    Recently, a friend of mine admitted that he knows nothing

    about wine or what makes one wine better than another. He was

    clearly frustrated that he could not communicate exactly what it

    is he likes or dislikes in a wine. When he tastes something that

    he does find appealing, the only descriptive word he can conjure

    up is "smooth."

    I explained that learning to appreciate fine wine is a process

    that can take years. The good news is that it involves tasting a

    great number of wines. Unfortunately for him, he simply didn't

    drink wine often enough to build a mental database of wines

    and their flavor profiles to draw comparisons among wines.The first requirement of a fine wine is to be true to the grape

    varietal and a key aspect in the appreciation of fine wine is

    learning to identify the characteristic flavors and components in

    the popular varietals--the individual fruit flavors, level of

    sweetness, acidity, or tannin. Over time, you learn what to

    expect from a Cabernet Sauvignon versus a Pinot Noir, for

    example. And evaluating how they all play out on your palate is

    part of this step.

    Once you get comfortable with identifying varietal flavors

    and components, teach yourself to think about the wine's

    individual personality, or style. When tasting, keep in mind

    contrasting descriptions like these; balanced or unbalanced

    components, lingering finish or short finish, powerful or

    bland, lively or dull, complex or one-dimensional, elegant o

    plain, and dont forget,--smooth or coarse. Ask yourself if an

    of these words describe the wines style, or think of some of

    your own.

    Then store your experience in your wine memory bank. Thnext time you taste a Cabernet Sauvignon, for example, think

    back to your impressions of previous tastings of Cabernets. Is

    your general impression better, worse, or the same as most oth

    Cabernets that you've tasted.

    To some, the steps of learning, confirming, and comparing

    may seem difficult, but it really is easier than it appears. If you

    taste with focus and frequency, you will eventually become m

    discriminating in your wine opinions and more eloquent than

    my good friend who finds his favorite wines to always be

    smooth.

    Driving through wine country right now, asharvest is reaching its peak, gives your nose just

    as many interesting things as your eyes. One of

    my favorite post-workday joys is cruising past

    wineries at night with the top down, smelling

    the fermentations sweetly giving way to wines

    ready for barrels. Or not. I also enjoy that the

    decisions being made about so many thousands

    and thousands of gallons of wine arent mine to

    make as when the grapes come in, those

    winemakers have to make decisions about oak

    usage and logistics almost from the start, and

    there are lots of choices awaiting.

    For whites, the decisions come down to the

    degree, if any, of oak influence. Many white

    varieties do not benefit from oak exposure, and

    even neutral barrels (barrels used long enough

    that oak tannin is no longer perceptible in wines

    stored therein) can cause a stylistic miscue since

    barrels play host to Oenococcus oeni, the bacteria responsible for

    malic-to-lactic acid conversion. Unless extraordinary and expensive

    precautions are taken, most winemakers would combine separate lots

    of filtered oaked and unoaked whites to arrive at a blend with the

    desired level of oak influence rather than hoping to arrive at an idealmiddle through chance in the barrel.

    Red wines, though, present a bit of a different set of options. Oak

    is useful throughout the production process, so some folks will be

    using toasted or untoasted oak shavings at the crusher to alleviate any

    underripe green aromatics or flavor compounfrom methoxypyrazines, which contribute cigar

    tobacco at low levels and green pepper or grassy

    herb-y notes at higher levels. Winemakers can

    ferment in barrels either by removing the heads

    and punching down into upright barrels or

    through reassembling the barrels and using a

    rotation system to keep the cap wet by spinning

    They can use larger puncheons to give more

    subtle, rounder notes to the wine without givi

    as oaky a presence liquid volume to surface

    area matters a lot.

    Post-pressing, most reds are aged either in

    barrel or in tanks with some kind of oak adjunc

    inserted; as with barrel options so go the adunc

    winemakers have choices that range from oak

    source (American, French, Hungarian and

    beyond), to toast level, to toasted or untoasted

    heads in barrels, and a slew of options for creati

    oak effects sans barrels including beans, cubes, spirals, blocks,

    sticks-in-chains to fit into barrel bungholes and staves of various

    shapes and sizes for tank inserts. Think back to your first visit to a

    big toystore as a kid; now picture an adult kid and you know how

The artists explainthat there is a strong connection between the two regions as both sharea geographic diversity; are oriented around bodies of water; embracemodernism; and produce quality wine and cheese.

    Just like Swiss-owned Vina RobWinery, Bellini and di Santo celebthese parallels and combine them ia unique experience. The commtraits come to life in Bellinis pit-fi

    ceramic sculptures that resemobjects such as rocks, cocoons aseaweed. Meanwhile, many of Santos watercolors depict birbutterflies and seasons with a slighabstract flair.

    To further forge the CalifornSwiss connection, Bellini and di Sa

    will have a concurrent exhibit in the Galleria Mosaico, the oldcontinuously running gallery in the Canton of Ticino, in Switzerlthrough November 17, 2012.

    Discovering Opolo Vineyards is to uncover a place where thpassion to create an unforgettable experience and offer

    The team at Opolo Vineyards the name is from a sassy ros

    The dedication to customer service at Opolo Vineyards is

    equally reflected in their wines.Nearly all of Opolo wines are estate vintages, meaning that t

    are vinted from grapes grown by the winery. The central operat

    comprises 98 rolling west side acres in as idyllic a setting as the

    beautiful Paso Robles area offers. The climate here owes a great

    debt to the nearby Pacific Ocean. The cooling effect of the mari

    layer accounts for temperature swings the diurnal range tha

    can be as great as 50 degrees from afternoon highs to morning

    lows. The sudden drop in temperature at night preserves the

    balance of natural acids in the grape. The result is well-balance

    appealing wines.

    Generally about 10 degrees warmer than the west side vine-yards, Opolo also grows wine grapes on 200 east side acres in

    Paso. The contrast in climate and soil between their east side an

    west side vineyards enables Opolo to produce 30 different win

    growing each variety of grapes within the environment it desire

    of Los Olivos, has been life-long dream in the making. Harnessingtheir Bavarian heritage the Dietenhofers wanted to create a craft

    The winerys owner, Robert L. Hall, had many years of experience in the hospitality sector prioacquiring the Hall Ranch in Paso Robles. After planting his vineyards he put all of his energy andknowledge to work to create a winery and hospitality center that would welcome guests. The

    smallest of details can make a huge difference when it comes to entertaining. I wanted to create awarm and beautiful place in Paso Robles that people would visit time and time again. I had

    envisioned a facility that would be suited for formal weddings, casual BBQs and everydaycelebrations.

    The winery produces all of the traditional California varietals and blends that thrive in PasoRobles including Chardonnay, Sauvignon Blanc, Merlot, Cabernet Sauvignon and Syrah. Additionvarietals produced include Viognier, Grenache Blanc, Orange Muscat, Cabernet Franc, Petite Sirah

    and Vintage Port made from the traditional Portuguese grapes. According to winemaker, Don BradAfter 12 years of working with fruit from the same vineyards, weve developed a consistent housestyle thats elegant, food friendly, balanced, and age worthy.

    While the grand hospitality center and the large portfolio of wine, that received stop accoladesmay lead the average visitor to think Robert Hall is a large corporation with many investors, the

    winery is actually still owned by Robert L. Hall and run like a family business. Angela Ruberto,Robert Halls granddaughter, has recently joined the winery as General Manager to continue thefamily tradition.

    As a graduate of San Jose State University, Angela has a bachelors degree in Civil Engineering w

    a concentration in water sciences. A native of Minnesota, Angela moved to California for school, fattending Cuesta College in San Luis Obispo before transferring to San Jose State. While in collegeAngela was an officer of Chi Epsilon, The Civil Engineering Honor Society, and received the Char

    W. Davidson Scholarship, the highest academic scholarship awarded in civil engineering.With her academic training behind her, she is now learning all aspects of the family business

    including: hospitality, vineyards & winery operations, and national sales. Angela has embraced th

    new challenges with enthusiasm. Although you may find her in the tasting room, or have theopportunity to say hello at one of the winery events, chances are Angela will be off travelling the

    country to help promote and grow the Robert Hall brand.Angela has immersed herself in the world of wine and is looking forward to working alongside

    One pretty reliable way to find out just how good the food at alocal restaurant is, is to ask somebody in the restaurant business. Ask

    a bartender, a waiter, anyone in fact, what they think of Mamas

    meatballs in San Luis Obispo and their lips begin to quiver, their eyes

    roll towards the heavens, they sigh; that is how good Mamas

    Meatball is.

    Set in a small courtyard off of one of the towns main streets, in a

    place called the Old Creamery, Mamas Meatball is actually divided in

    two. On the right is the take-out where people line up to get their

    orders of meatballs and more. To the left, fronted by a huge-trunked

    tree and a water fountain, is the intimate restaurant with its mural of

    the Mediterranean across the

    back.Meatballs aside, the

    restaurant, under owner and

    chef Nicola Allegretta, offers a

    wide range of authentic Italian

    dishes, many of them now

    available in smaller sizes as

    well, a bow to the economy

    and his customers wishes.

    Among them are half a dozen

    soups, a long list of salads

    (including grilled salmon and a

    refreshing pear and

    gorgonzola), some

    wonderful antipasto

    choices, both hot and

    cold paninis (including,

    of course, one made

    with meatballs), more

    pasta dishes than there

    is space here to share

    (though the Ravioli di

    Pollo all Vodka homemade ravioli

    filled with chicken

    and served in a vodka

    sauce cannot go

    unmentioned).

    There is also a

    heady selection of meat and fish dishes as well as any number of

    traditional and specialty pizzas (now available in two sizes) and som

    far too-tempting desserts.

    Mamas Meatball currently has two locations. The original is in th

    Old Creamery plaza at 570 Higuera Street, San Luis Obispo, (805)

    544-0861. Mamas Meatball is also available for your convenience inthe south county at 325 Pier Avenue by the entrance of the Pismo

    Beach Dunes, (805) 473-2383. Hours of operation are Tuesday to

    Sunday from 10:30 a.m. to 2:30 p.m. and 4:30 to 10 p.m., closed o

    Mondays.

    Eberle WineryBY raChel eCKerTSo what does Gary Eberle do? Just about everything!

    Gary Eberle, the driving force behind Eberle Winery, has been creat

    wines for more than 35 years and all the while accumulating accolade

    and awards. Eberle Winery is one of the highest award-winning winer

    in the U.S and Gary Eberle has been questioned, written about and tal

    about locally, nationally and internationally. What else can be said abo

    this man? One thing seems pretty obvious; Gary will continue to do

    what Gary does.

    When he arrived in Paso Robles in the early 1970s, it was a city tha

    was treading water. Paso Robles, originally created as an agricultural

    community, was really struggling. One third of the buildings downtow

    were closed around the city park, grain farming was going down and t

    almond, walnut and sugar beet industries were leaving. Cattle farming

    was the only mainstay and if it had not been for the grapes, the outloo

    for Paso Robles was pretty dire.

    With Garys arrival, he founded the Estrella River Winery in 1973

    (which later became Meridian Vineyards) and in 1983, Eberle opened

    doors to his own Eberle Winery. Active in the community, he became

    of the co-founders of the Paso Robles AVA and the PRWCA as well as

    huge promoter of the region. He is lovingly dubbed the Godfather of

    Paso Robles and is credited with being the pioneer of the local wine

    industry. His connection with Paso Robles keeps him tightly in tune w

    the goings on of the industry as well as the local landscape.Recently chosen as the September 2012 Roblan of the Month, Eber

    knows that wine is good for Paso and Paso is good for wine. He

    believes, even after 40 years of making wine in Paso Robles and more

    than 200 wineries in the appellation, there is still more growth ahead.

    People now knowhigh end wines, he says, and in the next coupl

    decades a much broader portion of the population will choose Paso fo

    fine wines.

    When not greeting visitors in his tasting room, Gary likes to cook.

    (Gary is also the founding father of the annual Paso Robles Rotary

    Winemakers Cook-Off.) He loves creating soups and stews, paella an

    pasta dishes for friends, but may be best known for his complimentary

    tri-tip, baby back ribs and duck sausage barbecues that he hosts at thewinery several weekends each year.

    What else does he want to do? Whats left on the bucket list? Whe

    asked what he hasnt had a chance to do you yet, he jokingly says that

    has never had a chance to turn down a date with Charlize Theron. He

    has always wanted to go to New Zealand but hasnt made it yet. In 201

    however, he is crossing off one of the items on his bucket list and

    journeying to Czechoslovakia and Romania. Next fall, hes also hosting

    three-week cruise to Ireland, Scotland, Iceland, Greenland and Canad

    With all that Gary does, he says what hed really like to do is travel

    more for leisure, less for work, and spend more time in his hometown

    Second Annual Garagiste Festival, the first and only festival dedicated

    to promoting artisan garagiste winemakers, held November 8th

    through 11th in Paso Robles. The Garagiste Festival showcases high-

    quality, cutting-edge, small-production wineries or garagistes that

    produce fewer than 1,200 cases a year. With an estimated nearly 200

    garagiste winemakers in the Paso Robles/Santa Ynez region alone,

    and an estimated 3,000+ nationwide, the Garagiste Festival surveyed

    the winemakers pouring at this years festival to paint a picture of

    these underground winemakers who, arguably, are making some of

    the best, most exciting and most innovative wines in the world.

    A year and a half ago, few people were aware of the garagiste

    movement, but that is changing rapidly. We know that the wines that

    come from these small-lot winemakers are extraordinary, but what

    many dont know is the degree to which these mavericks are willing

    to experiment and how hard their passion drives them to work, said

    Garagiste Festival Co-founder Douglas Minnick. This data paints a

    picture of innovative and hard-working winemakers, experimenting

    with multiple varietals. Many do not have tasting rooms and support

    their passion with a second job, but one thing they all have in

    common is that they make the wines theyre passionate about, not

    what the media says are popular especially since theyre the ones

    who have to sell it. Literally ninety percent of them are their ownbosses and have no employees.

    New Vintages

    Nearly half of the garagistes made their first vintage in the last six

    years and, on average, make 3-4 wines per vintage, allowing them

    room to experiment while keeping the quality high and the amount

    they make manageable. While a quarter of them own their own

    vineyards and craft 100% estate wines (selling the rest of their grapes

    to other wineries), the bulk of garagistes prefer to mix and match,

    finding the grapes and land that suits the style of wine they want to

    make. Thirty percent own no land and cherry-pick their vineyard

    sites. The other 45% have their own parcel, but use additionalvineyard sites that give them the varietals they perhaps can't grow in

    their location, but are a must-have in their winemaking process.

    Where to Taste?

    The reason these wines are so hard to find is not because the

    quantity is limited, which is partially to blame, but because 62%

    operate without a tasting room of their own. Its not a tough choice:

    use cash flow to make great wine or have a pretty building? Most,

    however, are happy to meet up with customers by appointment.

    Given the hands-on nature of winemaking at this level, its no

    surprise that 80% of owners serve as the winemaker as well. If that

    job wasnt demanding enough, 40% of these hardworking artisans

    have a second job. And, although it stands to reason that becausethey all want to be making wine full-time they would charge a lot

    their wines, they dont. Given the high quality and low availability

    these small-lot garagiste wines, price-points are a relative bargain: t

    average white bottle is priced between $18 and $25 and the averag

    red is $28-$38. These are cult wines at prices that wont break the

    bank of budget-conscious oenophiles looking to find the next roc

    star winemakers.

    Friday evening event, this year featuring Music & Magic with Igor

    and include a glass of wine.

    On Saturday, November 10 at 10 a.m., Park Cinemas will host aspecial screening of the romantic tale Moonlight Sonata, a 1937 film

    Also on Saturday, November 10 at 12:30 p.m. a new bronzemonument of Ignacy Jan Paderewski will be unveiled in the Paso

    Winners of the 2012 Paderewski Youth Piano Competition will be

    featured in a recital at the historic Paso Robles Inn Ballroom on

    Saturday, November 10 at 4 p.m. Emerging talents from San Luis

    Obispo County will again compete with young entrants fromMonterey and Santa Barbara Counties for the privilege of appearing at

    this year's Festival and participating in the Youth Exchange in Poland.

    Admission is free.

    The 2012 Paderewski Festival Gala Concert will feature highly-acclaimed violinist Kinga Augustyn and her recital partner, pianist Hackmey. Their all-Polish program at the Paso Robles Inn Ballroomon Saturday, November 10 at 8 p.m. will include a program of viol

    and piano music by Ignacy Jan Paderewski, Karol Szymanowski anHenryk Wieniawski.     SIERRA MADRE VINEYARDSThe Crown Jewel of Santa MariaBY miChael CerviN

    The Sierra Madre Vineyard has been one of the crown jewels of vineyards of the Santa Maria Valley in

    Santa Barbara County for over three decades. Santa Barbaras finest winemakers have long prized Sierra

    Madre Pinot Noir for its earthy, mineral and spicy characteristics not to mention its long aging potential,

    and many wineries have used Sierra Madres fruit for their own bottlings. That tells you something right

    there. After all, there are a lot of places to get your hands on prime Pinot Noir and Chardonnay grapes; it

    just that everyone wants these.

    This historic vineyard has stayed the test of time simply because the fruit grows healthy and happy

    here, says Allyson Noland of Sierra Madres Visitors Program. The ocean breeze, coastal fog, warmafternoons, and well drained soils culminate into providing the vines with exactly what they need to crea

    rich, ripe and balanced fruit. Taste the wines and you taste the vineyard, the soils, and the valley, she say

    The property was first planted in 1971 and was originally owned by Robert Mondavi but was sold to

    owner Doug Circle in 2003. Since then Circle has embarked on a quest to make the finest Pinot Noir

    possible. Located just three miles east of Santa Maria its one of the coolest vineyards in the valley and is t

    closest to the ocean of any Santa Maria vineyard. But to make the best wines you need the most iconic

    Pinot Noir producer on the Central Coast, and those winemaking duties fell to the retired Lane Tanner

    who became Sierra Madre Vineyards winemaker in early 2012. I get to work with arguably the best Pin

    Noir and Chardonnay grapes in the Santa Maria Valley, she says. I feel like I have come home to my firs

    love. Having worked with many quality Central Coast vineyards over the years, Tanner has a special pla

    in her heart for Sierra Madre since her first harvest of these grapes actually dates back to 1984. Sierra

    Madre Vineyard has always been my favorite, she says, and Im thrilled to be back working with this

    extraordinary piece of land. This is my dream job.

    But it was strawberries that first drew Doug Circles interest in the property, not grapes, since he was a

    agriculture farmer specializing is strawberry production. But Circle also understood that the sandy-loam

    soils would have excellent drainage for grapevines. This 165-acre coastal valley property is well-suited to

    both Chardonnay and Pinot Noir as the cold Pacific air blankets the vineyard on summer afternoons,

    naturally moderating the heat and slowing down the ripening in the grapes. This allows for extended ha

    time so that the berry flavors concentrate while retaining crisp, fresh acidity. Sierra Madres portfolio of

    wine includes Chardonnay, Pinot Gris, Pinot Blanc, and the gold standard of red wines, Pinot Noir. Awar

    The Winter Pass November 1 through January 31, 2013Cooler days, crisp nights green hilltops and holiday lights

    and of course, delicious wine thats what youll find this

    winter in the beautiful Santa Ynez Valley. And theres no better

    way to enjoy wine tasting at the Valleys premier boutique

    wineries than with the SYV Wine Country Winter Pass.

    The Winter Pass allows you to take a self-guided tour of the

    14 wineries. Your pass may be used one time at each tasting

    room. With The Winter Pass, youll receive one wine tasting at

    each of the Association tasting rooms. For example, you may

    wish to visit three wineries on November 10, return on

    November 18 and enjoy two more tastings. You may want to tastethrough the holidays and do six tastings between December 19th

    and 20th. You get the idea. Taste whenever youd like! Your pass

    will expire when all 14 tastings have been used, or on January

    31, 2013 whichever occurs first. Simply choose the dates youd

    like to visit there are no blackout dates, and reservations are

    not required.

    Most of the tasting rooms are open seven days a week, but a

    few have more restricted hours. Additionally, holiday hours and

    closures will vary amongst the wineries. Their operating hours

    are listed on your Winter Pass or check each members website.

    Food is not provided at the wineries, although some do offer

    snacks or sweets for sale. It is strongly recommend that you makeplans to enjoy lunch at one of the valley restaurants, or bring or

    purchase a picnic lunch to enjoy at one of the wineries. Check

    out the Association map for wineries with picnic facilities

    Santa Ynez Valley is the perfect setting for a long weekend

    filled with natural beauty and, of course, extraordinary wines.

    Plan a day, a weekend, an entire vacation and take this

    opportunity to become more familiar with some of your favorite

    local wineries as you speak with vintners and winemakers.

    Enjoy Wine Country hospitality with a stay in a local inn, abe sure to check out the talents of the local chefs who prepare

    regional cuisine, with locally raised ingredients.

    There is a wide range of hotels, motels, inns and bed and

    breakfasts mainly in Buellton and Solvang, but there are also

    places to stay in Los Olivos and Santa Ynez.

    Santa Ynez Valley also boasts a full range of things to do in

    addition to wine tasting. Visit the Carriage museum in Santa

    Ynez, take a nature hike at Lake Cachuma, ride a glider over th

    entire valley, snack on an abelskiver as you stroll Solvangs sho

    browse the art galleries in Los Olivos or simply enjoy the view

    Buelltons River Park. All that, and more and great wine!

    Mark your calendars: Wine Fantasy in February

    Wine Fantasy is a four-day event during the President s Day

    Valentines Day holiday weekend. During this passport event,

    many of the winemakers are present to talk about their wines a

    many will be pouring their reserve and estate wines. A logo gla

    is included and on Saturday, food is served in all of the tasting

    rooms. It is a lively, fun filled event that will sell out. Tickets w

    be on sale beginning December 1, 2012.
