    In Greek mythology, Eos is the Goddess of

    the Dawn. Today at EOS Winery in Paso

    Robles, a new dawn is rising, and it is the

    second time in the last 25 years that thewinery has experienced a rebirth.

    Originally founded in 1983 by the Arciero

    brothers two hardworking Italian immi-

    grants who made their fortune in Los Angeles

    construction the winery changed names

    from Arciero Winery to EOS in 1996. The

    name change at that time was both symbolic

    of a new day, and reflective of the wide range

    of changes made at the winery in order to

    make it successful.

    In the vineyards, in the cellar, in theequipment, in the pumps, the presses, every-

    thing we changed everything, recalls Leslie

    Melendez, who started at the winery in 1993

    as a lab technician, and who is now head

    winemaker.

    Leading the sweeping changes at the time

    was Kerry Vix, general manager at the winery

    since 1992. And as a result of those changes,

    EOS developed into a well-known, widely

    distributed brand that has grown in terms of

    production and quality ever since.

    Today Vix is observing another rebirth

    brought on by the sale of the operation from

    the Arciero family to Sapphire Brands, a

    company owned by entrepreneur Jeff

    Hopmayer. Hopmayer first gained fame asthe soul source of all the bakery goods sold in

    Starbucks stores worldwide. He established

    Sapphire Brands to focus on wines and

    spirits, and EOS is his first winery. Although

    the sale didnt include the 600-acre vineyard

    still controlled by the Arcieros, the 25-year-

    old vineyard remains the main source of fruit

    for EOS wines.

    But it is whats happening at the winery

    that is a new dawn a metaphor thats espe-

    cially appropriate because it involves the sun.The winerys newest and most significant

    project is a 2-1/2 acre solar field that will

    provide the winery and visitors center with

    100% of their energy needs.

    This was one of the very first things he

    wanted to do, Vix says of Hopmayers early

    days of ownership. He said, Were going to

    do everything we can to mitigate waste and

    consumption of natural resources.

    The entire system will represent a $3.5

    million investment for the new owner, wi

    20-year payback. But return on investm

    was not driving the decision to go forwa

    Vix explains, We want to be the most

    cient winery and the most proactive win

    in energy conservation. He hopes thexample will inspire other Central Co

    wineries to follow in their footsteps.

    The new solar panels will be in place

    harvest time this year, and in the meanti

    the winery is upgrading all of its produc

    and lab equipment, along with adding sta

    increase its annual production from ab

    180,000 cases to over 350,000 cases over

    next four years. At that level, it will rank

    the third largest winery in Paso Robles.

    Their two most popular wines

    are a Chardonnay and Cabernet

    Sauvignon, but other favorites

    include a crisp Viognier, a spicy

    Zinfandel and several varietals

    under their value-priced Novella

    label.Winemaker Melendez is one of

    just a handful of women wine-

    makers in the area, and her 15-

    year road from lab technician to

    director of winemaking involved

    working virtually every position

    in the winery. I learned by the

    school of hard knocks, Melendez

    says, but from the moment I

    walked in the door, I just loved it.

    The wines can be sampled atthe EOS Visitors Center on

    Highway 46 East in Paso Robles.

    The large tasting room feels like

    a candy store for wine and

    food enthusiasts. Hand-painted

    pottery, elegant glassware, cook-

    books, gourmet foods, and picnic

    items are abundantly displayed

    throughout the 6,000-square-foot

    space. The complimentary tasting

    includes up to four choices from

    the list of up to 14 different wines,ranging from dry whites to lush

    reds, to sweet dessert wines.

    For those interested in a

    behind-the-scenes look at the

    winery, there is a self-guided tour

    that leads visitors through the

    production area, with educational

    signs explaining the winemaking

    process. Once the upgrading is

    complete later in the year, it will

    represent the state-of-the-art in

    modern winemaking.

    The EOS tasting room is

    located about five miles east of

    Highway 101 on Highway 46

    East. Its open from 10 a.m. to

    5 p.m. daily.

    Among the ever growing number of

    wineries in Santa Barbara County,

    Carina Cellars sets itself apart through

    its dedication to top quality Rhne varietals

    and blends. In an area known for Pinot Noir

    and Chardonnay, there is a growing trend

    among producers and consumers alike for

    Syrah, Viognier, Grenache and Mourvedre.These are the core Rhne varietals and make

    up the majority of Carina Cellars focus.

    Founded by David Hardee in 2002, the

    winery continues to grow and evolve under

    the skilled hand of winemaker Joey Tensley.

    Tensleys passion for winemaking dates back

    to his childhood and his resume includes

    many great wineries in Santa Barbara County.

    His style centers around a minimalist

    approach allowing the vineyards to speak for

    themselves and show their true flavors.

    Although small, Carina Cellars produces a

    large variety of wines including vineyard

    designates and blends. Currently Viognier is

    their white wine of choice, and they enjoy

    experimenting with new vineyards each year,

    sometimes producing up to three different

    Viogniers per vintage. In the future, they

    would like to expand their white wine line to

    include other Rhne varietals such as

    Grenache Blanc and Roussane.

    Their red wine line-up is much more

    extensive and is sure to please everyone from

    the light Grenache drinker to the heavy

    Cabernet Sauvignon and Syrah drinker.

    One of Carina Cellars original ideas was to

    source fruit from numerous vineyards on the

    Central Coast to achieve a diversity of flavor

    within their wines. They have stuck to thisand continue to find great fruit to make great

    wine. They are currently producing five to

    seven Syrahs, sourced from vineyards such as

    Stolpman, Tierra Alta and Westerly. Beyond

    this, they also produce small quantities of

    Grenache and Mourvedre, and even did some

    Petite Sirah for 2005.

    Keeping with the Rhne varietal theme,

    Carina Cellars has attracted a distinct

    following for its Rhne blends. The most

    popular is the 7 Percent which has been a

    backbone of Carina Cellars wines since the

    beginning. This blend is styled after the Cote-

    Rotie region in the northern Rhne valley and

    consists of 7% Viognier and 93% Syrah. Its

    rich, velvety texture and subtle floral notes

    produce a wine that is lovely and distinct and

    pairs well with steak or lamb. The Sibylline

    and Clairvoyant make up Carina Cellars

    prophetic duo and are modeled after the

    southern region of Chateauneuf du Pape.

    With varying percentages of Syrah, Grenac

    and Mourvedre, these wines offer a ligh

    alternative to the 7 Percent with a soft

    silkier mouthfeel and less tannins. T

    taking the noble truth of a photograph and pushing the reality of its contents, said

    Libre. Although each image begins as a digital photograph, after manipulation

    Crist then handprints each piece using a technique called solvent transfer.

    Winemaker Coby Parker-Garcia was a

    third-grader in San Luis Obispo

    when Claiborne Clay Thompson

    and Fredericka Churchill produced their first

    offering, 565 cases of Dry Gewurztraminer

    and Dry Riesling, modeled on the fruity but

    dry dinner wines of the French province of

    Alsace.

    The son and grandson of farmers, he knew

    he wanted to attend nearby Cal Poly, but it

    wasnt until his junior year as an agriculture

    major that he noticed the local wine industry

    taking off. I always assumed Id have to

    leave the area to get a good job, he said.

    Parker-Garcia was delighted when his

    internship at Claiborne & Churchill revealed

    a new career path, one that not only

    resonated with his soul but would allow himto remain on the Central Coast.

    Although he took viticulture (grape

    growing) classes at Cal Poly, and later did

    additional study in enology (winemaking) at

    UC Davis, it was his apprenticeship in tradi-

    tional European winemaking techniques at

    C&C where he honed his approach to wine-

    making.

    What I learned from Clay and Nathan

    Carlson our former winemaker was to not

    manipulate the juice or the wine very much,

    even in years when conditions are more chal-

    lenging and its harder to maintain quality

    and consistency, he said. You always let the

    wine speak for itself.

    How hard is it for a winery that doesnt

    grow its own grapes to maintain that quality

    and consistency? It would be hard for a new

    winery just starting out, Parker-Garcia

    explained. But this is the 25th anniversary

    year for Claiborne & Churchill, so our long-

    term contracts put us at the front of the line

    and allow us to get the best grapes from our

    growers, he said.

    Temperature control isnt a problem for

    the winery either, not with 16-inch walls

    made of straw bales that naturally maintain a

    constant cellar temperature.

    The greatest challenge for the winery came

    in the marketing arena. People still remem-bered the old sweet Rieslings from the 60s

    that had large amounts of residual sugar.

    Thats why we have dry before the Riesling

    and Gewurztraminer in our wine names, he

    said. It helps convince people they arent

    sweet.

    A number of wine experts are now touting

    Riesling as the finest of the white grapes, a

    true unsung hero. Clay was definitely ahead

    of his time, he said. He and Fredericka

    were language professors who frequen

    traveled and lived in Europe, particula

    Germany. Across the river in France th

    were exposed to the dry style Gewu

    traminers and Rieslings of the Alsace regi

    and realized how great they could be.

    memory now, wine consumers are coming

    Decanting, the process of pouring red wine from its bottle into a ne

    vessel for the purpose of aeration or separation from sediment haste

    the mixing of air and wine and is usually a good idea when serving

    finer wines. Besides the occasions when you observe sediment in th

    bottle, the time to decant is when you have an aromatic red wine th

    will get more expressive when it is finally aerated.

    Have you ever felt that in the course of going through a bottle o

    red wine, or even in the course of finishing just one glass, that the

    wine improves over a brief amount of time? Thats because it is gett

    an opportunity to open up, or mix with air.

    Some people believe that it is best to decant every red wine,

    regardless of age or quality. This approach certainly does no harm a

    in most cases will bring the best out in the wine sooner. But most

    wines today are made to be consumed immediately, particularly in

    price range up to $15 a bottle. For these wines, aeration will probab

    not make a noticeable difference. For finer red wines, with layers of

    complexity from fruit and extended oak aging, decanting is a small

    extra step that will add not only to the ceremony of wine enjoymen

    but will most likely bring out all that the wine has to offer.Many red wines of significant age, and some young ones, will ha

    a small amount of sediment at the bottom of the bottle, or clinging

    its side. This is usually a sign of an unfiltered wine. The sediment is

    simply the natural residue from tannin molecules combining with

    color pigments in the wine over time and settling at the base of the

    bottle. There is no harm in drinking this residue, but it is not at all

    pleasant. The objective of decanting is to enjoy the wine without

    tasting the harsh bitterness of the sediment.

    To separate red wine from its sediment, just pour the wine slowl

    into a decanter that has an extra wide, round bottom and a long

    narrow neck, and stop pouring as soon as you see the sediment

    entering the neck of the bottle. You should end up with a few ounc

    of wine still in the bottle. The unique shape of the container will

    expose a large surface area of wine to air and start the release of its

    fragrant aromas. Let it stand for at least ten minutes before pouring

    into glasses.

    Another way to aerate red wine before consuming it is to fill the

    wine glass, or glasses, with wine in advance of drinking it. This

    method works well when preparing to serve guests. If youre setting

    dinner table about 30 minutes to an hour in advance of serving the

    food, just remember to fill the glasses with wine at the same time.

    The Rhone Essentials Seminar offers the

    opportunity to taste examples of the most impor-

    tant single-varietal Rhone wines, including Viog-

    nier, Roussanne, Syrah, Grenache and Mourvedre,

    as well as an exploration of Rhone blends. At each

    stage, participants will hear from the winemakers

    and principals who have chosen the Rhone Ranger

    route and helped give Paso Robles its new identity

    as the Rhone Zone.

    Wild Heart Winery is in pursuit of

    perfection. Suzanne Burens, who

    owns the winery along with

    husband Jim, puts it succinctly in her poem,

    Un Coeur Sauvage, A wild heart is restless,

    for it can only rest with perfection. And in

    their Los Olivos tasting room, Jim and

    Suzanne pursue that artistic perfection while

    pouring beautifully crafted boutique wines.

    Located on Grand Avenue, a walk into

    Wild Heart is a walk into aesthetics and

    beauty. Tapestries adorn walls and Suzannes

    hand-made jewelry occupies glass-topped

    cases that also serve as the wine bar. Its

    unique blend of art, craft and wine seem an

    honest and obvious metaphor for the Burens

    dream of Wild Heart itself. Focusing onblends that add up to outstanding flavor

    profiles, Jim Burens has made it his job to be

    sure that its flavor that moves the wine. Im

    less concerned with the alcohol level or

    whatever as long as the flavor is there, he

    has said in the past.

    Quality grapes from vineyards all over the

    state have allowed the Burens the opportu-

    nity to produce flavorful, fruit-forward

    wines, including a 100% Napa Cab, that are

    drinkable now and distinct enough to lay

    down for a while. Since Wild Heart wines

    are made from grapes all over California, the

    flavor profiles are not limited to one terroir.

    Reviews have been coming in from both

    customers and critics and awards, too. Wild

    Heart wines, like the name suggests, are

    bold, flavorful and intense.

    DAnbino Vineyards and Cellars, a winemaking operation in exis-

    tence since 1996, has opened a tasting room at the historic train

    station in downtown Paso Robles.

    With just under 2,000 square feet of floor space, the DAnbinotasting room has easily become the largest in the downtown area. The

    atmosphere is modern and relaxing. The rooms dcor features memo-

    rabilia depicting the familys history of producing award-winning

    chairs, a stage for live performances by the family band (illustrated on

    Paul Hoover might describe himself first

    and foremost as a farmer, but it is when he

    takes his love for growing things and applies

    it to the crafting of his award-winning winesfor Still Waters Vineyards that his true genius

    is apparent. I consider myself first a wine

    grower because Im passionate about agricul-

    ture, but with winemaking I get to enjoy the

    entire process, from growing the finest fruit to

    seeing it to the end with the production of

    great wine. I want to stay small because I feel

    the hands-on approach allows you work with

    the wine during the whole process and really put my signature and

    touch on the wines. For example, its unusual for winery of my size to

    make twelve different types of wine including five whites.

    As a graduate of nearby Cal Poly, Paul initially took his degree inagriculture and entered the resort and restaurant business. The call of

    the fields was strong, though and after a number of successful years in

    that business, Paul and his wife Patricia followed their hearts and

    bought a vineyard. The vineyard is located in an area with soils and

    climate perfect for growing premium wine grapes. The ranch sits high

    atop hills that slope gently from the north to the south, giving the

    vines the perfect exposure to the summer sun as it rises and sets over

    the El Pomar area. Light afternoon winds blow through the vines

    providing good airflow through the canopy for proper ripening. As the

    sun sets, the onshore winds flow from the Pacific Ocean cooling the

    vineyard to night temperatures in the 50s. The 40-50 daily temper-

    ature swings allow the fruit to cool at night, lengthening the ripening

    process to intensify the flavor and allowing the seeds to mature,

    providing proper tannin and flavors. All of these influences from

    Mother Nature help create the perfect balance of Still Waters Vine-

    yards estate wines. The setting is also perfect for people. If its a

    Eighth Annual World of Pinot Noir, March 7-8The Eighth Annual World of Pinot Noir, to be held March 7-8, at

    the Cliffs Resort in Shell Beach, will include two days of in-depth

    seminars, tastings, and Pinot Noir-inspired meals. More than 180

    Pinot Noir producers from around the globe participate in this annualevent that historically sells out, attracting attendees world-wide.

    Enthusiasm for the World of Pinot Noir continues to grow each

    year, said John Niven, chairman of the 2008 World of Pinot Noir. Its

    gratifying to see such interest among producers internationally to be

    involved and to contribute their knowledge and expertise to this

    The World of Pinot Noir kicks off Friday, March 7, with tasting

    the Sea on Saturday, March 8, will include more than 180 winer

    pouring their finest selections at the Cliffs Resort.

    Concluding the World of Pinot Noir festivities, the Santa Barba

    style Paule hosted by Au Bon Climat Winery features a line up

    chefs from around the country. Ive had endless amounts of fun at

    Paule events is New York, San Francisco and most of all,

    Burgundy, explained event host, Jim Clendenen. Were trying

    raise the bar to an equal level at the Santa Barbara-style Paule

    conviviality, generosity and indulgence. Anyone that appreciates

    The Santa Ynez Valley Wine Country Association presents aA Wine Fantasy in February wine tasting passport event on

    Saturday, February 9, from 11 a.m. to 4 p.m. Hosted by 14

    award-winning Santa Ynez Valley wineries, this popular annual

    event brings visitors from throughout the nation to sample the

    fine wines of the Santa Ynez region. Passport guests will have the

    opportunity to speak with vintners and winemakers, sample

    premium Santa Ynez Valley wines, and enjoy complimentary hors

    doeuvres throughout the day.

    Tickets for the passport event are just $35 per person, which

    includes tasting at all 14 wineries, hors doeuvres and a Wine

    Country logo glass. Each of the participating wineries will also

    honor free wine tasting on Sunday, February 10, when logo glassis presented. This added wine tasting opportunity provides a full

    weekend of wine tasting for passport holders.Tickets will be sold through the SYV Wine Country off

    Its that time of year again! Mama Pats Inner Light Community

    Gospel Choir is celebrating Black History Month with a rousing work-

    shop and concert. Featured this year is the music of the King of

    Gospel, Rev. James Cleveland. Anybody can participate in the work-

    shop and learn to sing Gospel songs. It will be held Thursday and

    Friday, February 7 and 8, at 7 p.m. at Unity Church, 227 E. Arrellaga

    Street in Santa Barbara. The cost for the workshop is $35, which

    includes concert participation. The dress rehearsal will be on Saturday,

    February 9 at 10 a.m., and the concert will be held Saturday night,

    February 9, at 7:30 p.m. at the beautiful Marjorie Luke Theatre, 721

    E. Cota Street in Santa Barbara. Concert tickets are $15 and $12

    (senior/youth) and will be available at the door. For more information,

    This Steven Roberts Gospel Music Workshop is for anyone who

    has ever wanted to sing! There is no experience required and no audi-

    tions just come with a desire to let loose and sing! Steven Robertswill teach by rote five to eight original songs (no music reading neces-

    sary). Steven has been nominated twice for Grammy Awards and is

    known throughout the industry as an outstanding and consistent

    gospel writer. He has been asked to give his workshops all over the

    U.S. and abroad, including Japan. One of the most touching places

    Steven has taught his Workshop, called Celebration of the Spirit,

    was for the families of the survivors of the 1995 Murrah Build

    bombing in Oklahoma City.

    The Steven Roberts Concert will feature arrangements in the w

    range of gospel music and special guest vocalists Dauri Kennedy

    Victor Hurtado.

    Inner Light Community Gospel Choirs mission is Touching he

    and lifting spirits, and they continue to share their music with
