue for private events of all sizes and styles, including

    weddings, parties and business functions.

Nef says that hes particularly proud to be a part of a winemaking

community that still maintains its small-town roots while embracing itsidentity as a wine destination.

From wineries to restaurants and hotels, the evolution of Paso

Robles as a wine country has been remarkable over the past 10 years,

but its all still built around local flavor and friendliness, Nef says. I

think that Paso Robles is a place where everyone feels welcome to

explore the world of wine, which is very much a part of our own

    mission at Vina Robles.

Vina Robles is located at 3700 Mill Road in Paso Robles and is

open daily from 10 a.m. to 5 p.m. For more information, call (805)

For Banyuls Glac: 1 chopped shallot 2 cloves garlic 4 oz. Banyuls vinegar 4 oz. Robert Hall Vintage Port 2 cups veal stock 1 tbl. unsalted butter

The pairing of Robert Hall Winery 2004 Meritage with oak seared

prime Harris Ranch sirloin is also a symbolic blending of the career

paths of two people, each recognized by their peers to be among the

best in their respective fields. After graduating the California School

of Culinary Arts, and completing a series of apprenticeships in San

Francisco and New York, including the Playboy Mansion West, heworked his way up to the prominent position of Chef de Cuisine at

the Mansion. In addition to his expertise in classic French, Italian and

contemporary cuisine, Chef Jeffrey Scott was awarded the Matrie

Fromager, recognizing him as one of the foremost authorities on

artisan and farmstead cheeses in California.

During the same years that Chef Scott was climbing the culinary

ladders, winemaker Don Brady was instrumental in putting the Texas

wine industry on the map. While working for the states largest

winery, he was awarded the Texas wine associations highest honor

the Louis F. Qualia Award for outstanding contributions and leader-

ship. Dons wines were served at White House functions for Presi-

dents Reagan and Bush, in addition to English royalty Queen Eliza-

beth and Prince Charles. In 2001, after moving to California, Don

earned worldwide acclaim as the recipient of the International Wine

and Spirits Wine of America Award. More recently, he was recog-

nized by the Paso Robles Wine Country Alliance in partnership with

the Independent Grape Growers of Paso Robles and San Luis Obispo

Vintners Association as the Winemaker of the Year in 2006.

Combined, these two respected craftsmen in the food and wine

industries represent a wealth of knowledge in creating superb dishes

and fine wine. With sirloin seared over hot oak embers and a

Cabernet-based Bordeaux-style wine with classic aromas of cassis and

ripe plum, this gourmet recipe and world class wine taste like theywere destined to be together. Robert Hall Meritage is a deep, richly

colored wine that offers a great complement to the texture of the

sirloin, and the toasty oak presence in mid palate reflects the oak-

scented beef, explains Chef Scott. Winemaker Don Brady adds, My

goal is to capture the essence of the vineyard as well as enhance the

quality of wine by getting the best product possible out of each vine.

The Robert Hall Winery hospitality Center is located off of Hwy

46 East in the heart of Paso Robles Wine Country. For more informa-

Wineologyby Len NapolitanoINTELLIGENCE FOR THE WINE CONSUMER

If you plan to pour from the same bottle the very next day, you can

simply re-seal it and leave it on your kitchen counter under one condi-

tion: the room temperature of your kitchen does not get above normal

room temperature (72 degrees) in the course of the next 24 hours. (If it

does, put the bottle in the refrigerator.) Find a cool spot for the bottleand feel confident the next night that the wine will taste as good as it

did the first night. And dont be surprised if on the second pouring the

wines flavors seem a bit more interesting than it did the first night.

Some wines will noticeably improve with just enough exposure to air,

like the amount it would see sitting inside a half-full bottle overnight. If

your wine happens to be one of them and theres no way to predict

which ones will improve significantly the second nights taste will be a

    real treat.

But lets say you arent sure about when you will re-pour from this

bottle. Maybe the next night, but most likely it wont be for a few days.

Then you should refrigerate the bottle after re-closing it, whether it is

red or white. Refrigeration will slow the aging process down enough for

you to enjoy the bottle again in several days. It should stay as fresh as it

was the first night for 2-3 days. More than this and it will begin a

gradual decline through the process of oxidation. Remember, the

closure you use to re-seal the bottle is not perfect. Some microscopic

amounts of air will creep inside the bottle over time.

Now, for the wine-saving gadgets. There are several tools on the

market designed to keep unfinished wine fresh overnight. One pumps

the air from the bottle through a slit on the top of a custom rubber

closure. This product works just fine, and will extend the life of the

wine longer than simply re-sealing the bottle with the cork. So you can

add at least an extra day, maybe two, to the shelf life of the unfinishedbottle, again, assuming the room temperature does not exceed 72

    degrees.

Another tool is an aluminum canister filled with a harmless and odor-

less gas. A tubular spout can be placed through the neck of the bottle as

you shoot a few bursts of gas into the bottle. The gas pushes out the

oxygen and replaces it, acting as a preservative. You then immediately

seal the bottle with a suitable closure before letting the gas escape. I have

found this process to work very well and use it regularly. As an added

safety margin, I will refrigerate the wine also. Bottles will remain fresh

    for 4-5 days, sometimes more.

    I

t is a melancholy truth, to borrow from

Charles Dickens, that so many tasting

rooms concentrate on so many otherthings besides pouring great wine. To borrow

from a more modern saying, if the wine is

good they will drink. But the proof is in the

proverbial pudding and the fact is there are

wineries that do more than pour wine but

they also pour really great wine.

Carina Cellars in Los Olivos is a case in

point. Carolyn Turner, Carinas special events

coordinator, is always planning something at

the tasting room whether private tastings and

pairings, hosting winemaker events or, as isthe case most recently, providing an outlet for

talented local artists. Local photographer Kari

Crist gets her turn at Carinas tasting room

through March 31st and brings her unique

and original photography to Carinas tasting

    room.

Turners choice of Crist is in step with

Carinas desire to highlight local surround-

ings, local talent and of course, Carina wines.

Art and wine have long enjoyed pairings, but

the focus on local artists adds a kind of trade-

mark to the winerys own aesthetic. That

aesthetic is present in the wines as well as in

artists like Crists work; namely, allowing

nature to show through with minimal manip-

    ulation.

Carinas tasting room is also a work of art

in an already unique place in downtown Los

Olivos. With a western saloon feel, the store-

front blends in well with its neighbors while

the inside maintains that true western feel

with a touch of the modern including addi-

    tions like Crists art.

2007 was a banner harvest year, as well.

Winemaker Joey Tensley has been excited

about all the varietals he pulled in this year

and with intense, ripe fruit and big bold

flavors, Carina will once again be producing

    its award-winning wines, counting 07s

harvest as among its very best.

It is Tensleys belief that the vineyard has to

do the talking and working with his assistant,

Lino Garcia and Carina Cellars owner David

Hardee, Tensley has produced some of

big, bold Syrahs the Central Coast is kno

Midlife Crisis what a great name why

did you call it that? Kevin and Jill Mittan,

the owners of Midlife Crisis Winery, are used

to this question and many others. Jills flip-quick answer is because she is the same age as

Disneyland. The real answer is a lot more

complex as are all things in life and

involves many reasons too numerous to name

all coming together in a moment of crisis.

The result became an overwhelming desire to

chase an impossible dream, to believe in it

totally and a determination to make it real.

They threw caution to the wind once the

decision was made to start the winery. In less

than four months, they sold their house in

Los Angeles, bought land in Paso Robles, started the winery and crushed their first

grapes. Both agree that if they took the time

to stop and think, there might not be a winery

    today.

Winemaking and all other duties are a

shared responsibility for Jill and Kevin. The

wines reflect their love of food friendly

wines. The wines are started in neutral oak

until the essence of the fruit has a chance to

emerge. Then, oak is used carefully to

enhance, not overpower, the fruit. The

results are well balanced wines that pair wellwith food but that can also stand alone.

In September of 2005, the Mittans opened

a cooperative wine tasting room in down-

town Paso Robles called Wines on Pine. In

November of 2006, Midlife Crisis Winery

went solo. The tasting room at 1244 Pine

Street became the tasting room for

Midlife Crisis Winery only. Aided by tas

room manager and wine maven, Alli

Groves, the tasting room is open five dayweek allowing the Mittans to make wines

the weekend. You see, as the dream beco

real and the winery grows, day jobs in

Angeles support it. Five days a week,

Mittans are working in LA in the entert

ment industry and two days a week, they

in Paso making wine and pushing the dr

    along.

The next phase of the dream is the de

opment of a winery and vineyard on t

property and of, eventually, making wine

time in Paso Robles. Until then, the Mittinvite you to share their midlife crisis

    Enjoy the beauty of gently

    rolling hills in the

Paso Robles countrysideand discover some of the

    newest and most exciting

    wineries on Californias

    Central Coast.

Just a few years ago women wine-

makers were a novelty. Only a handful

of persistent and talented females were

able to push their way to the top in a

very competitive field. More and morethough, women are not only at the helm

of some very prestigious wine opera-

tions, they are also garnering their share

of accolades and awards. Patricia Bello

of B&E Vineyards is a perfect example

of the creative spirit that epitomized the

    women of the vine.

Patricia did not come to her calling in the usual fashion. She and

her husband, Jerry began by planting grapes and selling them to local

vintners. Patricia, a cutting horse trainer and breeder left the farming

duties to Jerry. The vineyards provided her with a marvelous view

from her hilltop home and she came to love their brilliant displays in

the fall and spring, but winemaking was not something she even

considered. Along the way though, she developed an expensive habit.

I love a good bottle of wine but unfortunately I seem to particularly

like the ones that cost a hundred dollars or more. Thats why I had to

start making my own! My goal was to produce a really great wine that

    was also affordable.

With the assistance of other local winemakers, Patricia honed her

craft and became a truly exceptional winemaker, overseeing the

production of nearly 4000 cases of Cabernet Sauvignon, Merlot, Syrah

and a red blend called Red Rhythm. Her insistence on a twenty month

aging in French oak barrels produces a rich, velvety wine that hashelped her meet her goal of a creating fine wines that will fit into

almost anyones budget. This year her 2004 Cabernet took the gold at

the Paso Robles County Fair and her Syrah and Red Rhythm both won

gold medals at the San Francisco Chronicles Wine Competition.

B&E Vineyards is located on Creston Road in Paso Robles. A d

out to their tasting room will not only provide one with the oppo

nity to enjoy fabulous wines, but a chance to take in the awe-inspir

view of rolling vineyards that Patricia so loves. On the top of

highest hill on the property, the Bellos have built a charming weststyle saloon in which visitors can relax, sip three different reds (a R

is in the works) and be entertained by the warmth and wit of

    winemaker herself.

B&E Vineyards is open Friday through Sunday from 11 a.m

5 p.m. and on weekdays by appointment.
