Lato is originally from Poland and
his world travels have helped him

was a real education in wine,β

even now, all the employees
gather at lunch-time and drink
wine with their food, tasting and
discussing. Itβs very Old World, a
very European style of wine-

Wine is good medicine.
You wonβt hear any arguing with thatbit of wisdom from Joe Rosilez in
Paso Robles. And you arenβt likely to find a βDo not
refillβ sticker on the labels of his wines.
Rosilez is both a pharmacist and a wine-maker.
Or should it be winemaker and a pharma-cist? βPharmacy is still my primary vocation,βRosilez says, even though he spends almost as
many hours in his wine laboratory as he doesfilling prescriptions.
The result is an extraordinary array of
wines, from a Super Tuscan blend calledβApothecaryβ to a quintessential California
Zinfandel called βHerder Vineyard.βNo surprise, Apothecary is Rosilezβs
personal favorite, as well as his signature
wine. A medium-bodied blend of 80%Cabernet Sauvignon and 20% Sangiovese, it
also has sentimental value, since it happens to
be the only wine he and his wife, Whitney,make together.
And donβt underestimate her influence.Whitney is the one, after all, who gave him a
wine press and de-stemmer as a wedding
present β alongside the five tons of grapes afamily friend presented to the happy couple.
βWe were married in July and picked grapes
in September,β he recalls fondly.The result was the first vintage of J. Paul
Rosilez. βIβll never forget pressing Chardonnay
grapes at midnight,β says Rosilez, who stillworks until the wee hours in the wine lab,
after putting in very full days as a pharmacist.The two professions create a type of
synergy that works well for Rosilez. He finds
that the analytical portion of winemakingcomes easily to him. But he attributes more of
his skill to intuition and just being βbornwithβ a good palate.
βBeing a winemaker is almost like being a
good chef,β he explains. Chefs donβt measure,
they go by taste. Similarly, Rosilez runs tests
with his equipment mostly to validate hisinstincts.
The impressive spectrum of wine varietiesoffered by J. Paul Rosilez Winery comes,
surprisingly enough, from just one 26-acre
vineyard in Creston, a small communitysoutheast of Paso Robles. Owned by Carl and
Phyllis Herder, it provides seven varieties of
grapes to Rosilez, including the reds and
small amounts of Chardonnay and ViognierThis broad range is made possible by tinypockets of low-lying zones in the vineyard
called βmicroclimates,β which afford the
cooler growing conditions the whites need.Buying all his grapes from one source is
certainly a factor in the success of the Roselizlabel. βCarl Herder is very receptive to my
ideas and we collaborate very closely,β he
said. What wine would you likely find on the
dinner table in the Rosilez home? Mainly
Apothecary, but not for the reason you mightexpect. βI donβt tend to drink much of other
peopleβs wine,β he said. βI like my own wine,but mostly I donβt want others to influence
my style. When you acquire a following for a
certain style, itβs counterproductive to changeit and go with popular trends.β
Although heβs successfully tackled the
notoriously difficult Pinot Noir β his 2001earned a gold medal at the Orange County
Fair β Rosilez finds the Italian varietySangiovese to be the most difficult. βItβs the
most challenging to work with, by far,β he
said. βPinot Noir is hard to grow, but once itgets to the winemaker, itβs relatively easy to
make. The Sangiovese is very rough out of the
barrel, almost raw. It needs a great deal of tender loving care.β
The hallmark wine of J. Paul Rosilez istheir Viognier, the white RhΓ΄ne grape that is
redolent of peaches and cream, considered by
many wine experts to be the most sensuous of the major whites. The Viognier from J. Paul
Rosilez is dry and full-bodied, with the char-
acteristic honeysuckle aroma.
Viognier is the one Rosilez checks on m
frequently during production, he said. β

Seeing the fruits of your labor reach a
new level is something that wine-
makers Kris Curran and Bruno DβAl-
fonso are harvesting. Numerous changes
have spurred the growth of their personal
and professional partnerships to new
heights β and the results are being enjoyed
by all that know them and enjoy their
wines. In the past 12 months, they have
joined forces, bringing their labels together
under a new organization called βDβAlfonso
β Curran Wine Group.β Their production
has now moved to their new winery, located
on Rancho La Vina in the heart of the Santa
Rita Hills AVA, and they have opened theexquisite TRIO Tastings wine tasting room in
the heart of downtown Solvang.
Kris and Bruno have had wonderful
career experiences getting to this point. Kris
started her career with Cambria Winery,
then went on to Koehler winery before
becoming the founding winemaker for Sea
Smoke Cellars. Most recently she was
appointed the Director of Winemaking at
Foley Estates in the Santa Rita Hills AVA.
Bruno, after getting his enology degree
from UC Davis, spent several years at Edna
Valley Winery, then went on to be the wine-
maker for Sanford Winery for 24 years,
growing production to over 50,000 cases
annually. Today, Bruno continues to make
wines under his own labels, and also
provides winemaking services to a few
select clients.
The two together bring decades
knowledge, artistry, experience and ac

Do all wines get better with ageContrary to what you may expect, most wines today are made
consumption while they are still young (within three years of the
vintage on the label) and will not improve very much over time.
With red wines, older vintages generally do have more
complexity and smoothness than a younger vintage, especially for
age-worthy grapes, such as Cabernet Sauvignon, Merlot and blend
containing these grapes. However, all wines age according to a cu
that reaches a peak year of improvement and then begins to declin
It is the best guess of winemakers and wine critics as to when in tlife of the wine that peak will occur. My own rule is what I call th
plus three: that is, purchase wines that are young (less than three
years old) and consume them within three years. The only wines
my cellar older than six years old are French red Bordeaux. Thatβs
not to imply that American wines do not last longer than six years
Many do. Itβs just that the vast majority of American wines will rea
their best within six years, in my opinion.
White wines reach their peak sooner than reds, so if you have
any white wines in your closet with a vintage more than three yea
old, hurry up and consume them. Finer white wines, priced at
around $20 and up, however, are usually structured to withstand
little more time in the bottle, but I would still recommend applyin
the three year rule.
The issue of vintage can be complex. There are wine vintage
charts (available as a reference resource in many wine stores and i
wine publications) that list wine regions around the world and rat
each vintage year according to its quality, which is primarily deter
mined by that yearβs weather. Weather in a given year is more criti
in France, for example, than in California because wine productio
laws in many parts of France prohibit irrigation of vines. The
climates in California wine regions are fairly consistent year-to-yea
making differences between vintages less meaningful.
So, unless you are specifically looking for wines to add to yourcollection for the purpose of aging them over a period of years, do
be too concerned about vintage when you purchase. Itβs better to
enjoy them according to your own needs and desires than trying
guess at when they might be at their peak.

Castoro Cellars was founded 25 years
ago by the husband and wife team of
Niels and Bimmer Udsen. The winery
was named after the Italian translation of
Nielsβ childhood nickname, βBeaver,β

When the Donati Family purchased
the Mastantuano Winery in Paso
Robles exactly one year ago, they
knew the 25-year-old facility needed a lot of work. Today, the new Donati Hospitality
Center is a bright, open and inviting tasting
room, with high-beamed ceilings and
displays of new and unique merchandise.
Located at the corner of Highway 46 West
and Vineyard Drive, the Old-World style
chateau hasnβt changed much from the
outside, but the inside of the tasting room
and the winery have undergone significant
changes.
In the tasting room, new merchandiseincludes one-of-a-kind artistic glass, Italian
hand-painted pottery, Riedel stemware and
decanters, and even special wine holders that
allow customers to pack their new wine
purchases in their checked airline bags. A
new deli case offers artisan cheeses from

All these savory items are perfect to enjoy
out in one of the picturesque gazebos on the
property. And for fun, there are two bocceball courts next to the gazebos. Babbette
Miller β who had been with Mastantuano
Winery for years before the sale to Donati β
will even supply bocce balls and equipment.
And, of course, there is the wine. Under
the direction of winemaker Dan Kleck since
1998, the winery specializes in award-
winning Bordeaux blends, along with
Chardonnay, Merlot, Pinot Blanc and Syrah.
Kleck has had more than 29 years of wi
making experience in Long Island, Monte
and Paso Robles. He currently is consult
winemaker for about half a dozen small lo
wineries, as well as his own award-winn
label, Silver Stone.The Donati vineyards are in the Paici
appellation, a growing region about an h
and a half north of Paso Robles. Although
a bit cooler, the area shares some of the sa
climactic features as Paso Robles, includ
long, hot days, and cool nights. Only 4
acres of the 1,000-acre ranch is planted
vines. Kleck has his choice of fruit and u

Arroyo Robles is certainly a family-run
enterprise. Bob and Tanis Shore, along with
their children, Brianna and Jason, started
making wine in 1998, sharing equipment
with three other wineries in a converted
apple barn in See Canyon near Avila Beach.
Bob is the winemaker, with help from
assistant winemaker Mauricio Marchant,
while Brianna handles the tasting room and
marketing, and Jason oversees the wine
club and technical support.
Bob Shore spent 30 years as a petroleum
engineer after graduating from Stanford
University, then decided he wanted to be afarmer. The family initially grew stone fruit,
table grapes and cotton and wheat in the
San Joaquin Valley, said Brianna. Ulti-
mately, the family decided to get into the
wine making business.
Their wine press has moved three times,
but theyβve settled successfully in Paso
Robles, where they are planning to open a
winery sometime in 2008 on the 60-acre
vineyard the Shores own off of San Marcos
Road. Twenty-four acres of the vineyard are
planted, much of it to Syrah, which is the
heart of the Arroyo Roblesβ RhΓ΄ne-oriented
program.
Not that the winery is a one-note oper-
ation. Arroyo Robles produces an impres-
sive array of varietals, including
Chardonnay, Viognier, Cabernet Sauvi-
gnon, Zinfandel, Grenache, Petite Sirah
and Tempranillo. Additionally, they
produce a Mourvedre Rose and a Syrah
Rose, along with a pair of sparkling winesand a trio of varietal Ports.
The Arroyo Robles 2005 Chardonnay,
using fruit from Monterey County,
captured a gold medal at the 2006 Mid-
State Fair.

If youβve ever had the good fortune to visit a winery in Italy, you
know what itβs like to enjoy the combination of great wine, beautiful
scenery and most of all, warm and welcoming people. Now you donβt
have to endure a 12-hour plane flight to experience the delights of Italy. Falcon Nest Winery is the creation of Francesco Grande and his
lovely wife, Carolynn. Francesco was born in Calabria and grew up in
the Tuscany region of Italy. Like so many of his fellow countrymen, his
passion for food and wine has been the focus of his life.
For twenty-eight years he ran a successful and very, very busy
restaurant in Los Angeles. It took a long-time friend and customer to
convince him that he needed a little vacation. A trip up to the Paso
Robles wine-growing region was just supposed to provide a little rest
and relaxation. But with only one look at the stunningly beautiful
rolling hills of Central California, Francesco knew that it was time for
a new challenge. It was time to return to his roots.
βWine has been in my family for centuries. My father was a wine-maker, my grandfather was a winemaker as was his father before him
and his father before him! In Italy, it is a way of life,β says Francesco.
With the gusto he gave to his cooking, Francesco has turned his
land into some of the finest vineyards in the area. His picturesque little
winery on the top of the hill looks over a seemingly endless sea of
vines. He now has fifty-five acres planted in Cabernet, Merlot, Syrah,
Petite Verdot and Zinfandel.
βI love the art of cooking, but once the food is on the table, it is
soon gone. There is an art to winemaking as well plus it lasts a lot
longer. With aging wine becomes better. Food becomes worse!β says
Francesco.
Francesco has not totally hung up his chefβs apron, though. Thetasting room offers an array of his handmade sauces and Italian
specialties. Guests are often treated to tasty morsels along side the fine
wines of Falcon Nest.

14th Annual San Luis Obispo International Film FestivaThe San Luis Obispo International Film
Festival (SLOIFF ) is excited to preview its
upcoming 2008 festival program. San Luis
Obispo County will play host to hundreds of
visiting filmmakers, celebrities and movie
buffs during the festivalβs ten days of films,
special events, filmmaking panels, and parties,
from March 7 to 16.
This year, SLOIFF will offer up an eclectic
program that should suit even the pickiest
filmgoer. There are several new themes within
the festival program, as well as a few tradi-
tional events, like the popular Surf Night in
SLO and the King Vidor Career Achievement
Award tribute.
Opening night, March 7, will feature a rail-road-themed screening and party, aptly held at
the Santa Margarita Ranch. The evening will
include a twilight train ride on the ranchβs
historic narrow-gauge train, a reception and
screening of the 1973 classic, Emperor of the
North. Actor Keith Carradine (Deadwood,
Nashville) will be in attendance and is looking
forward to telling stories about working with
film greats, Ernest Borgnine and Lee Marvin. A
portion of the proceeds from this evening will
benefit the renovation of the SLO Railroad
Museum.
Non-stop festival screenings will begin on
Saturday, March 8 and will feature quality
independent cinema from more than a dozen
countries in a wide variety of genres, from arts
to sports to politics and romantic comedies
and everything in between. The majority of
these films have been submitted to the GeorgeSidney Independent Film Competition β in
fact over 300 films were entered this year,
compared to only about 100 two years ago.
Awards will be presented for the outstand

The Central Coast Filmmakers Showcase will highlight some of the
best films produced by local filmmakers, with new awards for best
short and feature-length films. The SLOIFF will also celebrate young
American filmmakers at the Youth Filmmaking Competition, screening
short films by kids from kindergarten through high school.
Surf Night in SLO will be back for its third year with a Tribute to
Bud Browne, the grandfather of surf filmmaking. 95-year-old Bud
Browne will be honored by well-known surfers and filmmakers from
around the globe at this historic reunion, right here on the Central
Coast, which is now Budβs home. One of his many films, Surfing in the
β50s will be screened at the Fremont Theatre, followed by a Q & A
session, raffle and a β50s-style surf party with live music, in the nearby
downtown Pier One building.
Western Night in Paso is another new event to 2008, featuring the
1972 John Wayne classic, The Cowboys. Academy Award nominated
director Mark Rydell (On Golden Pond, The Rose) will be in att
dance along with Robert Carradine (Revenge of the Nerds, Li
McGuire), who played one of the young cowboys in the film. A p
screening reception at Arroyo Robles tasting room and post-screen
Q & A session will make this a very special night for all ages, especi
future ranchers.
The new Hollywood and Vines series will pair classic films w
great Central Coast wineries, with wine and cheese receptions bef
many of the older Hollywood classics.
Other highlights include a sing-along version of Hairspray; fi
making workshops that will focus on cinematography, acting, st
work and more; celebrity filmmakers and actors in attendance
selected screenings throughout the festival; lively parties at some of
best bars and restaurants in SLO County with a designated βmee
spotβ on each night of the festival β a great way to meet visiting fi
makers and other festival goers.Film passes and tickets for select events are available at the SLO

Since 2000, the Santa Barbara Vintnersβ Foundation has held a
biennial wine auction to benefit Direct Relief International. The
auction has presented the opportunity for one of the regionβs
fastest growing industries, which is gaining international acclaim
for its wines, to rally together to put the βfruits of their successβ
toward a greater good.
The Vintnersβ auctions have raised more than $1,000,000,
which leveraged with Direct Reliefβs unique ability to stretch
dollars donated, has furnished over $26 million in medical mate-
rial aid provided to those in need.
Santa Barbara Vintnersβ Foundation conducts philanthropic
work on behalf of the Santa Barbara County Vintnersβ Associa-
tion. By pooling their resources they are able to provide substan-
tial support for scholarships and charities in the community.
The mission of Direct Relief is to improve the health of people
by strengthening fragile health systems. DRI provides appropriateongoing medical assistance to health institutions and projects
worldwide which serve the poor and victims of natural and c
disasters without regard to political affiliation, religious bel
ethnic identity or ability to pay. Healthy people. Better World

Four Seasons Biltmore Hotel, featuring an exciting live aucti

The Viva Vino party on Friday, March 14 at the Direct Relief
International warehouse in Goleta will feature local winemakers
and chefs, a Cuban band and a silent auction.Guests at the black-tie Wine, Dine and all that Jazz on
Saturday, March 15 at the Four Seasons Biltmore Hotel will enjoy
a multi-course gourmet dinner presented by Suzanne Goin of
Lucques, A.O.C. and Hungry Cat in Santa Barbara and Los
Angeles. Dinner is complemented by an array of library and
currant release wines from member vintners.
